The purpose of this survey was to investigate the status of dietitians' nutrition management in school lunch program. Questionaries were distributed to 233 dietitians of elementary schools and 10 dietitians of high schools in Seoul and Incheon provinces. The statistical analysis of data was completed using SPSS program. The results were summarized as follows : 78.4% of Seoul and 48.6% of Incheon among the whole students were served their meals in the classrooms. 70.0% of dietitians were 30-39 years old and 31.4% had a career less 5-7 years old. The standardized recipe was used in 71.6% of total schools but not effectively in both provinces. The students' nutrition and preferences were the very first to be considered in menu planning in both provinces. The nutrient value of meals was evaluated by the dietitians in most schools. Nutrition surveys of the meals which students are eating at home were surveyed in 27.3% of Seoul and 53.2% of Incheon. Students' preferences were studied regularly in 65.4% of Seoul and 78.9% of Incheon, and students evaluations of meals were carried out by the school lunch program in 74.6% of Seoul, and 68.8% of Incheon. In 49.6% of Seoul and 53.2% of Incheon, leftover foods were measured for each meal. 38.5% of Seoul used per a week and 48.6% of Incheon used per 2-3 week the processed foodstuffs. In 17.2% of Seoul and 25.2% of Incheon, nutrition education was executed by direct education, but educational methods were done mostly by letterssent to students' parents(76.9% of Seoul and 85.3% of Incheon). Evaluation studies on nutrition management, and nutrition education were hardly correlated to the dietitian's career and educational level. The number of meals served by the school lunch program have no related with the students' preferences. For improvement of nutrition management of school lunch program, it is necessary to develop new nutrition management model and nutrition education program.
The principal objective of this study was to evaluate the perceived management performance and importance level of nutrition teachers by school administrators in the Chonbuk area. Self-administered questionnaires were collected from 142 school administrators. Statistical data analysis was completed using SPSS v. 12.0. Approximately 74.6% of the subjects were men. About 37% of subjects were principals, 33% were vice principals, and 35% were administrative directors, with over 60% aged 40~50 years(p<0.05). Among the 142 schools evaluated, 82.7% were located in urban areas and 17.3% were in rural areas. About 98% of the schools served meals in the dining room(p<0.05). Approximately 68% of the schools employed nutrition teachers and 33.4% had school dietitians(p<0.001). The result indicated that the overall importance level(4.24) was higher than the performance level(3.97)(p<0.001). In a survey of the degree of task performance by nutrition teachers, administrators regarded sanitation management was evaluated as the most important performance parameter(4.49), other management attributes as very important parameters(4.41), with nutrition counseling being much less important(2.76) and meal service being least important(3.29; except for classroom teachers). According to the title of the subjects, evaluations of administrative directors were lower than evaluations of principals and the vice principals. The results indicate that nutrition teachers should not only have meal service management as their main duty, but should also be involved in constructing a life-long health management system for students and teachers by conducting nutrition education and counseling, and should be active in the development of nutrition education programs and in the duties of sanitation management of school meals.
In this study, we want to investigate the nutrition knowledge, eating habits, and food intake patterns of adults who have a strong preference for sugary snacks or sugary drinks. In this study, 83 students, or 33.1% of the 267 adults, were found to belong to the sugary food group, and the results of the survey were as follows. In terms of the level of eating habits, both male and female adults see significant differences among the groups. In the question of the regularity of the three meals, the quality of breakfast, the balance of meals, the level of consumption of green vegetables, meat, fish and milk, the number of sugars was low, and the number of sugars, instant foods, ham and sausages was high. In terms of nutritional knowledge, both male and female adults had a low number of sugary foods, and there were significant differences among the groups. In terms of the frequency of food intake, the frequency of eating rice and mixed grain rice was low, and the frequency of eating ramen and bread was high.

Studies about nutritional status, dietary behaviors and food preferrence as well as health status were performed to 110 homo-living elderly in rural area, Asan. The results obtained by questionnaires and interviews for 24-hr dietary recall were as follows. They were 68.6 years of average age. The weights were 53.8kg and 51.4kg of male and female, respectively and BMI 22.0 and 23.5. Their prevalence of obesity and high blood pressure were 65.5% and 60.5%, respectively, which seemed to be less than ones in large cities. More than 50% of the elderly thought their health as good or so-so. Physical health conditions by check list were indicated as 2.26 points, which meant the listed physical symptoms observed seldom(3pts) to sometimes(2pts). Evaluations on food frequency and seasoning tendency resulted in superior quality of female elderly's meals to that of male ones. Average daily intake of energy, protein, vitamin A, riboflavin and ascorbic acid of the elderly in rural area were lower than Korean RDA for the aged $60{\sim}69$ and riboflavin was found to be the least sufficient nutrient. Their monthly expenditure, meal-accompany and skipped meals were significantly related to daily nutrient intake.

Students preferences were studied regularly in 60% of "Previously" and 48.3% of "Newly" and students evaluations of meals served by the school lunch program in 52.7% of "Previously" and 34.5% of "Newly". In 92.7% of "Previously" and 72.4% of "Newly", nutrition education was executed but was done mostly by letterssent to students' parents(in about 95% of schools), with only 11.8% of schools educating within in their classrooms. There were few instructional media for nutrition education. The most of them used notice boards(48.0% of "Previously" and 41.6% of "Newly") . Evaluation studies on nutrition management, and nutrition education were hardly correlated to the dietitian's career and educational level. They were also not correlated to the number of meals served by the school lunch program. In conclusion, the status of the nutrition management in the elementary school lunch program was not good and schools that had started the school lunch program before ("Previously") and after 1996(Mewly") were not that different. It appears that most of the dietitians from elementary schools started the school lunch program before 1996 have followed the nutrition management method established in these schools. The sound dietary habit is formed in childhood, which is basic foundation for keeping health. The school foodservice is practiced to provide proper nutritions, to establish the sound dietary habit. Continuous evaluation and improvement are necessary to operate school foodservice effectively. This study was conducted to evaluate the quality of meals served in elementary school based on nutrient content, food diversity. A questionnaire was mailed to dietitian of each school requested for menus of one week. Menus served in 77 schools from each province and major cities in Korea were analyzed. The results of this study were summarized as follows; Compared to 1/3 of RDA for children, many schools provide lower amounts of energy, calcium and Vitamin A. Proportions of energy from carbohydrate, protein and fat were 59.64%, 17.43% and 20.11%, respectively and were not significantly different by the area, the foodservice system, and the number of persons served. NAR(nutrient adequacy ratio) were lowest for calcium(0.67) and Vitamin A(0.65). MAR(mean adequacy ratio) was 0.83. The results of comparison of NAR and MAR by the area, the foodservice system, and the number of persons served were similar to those of nutrient contents. Comparing foods served by the nutrient density were different by nutrient contents, NAR and MAR. Mean nutrient density per meal were higher in large cities than in small cities and rural area, in conventional than in commissary foodservice system. Mean number of dishes and food items per meal were 5.86 and 19.87, respectively. The mean of total quantity of each food group per meal was 352g. The mean of total quantity of each food group per meal were higher in small cities and rural area than in large cities, in commissary than in conventional foodservice system. This study is based only on served menus, and the evaluations of meals based on actual consumption of children are needed. These results suggest that in order to improve the quality of school food service, realistic standard should be suggested and basic study should be done continuously.
This study was designed to investigate body image, objective and subjective measurements of body size and shape, eating behavior, and weight control practices in 650 Korean adolescent girls; 500 of the subjects were 14 years old and enrolled in middle schools, while the remaining 150 were 17 years old and enrolled in high schools. Subjects responded anonymously to a self-administered questionnaire. The results showed that average height and weight of the subjects were 157cm and 49.5kg, respectively, while subjects ideal heights and weights averaged 164cm and 48kg, respectively. The ideal adult body heights and weights proposed by the subjects averaged 172cm and 55kg respectively. Over 50% of the subjects were dissatisfied with their body image; the degree of dissatisfaction with body image was higher in those who believed themselves to be fat. Most of the subjects wanted to lose weight and had tried to lose weight. Self-reported weight control practice methods included reducing food intake (31.9%), skipping meals (29.6%), exercise (25.8%), using slimming machines (6.9%), and using diet pills (5.1%). The heavier the subjects weight was, the greater the difference between the subjective and objective evaluations of body size. The body image scores of subjects who perceived themselves as fat were significantly lower than those of subjects who perceived themselves as normal or underweight. The difference between subjective and objective evaluations of body size, and the degree of obesity, were significantly higher in those subjects who had experience of weight control than those who had no experience of weight control. These results suggest that nutrition and health education programs for adolescent girls should be researched and implemented in order to establish a more realistic body image, positive habits in weight control, and healthful eating habits.
It is not surprising that senior centers are widely used nationwide as Korea becomes an aging society. This study attempts to figure out senior citizens' needs and evaluations of senior centers in terms of characteristics of their usage and spatial composition. A face to face interview using a questionnaire was conducted on 255 senior citizens who has been using senior centers located in Jangyu new city apartment housing complex. The questionnaire is composed of questions asking characteristics of their usage, evaluations of spatial composition, and respondents' demographic data. Findings are: First, it is found that many respondents visit senior centers everyday and spend 4 to 6 hours a day. Their main activities are meeting friends, taking hobbies, and dining. That is, senior centers play a pivotal role in daily lives of senior citizens. Such characteristics should be taken into account in space design when planning to build a future senior center; Second, it is found that senior centers play a role of auxiliary space for building their sense of belonging and familarity. It is found that furnitures in senior centers are worn out and safety measures are not sufficiently considered; Third, it is found that they highly evaluate flexible spacial composition that could be partitioned or extended depending on occasions even though they prefer independent space; Fourth, it is found that kitchen facilities are not large enough considering the fact that more that half of the respondents have their lunches in senior centers. Even though they do not cook for themselves kitchen space should be large enough for preparing meals simultaneously for a large number people.
This study analyzes important factors of foodservice in school through comparison of students' satisfaction of using foodservice in Korea and US in order to meet students' expectations. The survey was composed of 4 categories including menu, service, hygiene, and facility and it was carried out in both countries to evaluate satisfaction. First, comparison of satisfaction between two countries was made using t-test. Secondly, multiple regression was performed to identify factors affecting satisfaction. As a result Korean students were more satisfied than American students in all aspects. However, regardless of nationality, the top three factors affecting the students' satisfaction were the same. The predictors were food taste (Korean 0.375 and American 0.350), menu variety (Korean 0.305 and American 0.278), and service line (Korean 0.226 and American 0.192). Despite the similarity of the predicators, it can be concluded that the difference in satisfaction level between the two nationscan be explained by the approaches to create comfortable and acceptable changes in schools' foodservice. Korea has been increasing the foodservice quality based on their objectives to provide students comfortable and positive environment when eating nutritious meals. However, US have made their main objectives on making changes to decrease youth obesity. Foodservice improvements according to continuous evaluations and surveys are necessary in order to increase students' satisfaction.
The aim of this study was to evaluate the efficacy of red ginseng drinks as school meal drinks for 456 middle and high school students in Cheongdo-gun, North Gyeongsang Province. In preliminary studies, we focused on saponin with an efficacy of Rg 1 and Rg 2 in prepared red ginseng drinks. The health benefits and sensory characteristics were also investigated. For the frequency analysis, the satisfaction of the drinks as beverages serving as a school meal was relatively low, and the demand for fruit drinks was high. The result of sensory evaluations indicated a positive response of > 50.0% for the container packaging and design, daily intake, and tastes. Regarding the correlation analysis on red ginseng drinks, there were significant differences (p < 0.01) in the response to packaging (a daily intake) and design. In addition, health and learning benefits showed a very high correlation at the p < 0.01 significance level.
