A Survey was conducted to identify patrcis' eating behavior at the buffet styled restaurant during dinner time. The average frequency of taking food was 4.1±0.9 and this was statistically significant by age group. The frequency of taking food after satiety was 1.2±0.8. From the menu, 15 seafood items were the most popular which were chosen more than twice. The average of consumed food items was 24.9±8.9 out of 198. The average seafood items which were chosen by each individual was 5.8, desert items was 4.5, salad items with dressing was 4.2. The total weight of the consumed food was 954±365.1g. Mostly gruel, soup and saled chosen the first time. Alcholic beverages and drinks were chosen also first time. Seafood was chosen the 1.2 times and meat was chosen the first, second, and third time. Rice and soup. bread and noodles were chosen the second and third time. Desert was chosen the third time. The consumption of calories and nutrients were compared with the Korean Recommended Dietary Allowances. The average consumption of calories was 49.6% Korean RDAs, protein 71.4%, vitamin A 65.0%, thiamin 74.3%, riboflavin 71.8%, niacin 89.8%, ascorbic acid 72.7%, iron 68.1%, and calcium 108.3%. In one meal, the data shows over eating. The caloric consumption of desert was 275.5Kcal and seafood was 174.1Kcal. The protein consumption of seafood was 23.5g and meat was 7.5g. According to this research, customers have a lot of good chances to be exposed to the variety of food. This is desirable to correct the food habits with a experience. On the other hand, excessive food consumption is a problem. Therefore we suggest the provision of nutrition information about desirable order of eating a meal and the health problems due to overeating. We expect other research of nutritional evaluation in a meal in the different foodservice systems to be made in the future.
The effects of a nutritional education program for first grade middle school students were evaluated from August to December, 2006. The study subjects were 82 boys and 90 girls, residing in Gwangju, Korea. To assess the effects of the nutritional education program, pre- and post-questionnaires examining nutritional knowledge, dietary attitudes, and dietary habits were developed. Paired t-test and repeated measures ANOVA were used to evaluate the effects of the nutritional education program. In the general subject, the main after-school activities were studying, watching TV, and using computer (85.5%), and sports (9.3%), suggesting their low physical activity. Parents (46.5%) were indicated as the source of nutritional education rather than teachers (13.4%). Twenty-five percent of girl students had diet experience of skipping meals (54.6%), suggesting the need of proper nutritional education for adolescents' health care. In dietary attitudes, both genders showed some improvement of recognition after education. In the changes in dietary habits, both genders had a significant effect on 'three meals a day, eating breakfast, and regular meal' after education. After education, the rate of having breakfast everyday increased from 52.4% to 65.9% for boys and from 33.3%to 57.8% for girls. In the changes in nutritional knowledge, the appreciation of the importance of school meals increased in both genders from 50.6% to 80.8% after education. The nutritional knowledge, scores of regular eating and well-mannered eating increased in both genders regardless of the students' characteristics. The study results revealed that this education provided an important motivation to improve basic nutritional knowledge and dietary habit. It is recommended to develop systematic and various educational programs and learning materials tailored to subjects before nutritional education.
To investigate the relationship between eating behavior and the prevalence of adolescents drug abuse and smoking, this survey was conducted among 349 male students(mean age ; 16.0 $\pm$0.9yrs) at technical high schools in Kyunggi-Do. It was shown that 58.7% of total subjects were smoking and 11.2% were abusing drugs. Drug abusers weighed Less than non-abusers especially, student smokers were 2.7kg lighter than non-smokers despite the same height. Although parents' education showed no relationship with drug abuse, educational level of student smokers' fathers was significantly lower than that of non-smokers' fathers. Drug abusers and smokers showed significantly higher incidence of runaway from home, absence from school without notice, and parents' divorce than non-abusers and non-smokers. Drugs abused were sleeping pills(n=20), bonds and butane gas(n=9), marijuana(n=3), tranquilizer(n=3), morphine and cocaine(n=2), and pep pills like amphetamine(n=2) 76.9% of the drug abusers had their first experience in junior high school and 81% of the smokers stared smoking as early as in junior high school. Also, 44% of the smokers reported that they smoke daily. The drug abusers tended to have more irregular eating habits than the non-abusers. The smokers showed irregular mealtime, ate either too fast or too slow, and especially, often skipped lunch or dinner. The drug abusers and smokers took little vegetable in their meals and often ate bread or noodles instead of rice for staples. In addition, they preferred taste to nutrition when they had meals. The smokers tended to ingest smaller amount of calcium source such as milk or dinner food and fish with bone although they consume more volume of total foods than the non-smokers. All subjects took less in calorie, calcium, iron, vitamin A, vitamin E, riboflavin, and folic acid than the Recommended Dietary Allowance Those findings suggest that drug abuse and smoking cause bad eating habits that influence unbalanced nutritional state. Therefore, nutrition education should be provided to the adolescents so that they can recognize the disadvantages of drug and smoking and its relation to dietary relation. Purpose: The purpose of this study was to offer basic data concerning the prevention of obesity for obese children to identify the relationship between their self-efficacy and the degree of performance on health promoting lifestyle profile. Method: The subjects were 148 fourth to sixth grade elementary school students in Gwang-ju, Korea during the period from September 10 to September 25, 2001. The collected data were analyzed by mean, standard deviation, t-test, ANOVA, Pearson's Correlation Coefficient and Stepwise Multiple Regression by using the SPSS program. Result: The relationship between general characteristics of subjects and self-efficacy were significant differences according to eating time(F=5.338, p=.006). The relationship between general characteristics of subjects and health promoting lifestyle profile were significant differences according to grade(F=5.615, p=.005), eating time(F=8.591, p=.000), concern about weight control(F=3.915, p=.022), experience of weight control(t=7.632, p=.006). Health promoting lifestyle profile was showed significant positive correlations with self-efficacy(r=.537, p=.000). Self-efficacy(27.6%) was the highest factor predictor health promoting lifestyle profile of obesity students. In addition to eating time, concern about weight control, explained for 33.3% in health promoting lifestyle profile. Conclusion: Results of this study point to self-dfficiency as a major factor in the health promoting behavior of childhood obesity. According to the results of this study, There is a reason to develop a health program to promote self-efficiency.
This study examines the dietary life, weight control, perceived body image, self-esteem, and eating disorder of female college students residing in Korea and China. With approval by the IRB of Pusan National University, a survey was conducted in Korea and China. A total of 574 subjects participated in the survey, and they were divided into three groups: 153 Korean female college students residing in Korea (KSK), 180 Chinese female college students residing in Korea (CSK), and 241 Chinese female college students residing in China (CSC). The group of underweight subjects far exceeded the overweight and obese groups, but there was no significant difference (p<0.05). The CSC group showed the highest food intake frequency and eating habit scores, and the KSK group, the lowest (p<0.05). However, the KSK group showed the highest daily life habit score, followed by the CSK and CSC groups, in that order. All groups showed high weight control experience rates mainly for losing weight. In particular, the KSK group showed a much higher rate than the CSC and CSK groups. All groups wanted much thinner body shapes than their actual shapes, resulting in high percentages of body image dissatisfaction. The KSK group showed a higher self-esteem score than the CSC group. The average EAT-26 score was similar across the three groups, but the percentage of eating disorders was much higher in the KSK group than in the CSC and CSK groups.
This study was undertaken to analyze the growth, nutritional, and dietary risk factors of elementary school students belonging to the Busan Metropolitan City Office of Education and provide the basic data needed to develop an underweight and obesity prevention program. In 2021, BMI and Dietary Screening Test (DST) data of 4,046 children surveyed by the Nutrition Education Experience Center's "Diagnosis System" of the Busan Regional Office of Education were analyzed. The DST consists of 36 questions about lifestyle habits, meal quality, meal regularity, snack quality, and eating behavior. Of the children included, 6.8% were underweight, 65.4% were normal weight, 13.4% were overweight, and 14.4% were obese. Children in the obesity group had shorter sleep and meal times (P<0.001), lower vegetable and fruit consumption frequencies (P<0.001), higher fast food consumption frequencies (P<0.001), higher rates of skipping meals (P<0.01) and breakfast (P<0.001), and more frequently used smartphones and watched TV during meals (P<0.001). The underweight group had the highest scores for all eating development factors but more frequently had chewing and swallowing difficulties (P<0.001). The study confirms underweightedness and obesity are present different problems and indicates that nutrition teachers should conduct accurate studies on the eating habits and behaviors of obese and underweight students and provide individually tailored nutritional counseling.
The purpose of this study was to find the proper methods of school food service conducted from June 20th July 30th in 1996. The subjects of this study were 587 parents of students, 794 students and 359 school teachers at 508 middle and high schools in Seoul and Kyunggi area. And the result was as follow. A total of 48.3% of respondent answered they had breakfast regularly. The reasons why they had breakfast, were habits(34.4%) followed by hunger(28.2%), health(19.9%), parent's persuasion(17.5%). They reasons why they didn't have breakfast are, lacks of time(68.8%) followed by absence of appetite(20.5%), diet(4.5%). About the question the problem of eating habits the most of parents of students, chose an unbalanced diet(25.9%), followed by overeating of snacks(21.7%), voracious eating(18.0%), not eating meals(17.5%), eating little(10%) and overeating(6.8%). At the research of an unbalanced diet, the 63.3% of respondents said they eat evenly while the 36.7% said they had an unbalanced diet. From the research of correlativity between food service at elementary schools and eating habits, we knew that the experience of school food service had an effect on an unbalanced diet. And the students living in Seoul complained more than in Kyunggi. The question about the quality of food, 69.0% of respondents said they were not so bad. While 21.2% said not delicious at all just 9.8% of students said they were very satisfied with the taste. Interestingly, more middle school students both in Kyunggi and Seoul answered the food was delicious than high school students. About the question of the price, 49.5% of students thought appropriate(49.5%) while 44.3% said it was too high. Just 5.9% students answered cheap(5.9%). And students living in Kyunggi thought the price was high than students in Seoul. 62.9% of respondents think their refectories were clean while 22.8% think not clean. And 14.3% answered said dirty. Snack bars at school were managed by the contract with trusters(63.2%), while by the school itself(32.6%).
The purpose of this study was to investigate nutritional knowledge, practice of eating behavior guidelines, and problematic dietary habits in working high school students in comparison with non-working high school students. A survey questionnaire was formulated to obtain information on demographic variables, body size, part-time jobs, nutritional knowledge, practice of eating behavior guidelines, and dietary habits. The developed questionnaire was given out to 515 students attending a vocational high school in Yongin, Gyeonggi-Do. Those who had been working 5 hours or more per day for at least a month at the time of survey administration were defined as working students for this study. Proportions of working students were similar between male and female students (i.e. 49.5% for male, 50.5% for female). No significant difference was found in scores of nutritional knowledge between working ($8.43{\pm}2.29$) and non-working students ($8.60{\pm}2.19$). However, some dietary habits were found to be dependent on working status. While approximately 43% of non-working students reported skipping a meal, about 57% of working students did so (p<0.01). The proportion of students with any drinking experience was significantly higher among working students (92%) compared to non-working students (80%) (p<0.001). Working students were found to drink alcoholic beverages more often than non-working students (p<0.001). The mean score of practice of eating behavior guidelines was lower in working students than non-working students. The magnitude of this difference was modest ($51.33{\pm}0.63$ in working students, $53.40{\pm}0.51$ in non-working students), but reached statistical significance (p<0.01). Based on the findings from this study, it is suggested that specific behavior-oriented messages to improve certain problematic dietary habits need to be directed toward working high school students.

Objectives: This study was conducted to investigate the snack intake and brushing behavior according to the oral health education experience in some schools in Busan, and to investigate whether the oral health education experience affects the snack intake and brushing behavior. Methods: This study surveyed the entire fourth grade of elementary school in two districts by participating in university-linked oral health education activities run under the jurisdiction of the education office business to examine changes in the behavior of elementary school students in their snack intake and toothbrush. The survey was conducted on oral health education in elementary schools, prior oral health education experience before and after the activity, whether or not the brushing classroom was operated, and contents related to eating snacks and brushing behaviors. Result: Among the general characteristics of some schools in Busan, 69.9% of students have experience in oral health education and 30.1% of people have no experience in oral health education. 20.0%, 16.3% were 'normal' and 63.7% were 'helpful'. The brushing behavior according to the oral health education was 44.9% in the number of brushings, 44.9% in the number of brushings, 45.7% in 2-3 minutes in the time of brushing, 41.2% in the brushing method by sweeping the brush up and down. In the daily brushing period, 'after breakfast' was the highest at 72.3%, and the parent's brushing instruction was 'to lead' at 65.1%. The amount of sugar in subjective snacks was the highest with 60.6% of sugar content, and the parents had the highest level of 52.2% for parents' snack intake. This result was more significant than the students without oral health education experience. Conclusion: Based on the results of this study, the number and time of brushing, the method and timing of brushing according to the experience of oral health education. Students who had oral health education experience higher than those who did not have oral health education, but had a lower tendency to brush after lunch at school and before going to bed. For better oral health, the effect of oral health education will be better if the school has more systematic toothbrushing at lunch time and parental guidance at home.
The purpose of this study was to find educational needs of toddler's mother in child-caring experience. The subject of the study was toddler's mother who visited one health care center in J city for immunization and had a child or children between twelve and thirty six months old. The subjects were 37 mothers. The instrument used for this study was a semi -structured questionnaire developed by researcher and based on Objective Content Test of Garretson(1967). The collected data were analized by two researchers using the method of Content Analysis. The results of this study are summarized as follows : 1) Of the large categories, the need of the highest frequency was 'prevention and management of disease and injury', that of the lowest 'growth and development'. 2) In 'physical care' category, 'care of sleeping' was the highest. In 'nutrition and eating-habitual management' category, 'weaning management' was the highest. In 'prevention and management of disease and injury' category, 'disease management' was the highest. In 'discipline and teaching' category, 'discipline' was the highest. 3) In comparison with preceding references, the educational needs of child-caring which had not been shown in preceding references but had been shown in this study were hair-caring, kind of weaning diet, method of cure and nursing, man agement of deformity, and so on. In conclusion, educational needs of toddler's mother in child-caring experience were matter-of-fact and inclusive. Needs in management of special situation such as disease were higher than usual parenting procedure or method. In addition, there were higher needs in questions happened through child-caring experience or confirmation of procedures practicing now. Then, it is suggested that parent education program should be developed on the basis of educational needs found in this study to be more effective in preparing mother's child-caring.
