Formation of Meatlike Flavors by Maillard Reaction Using Hydrolyzed Vegetable Protein (HVP) (HVP를 이용한 Maillard 반응에 의한 Meatlike Flavor의 생성)

  • Meatlike flavors were manufactured using hydrolyzed vegetable protein (HVP) with several reactive precursors at different reaction conditions. Both pH and temperature affected significantly on brown colority of reaction product, whose velocity became fast with increasing pH and temperature. Drastic decrease in residual reducing sugars and free amino acids appeared until 1 hour, being little affected by reaction temperature. Glutamic acid and cysteine were decreased with reaction time, whereas glycine and methionine remained constant. Forty nine aroma compounds formed through Maillard reaction were isolated and identified with GC/MSD, including 3-methyl butanal, 2-methyl tetrahydrothiophen-3-one, 3,4-dimethylthiophene and 2,4-dimethyl thiazole previously known as natural meat flavors. The sensory evaluation showed that one-hour reaction product was the highest in savory taste and the lowest in nasty taste on the level of 5% significant difference among all reaction products tested in this experiment. From the results above, it could be speculated that the initial stage of Maillard reaction in this experimental system occured until one hour, thereafter, savory taste decreased accompanied by increasing nasty taste with elapsed reaction time.

Quality Characteristics of Small Package Kimchi according to Packing Material and Storage Temperature (포장재와 저장온도에 따른 소포장 김치의 품질특성)

  • Cabbage (Baechu) Kimchi in its truncated form was placed in four different packing materials, Ny/PE/LLDP, OPP/AL/PE, PP and PET, and quality changes were observed during storage. Changes in pH and total acidity showed an x-shaped cross-curve as pH decreased and total acidity increased during storage. PP tray showed the slowest change at $5^{\circ}C$ with time. The pH was initially 6.25, but decreased to 4.12~4.16 at 20 days, and total acidity showed a 4 to 4.8-fold increase after 20 days of storage compared to the initial value. During storage at $5^{\circ}C$, total bacterial count and lactic acid bacterial count rapidly increased after 4 days. The total bacterial quantity decreased after a period of time and there were differences according to packaging material; OPP/AL/PE packaging showed the most dramatic decrease. Change in microbial count mostly followed a similar pattern to that of total acidity for all packaging materials. Changes in the color of Kimchi liquid, when examined by color index in $L{\cdot}b$/a form, rapidly decreased over time, similar to pH. Small Ny/PE/PP and OPP/AL/PE packages of Kimchi were examined for changes in free volume inside the packaging. After 13 days of storage at $5^{\circ}C$, the volume was 243 mL, but storage at $20^{\circ}C$ resulted in a volume of 372 mL, a more than 1.5-fold increase in free volume. There were changes in the quality characteristics of small package Kimchi according to storage temperature and packaging material, and large changes in pH, total acidity, and microbial count were evident upon storage at $5^{\circ}C$ for 8 days, which was the optimum palatability period. Mostly, PP treatment showed the slowest quality changes upon storage at $5^{\circ}C$. However, due to small package Kimchi's fast consumption system, the appropriate choice of packaging material must consider the product's turnover ratio. Further, the varieties of small package Kimchi should be diversified according to different consumer preferences by offering Kimchi with different maturity levels. Further, since the leading consumer base ranges in age from the teens to thirties, the development of various products targeting such consumers is necessary.

Identification of catalytic acidic residues of levan fructotransferase from Microbacterium sp. AL-210 (Microbacterium sp. AL-210이 생산하는 levan fructotransferase의 효소활성에 중요한 아미노산의 동정)

  • [ $\beta$ ]-Fructofuranosidases, a family 32 of glycoside hydrolases (GH32), share three conserved domains including the W(L/M)(C/N)DP(Q/N), FRDPK, and ECP(D/G) motifs. The functional role of the conserved acidic residues within three domains of levan fructotransferase, one of the $\beta-fructofuranosidases$, from Microbacterium sp. AL-210 was studied by site-directed mutagenesis. Each mutant was overexpressed in E. coli BL21(DE3) and purified by using Hi-Trap chelating affinity chromatography and fast performance liquid chromatography. Substitution of Asp-63 by Ala, Asp-195 by Asn, and Glu-245 by Ala and Asp decreased the enzyme activity by approximately 100-fold compared to the wild-type enzyme. This result indicates that three acidic residues Asp-63, Asp-195, and Glu-245 play a major role in catalysis. Since the three acidic residues are present in a conserved position in inulinase, levanase, levanfructotransferase, and invertase, they are likely to have a common functional role as nucleophile, transition state stabilizer, and general acid in $\beta-fructofuranosidases$.

University students' eating behavior and consumer attitude in social commerce service (소셜커머스 이용 대학생의 외식 행동 및 태도 분석)

  • Purpose: The purposes of this study were to investigate eating behavior of university students through social commerce and to analyze factors affecting university students' attitude regarding social commerce. Methods: Questionnaires were distributed to 445 university students in Changwon, Korea from March 28 to April 28, 2013. A total of 339 questionnaires were used for the final analysis, which excluded improperly-completed questionnaires. Results: The major factor considered for eating behavior through social commerce was price (37.2%). Purchasing experiences of foodservice products according to types of foodservice were 64.9% for coffee shop, 59.3% for fast food restaurant, 53.4% for family restaurant, 46.0% for specialty restaurant, 35.7% for pizza restaurant, 35.4% for buffet, and 31.9% for bakery. Factors affecting satisfaction with social commerce for purchasing foodservice products were 'service quality of foodservice company', 'communication of social commerce', and 'discount rate of social commerce'. Factors affecting repurchasing intention of foodservice products through social commerce were 'service quality of foodservice company', 'site design of social commerce', and 'discount rate of social commerce'. Conclusion: In order to increase satisfaction with social commerce, 'service quality of foodservice company', 'communication of social commerce', and 'discount rate of social commerce' should be increased. And, to increase repurchasing intention of social commerce, 'service quality of foodservice company', 'site design of social commerce', and 'discount rate of social commerce' should be increased. In addition, two factors 'service quality of foodservice' and 'discount rate of social commerce' were found to have an effect on satisfaction and repurchasing intention of social commerce. For development of social commerce and foodservice industry, cooperative relationship between social commerce and foodservice industry is needed, and a reasonable price strategy should be established. The university students considered price as a major factor of eating behaviors and did not consider menu and taste as a major factor. From a longer perspective, such an eating behavior would have an effect on university students' dietary life and it would cause nutrition and health problems for university students. Thus, it implied that further studies from the perspectives of nutrition and health regarding eating behavior through social commerce service should be conducted.

Effects of Nutrition Education Program Based on Social Cognitive Theory for Low Sodium Consumption among Housewives Living in Certain Regions of Seoul (서울시 일부 지역 주부의 나트륨 섭취 감소를 위한 사회인지이론 기반의 영양 교육 프로그램의 적용 및 평가)

  • There are limited programs for low sodium intake based on the nutrition education model for housewives who cook family meals. The objective of this study was to evaluate the effects of model-based nutrition programs for low sodium intake among housewives residing in Seoul by incorporating social cognitive theory. A questionnaire survey before and after education was conducted on 140 housewives who participated in the 'Low Sodium Nutritional Education Program' delivered by a district public health center for 12 weeks from November 2015 to January 2016. The contents of the nutrition education program and program evaluation items were based on the action plans for 'Less Sodium Healthy Practice' suggested by the Ministry of Food and Drug Safety. The results show that program participants showed a lower preference for sodium, higher selection of low sodium dishes from restaurants or cafeteria if available, and increased awareness of the need of restaurants to serve low sodium dishes compared to before. In terms of behavioral changes, there were significant improvements in checking nutrition labeling and selection of foods with low sodium, use of low sodium food products, use of natural seasonings to reduce salt intake, and consumption of fast foods and processed foods. On the other hand, requesting less salty meals when ordering and introducing restaurants or cafeterias with healthy and low sodium menus turned out to be difficult to put into practice. In conclusion, the nutrition education program for sodium intake reduction for housewives was effective in increasing knowledge, environment recognition, and behaviors related to low sodium intake but not behaviors related to physical environmental factors. Therefore, further nutrition education programs and practices for sodium intake reduction should be comprehensively implemented with improvement of physical environments for low sodium intake.

Trans Fatty Acids Intake of a Girls한 High School Students in Pusan by Food Frequency Questionnaire (식품섭취빈도조사법에 의한 부산지역 여자고등학생의 trans 지방산 섭취 수준)

  • To assess trans fatty acids (tFAs) intake of a girls' high school students in Pusan, dietary history and quantitative food frequency questionnaire (FFQ) were surveyed and analyzed with a total subjects of 274, 268 in summer and winter respectively. It was shown that 38.0% of subjects which was the highest percentage, had snack twice a day in frequency of snack intake. The most favorite snack of subjects was ice cream (46.4%), the preference for milk and dairy products was considerably high. 43.4% of subjects responded to once a month in frequency of dining out. They preferred grilled pork (39.1%), hamburger (36.9%), grilled beef (26.6%) in order. It was also appeared that they preferred fast food. In the case of eating bread, 8.0% of subjects ate bread and margarine, 7.1% butter. Generally, the subjects preferred margarine to butter. tFAs intake for each person per day was $4.24{\pm}0.18\;g$. There was significant difference in tFAs intake according to parents income (p<0.05), frequency of snack intake (p<0.001) and that of dining out (p<0.05). tFAs intake produced naturally (N-tFAs) was $0.86{\pm}0.00\;g$ which corresponded to 20.3% of total tFAs intake per day. tFAs intake produced artificially (H-tFAs) in the process of hardening oil was $3.38{\pm}0.14\;g$, equaled to 79.7% of total tFAs intake per day. There was significant difference between H-tFAs intake for each person per day (p=0.000)

The Development of Functional Seasoning Chicken Products using Natural Extracts of Green Tea and Water Soluble Mineral Ion (녹차와 기능수를 이용한 기능성 양념 계육 개발)

  • In order to investigate the effects of pickle carrier on physico-chemical characteristics of seasoning chicken products, chicken were cured in seasoning containing 100 ppm germanium water, green tea, water soluble mineral and mixtures(100 ppm germanium water+green tea+water soluble mineral) after addition of 0.1% concentration to the weight of chicken. The determination of pH, salt and sugar contents were carried out, according to curing time. The salt content showed 1.11 %, 1.21 % in cured at 24 hours in control of breast and leg, irrespective of chicken parts, in which showed 19.94 brix, 18.89 brix in sugar content, respectively. These results mean that breast and leg meat added with natural extracts and functional water showed higher sugar content than that of control, in which revealed shortening of curing time by increasing penetrating velocity of salt and sugar content. Thus, salt and sugar content tended to be increased as the curing time of pickle carrier were extended in seasoning chicken after dipping in pickle containing water soluble mineral ions for 6 hours. The seasoning chicken treated with natural extracts and functional water showed a lower than that of control in hardness, irrespective of chicken parts. Overall, the seasoning chicken treated with natural extracts and functional water showed a low TBARS value and Log CFU/g, in which revealed antioxidative and antimicrobial activity. The sensory evaluations of seasoning chicken added with natural extracts and functional water containing water-soluble mineral ions were not significantly different(P<0.05). The glutamic acid among free amino acid contents showed a high in seasoning chicken treated with green tea, compared to control. This amino acid played a important role in taste of seasoning meat. The doneness appearance in seasoning chicken added with natural extracts and functional water containing water-soluble mineral ions tended to not be different, compared to those of control. These results revealed that seasoning chicken added with natural extracts and functional water containing water-soluble mineral ions would be attractive in fast food market on the basis of improvement of tenderness, shortening of curing time and uniformity of roasting appearance in seasoning chicken.

Residue of Pesticides Carbendazim and Chlorpyrifos in Different Parts of Red Pepper (고추의 부위별 카벤다짐과 클로르피리포스의 잔류 양상)

  • This experiment was carried out to examine the residual amount variation of carbendazim and chlorpyrifos in fruit parts of red pepper according to the open field and/or the rain shelter house. It was shown higher residual amounts of agrochemicals in the field than the house condition at two hours (0 day) after chemical application, but it was shown higher residual amounts in the house at 5 days and 10 days. Although the residual amount in the field was higher than in the house at the beginning, the chemicals fast degraded in field condition. Carbendazim and chlorpyrifos remained as time passed in order of receptacle, but the residual amounts of two chemicals in leaf at $5^{th}$ day. Carbendazim and chlorpyrifos were lessened until 10 days after chemical application, and reduction rate were 19.1% and 66.4% in flesh, 45.2% and 62.3% in receptacle, and 41.6% and 72.0% in the stalk, respectively. The reduction rate at 15 days showed 31.1%, 75.3% in flesh, 43.5%, 81.7% in receptacle, and 47.7%, 82.8% in stalk, respectively. Therefore the reduction rate of carbendazim showed receptacle > stalk > flesh, and that of chlorpyrifos showed stalk > receptacle > flesh in order. The calculated half-life of carbendazim showed 29.6 days in flesh, 13.6 days in receptacle, and 16.0 days in stalk, but that of chlorpyrifos showed 8.3 days in flesh, 8.3 days in receptacle, and 6.3 days in stalk. In conclusion, the half-life of carbendazim was longer than that of chlorpyrifos in even part, and especially was longest in flesh part of fruit.

A Study of the Relationship between Childhood Obesity and Beverage Intake (소아비만과 음료 섭취량의 관계에 대한 연구)

  • Purpose : The rising prevalence of childhood obesity may be due to an energy imbalance between food intake and energy expenditure. Recently, consumption of beverages in children has increased. The aim of this study is to provide useful information for the prevention and the control of childhood obesity by assessment of variable beverage consumption. Methods : Fight hundred seventy seven children(M : F=1 : 1.02, mean age; 9.7 years) from two primary schools in Seoul in May 2003 were enrolled. Body mass index(BMI) was calculated and the degree of obesity was classified into normal, overweight and obese groups by BMI percentile. Parental BMI, socio-economic factor, 3-day dietary intake, calory intake and beverage intake were examined by questionnaires. We researched beverages and classified them into six categories, milk, other milk products, soda, sports beverage, other beverage. Results : The prevalence of obesity was 7.2%. The parental BMI of the obese group were higher than those of the other groups. There was no significant difference in birth weight, or parents' intellectual and economic levels between the obese group and the other groups. There was no significant difference in daily total calory intake between the obese group and the other groups. The obese group of 7-9 year-old-males was higher than the other groups in sodas, and sports beverages intake. The obese group of 10-12 year-old-males was higher than the other groups in total beverage intake and other beverage intakes. The obese group of 10-12 year-old-females was higher than the other groups in other milk products. Conclusion : Excessive intake of beverages is associated with childhood obesity. Efforts to decrease intake of beverages may be important approaches to counter the rise in the prevalence of obesity.

The Locations of the Weekly Periodic Markets in Jinju and the Characteristics of Their Merchants (진주시 요일장의 입지와 요일장 상인의 특성에 대한 연구)

  • While periodic marketing systems have lasted for more than hundreds of years in Korea, the weekly (periodic) markets have emerged since the latter half of the 1990s in the densely populated urban areas. In Jinju, weekly markets are opened on eight densely populated area: Ehyeon Wellga Apt.(Monday market), Gumsan Apt.(Tuesday market), Juyak Hanbo Apt.(Wednesday market), Chojeon Apt.(Thursday market), Manggyeong Hanbo Apt.(Thursday market), Pyeonggeo Dulmalhanbo Apt.(Friday market), Gajoa Jugonggreenville Apt.(Saturday market), and Gaho Apt.(Saturday). The merchants of Jinju's weekly markets can be classified into three groups as follows: the migrating specialized(full-time) merchants, who sell fruits, fish, and other daily necessities: the farmer part-time women merchants in the sixties or in the seventies, who sell the agricultural products that they themselves have grown around the rural areas; and the vendor merchants, who sell mostly dduk-bok-ki, eo-mug(odeng), and other fast food. The origin and persistence of periodic markets are explained in terms of the concepts of central place theory, the economic/comparative advantage of periodic markets, and the traditional organization of time and inertia.
