중국 고령친화형 HMR 제품 개발을 위한 소비자 요구도 (Consumer Needs for HMR Product Development of Chinese Elderly Consumers)

  • This study analyzed consumer needs for the development of elderly-friendly HMR products in China. In developing the products, items needed to be improved, types and packages of the necessary products, additional improvements and food preferences were investigated. According to the demographic characteristics of elderly Chinese consumers, these was analyzed as well. A survey was conducted on a total of 370 elderly people, and data analysis was performed using SPSS 18.0 program. Items related to product quality safety, such as "marks of origin by ingredient", "rich nutrients", "expansion of letter size of packaging", "rich nutrients" and "clear manufacturing date and expiration date", were required to develop HMR products. The types of products that should be developed were porridge and noodles, and the packaging types that should be developed were eco-friendly packaging and recycled packaging. In addition, "low-calorie HMR", "development of various seasonings", "use of eco-friendly food ingredients" and "HMR to digest easily" should be improved. The demand for product improvement and food preference showed significant differences according to the degree of education, monthly income and oral health. The results were intended to prepare basic data for setting the direction when developing elderly-friendly HMR.

고령자 대상 식생활 및 시판 고령친화식품 기호도 조사 - 서울시내 노인복지시설 이용자 중심으로 - (Preferences of Commercial Elderly-Friendly Foods among Elderly People at Senior Welfare Centers in Seoul)

  • This study was performed to investigate the perception and preferences regarding commercial universal design foods (UDF) made with different ingredients. A one-to-one interview was used for data collection and the survey was conducted on 41 elderly people (over age 65; males: 11, females: 30) attending senior welfare centers in Seoul. Twelve UDF samples were collected, which were widely sold in Japan. Majority of respondents prepared meals (53.7%) and ate alone (43.9%), respectively. The preferred cooking level of elderly food was "ready to eat (RTE)" (43.9%) or "ready to heat (RTH)" (43.9%) rather than fresh cut product. In most, the elderly had no problem with chewing-action (90.2%). Generally, food ingredients such as grain, meat, seafood and fruits showed higher preference than vegetable and nuts. Among 12 UDF samples, pumpkin gratin (4.17) and peach flavored jelly (4.27) showed higher preferences among tested samples on a 5-point facial hedonic scale. There were no significant differences in overall preferences of all samples by difficulty in terms of chewing and swallowing of respondents. Demi-glace sauce hamburger and pot sukiyaki were more preferred as age increased (p<0.05).

국내 시판 고령친화식품의 일반 및 영양 특성 (General and Nutritional Characterizations of Domestic Commercial Senior-friendly Foods)

  • The concern of senior-friendly foods has been increasing as the population of older in world grows at a rapid pace. This study was conducted to investigate general and nutrition characterization of domestic commercial senior-friendly foods (DC-SFF). The protein content of DC-SFF ranged from 1.1-14.6 g/100 g, which was 1.8-24.3% for male elderly people and 2.2-29.2% for female elderly people based on the daily recommended intake of protein. Total amino acid content of DC-SFF ranged from 1,038-14,539 mg/100 g. Salinity of DC-SFF ranged from not detected-1.9 g/100 g, which was 0.0-49.9% for elderly people based on the daily recommended intake of salinity. Mineral content of DC-SFF ranged from 11.0-414.4 mg/100 g calcium, 14.6-226.5 mg/100 g potassium, 1.9-30.4 mg/100 g magnesium and not detected-4.8 mg/100 g zinc. The fatty acid composition was mainly affected by main material and added oil.

  • 우리나라의 고령인구는 빠른 속도로 증가하고 있으나, 고령친화식품에 관한 연구는 부족한 실정이다. 따라서 본 연구는 현 고령자와 향후 고령친화식품 구매 가능성이 큰 중장년층을 대상으로 설문을 진행 및 분석하여 고령 친화 Home Meal Replacement(HMR) 식품개발의 기초자료를 제시하고자 하였다. 연구 결과 HMR 구매 경험은 중장년층이 높았으며, 간단 조리 후 먹는 음식을 선호하는 응답자가 많았고, 오프라인을 통한 구매 비율이 더 높게 나타났다. HMR 선택속성 요인은 5개로, 식생활 라이프스타일은 4개로 나뉘었으며, 군집분석 결과 고관여, 중관여, 저관여 집단으로 분류되었다. Napping® 분석 결과, 제품을 HMR과 밀키트, 국물이 맑은 제품과 진한 제품으로 구분하고 있음을 확인하였다. 본 연구결과는 고령친화 HMR 식품개발 시 차별적인 방안을 제시하는 데 도움이 될 것이라 기대한다.

  • Korea has entered into an aged-society in 2018. If this trend continues to increase, it is expected that a super-aging society will take place by 2026. Therefore, Korea is placed in the situation of becoming the world's fastest aging nation as it becomes a super-aging society from an aged-society in twenty-six years. In order to provide an effective supply of nutrition for the socially weak, Japan developed a variety of foods with food texture improvements. Germany improved accessibility for meal service development. Senior-friendly food is a softened food or a highly concentrated drink, which is considered a texture-modified food, for the elderly with eating disorders to digest food more easily by making food particles smaller. Varying food processing techniques such as freeze-thawing enzyme impregnation, high-pressure processing, super-heated steam processing, 3D food print, and others used to produce texture-modified foods.

한국 노인의 저작능력에 따른 식품 및 음식섭취 특성: 2007~2010년 국민건강영양조사 자료에 근거하여 (Characteristics of the dietary intake of Korean elderly by chewing ability using data from the Korea National Health and Nutrition Examination Survey 2007-2010)

  • The purpose of this study was to examine the characteristics of the dietary intake of Korean elderly according to chew-ing ability using data from the Korea National Health and Nutrition Examination Survey (KNHANES) conducted during 2007-2010. Among subjects aged 65 years and over, more than half, 54.3% of elderly people, were classified as the difficulty in chewing group (DC). The DC group had lower nutrients and food intakes than those of in the no difficulty in chewing group (NDC). Findings showed that subjects in the DC group consumed fewer foods, especially fruits and vegetables. In addition, the DC group had significantly lower intakes of pan-fried food, stir-fried food, braised food, and seasoned-cooked vegetables, which could not be easily cooked or chewed. On the other hand, the number of soups and stews included in the top 30 largely consumed dishes were higher in the DC group than in the NDC group. No difference in numbers of daily meal/snack intake was observed between the two groups, however, the DC group had lower numbers of side-dishes compared to the NDC group. Fewer side-dishes per meal could be related to lower intakes of nutrients in dietary quality. Findings of this study demonstrated that dietary intake was influenced by chewing ability of elderly Korean people. Therefore, study of factors affecting dietary intake such as convenient cooking methods to decrease cooking time and skills to extend preservation and storage time of foods will necessary. In addition, development of food products and new techniques of cooking considering health status, chewing, and swallowing ability is required for the elderly, followed by establishment of standards for senior-friendly food products.

Classification of elderly households based on diet-related style and analysis of their characteristics

  • The objectives of this study were to classify the types of elderly households and to compare the characteristics of their dietary lifestyle. Panel data surveyed by Korea Rural Economic Institute (KREI) for Food Purchase Attitudes over three years (2019 - 2021) were utilized for the analysis. Through a factor analysis, five common factors were extracted out of 19 basic variables related to dietary style, which indicate two kinds of consumer competency index (safe diet, traditional diet) and three kinds of purchase frequency (healthy food, meat & fish, fresh seafood). Applying the cluster analysis method, by using socioeconomic variables along the five common factors, elderly households aged 60 or older were grouped into four types. As a result, Type 1 elderly households accounted for 50.8%, Type 2 for 16.2%, Type 3 for 27.8%, and Type 4 for 5.2% out of all 870 elderly households. Type 1 is characterized as a low-income vulnerable class with a poor diet, Type 2 as a middle-income class with a healthy food-oriented diet, whereas Type 3 was classified as a middle-income class with a meat-oriented diet, and Type 4 as a high-income class with diverse dietary culture. It is necessary to expand the agri-food voucher pilot project to the entire country and also increase the monthly subsidy for the Type 1 elderly households. Implementing community kitchen projects for elderly single-person households, promoting senior internships by providing incentives to companies that employ retirees, the provision of education by local governments on a safe and balanced diet for Types 2 and 3, and the promotion of an elderly-friendly social environment are also recommended.

고령친화 의료기기의 안전관리방안 연구 (A Study on Safety Management for Senior-Friendly Medical Devices)

  • The number of items and the market size of the senior-friendly medical devices are rapidly increasing, and it is necessary to come up with a safety management plan for senior-friendly medical devices. We searched and analyzed the definition and policy of senior-friendly medical device, and classified medical device items of the Ministry of Food and Drug Safety, calculated market sizes and manufacturing export import results by classification, and investigated the current state of senior-friendly industry and the fields of its culture. In order to prepare a safety management plan, we reduce the number of items that need to be managed intensively by extracting 69 items for administration, that are substantially harmful to the elderly. As specific safety management plans of items for administration, we propose plans for introductions of readability-enhanced labeling, QR codes for cautions and manuals, universal design mandatory, UDI code system with considering a balanced viewpoint of the industry development.

액상형 고령친화식품의 치아부식능 평가 (Assessment of the erosive potential of elder-friendly foods)

  • Objectives: To investigate the effect of several elder-friendly foods on oral health and suggest guidelines for proper food intake. Methods: Six elderly-friendly foods (liquid type) and two control groups (mineral water and mixed coffee) were selected for this study. The pH of the food was measured using a calibrated pH meter, and the titratable acidity was determined using 1 M NaOH until 7.0 (TA 7.0). The screening method suggested by the International Organization for Standards was performed using an undersaturated hydroxyapatite solution to determine the difference between the initial and final pH of the screening solution (△pH). In addition, the sugar content was measured and expressed as Brix (%). Results: All the elder-friendly foods tested in this study showed a neutral pH (6.68-7.35), similar to mineral water (pH 7.84). The range of TA 7.0 values was 0.00-0.54 ㎖. The changes in pH determined using the screening solution confirmed that the largest change in pH was found in Careon (△pH 1.14±0.02), which has no erosive potential. Nevertheless, all elder-friendly foods had higher sugar content than the negative control group. Conclusions: Low tooth erosive potential was found in elder-friendly foods, but these foods showed high sugar content.

요양병원 치매노인의 급식 만족도와 식품의 종류 및 조리법에 따른 선호도 조사 (Foodservices Satisfaction and Food Preference According to the Types and Cooking methods of the Elderly with Dementia in a Geriatric Hospital)

  • Elderly with dementia in geriatric hospitals (EDGH) are highly dependent on hospital meals. This study evaluated the foodservices satisfaction and food preference of the EDGH. The survey was conducted on 104 elderly with dementia (21 males and 83 females) in 4 geriatric hospitals in Seoul and Incheon in November, 2016. Data were collected from interviews using a questionnaire that consisted of 6 questions for foodservice satisfaction and 24 questions (10 categories) for food preference. The data were analyzed using SPSS ver. 20.0. The satisfaction with taste, saltiness, texture, and variety in foodservices was good, but the satisfaction with the amount was not, and the reason for leaving food was its large serving size. The subjects preferred soft boiled rice, noodles, porridges, meats, fish, seafood, vegetables, and fruits. Among them, they preferred more janchiguksu, red bean porridge, beef, croaker, oyster, spinach, and banana. Regarding the cooking methods, they preferred soup, grill, and boiling, but not frying. The also preferred Chinese cabbage kimchi, but they did not prefer hard kkakdugi. They did not prefer milk because of diarrhea, but they preferred yogurt. Therefore, to provide a satisfying meal for EDGH, it is necessary to develop a friendly diet considering their food preferences.
