Effects of Clay Minerals Treatment on the Physicochemical Characteristics and Growth Inhibition of Microoganism of Some Foods (몇 가지 식품의 이화학적 특성 및 균증식 억제에 대한 점토광물 처리의 영향)

  • To investigate potential characteristics of clay minerals (illite, kaolin, zeolite, vermiculite, and bentonite) for food industry application, antioxidative properties of clay minerals, electron-donating ability (EDA), peroxide value (POV), and thiobabituric acid (TBA) were measured, and antimicrobial activity against several food spoilage microorganisms were evaluated by minimum inhibition concentration (MIC) method. Changes in components by cooking clay minerals added to stored rice were measured by GC-MS. DPPH (1,1-diphenyl-2-picrylhydrazyl) analysis results revealed bentonite has strongest EDA at 20.6%. Antioxidant activities measured based on POV were similar to DPPH results. Induction period of linoleic acid with vermiculite was longest among. TBA results revealed zeolite hasstrongest antioxidant ability. Growth inhibition against E. coli and S. aureuswas observed in illite, vermiculite, and zeolite. Aroma components indicated decrease in hex anal, pent anal, non anal, linoleate, stearic acid, and oleic acid when clay minerals were added to stored rice. These results indicate that several clay minerals have antioxidative and antimicrobial abilities and improve flavor profiles in stored rice.

Antioxidative and Antimicrobial Activities of Medicinal Plant Extracts for Screening Phytobiotic Material (Phytobiotic소재 선발을 위한 약용식물 추출물의 항산화 및 항균 활성)

  • For this study, plant material for development of phytobiotics (feed additives made with plant extract) was screened. Among hot-water extracts of 9 medicinal plants, Fallopia japonin showed the highest antioxidative activity; the electron donating ability (EDA) and nitrite scavenging ability were 86.9% and 92.7%, respectively. Also, F. japonica had the antimicrobial activity for Pseudomonas aeruginora, Escherichia coli, Bacillus cereus, Salmonella Typhimurium, Listeria monocytogenes, Klebsiella pneumoniae, Staphyzococcus aureus. Specially, antimicrobial activity of F. japonica against K. pneumoniae, and S. aureus was vet strong. $IC_{50}$ of F. japonica against K. pneumoniae, and S. aureus was 6.24 mg/mL and 1.8 mg/mL respectively. These results suggested that F. japonica was a candidate for a phytobiotic material.

Use of Fraxnius rhynchophylla H.ance bark as antioxidant (물푸레나무 수피의 항산화 효과)

  • This study reviewed antioxidants and various enzymic physiological functions of Korean ash tree extractives that contains coumarine and ester component in order to examine the practical possibility of those materials as pharmaceutical and cosmetic additive applications. first, in the experiment of enzymic physiological activity, the electron donating ability showed 62.00% at 1ppm and over 90% at 10ppm or higher concentration, and the pseudo SOD ability showed 39% at the concentration of 2000ppm and 84.73% at the concentration of 5000ppm. Second, the inhibition activity of xanthine oxidase showed a relatively low inhibition effect of 45.57% at 200ppm, and the inhibition effect of tyrosinase showed 57.51% at 2000ppm. However, it showed a very low inhibition effect at the concentration of 500ppm or less. Third, the lipid oxidation, when Cu$\^$2+/ion was used as an oxidation accelerator, showed the inhibition effect of 82% at the concentration of 10ppm, and when Fe$\^$2+/ion was used also as the oxidation accelerator, it showed a very outstanding effect of 60% and more at 100ppm. Conclusively it is clear that the extracts of Korean ash tree bark can be used as cosmetic and pharmaceutical additive agents due to their excellent activities as antioxidant and enzymic physiological functions of it.

Antioxidative Activities of Syneilesis palmata Extracts (우산나물(Syneilesis palmata) 추출물의 항산화 활성)

  • This study was conducted to examine the antioxidant activities of the extracts from aerial parts and roots of Syneilesis palmata. The ethanol extract of aerial parts showed the highest content of flavonoid compounds (31.72 mg/g), and the ethanol extract of roots has the highest content of total polyphenol compounds (68.11 mg/g). The water extract of S. palmata roots showed the highest xanthine oxidase inhibition of 99.29% and the ethanol extract of aerial parts showed 98.48% at 1.0 mg/mL. The ethanol extract of roots showed the highest value of nitrite scavenging ability of 70.89% at pH 1.2, SOD-like activity of 13.06% and electron donating ability of 98.58% at 1.0 mg/mL concentration. The effect of tyrosinase inhibition was found at only the ethanol extracts of roots (9.33%). We found that root extracts contain abundance polyphenol compounds and their antioxidant activities were greater than those of the extracts of aerial part.

Physiological Activities of Gardeniae Fructus Extracts by Microwave-Assisted Extraction as Affected by Solvents (마이크로웨이브로 추출한 용매별 치자(Gardeniae Fructus) 추출물의 생리활성)

  • Gardeniae Fructus (GF) is a fruit of Gardenia jasminoides Ellis (Rubiaceae) which has been used in traditional medicine. It contains not only geniposide but also resveratrol, a kind of stilbene as a natural antioxidant. In this study, we investigated physiological activities of GF extracts by measuring electron donating ability (EDA), nitrite scavenging ability (NSA), super oxide dismutase (SOD)-like activity and inhibitory effect of tyrosinase activity (ITA). As a solvent, it was extracted with water, 50 and 100% ethanol using microwave. At the concentration of 6 mg/mL, EDA was the highest at 50% ethanol extract but the lowest at 100% ethanol extract, $96.43{\pm}0.25%\;and\;77.06{\pm}0.22%$ respectively. NSA showed the strongest activity at 50% ethanol extract like EDA (6 mg/mL: $75.26{\pm}0.28%$). ITAs were below 20% in all samples and their activities reduced according to increasing concentration. Likewise, SOD-like activities decreased with increasing concentration of extracts in all samples. In conclusion, GF extracts showed low SOD-like activities and ITAs but EDAs and NSAs were fairly high; especially EDA of 50% ethanol extract (6 mg/mL) was high as those of 0.1 and 1% L-ascorbic acid. Therefore the results suggest that GF extracts may be useful as potential sources of natural antioxidants.

Antioxidative and Antimicrobial Activities of Persimmon Leaf Tea and Green Tea (감잎차와 녹차의 항산화 및 항균 활성 비교)

  • In this study, the antioxidative and antimicrobial activities of persimmon leaf tea and green tea were assessed. The total polyphenol contents of green tea (0.5875 mg/mL) were slightly higher than those of persimmon leaf tea (0.3938 mg/mL). The electron-donating abilities (EDA) of persimmon leaf tea and green tea toward $\alpha$, $\alpha$-diphenyl-$\beta$-picyryl hydrazyl (DPPH) radical were $65.7{\pm}3.7%$ and $68.4{\pm}0.3%$, respectively, as compared to $68.6{\pm}1.1%$ for L-ascorbic acid (1%). The SOD-like activity of persimmon leaf tea ($29.7{\pm}0.9%$) was higher than that of green tea ($28.1{\pm}1.0%$). The nitrite scavenging ability was pH-dependent, highest at pH 1.2, and lowest at pH 6.0, in and persimmon leaf tea was found to exhibit more effective nitrite scavenging ability than green tea. The inhibitory effects of persimmon leaf tea and green tea against angiotensin I converting enzyme were $56.7{\pm}1.9%$ and $67.1{\pm}1.7%$, respectively. Persimmon leaf tea evidenced profound antimicrobial activities against Listeria monocytogenes, Staphylococcus aureus, Escherichia coil, and Salmonella typhimurium. These results clearly established the antioxidative and antimicrobial potency of persimmon leaf tea.

Studies on Deacidification of Premature Citrus Juices by Electrodialysis (전기투석에 의한 미숙온주밀감 주스의 탈산에 관한 연구)

  • Juice obtained from premature citrus fruits was deacidified by electrodialysis (ED), and its physicochemical and functional properties were evaluated. Total acidities decreased from 3.15 (Aug), 1.62 (Sep), and 1.45% (Oct) to 2.37 (Aug), 0.86 (Sep), and 0.74% (Oct) by electrodialysis for 100 min, respectively, whereas $^{\circ}Brix$ to acid ratio increased, and pH and color remained almost unchanged. Free sugar content of premature citrus juice remained almost unchanged, while organic acid content decreased significantly. Narirutin and hesperidin contents among flavonoids slightly, but not significantly, decreased. $K^+,\;PO_4\;^{2-},\;SO_42^-,\;and\;Cl^-$ contents decreased by ED, with $K^+$ content showing more than 60% decrease, while $Na^+$ content increased 2.5-3.5 times. Total polyphenol content and electron-donating ability decreased slightly by ED, while nitrite-scavenging ability remained almost constant. Sensory evaluation indicated juice (Sep) subjected to ED processing to $12^{\circ}Brix$ with sugar had the highest preference.

Physiologically Active Components and Antioxidant Capacity of Grapevine Leaves at Growth Stages (생육단계별 포도 잎의 생리활성 성분 및 항산화능)

  • This study was conducted to investigate physiologically active components and antioxidant capacity of grapevine leaves at growth stages. The leaves from two strains of grapevine, 'Campbell Early' and 'Rosario Bianco', were collected at five different growth stages (leafing, blossom, fruiting, coloring, and maturity). Total flavonoid content was higher in leafing stage than the other stages and gradually decreased during growing. Total phenol content was higher in 'Campbell Early' than in 'Rosario Bianco'. Hydroxyl radical scavenging ability increased in the leafing stage and decreased during growing. The electron donating ability was higher in 'Campbell Early' then 'Rosario Bianco' until blossom stage. Leaves from 'Campbell Early' showed higher total antioxidant capacity than those from 'Rosario Bianco'. According to the above results, grapevine leaves until the blossom stage would possess strong antioxidant activity by physiologically active components such as polyphenol compounds. Therefore, these results suggest that young grapevine leaves can be used as materials for the development of functional foods.

Antibacterial and Antioxidant Activities of Solvent Extracts from Different Parts of Hagocho (Prunella vulgaris) (하고초 부위별 용매추출물의 항균 및 항산화 활성)

  • This study was designed to investigate the effects of antioxidant and antibacterial activities of water, ethanol and methanol extracts from root, stem and flower stalk of Hagocho (Prunella vulgaris). The solvent extract yields from root were higher than those from stem and flower stalk, and water extract showed the highest extraction yield against ethanol and methanol extracts. The contents of total phenolic and flavonoid in ethanol extract were significantly higher in stem extract compared with those of root and flower stalk. In the case of water and methanol extracts, however, the contents were the highest in flower stalk. The electron donating ability and reducing power in all test groups were significantly increased in a dose-dependent manner, and antioxidant activities were the highest in methanol extract. In extracts from different parts of Hagocho, the antioxidant activity was the highest in flower stalk followed by stem and root. ABTS radical scavenging ability of water and methanol extracts was above 50% at $100\;{\mu}g/mL$ concentration. Antibacterial activities did not show significant differences depending on parts of Hagocho. However, antibacterial activity of ethanol extract was higher than those of other extracts.

Antioxidant Effects and Application as Natural Ingredients of Korean Sanguisorbae officinalis L. (한국산 지유(地楡)(Sanguisorbae officinalis L.)의 항산화 효과 및 천연소재로서의 활용방안)

  • Biological activities and application of Sanguisorbae officinalis L. were investigated. In the enzymological physiological activities, the electron donating ability (EDA) was 54.9% in 10 ppm and it was over 90% over 50 ppm and SOD-like activity was high as 65.4% in 1000 ppm, it was gradual increased. As inhibitory effect of xanthine oxidase, it was 17.9% in 200 ppm and little low as 36.9% in 500 ppm and inhibitory effect of tyrosinase. As the result of measuring the lipid oxidation, all the concentrations of medical ion treatments had the ability to keep it from acidification and metal ion blocking effects about the lipid oxidation promoting factors ($Fe^{2+}$ and $Cu^{2+}$), $Fe^{2+}$ was better than $Cu^{2+}$ and all concentrations of medical ion treatments was 40% in 50 ppm. When it was applied into normal skin-softener it showed safe effect so that we can expect that as the natural material of cosmetics.
