쌀가루로 제조한 쉬폰케이크의 물리적.관능적 품질특성 (Physical and Sensory Properties of Chiffon Cake Made with Rice Flour)

  • 쉬폰케이크 제조 시 100, 200, 300 mesh의 각기 다른 입도크기를 지닌 쌀가루를 첨가하여 제조한 케이크반죽 및 케이크의 물리적 특성과 관능적 특성을 비교하였다. 반죽안정성은 200 mesh 쌀가루 100% 첨가군이 100와 300 mesh 쌀가루 100% 첨가군보다 더 좋은 안정성을 나타내었다. 200 mesh 쌀가루의 수분흡착력은 대조군 대비 211% 높게 나타났으며, 지방흡착력은 대조군 대비 86% 낮게 나타났다. 또한 비중과 비용적에 있어서도 200 mesh 쌀가루 첨가군이 대조군 보다는 낮았지만 다른 비교군에 비해 가장 낮은 비중과 가장 높은 비용적을 나타내었는데, 기계적 조직감 측정 시 경도(hardness), 부착성(adhesiveness), 응집성(cohesiveness), 검성(gumminess), 씹힘성(chewiness) 과 같은 5가지 항목에서 대조군과 유의적인 차이가 없는 것으로 나타났다. 그러나 관능검사결과 200 mesh 쌀가루 100% 첨가군이 촉촉함과 전반적인 기호도에서 다른 비교군에 비해 유의적으로 차이가 났으며, 가장 높은 기호도 점수를 나타냈다. 이외의 항목인 향미, 응집성, 부서짐성에 있어서는 유의적 차이는 없었다. 일반성분 분석 시 200 mesh 쌀가루가 대조군 및 다른 비교군에 비해 가장 낮은 수분함량을 나타내어 이것이 높은 수분결합력과 가장 좋은 반죽안정성에 영향을 준 것으로 판단된다. 이러한 요인이 쉬폰케이크 제조 시 최종 완성품에 긍정적인 영향을 주어 200 mesh 100% 첨가군에 있어서 대조군 보다는 낮지만, 다른 비교군에 비해 높은 비용적을 나타내었다. 또한 관능평가결과, 전반적인 기호도에 있어서 200 mesh 100% 첨가군이 대조군 및 다른 비교군에 비해 유의적으로 높은 수치를 나타내었다. 따라서 쌀을 첨가한 쉬폰케이크 제조시 200 mesh 사이즈 쌀가루가 가장 적합한 것으로 판단된다.

복령분말이 생국수의 품질에 미치는 영향 (Effects of Poria cocos Powder on Wet Noodle Qualities)

  • 복령분말을 밀가루에 0, 3, 5, 7% 첨가하여 제조한 반죽의 리올로지와 이들로부터 제조한 생국수의 품질 특성을 조사하였다. 복령분말은 밀가루에 비해 단백질, 지방 및 회분 함량이 현저히 낮았다. 복령분말의 입자분포도는 $0.04{\sim}240\;{\mu}m$였으며 밀가루보다 큰 입자분포를 나타내었다. 아밀로그래프상의 호화개시온도는 복령분말의 첨가량이 증가함에 따라 큰 영향을 받지 않았으나, 최고 및 최종점도는 증가하였다. 패리노그래프상의 수분흡수율 및 반죽의 안정도는 복령분말의 첨가량이 증가함에 따라 점차 증가하였다. L값은 복합분과 반죽에서 복령분발의 첨가량이 증가함에 따라 점진적으로 감소하였으나, a값과 b값은 증가하였다. 이와는 반대로, 생국수에서는 복령분말의 첨가량이 증가함에 따라 L값이 증가하였으나, a값과 b값은 감소하였다 생국수의 조리후 중량 및 부피는 복령분말의 첨가에 의해 감소하였으나, 국물의 탁도는 증가하였다. 조리한 국수의 조직감 측정 결과, 견고성, 응집성, 씹힘성, 탄력성은 복령분말 3%의 첨가에 의해 급격히 증가하다가 그 이상의 농도에서는 감소하였다. 조리한 국수의 관능검사 결과, 복령분말 $5{\sim}7%$ 첨가국수에서 높은 값을 나타내 무첨가 국수보다 품질이 우수하였다.

자연스러운 목턱각 성형을 위한 안면부 조직확장술 (The facial tissue expansion to achieve the natural cervicomental angle)

  • Purposes: Wide scars occurring on the lower face and neck are a source of both functional and esthetic problems. Consequently, we can use skin grafts, pedicled flaps, free flaps, and tissue expansion for the reconstruction of this area. Compared with other reconstruction techniques, tissue expansion is advantageous in that it enables the maintenance of a color and texture similar to that of the adjacent tissue. However, the conventional method of tissue expansion has been reported to lead to an unnatural cervicomental angle and to the deformity of adjacent structures. We have therefore made efforts to prevent these problems through the use of several operative procedures. Methods: Forty-one patients with lower facial and cervical scars underwent tissue expansion. The tissue expansion was performed using a rectangular-shaped Nagosil$^{(R)}$ tissue expansion device. On insertion of the tissue expander, the intermediate area of superficial fat layer was dissected and then the tissue expander was inserted to make a flap that was as thin as possible. In advancement of the flap, a capsule-formed by the tissue expander-was used for the interrupted fixed suture of the flap to the fascia of the platysma muscle of the neck. This procedure was performed multiple times and also performed between the flap and the periosteum of the mandible, such that the tension was removed during the suture of the flap margin. Finally, the patients were fitted with a Jobst$^{(R)}$ facial garment in order to stabilize the operation site at least twelve months. Results: The most prevalent location of the scar was the cheek (15 cases), followed by the chin in 14 cases and the neck in 12 cases. The mean size of scar was $55.7{\pm}39.4cm^2$. Conclusions: Using our procedures, we have experienced no significant deformities and have also achieved a more natural cervicomental angle in the patients.

국민건강영양조사 식품섭취빈도조사지 개발: 국민건강영양조사 제4기 (2007-2009) 자료 이용 (Development of a Food Frequency Questionnaire for the Korea National Health and Nutrition Examination Survey: Data from the Fourth Korea National Health and Nutrition Examination Survey (KNHANES IV))

  • The objective of this study was to develop a semi-quantitative food frequency questionnaire (FFQ) for an adult population for use in the Korea National Health and Nutrition Examination Survey (KNHANES). The 24-hour recall data for 2,939 subjects aged 19 years and over from the fourth KNHANES first year (2007) were used to extract the items included in the questionnaire. The FFQ items were developed by selection of major dishes based on the cumulative contribution rate, between-person variability based on the cumulative R2 of energy and 14 nutrients (carbohydrate, protein, fat, crude fiber, calcium, phosphorous, iron, sodium, potassium, vitamin A, thiamin, riboflavin, niacin, and vitamin C) and the number of consumers of each dish. In addition, the FFQ items were revised with analysis of 24-hour recall data of the fourth KNHANES second and third year (2008, 2009). Finally, 112 items were included in the FFQ and grouped as follows: rice (5 items), noodles and dumplings (6), breads and rice cakes (8), soups and stews (12), soybeans, eggs, meat and fish (23), vegetables, seaweed and potatoes (27), milk and dairy products (4), fruits (13), beverages (5), snacks (6) and alcoholic beverages (3). The food items of FFQ accounted for an average of 87.0% of energy and 14 nutrient intakes and also accounted for 81.7% of the between-person variability. The frequency range of the FFQ items was classified into nine categories (never or seldom, once per month, 2-3 times per month, once per week, 2-4 times per week, 5-6 times per week, once per day, twice per day and three times per day) and the portion size was divided into three categories (small, medium and large). We expect that this developed dish-based FFQ could be used in assessment of longterm dietary intakes of Korean adults.

국내 중년기 비만 여성의 생리적 지표에 대한 복부비만관리프로그램의 효과: 메타분석 (Effects of an Abdominal Obesity Management Program on Physiological Bio-markers of Middle-aged Women in Korea: A Meta-analysis)

  • 배경: 한국의 중년여성의 복부비만 유병률은 급속하게 증가하고 있으나 복부비만 관리프로그램의 종류와 그 효과가 다양하고 효과적인 중재 방법을 선택하는 데 어려움이 있다. 따라서 본 연구의 목적은 한국의 중년 비만여성을 대상으로 실시한 복부비만관리 프로그램의 효과를 체계적이고 종합적으로 규명하여 학문적 기초자료를 제시하는데 있다. 방법: 학술지 392편, 학위논문 380편으로 총 772편의 논문 중 중복된 자료를 제외한 647편에서 조사연구이거나 나이에 적합하지 않거나 대조군이 선정되지 않는 등, 선정기준에 부합하지 않는 604편을 제외하여 총 43편의 복부비만관리 프로그램 논문을 분석대상으로 선정하여 주요 비만지표의 효과크기를 분석하고, 각 효과크기의 이질성에 대한 설명을 위해 메타 ANOVA와 메타회귀분석을 활용하여 조절효과분석을 실시하였다. 또한 출간오류분석을 통해 연구 결과의 타당성을 확인하였다. 결과: 본 연구의 결과는 다음과 같다. 비만 중년여성을 대상으로 실시한 복부비만관리 프로그램의 표준화된 평균 효과크기는 0.22로 작은 효과크기를 나타냈고, 염증성 지표와 지방분포율은 각각 0.36으로 중간 정도의 효과크기를 나타냈으며, 대사성 지표는 0.21, 신체계측 지표는 0.18로 작은 효과크기를 보였다. 이질성은 중간 정도의 이질성($I^2=44.5%$, Q = 844.57, P<0.001)을 보였고, Randomized Controlled Trial (RCT) 여부나 출판여부에 따라 효과크기에 차이가 없었다. 결론: 본 연구 결과에 근거하여 최근 대두되고 있는 비만 여성에 대한 건강 증진 및 복부비만 개선에 대한 중재효과를 계량적으로 분석한 점에서 복부비만프로그램 중재의 효과파악을 위한 근거 자료로 활용될 수 있을 것이다.

비만에 대한 국내 의학계의 최근 연구 동향 분석 -대한비만학회지를 중심으로- (An Analysis of Domestic Medicine Study Tendency on Obesity -Focused on The Korean Journal of Obesity-)

  • Objectives: This study was performed to analyze the recent trend of the studies about obesity in medicine and to provide background for futher studies. Methods: All of the article were selected in "The Korean Journal of Obesity". Search were conducted through "http://kosso.or.kr" with the search word "obesity". Collected articles were classified into clinical study, experimental study, literary study, case report. Results: One hundred eighty four studies were included and analyzed in terms of study design, subject, intervention, period, obesity index and so on. The numbers of clinical studies, literary studies, experimental studies, case reports were respectively 143 (77.7%), 26 (14.1%), 2 (1.1%) and 7 (3.8%). In clinical studies, observational studies were 112 (78.3%) and intervention studies were 31 (21.7%). And most of sample sizes were more than 100 and less than 499. Body mass index, waist circumstance, body fat percent were major criteria of clinical study. Most of the subjects on obesity were about relation with another disease or experimental results and diagnosis. According to classification by the kinds of intervention, diet, exercise, drug, behavior were respectively 22, 18, 8, and 8. More than fourty percent of intervention studies were studied for 12 weeks. Conclusions: To improve the quality of Korean Medicine study for obesity, we need to recruiting big sample size and activate randomized clinical trial.

인체 삽입형 자기 공진 무선전력전송 수신기 설계 및 성능 분석 (Design and Performance Analysis of Magnetic Resonant Wireless Power Transfer Receiver for Implant Medical Device)

  • 본 논문에서는 소형의 인체 삽입형 의료기기에 자기 공진기법 무선전력전송을 적용하는 경우, 적합한 시스템 구성을 제안하고 성능을 검증하였다. 제안하는 수정된 직렬-병렬 구성은 전력 수신부의 전력 수신 코일과 커패시터를 병렬로 연결한 공진기에 직렬로 연결되는 인덕터를 추가하여 구현하며, 낮은 인덕턴스를 가진 전력 수신 코일을 이용하는 경우 직렬 공진기를 이용하는 경우에 비해 높은 효율을 달성할 수 있다. 회로분석을 통해 해당 구성의 유효성 및 동작조건을 이론적으로 검증하고, 돼지 지방 및 근육 생체 블록에 무선전력전송 수신코일을 삽입한 환경에서 무선전력전송을 진행하여 전력 전송 효율 및 생체 블록의 온도 변화를 측정 비교하였다. 생체 블록에 2.5~10 mm 깊이로 삽입 시 제안한 구성이 일반적인 직렬-직렬 구성보다 평균 17.79 % 개선된 효율을 보이며, 공기 중에서 32 dBm 전력 송신 시 직렬-직렬 수신 코일은 평균 $0.75^{\circ}C/s$, 제안한 구성의 수신 코일은 평균 $0.18^{\circ}C/s$의 온도 변화를 보여 제안한 구성이 인체 삽입형 무선전력전송 시스템 구성에 보다 적합함을 확인하였다.

대도시·중소도시·읍면지역 및 동일한 지역내에서의 소득수준에 따른 노인의 영양소 섭취 현황: 국민건강영양조사 2016-2018년 자료 활용 (Nutrient Intake Status of the Elderly in Metropolitan, Middle & Small Cities, and Rural Areas according to Income Level within the Same Region: Korea National Health and Nutrition Examination Survey (2016-2018))

  • There is little information on the nutrient intake according to the city size and small town in Korean elderly. This study analyzed the nutritional consumption of older people in metropolitan, middle and small cities, and rural areas according to four income levels. The recent data from the 2016~2018 Korean National Health and Nutrition Survey, Centers for Disease Control and Prevention were used. The final analysis included 4,325 individuals (Male: 1,856, Female: 2,469) over 65 years old. Multivariable regression with a complex sample design was conducted to compare the nutrient intake among the groups. In a comparison within regions, the nutrition status of the elderly in small towns was more vulnerable than metropolitan and middle & small cities. The energy intakes were similar between the groups. The carbohydrate intake of middle & small cities was significantly higher than the other regions. The intake of other nutrients in metropolitan and middle & small cities appeared to be higher than in rural areas. The number of nutrients with statistical significance between low and high-income levels were 19 in metropolitan, 11 in middle & small cities, and 5 in rural areas. Each contribution of carbohydrate, fat, and protein to the total energy intake was lower in the low-income level than the high-income level in metropolitan and middle & small cities. On the other hand, in rural areas, only the contribution of protein to energy intake was lower in the low-income level than the high-income level. Cities with higher levels of urbanization had more severe nutritional inequality in relation to the income level. There was also nutritional inequality present in rural areas but it was to a lesser extent. Moreover, the generally low level of nutrient intake was problematic in rural areas. These findings could be used as fundamental evidence for developing community nutritional policies for the elderly.

Effect of alternative farrowing pens with temporary crating on the performance of lactating sows and their litters

  • This study was performed to development the alternative farrowing pen (AFP) and to investigate performance and behavior of lactating sows and their litter. A total of 64 multiparous sows were randomly divided into two groups and were allocated to farrowing crates (FCs) and AFPs. The AFPs contained a crate and support bars that could be folded to provide the sows with extra space on day 5 postpartum. Behavior was recorded by charge-coupled device cameras and digital video recorders, and the data were scanned every 2 min to obtain an instantaneous behavioral sample. Farrowing systems did not affect feed intake, back-fat thickness, litter size and piglet weight at birth and weaning (p > 0.05). In addition, there were no differences in the number of crushed piglets between the two farrowing systems (p > 0.05). However, the weaning-to-estrus interval was shorter in the sows of the AFPs than in thous of the FCs (p < 0.05). The sows spent most of their time lying down during the lactating period, at about 80% lateral recumbency and 10%-15% ventral recumbency. The only significant differences were in the feeding and drinking behavior between sows in the two farrowing systems (p < 0.05). The FC sows displayed more feeding and drinking behavior than the AFP sows, especially in the late lactating period (p < 0.05). Piglets in the FCs tended to spend more time walking than piglets in the AFPs (p < 0.05), whereas there were no differences in suckling and lying behavior between piglets in the two farrowing systems (p > 0.05). It is concluded that the AFPs with temporary crating until day 4 postpartum did not negatively affect performance and crushed piglet compared with the FCs. It also may improve animal welfare by allowing sows to move and turn around during the lactating period. Further research is needed to find suitable housing designs to enhance productivity and animal welfare.

Evaluation of coat color inheritance and production performance for crossbreed from Chinese indigenous Chenghua pig crossbred with Berkshire

  • Objective: This work was to determine coat inheritance and evaluate production performance for crossbred pigs from Berkshire×Chenghua (BC) compared with Chinese indigenous Chenghua (CH) pigs. Methods: The coat color phenotypes were recorded for more than 16,000 pigs, and the genotypes of melanocortin 1 receptor (MCIR) gene were identified by sequencing. The reproductive performance of 927 crossbred BC F4 gilts and 320 purebred CH gilts was recorded. Sixty pigs of each breed were randomly selected at approximately 60 days of age to determine growth performance during fattening period, which lasted for 150 days for BC pigs and 240 days for CH pigs. At the end of the fattening period, 30 pigs of each breed were slaughtered to determine carcass composition and meat quality. Results: The coat color of BC pigs exhibits a "dominant black" hereditary pattern, and all piglets derived from boars or sows genotyped ED1 ED1 homozygous for MC1R gene showed a uniform black coat phenotype. The BC F4 gilts displayed a good reproductive performance, showing a higher litter and tear size and were heavier at farrowing litter and at weaning litter than the CH gilts, but they reached puberty later than the CH gilts. BC F4 pigs exhibited improved growth and carcass characteristics with a higher average daily live weight gain, lower feed-to-gain ratio, and higher carcass lean meat rate than CH pigs. Like CH pigs, BC F4 pigs produced superior meat-quality characteristics, showing ideal pH and meat-color values, high intramuscular fat content and water-holding capacity, and acceptable muscle-fiber parameters. C18:1, C16:0, C18:0, and C18:2 were the main fatty acids in M. longissimus lumborum in the two breeds, and a remarkably high polyunsaturated/saturated fatty acid ratio of ~0.39 was observed in the BC F4 pigs. Conclusion: The BC F4 pigs exhibit a uniform black coat pattern and acceptable total production performance.
