Changes in Lipid Components During Germination of MungBean (녹두발아(綠豆發芽)중 지방질성분(脂肪質成分)의 변화(變化))

  • This investigation was conducted to observe changes of lipid components (phospholipids, free sterols, free fatty acids, triglycerides and estrified sterols) and fatty composition in diethyl ether extract and 86% MeOH extract from cotyledon and seedling axis of mung bean which were germinated in the dark at 25-$27^{\circ}C$ for 7 days. The total lipid contents in cotyledonn and seedling axis gradually decreased during germination. The triglyceride content in total lipid from cotyledon decreased and free fatty acid content increased, but triglyceride content from seedling axis decreased slightly and free fatty acid content decreased. Free sterol, esterified sterol and phospholipid content in cotyledon increased continuously, but their content in seedling axis dcreased slightly. The major fatty acids in mung bean were palmitic acid, linoleic acid and linolenic acid.

Leaf Quality and Fatty Acid Composition of Collected Perilla Related Genus and Species Germplasm (들깨류사 종.속 수집 유전자원의 잎품질 및 지방산 조성)

  • Leaf quality and fatty acid compositions of collected perilla related genus and species germplasms such as Perilla frutescens var. japonica Hara, Perilla frutescens var. acuta Kudo, Perilla frutescens var. crispa Decaisne, Perilla frutescens var. for viridis Makino, Mosla punctulata Nakai, Mosla japonica Maxim, Mosla dianthera Maxim were analysized. The number of leaves per tiller and leaf size of perilla germplasms were more and bigger than those of mosla germplasms. Aroma degree of mosla germplasms was higher than aroma degree of perilla germplasms. Mosla germplasms could be utilized in the breeding for high aroma perilla lines. Otherwise, the softness of perilla germplasms was higher than that of mosla germplasms. In case of oil and protein contents, perilla germplasms was higher than mosla germplasms, however compositions ratio of fatty acid, especially linolenic acid of mosla germplasms was higher than that of perilla germplasms, therefore mosla germplasms could be utilized as breeding materials with high linolenic acid for industrial oil. The linolenic acid with excellent quality and unsaturated fatty acid showed negative correlation with oil content, protein content and saturated fatty acids.

Seasonal Variation in the Nutritional Composition of the Muscle of Wild and Cultured Korean Bullhead Pseudobagrus fulvidraco (자연산과 양식산 동자개(Pseudobagrus fulvidraco)의 시기에 따른 영양성분 변화)

  • We evaluated seasonal variations in the proximate, fatty acid and total amino acid compositions and mineral content of the muscles of wild and cultured Korean bullhead Pseudobagrus fulvidraco. The wild and cultured samples showed a significantly higher proportion of crude lipids than other components. Crude lipid content was highest in May in wild fish but lowest in May in cultured fish. We found no significant difference between wild and cultured samples in terms of fatty acid and total amino acid compositions and mineral content. The levels of saturated fatty acids (SFA) and polyunsaturated fatty acids (PUFA) as well as n-6/n-3, were higher in the muscles of wild fish compared with those of cultured fish. However, monounsaturated fatty acids (MUFA) levels were higher in cultured fish. Both wild and cultured fish were good sources of eicosapentaenoic acid (EPA) and docosa hexaenoic acid (DHA). In wild fish, the Mg and Zn contents were highest in August, while the Ca, P, Na, K, Fe, and Cu contents were highest in May. However, the mineral content of the cultured fish did not exhibit significant seasonal variation.

Effects of Different Drying Methods on Fatty Acids, Free Amino Acids, and Browning of Dried Alaska Pollack (명태건조방법에 따른 갈변화 관련 물질의 변화)

  • Changes in composition of fatty acids and free amino acids in three differently dried Alaska pollack (sun dried, naturally cyclic freeze-thaw dried, and 1-year-aged cyclic freeze-thaw dried Alaska pollack (Hwangtae)) were investigated to correlate them with browning reactions in drying and aging Alaska pollack. Major fatty acids of the sun dried Alaska pollack were palmitic acid, oleic acid, and eicosapentaenoic acid (EPA), and those in the Hwangtae were palmitic acid, oleic acid, and gondoic acid. Hwangtae showed the lowest amount of polyunsaturated fatty acids among the three types of dried Alaska pollack. Free amino acids content of sun dried Alaska pollack was higher than that of the cyclic freeze-thaw dried Alaska pollack and Hwangtae. Lesser amount of histidine in Hwangtae (0.02%) than that in the cyclic freeze-thaw dried Alaska pollack (0.087%) may indicate the degradation of histidine due to the browning reaction in aging the cyclic freeze-thaw dried Alaska pollack. Significant changes in compositions of fatty acids and free amino acids among the dried products revealed the browning reaction resulted from carbonyl compounds produced by decomposition of lipid hydroperoxides and free amino acids. Aging the cyclic freeze-thaw dried Alaska pollack for a year contributed to the development of browning.

Fatty Acid Profile and Thermal Behavior of Fat-Rich Edible Insect Oils Compared to Commonly Consumed Animal and Plant Oils

  • This study compared the physicochemical properties of edible insect oils from silkworm (Bombyx mori) pupa (SP), sago palm weevil (Rhynchophorus ferrugineus) larva (PW), and bamboo caterpillar (Omphisa fuscidentalis; BC) to oils from chicken skin (CK), beef back fat (BF), pork back fat (PF), salmon belly (SB), sea bass belly (BB), coconut (C), and peanut (P). The fatty acid profiles and thermal behaviors (crystallization and melting) of the extracted oils were evaluated. PW and BC oils had more saturated fatty acids (SFAs) than CK, PF, SB, BB, and P oils. SP oil had equivalent SFA content to CK and BB oils. Insect oils exhibited similar monounsaturated fatty acid concentrations in all samples, except C oils. PW and BC oils exhibited a higher content of palmitoleic acid than the other oils. SP oils contained polyunsaturated fatty acids similar to those in SB and BB oils, which were higher than those in PW, BC, CK, BF, and PF oils. SP oil also exhibited the highest concentration of α-linolenic acid (C18:3 n-3). Arachidonic acid (0.01-0.02 g/100 g) in all insect oils was lower level compared to CK, BF, PF, SB, and BB oils. SP oil (0.03 g/100 g) exhibited a slightly higher level of eicosapentaenoic acid compared to PW (0.01 g/100 g) and BC (0.01 g/100 g) oils. The insect oils were liquid at ambient temperature, solid below -15℃, and required less energy (∆Hm-max) for melting than other samples. This study indicated that insects, particularly SP, could serve as an alternative source of fat to meet its growing demand.

Effects of Chronic Ethanol Consumption and Taurine Supplementation on Hepatic Total and Phospholipid Fatty Acid Compositions in Rats (만성적인 에탄올 섭취와 타우린보강이 흰쥐간의 총지방산 및 인지질지방산 조성에 미치는 영향)

  • This study evaluated the effects of chronic ethanol consumption and/or taurine supplementation on hepatic total, phospholipid fatty acid composition and the metabolism of rats fed one of three purified liquid diets for 8 weeks. the rats followed either the control diet (CD, ethanol-free and taurine-free diet); ethanol diet (ED, CD+ 50g ethanol/L) or ethanol-taurine diet (ETD, ED+3.75g taurne/L). Chronic ethanol consumption and/or dietary taurine supplementation were associated with altered hepatic total and phospholipid fatty acid composition. compared to the values for the control rats, ED or ETD significantly decreased the percentage of total monounsaturated fatty acids ($\Sigma$MUFA), and increased the percentage of total polyunsaturated fatty acids ($\Sigma$PUFA) of hepatic total lipids(p〈0.01). Percentages of 14:0(P〈0.01) and 16:0(p〈0.001) were sigificantly lower, and those of 18:0(p〈0.01), 20:0(p〈0.001), 20:3$\omega$6(p〈0.01) and 22:4$\omega$6(p〈0.01) in hepatic total fatty acid compositions were oserved in rats fed ETD versus those fed ED or ETD. No significant differences in hepatic total fatty acid compositions were observed in rats fed ETD versus those fed ED. Percentages of 24:0(p〈0.01), 16:1(p〈0.05), 20:1(p〈0.01), 18:2$\omega$6(p〈0.01) and 18:3$\omega$3(p〈0.05) in hepati phospholipids were significantly higher, and those of 14:0(p〈0.01), 16:0(p〈0.001), 20:3$\omega$3(p〈0.05) in hepatic phospholipids were significantly higher, and those of 14:0(p〈0.01), 16:0(p〈0.001), 20:3$\omega$3(p〈0.001), 22:6$\omega$3(p〈0.001) and $\Sigma$$\omega$3(P〈0.001) were significantly lower in rats fed ED or ETD compared to the values for the control rats. The Δ5 desaturation index(20:3$\omega$6⇒20:4$\omega$6) and elongation index (20:5$\omega$3⇒22:5$\omega$3) of hepatic phospholipid index (20:3$\omega$6⇒20:4$\omega$6) and decreased Δ4 desaturation index (22:5$\omega$3⇒22:6$\omega$3) compared to the values for the ED rats. These changes in hepatic fatty acid composition induced by chronic ethanol consumption and/or taurine supplementation might be associated with the modulations of physical properties of the hepatic cell membrane and its sensitivity to peroxidation damage.

Developmental Relationship of Unsaturated Fatty Acid Composition and Stearoyl-CoA Desaturase mRNA Level in Hanwoo Steers' Muscle

  • This study was conducted to investigate the developmental relationship between fatty acid composition in different lipid fractions and stearoyl-CoA desaturase (SCD) gene expression in steer muscles during growth. Twenty Hanwoo steers were used at 6, 12, 18, 24 and 30 months of age. Fatty acid composition and SCD mRNA level were analyzed. In the total lipid fraction, developmental profiles of C18:1, as the product of SCD enzyme, and SCD mRNA level were significantly increased between 6 months and 12 months of age. During this period, the percentage of C18:1 increased from 31.9% to 49.5% in the total lipid. The increased C18:1 level was maintained until 30 months of age within the range of 44.8- 49.9%. In contrast, the C18:0 composition decreased with age and this decrease was compensated by the increase of the C18:1. However, the sum of C18:0 and C18:1 was changed before and after 12-month old by a 20% increase. Unlike the C18 fatty acids, the C16 fatty acids such as C16:0 and C16:1 did not show a consistent change with age in steers' muscle. On the other hand, C18:2 proportion as a major polyunsaturated fatty acid in muscle was significantly reduced from 21.1% at 6 months of age to 4.4% at 12-months old and then this reduced level was maintained until 30 months within the range of 7.4-11.4%. As in the C18:1 composition during early stages, a 2-fold significant increase was observed in the $\Delta^9$-desaturase index of C18 fatty acid as a measure of SCD activity, but not in that of C16 fatty acid. Also, the steady-state level of SCD mRNA reached a peak at 12 months of age. Thus, the positive relationship between the C18:1 composition and the $\Delta^9$-desaturase (SCD enzyme) index of C18 fatty acid or SCD mRNA level was demonstrated during growth, but the negative relationship between the C18:2 composition and the above three indices was demonstrated at the same time, indicating that the sharp induction of SCD mRNA may be closely related to the dramatic reduction of C18:2, which is known as a suppressor of SCD gene expression during growth.

Studies on Fatty Acid Intake Patterns, Serum Lipids and Serum Fatty Acid Compositions of High School Students in Seoul (서울지역 일부 고등학생의 지방산 섭취 패턴과 혈청 지질 및 혈청 지방산 조성에 관한 연구)

  • The purpose of this study was to investigate the pattern of individual fatty acid intake and to compare serum lipid levels and total serum fatty acid composition of high school students in Seoul (total : 234 ; male : 91 ; female : 143) In serum lipid levels, total cholesterol (Chol.), HDL-Chol. and LDL-Chol. levels of female students were significantly higher than those of male students and there was no significant difference between High Fish & Low Meat intake (HFLM) and Low Fish & High Meat intake (LFHM) groups. The average fat intake was 22-25 energy % of total subjects and especially, that of LFHM group was 29%, which were over the recommendation level. Although the average P/M/S ratio of dietary fat was 1.1/1.2/1.0, the average range of $\omega6/\omega3$ fatty acid ratio of dietary fat was found to be 17.9-20.7, which was far beyond the suggested range, 4-10. The average intake of cholesterol of total subjects was 360mg. LFHM group had more meats and beverages such as carbonated drinks and tended to have less beans, vegetables and mushrooms. In addition, LFHM group had more energy and fat intake than those of HFLM group, the P/S ratio of dietary fat (0.73) was lower than the recommended ratio. Serum C16 : 0 composition of LFHM group was significantly higher than that of HFLM group, and EPA and DHA composition of HFLM was significantly lower than that of LFHM. Therefore, in HFLM group, the P/S ratio of serum fatty acids was significantly higher and the $\omega6/\omega3$ ratio was lower. Dietary C18 : 0 was negatively correlated with serum EPA and DHA composition. Individual PUFA intake was negatively correlated with serum C16 : 0 and sum of SFA, and positively correlated with serum C18 : $2\omega6(LA)\;,\;sum\;o;\omega6$ and sum of PUFA. Serum C18 : 1, C18 : $3\omega3\; and\; C20\;:\;4\omega6$ (AA) compositions were not correlated with dietary fatty acid. Only serum triglyceride (TG) levels were significantly correlated with serum fatty acid compositions. Sum of SFA, C14 : 0, C16 : 0, sum of MUFA and C18 : 1 compositions were positively correlated with serum TG levels, but LA, AA, sum of PUFA and P/S ratio were negatively correlated with it.

Fatty Acid and Amino Acid Compostions of Gugiseun (Lycuim chinense Miller) Depending on Variety and Harvest Time (채취시기 및 품종에 따른 구기순의 지방산과 아미노산조성)

  • As a part of studies on the development of a Gugisuen(Lycium chinense M.), which is one of the unutilization of waste resources, we investigated the composition of fatty acid and amino acid according as picking period and varieties of Gugisuen. The chemical components of Gugisuen were as follows : 1. Proximate composition of Gugisuen were Cheongyang native had the highest contents of crude lipid, crude protein, total sugar, and the contents of crude protein, total sugar, and reducing sugar was the highest picked on June 20. 2. The contents of $P_2O_5$, $K_2O$, CaO, MgO, Cu, and Mn were higher in Cheongyang native than that of other varieties. And mineral contents of Gugisuen picked on May 10 were the highest. 3. The major fatty acids were linoleic, linolenic acids, and these unsaturated fatty acids composed about 50% of total fatty acids. Fatty acid compositions between each varieties were not significant, and those components were the highest in Gugisuen picked on May 10. 4. Eighteen amino acids were identified from Gugisuen, glutamic acid, the highest content was $10.05\sim10.94%$ and these contents increased in the order to aspartic acid > glycine > alanine > leucine > lysine. The contents of serine, arginine, methionine, cystine-2 and isoleucine were higher in late harvest time and glutamic acid and tryptophane were higher in early harvest time.

Determination of Positional Fatty Acid and Triacylglycerol Compositions of Selected Infant Formulas (영유아용 조제분유의 위치별 지방산 및 Triacylglycerols의 정성 분석)

  • Infant formula is one of the main nutritional sources for infants. In this study, the fatty acid compositions of Korean (domestic, n=8) and foreign infant formulas (n=3) were analyzed. Crude fats were extracted using the Folch method, and fatty acid compositions (total and positional) were analyzed by gas chromatography. In the fatty acid compositions of infant formulas, oleic (19.88~44.64%), palmitic (7.59~21.65%) and linoleic acids (16.72~25.87%) were the major fatty acids. Domestic infant formula products contained 35.94~56.55% total saturated fatty acid content, whereas that of foreign infant formula ranged from 34.40~42.88%. The content of monounsaturated fatty acids ranged from 20.23~44.99% in domestic products and 34.11~45.07% in foreign products. In addition, 0.17~2.57% arachidonic acid/docosahexaenoic acid and 10~13% linoleic acid/linolenic acid were detected in the analyzed products (domestic and foreign products). A small amount of trans fatty acids (0.25~1.69%) were found. In sn-2 position analysis, palmitic acids (1.84~38.74%) were detected in the analyzed formulas. Further, typical triacylglycerols in human milk, including 1,3-di-monounsaturated-2-saturated triacylglycerol, were not detected in the analyzed formulas.
