Biodiesel is non-petroleum based fuel produced from vegetable oils or animal fats through transesterification. The compositions of saturated and unsaturated fatty acids in the feedstocks are important factors for biodiesel quality in terms of low-temperature fluidity and oxidative stability. The goal of this study is to improve the cold flow property of biodiesel from vegetable and animal origin containing highly saturated methyl esters (approx. 50%). In this purpose poly-saturated methyl esters in palm and tallow biodiesel were removed via urea-based fractionation and then the recovered fractions (enriched unsaturated fatty acid methyl esters) were supplemented with cold flow improvers. The highest concentration of unsaturated fatty acid methyl esters (93.8%) was obtained using a urea/fatty acid ratio of 3:1 at the crystallization temperature of $0^{\circ}C$ for 17 hours in incubation, with recovery of 71% and the addition of cold flow improver (Flozol$^{(R)}$ 515, 3,000 ppm) to the enriched poly-unsaturated fatty acid methyl esters reduced the CFPP(cold filter plugging point) of palm biodiesel from $12^{\circ}C$ to $-42^{\circ}C$. In tallow biodiesel both the enrichment of unsaturated fatty acid methyl esters (93.71%) and the addition of cold flow improver (Infineum R408, 3,000ppm) reduced the CFPP from $10^{\circ}C$ to $-32^{\circ}C$.

This study was conducted to investigate the contents of dietary fiber (DF), compositions of fatty acids in lipid fraction and amino acids in salt-soluble protein from the functional food source such as Platycodi radix, perilla seed, evening primrose seed and aloe vera. The contents of dietary fiber, neutral detergent fiber (N.D.F) , acid detergent fiber( A.D.F) . kignin, hemicellulose an dcellulose in evening primorse seed were higher than those of other samples, except the content of cellulose .The ration of polyunsaturated /saturated (P/S) fatty acid in total lipids was 6.31 in perilla seed, which was higher than those of other samples. The content of linolenic acid (n-3) in perilla seed was 55.47%. The content of linoleic acid (n-6) in evening primrose seed was 71.88% , which was higher than those of other samples. The fatty acid composition in neutral lipids were the same as those of total lipids. The PUFA contents of fatty acid in glycolipids were 61.76% in perilla seed. And also, the ratio of n-6/n-3 in evening primrose seed was 15.19. The fatty acid compositions in phospholipids were the sameas those of glycolipids. The contents of PUFA in Platycodi radix were 62.96% . The essential amino acid contents of salt-soluble protein were 47 mole % in Platycodi radix , which was slightly higher than those other samples. The ration of essential amino acid /nonessential amino acid (E/N) was 0.9 and 0.66 in Platycodi radix and aloe vera, respectively.
Objective: This study evaluated the effect of acid whey and freeze-dried cranberries on the physicochemical characteristics, lipid oxidation and fatty acid composition of nitrite-free fermented sausage made from deer meat and pork fat. Antioxidant interactions between acid whey and cranberry compounds were also explored. Methods: Four formulations of fermented venison sausage were prepared: F1 (control), F2 (with 5% liquid acid whey), F3 (with 0.06% of freeze-dried cranberries), and F4 (with 5% liquid acid whey and 0.06% of freeze-dried cranberries). Each sample was analyzed for pH, water activity ($a_w$), heme iron content, 2-thiobarbituric acid reactive substances (TBARS) value and conjugated dienes at the end of the manufacturing process and at 30 and 90 days of refrigerated storage. Fatty acid composition was measured once at the end of the manufacturing process. Results: At the end of ripening, all samples presented statistically different values for a pH range of 4.47 to pH 4.59. The sum of the unsaturated fatty acids was higher, while the conjugated diene and the TBARS values were lower in sausages with freeze-dried cranberries as compared to the control sausage. The highest content of heme iron (21.52 mg/kg) at day 90 was found in the sausage formulation with the addition of freeze-dried cranberries, which suggests that the addition of cranberries stabilized the porphyrin ring of the heme molecule during storage and thereby reduced the release of iron. The use of liquid acid whey in combination with cranberries appears to not be justified in view of the oxidative stability of the obtained products. Cigarette smoking is a well known risk factor for cardiovascular disease and has negative effects on blood lipid and lipoprotein . Some of the associations between smoking and chronic disease can be attributed to the less healthful lifestyles of smokers. A large body of epidemiologic evidence suggests inverse relationships between ischemic heart disease and plasma vitamin C and E concentrations . Smokers have lower plasma concentrations of these vitamins than do nonsmokers. Smokers therefore need antioxidant vitamin supplementation. The purpose of this study was to investigate the effect vitamin supplementation on plasma lipid patterns in smoking college men. 24subjects were divided into 3 groups of which were the vitamin C supplementation group (n=8), the vitamin E supplementation group(n=8) and the vitamin C+E supplementation group(n=8). The vitamin C supplementation group consumed 500mg of ascorbic acid, the vitamin E supplementation group consumed 200IU of D-$\alpha$-tocopherol, and the vitamin C+E supplementation group consumed 500mg of ascorbic acid+ 200IU of D-$\alpha$-tocopherol for 4 weeks. We examined the plasma lipid patterns before and after the vitamins were supplemented. The results obtained were as follows ; In the vitamin C supplementation group, the concentration of total cholesterol decreased significantly and HDL-cholesterol increased significantly with the supplementation of vitamin. In the vitamin E and vitamin C+E supplementation groups, however, there were no significant differences observed with the supplementation of vitamin. Concentration of plasma LDL, triglyceride, free fatty acid were not significantly affected by the supplementation of vitamin in all groups. In terms of plasma fatty acid composition, the concentrations of saturated fatty acid were not significantly affected by the supplementation of vitamin in all groups. The concentrations of palmitoleic acid, arachidonic acid, and docosahexaenoic acid, however, significantly increased in the vitamin E supplementation group(p<0.05). The concentration of plasma linoleic acid significantly increased in the vitamin C+ E supplementation group)(p<0.05). The results of this study show that antioxidant vitamin supplementation in smokers has a tendency to decrease coronary heart disease risk in view of the plasma total cholestrol and HDL-cholesterol concentrations of the vitamin C supplementation group and fatty acid concentration of the vitamin E supplementation group.
A total of 447 accessions consisting of seven Brassica spp.; Brassica carinata (34), B. juncea (199), B. rapa subsp. dichotoma (18), B. rapa. subsp. oleifera (14), B. rapa subsp. rapa (36), B. rapa subsp. trilocularis (56) and B. alba subsp. alba (90) were studied for their morphological characters and fatty acid compositions. There was a wide variation for morphological traits, oil content and fatty acid composition among Brassica species. Seed number/silique and yield/plant were varied from 4.2 (B. alba) to 25.1 (B. rapa subsp. trilocularis) and from 170.7 g (B. rapa subsp. oleifera) to 351.9 g (B. juncea L. Czern.), respectively. Among Brassica species, B. rapa subsp. trilocularis exhibited the highest oil (29.2%), stearic (20.4%) and erucic acid (45.3%) content. B. carinata had the highest content of palmitic (5.2%), oleic (21.2%) and linolenic acid (11.1%). B. rapa subsp. dichotoma and B. rapa subsp. oleifera exhibited the highest content of linoleic (8.1%) and behenic (26.9%) acid, respectively. B. rapa subsp. trilocularis exhibited the highest (45.3%) erucic acid content and significant positive relationship was observed between oleic acid and linoleic acid. This variation of agronomic and fatty acid compositions in Brassica species can be utilized to develop new varieties.

Speries-related meat flavors were investigated for red meats (bovine, porcine, caprine, and ovine). Volatile branched-chain fatty acids (VBCFAs) including 2-methylbutanoic, 3-methylbutanoic, 4-methylpentanoic, 2-ethylhexanoic, 4-methylhexanoic, 4-methyloctanoic, 6-methyloctanoic, 4-ethyloctanoic, 4-methylnonanoic, and 2-ethyldecanoic acids were identified in the meats from cow (bovine), pig (porcine), goats (caprine ; American white goat and Korean black goat), and lamb (ovine). Beef flavor of bovine meat was characterized by the basic meaty flavor, lacking in goaty and muttony flavor impacts due to low or absent in 4-methyl.octanoic and 4-ethyloctanoic acids. Porcine meat contained the least number of VBCFAs among sample species tested, and 3-methylbutanoic acid contributed to the unclean sweaty odor of pork. Caprine meat from Korean black and American white goats lacked in short VBCFAs (C5, C6, and C7) and contained 4-methyloctanoic and 4-ethyloctanoic acids contributing to the characteristic goaty flavor of caprine meat. Caprine meat flavor was distinctively characterized by 4-ethyloctanoic acid, while 4-methyloctanoic acid provides sweaty-muttony flavor to ovine meat. Although kinds of VBCFAs are same in two different varieties of caprine meats, meat sample from Korean black goat had stronger goaty odor and contained higher concentration of 4-ethyloctanoic acid than the meat sample from American white goat did.

In this study, the effects of gamma-irradiation (1, 2 and 4 kGy) on texture profiles, fatty acid composition, free amino acids and sensory evaluation of dry-fermented sausage were evaluated. The hardness and adhesiveness of irradiated samples were significantly lower (p<0.01) than that of the control, while the gumminess of samples irradiated with 2 and 4 kGy was higher than the other tested samples (p<0.01). The sample irradiated at 4 kGy had a higher saturated fatty acid (SFA) content (C14:0, C16:0, C18:0) and significantly lower (p<0.05) unsaturated fatty acid content (UFA) (C16:1, C18:1, C18:3), trans, n-3 and n-6 fatty acid than the non-irradiated sample. Gamma-irradiation resulted in an increase (p<0.05) in phosposerine, aspartic acid and glutamic acid and a decrease (p<0.05) in glutamic acid in free amino acids. For the samples irradiated at 4 kGy, the sulfur odor and fat pungent flavor were significantly higher (p<0.05) and the moldy odor and moldy flavor were significantly lower than the control sample. In conclusion, gamma-irradiation had a significant effect on the texture profiles, fatty acid composition and sensory evaluation of dry-fermented sausage.

This study was designed to observe the effects of the feeding mixed oils of the sardine oil containing n-3 EPA(eicosapentaenoic acid) and DHA (docosahexaenoic acid) and the safflower oil in which were plenty of n-6 linoleic acid, on the fatty acid metabolism of serum and liver in the dietary hyperlipidemic rats. Experimental oils mixed with 16% butter(control group), 8% butter + 8% olive oil and 8% butter with various level of sardine and safflower oils were administered to the male rats of the Sprague Dawley for 4 weeks. In the fatty acid compositions of serum phospholipid, triglyceride and cholesteryl ester, according as the contents of mixed safflower oil increased, n-3 PUFA(polyunsaturated fatty acid) contents and ratio of EPA/AA(arachidonic acid) tended to be decreased, but n-6 PUFA contents and ratio of AA/PUFA tended to be increased. In the fatty acid composition of triglyceride component in liver lipid, DHA contents were most in the liver lipid. And components of cholesteryl ester, n-6 linoleic acid contents were high percentage. Fatty acid compositions of serum and liver lipids were influenced from the fatty acid composition of the test lipids.
This study was aimed at evaluating the lipid status of 122 pregnant women, who were attending peripheral community clinics in low-income areas and were vulnerable in terms of public health, by anthropometric measurements, estimating dietary intakes and analyzing serum lipids content and fatty acids composition. Regarding the skinfold thickness, it has increased more significantly in suprailliac than in triceps, biceps, subscapular, which means body fat has been accumulated in central parts more than in distal parts of the pregnants. It is found that intakes of energy, protein, lipid and carbohydrate are desirable while calcium, zinc and copper are low and sodium is excessive. Regarding dietary fat intake, the energy $\%$ of fat was within the same range as RDA(20%) for adults, but energy $\%$ intake from each fatty acid was usually low, especially energy % of monoun-saturated fatty acid intake was below RDA for adult women. And intake ratio of $\omega$6$\omega$3 fatty acids was desirable. Accordingly, it is thought that dietary fat intake was balanced in quality. Serum lipids concentrations were increased with the length of pregnancy and were higher as compared with non-pregnant women. Polyunsaturated fatty acids, especially $\omega$6 fatty acids, have gradually decreased with the length of pregnancy. Serum lipids content and fatty acids composition were not greatly influenced by dietary fat but serum free fatty acid level was negatively related to energy, carbohydrate, fatty acids and cholesterol intake. On the basis of the above results, it can be predicted that lipid metabolism for mother and fetus is changed by pregnant status and multilateral research on maternal nutrition in terms of areas and income levels will have to be made. Most of microalgae shift their metabolic pathways toward the fatty acid biosynthesis following nitrogen deprivation. Recent studies on Nannochloropsis species, oleaginous microalgae, have been performed to investigate the regulation of contents and compositions of fatty acids under stressful condition. The objective of this experiment is to identify the effect of nitrogen on cell growth and fatty acids production in Nannochloropsis oculata K-1281 and compare fatty acid composition response to nitrogen deficiency between N. oculata LB2164 and K-1281. The fatty acids content in N. oculata K-1281 was increased up to 210%, while the growth rate was decreased under nitrogen deficient condition. The contents of C16:0 and C16:1 increased dramatically in both N. oculata K-1281 and LB2164, while the contents of C20:4 and C20:5 increased in N. oculata LB2164. The fatty acids content and composition in N. oculata K-1281 returned following addition of nitrogen after nitrogen starvation. These results demonstrated that fatty acid contents and compositions under nitrogen deficiency will provide the understanding of fatty acid synthesis in microalgae.
