유아들의 식습관 개선을 위한 "위험한 먹거리 프로그램"의 효과에 대한 연구 (The Study on Effects of "the Unsafe Food Program" designed For Improving Children's Eating Habits)

  • 본 연구에서는 유아들의 식습관과 식품 선호도에 관한 최근의 실태와 문제점을 살펴보고 각종 조미료와 식품첨가물이 함유된 인스턴트식품과 패스트푸드, 불량식품에 무방비로 노출되고 길들여진 유아들의 식습관을 개선시켜 주고자 실시한 "위험한 먹거리 프로그램"이 효과가 있는지 알아보기 위한 것이었다. 연구 대상은 연구자가 운영하고 있는 어린이집 만5세 유아들로, 2달 동안 매일 "위험한 먹거리 프로그램"이 실시되었다. 이 프로그램은 먹거리와 건강에 관한 부모의 인식과 유아의 식습관을 파악하기 위한 설문 조사, 유아들을 대상으로 자신들이 먹고 있는 음식에 대한 관심 유도 프로그램, 운동프로그램, 건강식품과 불량식품에 대한 충분한 정보 제공, 인스턴트식품과 패스트푸드가 인체에 미칠 수 있는 악영향에 대한 정보 제공 등의 다양한 프로그램으로 구성되었다. 또한 본 프로그램은 유아들의 신체 변화에 미친 영향을 파악하기 위해서 프로그램 실시 전에는 아동의 체내 중금속(독성미네랄) 상태를 측정하기 위한 SH제약의 모발검사와 프로그램 실시 전후로 유아의 체중, 골격근량, 체지방, BMI, 체지방률 등을 측정하기 위한 일산 보건소의 건강 검진 진단(INBODY) 프로그램을 실시하였다. 본 연구의 결과는 다음과 같다. 첫째, '위험한 먹거리 프로그램' 과정에 참여했던 부모의 의식이 바뀌면서 안전하지 않은 음식들이 식단에서 배제되었다, 둘째, 유아 스스로 자료를 찾고 토론하며 식품을 분석. 실험하는 과정을 통해 자신이 먹는 음식에 대한 관심도가 높아지게 되어 패스트푸드와 인스턴트식품 같은 안전하지 않은 식품에 대한 자제력 향상으로 이어졌다. 셋째, 운동프로그램을 병행하면서 유아들의 체질이 개선되는 결과를 측정할 수 있었다. 넷째, 유아들의 먹거리 습관을 개선시킬 수 있는 다양한 활동들로 구성된 프로그램을 통해 아동들은 야채, 잡곡밥, 과일 등을 골고루 먹는 균형 잡힌 식습관이 형성되었다. 이상의 연구결과를 통해 "위험한 먹거리 프로그램"이 유아의 식습관을 개선시키는 데 효과가 있었음을 확인할 수 있었다.

강화도 장수 노인의 식습관 점수별 식생활태도 및 영양상태 조사 (A Study on Dietary Pattern and Nutritional Status of the Long-Lived Elderly People by Food Habit Index in Ganghwa-gun Area)

  • This study was carried out to assess the food habit index of the long-lived elderly who were aged over 85 years living in Ganghwa-gun. A survey was conducted during December 2003. Dietary nutrient intake data was obtained through the 24-hr recall method. The subjects were 96 (32 males, 64 females) aged people and divided into three groups based on food habit index scores. Such as group A: good $16\∼20$, group B: fair $11\∼15$, and group C: poor $5\∼10$. The three groups of the subjects were 90.7 years of age and $21.3\;kg/m^{2}$ of BMI on average. Healthy eating index scores of the subjects were $9.4\%$ in group A, $54.2\%$ in group B and $36.5\%$ in group C. Their level of education were lower and their levels of living standards tended to have been middle and lower of the middle class. The percentage of living together with their families or spouses in all groups were over $60.0\%$ and the rates of the subjects who have responsibility for their meal preparations were also very high in all groups. Most subjects tended not to drink nor smoke, and spend $8\~10$ hours for their sleep. The percent of number of diseases in group A was lower than in groups B and C. Their dietary habits such as taking three meals a day regularly have shown that they have good eating habit in general. There was a positive correlation between the eating behaviors and nutrient intakes. The protein, animal protein, fat, PUFA, vitamin E, vitamin $B_{2}$, niacin, P and K intaks in group A were significantly higher than that of the groups B and C. For group A of good food habits aged had no sufficient intake of Ca and vitamin A than the Korean RDA and long-lived elderly of group C in Ganghwa areas had worse nutrients intakes, especially Ca, vitamin A, vitamin $B_{2}$ and vitamin E. According to this research having a good eating habits could be considered as increasing of the health and nutritional status. (Korean J Community Nutrition 10(6) $892\∼904$, 2005)

제주도 특급관광호텔의 공공부분 평면구성에 관한 연구 (A Study on the Plan Composition of Public Part of the Luxury Resort Hotels in Jeju-Do)

  • In order to overcome such limits of hotel sales, the role of hotel public section, such as eating and drinking facilities, is very important. Moreover, city hotels increase the value of public section by providing various event for citizens as well as and services for banquet. Since Jeju has urban hotels and resort hotels mixed together, their Plane types and area composition based on the characters of customers using the public section are different from ones of other cities. The purpose of this study is to provide basic material for the qualify improvement of the luxury resort hotels in Jeju. We examine the tendency of the systematic Plane composition of the Public sections which take different types of customers, such as Jeju people and tourists, into consideration, analyzing the plane types and the area composition of the luxury resort hotels in Jeju. The study shows that the public part of hotels always had great impact on hotels sales depending on the compositions of plane and area.

제조방법에 따른 딸기잼의 관능적 품질 특성에 관한 연구 (Study on the Sensory Quality Characterization of Strawberry Jam by Cooking Method)

  • As the level of life improves, the eating habit is changing from rice meal to bread meal and at the time, eat more strawberry jam than before. We tried to study to select the good cooking method and the proper strawberry variety for the jam through the sensory evaluation We made four kinds jam of Bogyo-Joseoung and Ai-berry by different cooking methods, the result6s of the sensory evaluation are as follow: The jam of Ai-berry is better than that of Bogyo-Joseoung by the paired comparison test but the difference between those, if we add some lemon to the jam of Bogyo-Joseoung and Ai-berry, is very little. The multiple comparison test proves the sourness, if added some lemon and citric acid, become better and the color and viscosity, if added pectin, became better. The overall preference about jam, if pectin and citric acid were added together, was best. In addition, we evaluated the quality of jammed bread by multiple comparison test. The result is like this: The jam with lemon is very good in color, flavor, sourness and texture, but the jam with pectin and citric acid was the best in overall preference.

Dopamine signaling in food addiction: role of dopamine D2 receptors

  • Dopamine (DA) regulates emotional and motivational behavior through the mesolimbic dopaminergic pathway. Changes in DA signaling in mesolimbic neurotransmission are widely believed to modify reward-related behaviors and are therefore closely associated with drug addiction. Recent evidence now suggests that as with drug addiction, obesity with compulsive eating behaviors involves reward circuitry of the brain, particularly the circuitry involving dopaminergic neural substrates. Increasing amounts of data from human imaging studies, together with genetic analysis, have demonstrated that obese people and drug addicts tend to show altered expression of DA D2 receptors in specific brain areas, and that similar brain areas are activated by food-related and drug-related cues. This review focuses on the functions of the DA system, with specific focus on the physiological interpretation and the role of DA D2 receptor signaling in food addiction.

  • Diphyllobothrium latum infection in human is not common in Korea and only thirty seven cases have been reported since 1921. We report two cases of fish tapeworm infection after ingestion of raw cherry salmon (Oncorgynchus masou) caught in the domestic river. Among four family members who ate together raw salmon flesh six months ago, just two, mother and daughter were infected. It is our expectation that the salmon associated tapeworm infections would be enlisted as one of the major parasitic problems with the growing consumption of salmon in Korea.

  • The purpose of this study is to suggest planning direction to Co-housing as alternative house. The questionnaire survey is used. The subjects of questionnaire are professional having concerned with architectural, housing, city plan and environment. The results of the study are summarized as follow : It is necessary to connect with neighbors in Co-housing. It is important to make membership and member's will for community. Co-housing as a housing alternative is essential residents' participation. In terms of life in community, eating together, childrencare and residents' autonomy activity are very important. Finally, it is proper to locate suburb and city. The size under 50 units is proper. In terms of housing type, the low apartment housing is proper.

Effects of Combination of Rice Straw with Alfalfa Pellet on Milk Productivity and Chewing Activity in Lactating Dairy Cows

  • An experiment was conducted to determine the effects of diets containing coarse-texture rice straw and small particle size alfalfa pellets as a part of total mixed ration (TMR) on milk productivity and chewing activity in lactating dairy cows. Sixteen multiparous Holstein dairy cows ($670{\pm}21kg$ body weight) in mid-lactation ($194.1{\pm}13.6$ days in milk) were randomly assigned to TMR containing 50% of timothy hay (TH) or TMR containing 20% of rice straw and 30% of alfalfa pellet mixture (RSAP). Geometric mean lengths of TH and RSAP were found to be 5.8 and 3.6, respectively. Dry matter intake, milk yield and milk composition were measured. Moreover, eating and ruminating times were recorded continuously using infrared digital camcorders. Milk yield and milk composition were not detected to have significant differences between TH and RSAP. Dry matter intake (DMI) did not significantly differ for cows fed with TH or RSAP. Although particle size of TH was larger than RSAP, eating, ruminating and total chewing time (min/d or min/kg of DMI) on TH and RSAP were similar. Taken together, our results suggest that using a proper amount of coarse-texture rice straw with high value nutritive alfalfa pellets may stimulate chewing activity in dairy cows without decreasing milk yield and composition even though the quantity of rice straw was 40% of TH.

한국에 거주하는 중국인 유학생과 한국인 대학생의 김치 인지도, 선호도 및 관능평가 비교 (Comparative Study on Awareness, Preference and Sensory Evaluation of Kimchi in Chinese and Korean Students Residing in Korea)

  • The purpose of this study was to investigate the awareness, eating experience, and preference of kimchi, and the sensory evaluation of kimchi from Chinese and Korean students residing in Korea. General information (including age, sex, duration of staying, living status) was collected. A questionnaire was used to collect the information on awareness, eating experience, and preference of kimchi and dishes made with kimchi. Sensory evaluations were carried out on a 10 point scale. All subjects (37 Koreans, 43 Chinese) were aware of kimchi, with 98% of the Chinese subjects recognizing kimchi as a Korean traditional food and 65% having eaten kimchi at least once a day. The types of kimchi preferred by Chinese subjects were generally sweet and not over-bearing in seasoning, hotness, or ripeness. The more frequently eaten foods made with kimchi were jjigae, bokkeumbap, bibimbap and kimbap. However, the more preferred dishes made with kimchi were bossam, jeongol, bokkeum, jeon, and ramyeon. The Chinese subjects were especially sensitive to spicy odors ($4.6{\pm}2.2/10$), salted seafood odors ($4.6{\pm}2.3/10$), offodors ($4.4{\pm}2.3/10$) and aftertaste ($5.9{\pm}2.1/10$) compared to Korean subjects. Taken all together, the perception as well as sensory characteristic of kimchi needs to be improved for the globalization of kimchi.

서울 지역 그룹홈 아동과 청소년의 식생활 실태 조사 (A Survey on the Dietary Life Status of Group Home Children and Adolescents in Seoul Region)

  • This research involved a survey on the dietary patterns of children and adolescents living in group homes, to find out their wrong eating habits and to devise measures for correcting their problems. The BMIs of the subject children and adolescents in group homes were measured, and the result showed that although many of them appeared to have normal weights, about 42.2% were actually underweight. Most of them had meals regularly, three times a day at fixed times. However, half of them frequently skipped breakfast because of the lack of time in the morning. In addition, more than half of them had the habit of having imbalanced diets, especially with low vegetable intake. The score for their satisfaction toward meals at group homes were highest (3.97) with the taste of food, while it was relatively lower (3.61) with the variety of food than with the other items. The average score for their snack intake was 3.47, showing that the majority of them had the habit of eating snacks, while the largest portion (26.0%) of them preferred bread and cookies. According to the result of the analysis on their food intake, overall calorie intake was about 82~96% of estimated energy requirements, while that of the male subjects aged 12 or older was about 82% of the standard energy requirements. Their overall intake of calcium and potassium was lower than recommended nutrition intake, but sodium intake was higher than 3 times recommended intake. Especially, in addition to calcium and potassium, the male subjects aged 15 or older showed low intake of dietary fiber, iron, zinc, riboflavin, niacin, vitamin C and folate also; whereas the female subjects aged 15 or older showed low intake of iron, zinc, riboflavin and folate also. Taken together, it was concluded that government level of dietary life-related support and management would be necessary for the healthy growth and development of children and adolescents in group homes.
