The properties and extracting conditions of juice preperation from Schizandra nigra Max. (흑오미자(Schizandra nigra Max) 즙액의 추출조건과 추출물의 특성)

  • To determine the properties for juice preperation of Black Omija (Schizandra nigra Max.) and Omija (Schizandra chinensis), yield of extraction, chromaticity and lightness, pH and soluble solid of the extract were investigated. The rate of extract yield from Schizandra nigra was highest when extracted for 3 hours at 80$^{\circ}C$ in 20% ethanol solution. For the desirable chromaticity coordinates, the optimum extraction time and temperature of Schizandra nigra extract were 3 hours at 80$^{\circ}C$. The lightness of the extract was low of the value when extraction time and temperature was long and high. The sugar content of the extract of S. nigra was 2.0­2.6% Brix, lower than that of S. chinensis, but the difference was insignificant. The pH of the extract from S. nigra was 0.1­0.2 higher than that of S. chinensis. Although the pH of the extract from S. nigra was a little low when extracted by water, the pH range was enough to maintain the stability of color of extract from the S. chinensis.

Studies on the Anti-acne Effect of Agrimonia pilosa Ledeb. (선학초 추출물의 항여드름균 효능 연구)

  • Agrimonia pilosa Ledeb. is a perennial plant, which naturally habitats in whole area of Korea, and where it is popularly used for the traditional remedies. In the present study, A. pilosa Ledeb. extract was prepared to determine the anti-acne effects and application possibility as a cosmetic resource. A pilosa Ledeb. was extracted with methanol and its anti-acne effect against Propionibacterium acnes was investigated via minimum inhibitory concentration (MIC) and paper disk diffusion method. The MIC of A. pilosa Ledeb. extract and triclosan was 0.05 mg/mL and 0.04 mg/mL, respectively. This implies that A. pilosa Ledeb. extract nay be an efficient anti-acne ingredient for cosmetics, considering that it is a crude extract. The paper disk diffusion assay showed that its anti-acne effect was similar to that of triclosan. Furthermore, A. pilosa Ledeb. extract effectively inhibited the growth of several aerobic microorganisms including Staphylococcus aureus. Finally, we examine the stability of the extract to temperature and pH. The extract was very stable to high temperatures ($70{\sim}121^{\circ}C$) and to pH ($pH 2{\sim}11$), suggesting its utilization for cosmetics.

A study on chemical components and biological activities of bamboo extract (해상죽 추출물의 성분 및 생리 활성에 관한 연구)

  • The purposes of this study were to investigate the effects of bamboo (SasacoreanaNakai)extracton chemical characteristics and biological activities. pH ranges of bamboo extract using water and ethanol were between 5.2 and 6.1. The concentration of total phenol compounds using ethanol extract was 0.51%, which was about 2.0 fold higher than that of water extract. The mineral concentrations were order of K, Mg, Ca, and Na, respectively. The nitrite scavenging ratio of bamboo extract using ethanol was 20.4% in vitro. In the case of bamboo extract using water, it was 18.0%. Especially, the maximum nitrite scavenging ratio was obtained at pH 1.5. On the other hand, when pH was increased from 3.0 to 6.0, the nitrite scavenging ratio was decreased from 16.2% to 3.0%. The antioxidant activity of bamboo extract in vitro was increased from 100 to 160% when bamboo extract using ethanol was increased from 10 to $50{\mu}L$. These results suggest that the bamboo extract of Sasa coreana Nakai using ethanol can be used in bioactive and functional material.

Tenderization of Bovine Longissimus Dorsi Muscle using Aqueous Extract from Sarcodon aspratus

  • The aim of this study was to investigate the effects of aqueous extract from Sarcodon aspratus on tenderization of the bovine longissimus dorsi muscles in comparison with commercial proteolytic enzymes. Furthermore, meat quality and muscle protein degradation were examined. We marinated meat with 2% Sarcodon aspratus extract, 2% kiwi extract, and 0.2% papain. Beef chunks (3×3×3 cm3) were marinated with distilled water (control), Sarcodon aspratus extract (T1), kiwi extract (T2) or papain (T3) for 48 h at 4℃. There were no significant differences in muscle pH and lightness between control and treated samples. T1 had the lowest redness (p<0.01), and higher cooking loss and water holding capacity than control and T2 (p<0.05). T1 and T3 exhibited lower shear force values than control (p<0.05). Total protein solubility did not differ significantly between T1 and control, but T1 had less myofibrillar protein solubility than control and T2 (p<0.001). The degradation of myosin heavy chain in T1 and T3 was observed. This degradation of myofibrillar protein suggests that Sarcodon aspratus extract could influence tenderization. These results show that aqueous extract of Sarcodon aspratus extract actively affect the tenderness of the bovine longissimus dorsi muscle.

Functional Properties and Antioxidant Effects of Solanum nigrum-Ethanol Extract (까마중-에탄올 추출물의 기능적 특성과 항산화 효과)

  • Functional properties of Solanium nigrum-ethanol extract were investigated, nitrite scavenging ability(NSA) and antioxidant activities based on thiobarbituric acid(TBA) value were measured. The contents of potassium in fruit and root, calcium in leaf were the highest mineral components in each parts of Solanium nigrum. Total aromatics contents(TAC) was order of fruit>root>leaf, total flavonoid contents(TFC) in leaf was 6 and 10 times, total phenolic compounds contents(TPC) in leaf was 15 and 30 times of those in fruit and root, respectively, and TFC was high with TPC increase. NSA of leaf-ethanol extract was 61.9% on pH 1.2, 53.5% on pH 3.0, 54.8% on pH 4.0 and 14.3% on pH 6.0, where as NSA of root and fruit-ethanol were considerably low to 3.5~7.9% over pH 1.2~6.0. TBA value of soybean oil with the dosage of leaf-extract showed few differences from control within 3 days, but it fairly decreased with considerable antioxidant effect to 47.6% of the control in 8 days.

Characteristics of Gouda Cheese Supplemented with Chili Pepper Extract Microcapsules

  • In this study, the physicochemical and sensory properties of Gouda cheese supplemented with microcapsules of chili pepper extract were evaluated. Microcapsules of pepper extract were prepared by coacervation technique using gum acacia-gelatin wall and chili pepper oil core. Changes in pH, lactic acid bacteria (LAB) population, and free amino acid (FAA) content after supplementation of Gouda cheese with chili pepper capsules were monitored during ripening. Texture and sensory characteristics of the Gouda cheese ripened for 6 months were evaluated. The supplementation of pepper extract microcapsules (0.5% or 1%, w/w) did not influence the pH values and LAB content of the Gouda cheese (p<0.05) during the ripening period. While the content of total FAA increased with the ripening process in all the cheese groups (p<0.05), no significant difference (p<0.05) in the content of total FAA was observed among the sample groups at each time point. The addition of pepper extract microcapsules (1%, w/w) to Gouda cheese significantly decreased hardness (p<0.05) and negatively affected sensory attributes in terms of taste and texture (p<0.05). The results demonstrated that supplementation with 0.5% pepper extract microcapsules could provide additional bioactive ingredients, along with maintenance of the quality of Gouda cheese.

The application of a nondestructive method to measure the acidity of Korean papers (한지의 산성도 측정을 위한 비파괴적 방법의 적용)

  • According to damage of papers by the chemical cause, papers become to acidify. Among the 3 kinds of method measuring the acidity of paper, one was nondestructive method measuring the surface of the paper by flat type electrode and the others were destructive methods measuring directly by cold water extract method and hot water extract method. In case of the cellulolytic cultural properties, the latter methods were not applied because those methods must bedissociated papers. To measure the paper acidity nondestructively, we investigated the correlation of the nondestructive method and the destructive methods. The conclusions are as follows. 1) In the relationship of the cold water extract method and the hot water extract method, It was indicated that the pH measured by the hot water extract method was high quality printing paper 0.08, rough printing paper 0.13, and Korean paper 0.29 higher than that by the cold water extract method.2) In the relationship of the cold water extract method and the surface measurement method, It showed that the pH value measured by the cold water extract method was high quality printing paper 1.86, rough printing paper 0.80,and Korean paper 0.58 higher than value that by the surface measurement.3) In the relationship of the hot water extract method and the surface measurement method, It showed that the pH value measured by the hot ABSTRACT water extract method was high quality printing paper 1.78, rough printing paper 0.66, and Korean paper 0.29 higher than that by the surface measurement. From the above-mentioned results, the pH value measured by the surface measurement was need to high about 1.78∼1.86 in high quality printing paper, 0.66-0.80 in rough printing paper, and 0.29∼0.58 in Korean paper and the surface measurement with flat type electrode was very available to measure the acidity of Korean papers actually.

Colorant Extracting and Its Storage Stability from Sorghum (수수에서의 색소 추출과 저장 안정성)

  • Extraction Efficiency of colorants from sorghum and its storage stability were examined according to the various extracting and storage conditions in this study. The obtained results were as follows ; The absorbance values of extracted colorants were increased with increasing extract time and temperature. The extraction at pH 4 extract was most efficient among the various pH conditions. In the juice extractor system, the amount of extracted colorant was more in distilled water pre-treatment than pH 5, but it was more in pH 5 in the long time pre-treatment above 20 hour. The color of extract solutions changed through variation of the pH. Its color changed from light yellow to heavy yellow finally red ton by pH increasing. The Methionine addition gave an effect on the storage stability of colorant solution and then had better storage stability. And so it delayed the color change up to storge period 18th day and the stabilizing effect was revealed in order of Methionine 10mmol-addition>20mmol-addtion>non-addtion.

Kinetic Study on the Color Deterioration of Crude Anthocyanin Extract from Schizandra Fruit (Schizandra chinensis fructus) (오미자 색소 추출물의 가열 변색에 대한 속도론적 연구)

  • The effects of temperature and pH on color deterioration of anthocyanin in Schizandra fruit (Schizandra chinensis fructus) were determined with temperature range of $80{\sim}100^{\circ}C$ and pH range of $2.0{\sim}5.0$. Browning index was used as an index of color deterioration of crude anthocyanin extract from Schizandra fruit. As pH of crude anthocyanin extract was increased, color deterioration was accelerated, showing pH-dependency of thermal stability of anthocyanin extract from Schizandra fruit. Anthocyanin degradation could be modeled as a second-order rate reaction, with rate of $3.2{\times}10^{-3}\;h^{-1}\;(pH\;2.0){\sim}4.1{\times}10^{-3}\;h^{-1}\;(pH\;5.0)\;at\;100^{\circ}C$. Temperature dependence of deterioration was described by the Arrhenius relationship. Activation energies for pH $2.0{\sim}5.0$ ranged from $24.87{\sim}42.54\;kJ/mol^{-1}$.
