아동의 기호식품섭취와 어린이기호식품정책과의 관련성 분석 (Relationship between the Intake of Children's Favorite Foods and Policy based on Special Act on Safety Control of Children's Dietary Life)

  • Objectives: This study examined the status of children's favorite foods intake and the relationship with the policy environment based on the Special Act on Safety Control of Children's Dietary Life for suggesting a supportive policy strategy. Methods: The subjects were 4th grade students (n=1,638) in elementary school from 45 schools collected from seven areas (Seoul, Daegu, Daejeon, Gyeonggi, Chungnam, Jeonbuk, and Gyeongnam). The children participated in a self-administered questionnaire survey in class under the supervision of the teacher. The questionnaire consisted of items, such as social demographic characteristics, frequency of intake of the children's favorite foods, and policy cognition. A t-test and ANOVA were applied to explore the relationship between the frequency of children's favorite foods intake and policy cognition. The survey was implemented from August 2016 to September 2016. Results: For the boys, the frequency of 'high-calorie low nutrient foods intake' (HCLN) was significantly higher than that of the girls (p<0.01). For the children who received information on their favorite foods from the internet, the frequency of HCLN was higher than the other sources (p<0.01). The time of TV viewing and computer usage, and smartphone usage was associated with a higher frequency of HCLN, and a lower healthy favorite food intake (all p<0.001). The intake frequency of healthy favorite foods indicated a positive correlation with the policy cognition, including policy perception, usefulness, necessity and buying intention, and educational experience. Conclusions: This study showed a correlation with the frequency of children's favorite foods intake and policy. In particular, the frequency of children's healthy favorite foods intake indicated a meaningful relationship with the policy than the frequency of HCLN. This study also found that the consumption of children's healthy favorite foods was positively correlated with the educational experience. To develop a supportive policy for a good dietary environment for children, there is a need to focus on how to collaborate with multiple levels of influences, such as the national level, school level, and family.

웹기반 정간보 사보 프로그램 설계 (Designing a Web-Based Jeongganbo Notation Program)

  • 최근 문화의 세계화와 K-컬처의 세계적인 유행은 한국의 전통문화를 더욱 발전시키고 알릴 수 있는 좋은 배경이 되고 있다. 그러나 한국의 전통음악에는 세종대왕이 개발한 정간보라는 우수한 기보법을 가지고 있음에도 불구하고 서양 기보법의 보편성으로 점차 사용되지 않고 있는 추세이다. 하지만 7차 교육과정 이후 초등 음악교육에서 정간보의 소개와 활용 비중이 늘어나고 있고, 이는 우리의 고유한 전통 기보법을 다시금 보편화 할 수 있는 좋은 기회가 되고 있다. 반면 기보법의 해석에 관한 연습 이외에 정간보 사보의 실습을 활성화하기 위해서는 더욱 다양한 도구가 필요할 것으로 보인다. 이에 본 연구는 설치나 다운로드가 없이 웹에서 정간보를 사보할 수 있는 웹 프로그램에 대한 설계를 연구하였다. 또한 정간보를 사보하는 과정에 사용자의 편의성을 증대하기 위해 자판을 건반처럼 활용하여 입력하는 방안과 입력된 음악 정보를 MIDI 기능을 통해 청취하고 파일로 저장할 수 있는 방법에 대해 설계하고 제안한다. 본 연구를 통해 누구나 쉽고 간단히 접근하여 실습하고 사보할 수 있는 웹 프로그램을 개발할 수 있으며, 이는 향후 국악의 기보 실습 혹은 전통음악 사보에 유용한 도구가 될 것으로 기대된다.

누리교육과정 기반 인공지능교육 콘텐츠 개발에 관한 기초연구 (A Basic Study on the Development of Artificial Intelligence Education Content Based on Nuri Curriculum)

  • 4차 산업의 혁신적인 발달과 코로나 팬데믹은 교육시장에 커다란 변화를 일으켜 급기야는 유치원을 비롯한 초중고교에 인공지능(AI)교육을 실행하도록 하였다. 그러나 미처 준비되지 않은 상황에서의 유아 AI 교육은 결과 중심적, 특별활동 형태로 이루어지고 있어 유아 AI 교육이란 무엇이며, AI 교육내용 규명과 이를 어떻게 누리교육과정에 접목하는가에 관한 연구의 필요성이 제기되었다. 이에 따라 본 연구에서는 문헌 연구를 통하여 유아 AI 교육을 정의하고 AI 교육내용을 규명하여 이를 누리교육과정에 편성하여 운영하도록 하였다. 분석 결과 유아 AI 교육은 컴퓨팅 사고력을 기반으로 디지털 역량을 함양하는 것을 목적으로 이루어져야 하며, 컴퓨터, 인터넷, 프로그램을 AI 교육의 하위요소로 추출하였다. 이를 누리교육과정에 접목시키기 위해 두 가지 접근 방법을 제시하였다. 첫째는 설정된 세 개의 AI 교육내용을 각각 생활주제로 설정하여 그에 따른 하위요인을 선정하고 각각의 하위요인에 적합한 활동을 계획하여 시행하는 것이다. 둘째는 기존 누리 교육과정의 생활주제에 적합하게 AI 교육내용을 하위 교육활동 차원으로 전개하여 운영하는 것이다. 본 연구가 유아교육의 특성을 고려하고 누리교육과정에 편성되어 진정한 의미의 유아 AI 교육이 실현되기를 희망하며, 누리과정 5개 영역에 따른 AI 놀이 교육 프로그램에 대한 보다 많은 연구가 이루어지기를 희망하는 바이다.

온라인 멘토링이 자기주도학습 능력, 정서적 안정감, 학습효과에 미치는 영향 (The Effect of Online Mentoring on the Self-directed Learning Skills, Emotional Stability and Learning Effect)

  • 한국교육방송공사에서 초·중학생을 대상으로 학습 멘토링의 교육적 효과를 확인하기 위해, 학습 멘토링의 교육적 효과성 검사에 모두 참여한 425명의 학생을 대상으로 자기주도적 학습능력, 정서적 안정감, 학습효과를 분석하였다. 그 결과, 멘토링 서비스 기간, 방법, 횟수에 따른 교육적 효과는 통계적으로 유의미한 차이가 나타나지 않았고, 멘토링 시간에 따른 자기주도학습 능력에 통계적으로 유의미하게 차이가 있었다. 멘토에 대한 인식이 교육적 효과에 미치는 영향을 분석한 결과, 멘토에 대해 긍정적일수록 그리고 멘토 역할을 긍정적으로 생각할수록 자기주도학습 능력과 정서적 안정감이 높게 나타났다. 학습효과에 대해서는, 멘토링 만족도가 국어, 영어, 수학학습 효과에 모두 가장 큰 영향을 미치고 있었고. 멘토 역할은 국어와 수학에 영향을 미치고 있었다. 이러한 연구결과를 바탕으로 온라인 학습시 소외계층 학생들의 학습 격차를 줄이기 위한 더욱 효과적인 방법을 구안하고, EBS 학습 멘토링 사업을 지속적으로 추진할 수 있도록 해야할 것이다.

서울지역 일부 초등학생의 생활 습관병 가족력, 식품군 섭취 형태 및 활동량 평가 (The Family History of Chronic Diseases, Food Group Intakes, and Physical Activity Practices among School Children in Seoul, Korea)

  • 본 연구는 초등학교 $5{\sim}6$학년 아동의 식품군의 섭취 횟수 및 활동량을 조사하여 2005년 한국영양학회의 영양 섭취 기준에 따른 식사 구성안의 식품군 일일 권장 섭취 횟수와 비교하였으며, 또한 질병 가족력이 있는 아동의 식품군 섭취 횟수, 비만도, 활동량 등을 분석하여 질병 위험 요인을 조사하였다. 1. 남아의 경우 83.2% 정상 체중, 7.4% 경도 비만, 7.4% 중등도 비만, 2% 고도 비만으로 나타났고, 여아는 89.9% 정상 체중, 6.2% 경도 비만, 3.5% 중등도 비만, 0.5% 고도 비만으로 나타났다(p<0.05). 남아의 54%가 일일 $1{\sim}2$시간의 신체 활동을 하는 반면 여아의 대부분(80%)은 일일 1시간 미만의 신체 활동을 하는 것으로 조사되었다(p<0.05). 2. 성별에 따른 식품군 섭취 횟수는 채소군 에서만 유의적인 차이가 나타났으며(p<0.05), 일일 권장 섭취 횟수에 대한 순응도는 곡류군($4{\sim}5$회/일)에서 가장 높았으며, 어육류 군과 우유 군의 경우 순응도가 매우 낮았다. 성별에 따른 일일 고지방 스낵 섭취 횟수에는 차이가 없었으나(남아 32%, 여아 34%), 일일 고당질 스낵 섭취 횟수에는 유의적인 차이가 있었다(남아 24%, 여아 34% p<0.05). 3. 비만 가족력이 있는 아동의 경우 가족력이 없는 아동에 비해 비만 아동이 많았으며(p<0.05), 고당질 스낵(p<0.05)이나 고지방 스낵(p<0.05)을 매일 섭취하는 비율도 대조군에 비해 유의적으로 높았다(p<0.05). 조사된 주요 식품군 중 채소군과 고혈압 가족력의 상관성(p<0.05)을 제외하고는 생활습관병 가족력 유무에 따른 주요식품군 섭취에 유의적인 차이가 없는 것으로 나타났다. 우리나라는 날로 생활 습관병의 발병율이 높아지고 있으며, 그로 인한 경제적인 손실도 증가하고 있다. 생활 습관병은 일단 발병하면 치유가 어려우므로 미리 예방하는 것이 최선의 방법이다. 생활 습관병의 위험요인 중 식생활 및 신체 활동습관은 우리의 의지로 조절이 가능하며 초등학교 5, 6학년은 특히 본인의 의지에 의해 식품을 선택할 수 있는 시기이므로 이 시기의 효과적인 영양교육은 매우 중요하다. 따라서 다양한 식품을 선택하고 균형 있는 식생활을 위한 영양섭취 기준과 식사 구성안에 대한 영양 교육이 필요하며, 특히 당뇨병이나 비만 가족력이 있는 아동에 대한 체계적인 건강 및 영양 관리가 한국인의 생활 습관병의 발병 위험을 줄이는데 도움이 될 것으로 사려된다.

중학교용 에너지 교육 자료 개발 연구 (A Study on Development of Energy Education Materials for Middle School Students)

  • Our country has been consuming a huge amount of energy in the course of industrialization and its demand is expected to increase enormously in the future. However, the deposits of energy resources are so limited that the settlement of energy problem comes up the essential subject. To solve the energy problem, it is requested that new resources to gain energy stably should be developed and also energy should be economized and used effectively. The effective use of energy and an the wisdom of economy in energy are requested to everybody and these things should be habitualized from very young age through education. Nevertheless, almost every school in our country hasn’t been concerned about energy education. Even though they have a concern, they are very short of the energy education materials and the quality of the materials is not so good. Therefore it is very meaningful to the settlement of energy problem of the country to make the students who will lead our country to make the students who will lead our country in the future realize the seriousness of energy problem and to provide them the necessary knowledge and methods to solve this problem so that they practice those things in everyday life. Having these necessities, this research, supported by The Korea Energy Management Corporation(KEMCO), was performed for 8 months from April 17, 1994 to December 17, 1994. Many peoples participated in this study such as 30 staffs of researchers and authors, 5 staffs of photographers and illustrators, and 3 VCR program producers developing an energy education material set for middle school students that includes a printed material for student, a diskette for computer simulation, a teacher's guidebook, VCR material and its guidebook. The following main development direction was established : First, the material for student should be consisted of units that let students know the seriousness of energy problem. Second, the focus should be put on the necessary method and practice to economize energy actually in real life based on the basic knowledge learned in elementary school. Third, material for student should be consisted of modules to be student activity-oriented teaching-learning rather than lecture-oriented one. The activity, to maximize student's interests, should be presented in various forms such as experiments, investigation, play, data interpretation, computer simulation, visits, expression and appreciation, etc. To develop the energy education materials for middle school students, a research plan was made first. After literature review about domestic and foreign energy education materials, several research trips home and abroad, and discussion meetings, the basic theory of energy education such as the principle, objective, contents, teaching-learning method, and evaluation method was established. Material for student was developed through the following procedures : The activities in the existing energy education materials were analysed and were divided into four categories related to energy using places of home, school, community, and country, and which were again divided into three categories related to time of past, present, and future, Considering these division, nine modules which are structure units of material for student were chosen, Each module comprises 2-4 activities. Totally 31 activities were designed in this way. The syllabi were made out for each activity and writing was asked for to experts related to each activity after several discussions and revision. To complement the draft, another several discussions and revision were also made on it and then pictures and illustrations were asked for. All these procedures complete the material for student, titled ; Energy Inquiry of Middle School Students', which totals 129 pages and is all in color. As the manuscript of material for student was fixed, writing for teacher's guidebook was asked for to the same writers. The draft of teacher's guidebook was also complemented through the several concentrated works and discussions. Teacher's guidebook focused on the teaching-learning principle and methods of energy education and on the concrete instruction cases for effective instruction of material for student. It is organized with two parts : the one is 'general outline' which introduces theoretical contents and the other is 'details' which are practically helpful to teaching-learning. It is totally 131 pages including both 'general outline' and 'details'. The VCR material and its guidebook consist of contents that cultivate the good attitude trying to economize energy and raise student's interests with a purpose of strong motivation to recognize the necessity of economy and practice it. After establishing development direction of VCR material through discussion meetings and research trips, its script was made by relevant experts. Then the script was also reviewed two times. The drafted VCR material made by a video material developing expert was examined and modified by previews twice. After completion of VCR material, the VCR guidebook was made. All these procedures led to the development of VCR material which runs 20 minutes in VHS type. The VCR guidebook shows a production purpose of the program, structure of contents, evaluation methods, and contents of the program in detail to give help to instructors when they use this VCR material, When these energy education materials are used, it is desirable that the VCR material should be presented first to induce student's motive, and then material for student is introduced Since the material for student is composed of activity-oriented modules and each module is independent one another in general, and each activity is, too. the necessary module or activity can be chosen and utilized in any order according to school or class conditions. This energy education materials will contribute to the development of student's ability to solve energy problem in everyday life and teacher's ability to teach the fundamental knowledge and method in solving energy problem.

A Longitudinal Study on the Parenting Effectiveness of Multicultural Families and Self-esteem and Achievement Motivation of Multicultural Adolescents: Verification of Autoregressive Cross-lagged Model

  • 본 연구의 목적은 다문화가정 부모의 부모효능감과 다문화청소년의 자아존중감 및 성취동기 간의 관계를 종단적으로 분석하는 것이다. 연구자료는 다문화청소년패널연구(MAPS) 데이터를 사용하였다. 2011년 1차(초등학교 4학년)에서 2016년 6차(중학교 3학년)까지 총 6차년에 걸친 데이터 중, 본 연구에서는 2012년(2차, 초등학교 5학년), 2014년(4차, 중학교 1학년), 2016년(6차, 중학교 3학년) 자료를 분석대상으로 하였다. 다문화가정 부모의 부모효능감과 다문화청소년의 자아존중감 및 성취동기 간의 종단적 관계를 살펴보기 위해 자기회귀교차지연 모형을 적용한 분석결과는 다음과 같다. 첫째, 다문화가정 부모의 부모효능감, 다문화청소년의 자아존중감과 성취동기의 자기회귀효과는 각각 시간의 흐름에도 지속적인 정(+)적인 영향을 미치는 것으로 나타났다. 둘째, 이전 시점의 다문화가정 부모의 부모효능감은 이후 시점의 다문화청소년의 자아존중감과 성취동기에 미치는 교차지연효과는 정(+)적인 방향으로 유의한 영향을 미치는 것으로 확인되었다. 셋째, 이전 시점의 다문화청소년의 자아존중감은 이후 시점의 다문화청소년의 성취동기에 미치는 교차지연효과는 정(+)적인 방향으로 유의한 영향을 미치는 것으로 확인되었다. 넷째, 다문화가정 부모의 부모효능감은 다문화청소년의 성취동기에 미치는 교차지연효과의 영향력이 다문화청소년의 자아존중감이 성취동기에 미치는 교차지연효과의 영향력보다 더 큰 것으로 나타났다. 본 연구는 다문화가정 부모의 부모효능감과 다문화청소년의 자아존중감 및 성취동기 간의 관계를 확인하기 위해 종단적 자료를 사용하여 시간의 흐름에 따른 세 변인 간의 인과적 방향성을 검증하는데 연구의 의의가 있다.

  • This article is an attempt to explain, at least in part, the contemporary Korean women's consciousness of Western Dreasses. As time changes, the role of clothing undergoes varisous transitions, while values and ways of life are constantly in change. It is, therefore, proper and appropriate to recognize as among the major aspects of social psychology such phenomenon as interests, understanding of clothing, the choice of a dress, and attitudes toward clothing, etc. The purpose of this study is to discover problems concerning and their clothing and their solutions, by means of a surveying approach. The method of research used is based upon questionares distributed to parents of first-year pupils in elementary schools and to female clerks working in offices, covering the period from August through October, 1976. The number of the questionares distrubuted totalled 600, and 526 were returned to the research to be utilized for analysis. The contents of the survey included such things as values concerning clothing, kinds of clothing and their practical use, the selection of clothing and the method of purchase, fashions, etc. The classification of aquisition are self-made clothing, clothing made to order and ready-made materials. It is composed of 25 items, including affirmative reasons as well as negative ones. The processing of the material returned was made by using the computer, and based upon classifications such as ages, monthly income, occupations; thus diagraming the result in percentages. The conclusion made and the improvements proposed are as follows: 1. The values of clothing were placed on the expression of the wearer's personality (32.7) and on eauty(28. 6%). The lower age group places is stress upon the expression of personality, while the higher age group stresses beauty. About 50% of wearers are contented with their clothing, their clothing, the rest of whom them indicating their dissatisfaction with what they wear. As to designs at the time of selection, about 46% indicated their preference of personal expression, 31.8% on usefulness. In selecting material, practicality is emphasized; in selecting patterns, single color is preferred. In short, personal expression and esthetic values are primary, with consideration of practicality in mind. 2. The classification of clothing according to their uses indicates the highest numbers in normal wear (home wears) and clothings to be worn outside home. As to evening dresses, (party dress) only one or two articles were checked by many, and no such article was clamed to be possessed by most. The highest ratio of wearing was shown in the case of home wear (47.3%) and clothing to be worn outside the home, which is 55.8%. The budget for one article of clothing was greatest in the case of home wear, and clothing worn outside the home. Many used both kinds of articles for the same purpose. It is desirable, therefore, that the kinds of clothing should be varied according to the purpose for which they are worn, and that clothing appropriate for that purpose should be worn. 3. The motivation for purchasing clothing was highly chosen in the item of seasonal change, which was 55.7%; Clothing deliberately made was indicated by 45.2%. In the mothods of purchasing clothing, clothing made to order and ready-made was indicated by 44.4%, which is the highest; Clothing made to order was 25.4%, and self-sewing was 1.1%, which is the lowest. (1) In the case of self-sewing, "I like it but it is very hard," was checked by 43.6%; "It is so difficult that I cannot wear such clothing" was checked by 13.3%. From these, we can conclude that the questionees are willing to make clothing by themselves, but techniques involved in sewing and at her problems involved in the skill are complicated but when those problems are eliminated there is a possibility for practice. The response checked by questionees concerning the self-sewing was, "It's economical", which is a clear indication that many questionees are positive for self-sewing. It is generally believed that ready-made clothing is cheaper, but it is not necessarily so. In consideration of the quality of clothing, self-sewing is a necessity, and it is desirable that it should be encouraged. (3) Problems involved in ready-made clothing, such as designs, skills, size (fitting) should be eliminated. When these problems are scientifically gotten rid of, it is possible that affirmative returns will be expected. Affirmative responses such as "Ready-made clothing is economical," "You can select there on the spot," are good signs that many women expect to wear ready-made clothing. It is in this sense that the prospect for ready-made clothing is brighter when much development for ready-made clothing is on the way. 4. Much concern for fashion are checked in such item of questions as "Fashionable clothing in the show window," "Clothes worn by women." The first item was checked by 50.1 %, and the second was checked by 48.6%. The reason for following fashion is "Because many people wear them," which was indicated by 30.4%. The reason for not following fashion is "It is too expensive," which was checked by 29.6%. The 26.2% of the answers indicated that "Fashionable clothing is devoid of personality," The influences of fashion over the development of fashion over the development of clothing are two-fold: Esthetic and active. It is not to be deniable that people follow fashion more or less. 1978.9>

  • 이 연구는 중등 기술$\cdot$가정교과에서의 교육내용 적정성을 평가하기 위하여, 우선은 교육내용 적정성의 개념을 명료화하고, 이러한 적정성을 교과에서 평가하기 위한 준거를 선행연구를 근거로 하여 구안하였다 즉, 중등 기술$\cdot$가정 교과에서는 교과내용의 학습량, 내용의 난이도, 내용의 타당도, 내용의 연계 등의 4가지 준거를 교육내용의 적정성을 평가하는 준거틀로 설정하고, 적정성 평가에 대한 실증적인 자료를 수집하기 위하여, 학생 교사$\cdot$교수를 대상으로 한 전국적인 단위의 실태조사를 실시하였다. 그 결과, 첫째, 교육내용의 학습량에 대한 평가에서는 6차 교육과정에 비하여 $30\%$가량 감소하였다는 응답이 가장 맡았으나, 중학교 교사들은 '활동 중심인 교과 성격상 수업시수가 부족'하다는 이유를 지적하면서, 기술·가정 수업시간에 배우는 학습량이 '맡다'고 인지하고 있는 것으로 나타났다. 둘째, 교육내용의 난이도에 대한 평가는 전체적으로 '적절하다'는 응답(교사)과 '어렵다'(학생)라는 응답으로 서로 차이가 나타났다. 구체적으로 학생의 이해도가 떨어지는 단원은 중등의 기술 영역에서 중학교의 '제도의 기초', '기계의 이해' 단원, '전기$\cdot$전자 기술', '에너지와 수송기술' 단원이고, 가정 영역에서는 고등학교의 '가정생활의 설계' 단원만이 학생들의 이해정도가 떨어지는 단원으로 나타났다. 세째, 내용의 타당성과 관련해서는 기술·가정과의 교육목표를 고려할 때 중요하지 않다고 응답한 교육내용은 '제도의 기초', '컴퓨터와 정보처리', '자원의 관리와 환경'의 단원으로 나타났다. 넷째, 교육내용의 연계성은 교과 명칭에 대한 조사를 조사항목으로 설정하여 조사를 실시하였는데, 교사는 '기술$\cdot$가정으로 그대로 둔다'의 응답이 가장 많았고, 사대 교수들은 '기술$\cdot$가정으로 그대로 둔다'는 의견$(45.5\%)$보다, 초등 실과교과와의 연계성 확보의 차원에서 제3의 명칭으로의 개칭을 원하는 의견이 다소 많은 것으로$(50.5\%)$ 나타났다. 후속연구에서는, 이 연구에서 제시한 교육내용의 적정성 평가를 위한 준거틀에 대한 분석적이고 비판적인 검토를 통하여, 교과의 성격과 목표에 적합하게 평가 준거틀이 수정$\cdot$보완되고, 이러한 수정된 평가틀에 의하여 적정성 평가 연구가 지속되어, 우리 교과의 교육과정의 질 관리가 체계적으로 이루어져야 할 것이다.

전남지역 학교급식의 위생관리 실태 (Performance Status of Sanitary Management of School Food Service in the Jeonnam Area)

  • This study analyzed the effects of nutrition technicians' hygiene education on cooking workers' performance of hygiene management in order to ensure the security of school meals. The situation of cooking workers' disposition in subject schools was elementary school(51.1%) and middle school(48.9%) and the type of meals was rural area type(54.2%), urban type(36.5%). and island and isolated area type(9.3%). The methods of meals management were single cooking(88.2%) and joint cooking and management(11.8%). The type of distributing meals was distributing in a dining room(93.5%), in a classroom(3.7%), and in both dining room and classroom(2.8%). Nutrition technicians' employment form included regular(53.5%) and daily(88.2%). Their education was junior college graduate(50.2%), university graduate(44.8%). and graduate school students(5.0%). Cooking workers' employment form included daily(88.2%) and regular (11.1%). suggesting that most were regular. Most cooking workers(77.4%) had at least high school certificate. Regarding the situation of cooking workers' disposition in subject schools, the number of student per one cooking worker was found as 91-120(37.2%), 61-90(22.6%). 60 and under(21.l %). 121-15006.7%). and 151 and over(2.5%). Cooking workers' level of performance of hygiene management was post-working stage(66.37/75 marks), pre-working stage(64.22/75 marks). and working stage(20.34/25 marks), The counting of meals articles in a pre-working stage(20.34/25 marks). temperature and required time in a working stage(18.78/25 marks), and machinery equipment and hygiene in a pre-working stage(21.40/25 marks) showed lowest of performance, which suggest poor service of hygiene. Cooking workers' performance of hygiene management by working stage showed the significant difference with school class(p<.001), type of schools with meals(p<.05). state of cooking workers' employment(p<.001), and cooking worker's disposition(p<.05). A working stage showed the significant difference with type of schools with meals(p<.05). A post-working stage showed the significant difference according to type of schools with meals(p<.05), and the methods of meals management(p<.05), and cooking workers' disposition(p<.05). In the execution of hygiene education, individual hygiene was highest(94.8%), followed by the management of machinery equipment and tools(89.7%), food poisoning and microorganism(94.7%), and the method of food treatment(76.4%). A yearly plan of hygiene education included established(83.9%) and not established(l6.1%). Regular education included not executed(25.1%), 2-3 times a month(l6.1%), and more than 4 a month(4.0%) and occasional education was not executed(57.0%), 1-3 times a month(26.3%), and more than 4 a month(l5.7%). In the methods for hygiene education, oral education(95.7%) was used most, followed by demonstration(10.5%), poster/photo(10.5%), video/slide(3.7%), and computer(3.7%). Frequency of improvement and complement of hygiene education included once a month(56.3%), once a year(20.7%), by quarter(l1.5%), and every six months(1l.5%). Newspaper was used most in materials of hygiene education, followed by internet, TV, nutrition technician's reeducation, information exchange between members, educational office's training, and reference book, and educational office's material. and symposium. Cooking workers' assessment of the effect of hygiene education was conducted through observation(56.8%), check table(l5.2%), question(l4.0%), and examination(14.0%). The reason of cooking workers' low level of performance included habitual custom(53.9%), lack of understanding(20.4%), overwork(l4.6%), and lack of knowledge(l1.l%) and the reason of difficulty in hygiene education included lack of time(55.3%), lack of understanding(27.6%), lack of knowledge and information(8.7%), and lack of budget(48.0%).
