난류(卵類)의 지질성분 및 지방산 조성 분석 - 달걀, 기러기알, 청둥오리알 - (Analysis of lipid composition and fatty acids in poultry eggs -cage system, open barn system's hen egg, moscovy duck's egg mallard's egg-)

  • 일반란, 천연란, 고센란, 청둥오리알, 기러기알의 지질성분 및 지방산 조성 분석 결과는 다음과 같다. 가식부 100 g에 대한 지질 비율은 기러기알>고센란>청둥오리알>일반란>천연란 순으로 기러기알이 가장 높았고, 지질중 TG 비율은 일반란>고센란>천연란>청둥오리알>기러기알 순으로 일반란의 TG함량이 가장 높았다. Cholesterol함량은 난황 1 g당 일반란이 14.14mg로 가장 높았고, 청둥오리알과 13.30 mg으로 가장 낮았고, total lipid에 대한 cholesterol함량은 일반란이 4.5%로 가장 높았고, 청둥오리알과 기러기알이 3.3%로 가장 낮았다. 방사구란과 비방사구란을 중성지절, 당지질 및 인지질의 함량을 측정한 결과 중성지질은 방사구란에 비해 비방사구란이 더 높았고, 당지질과 인지질의 경우에는 반대로 비방사구란보다 방사구란에서 더 높게 나타났다. 특수란의 경우 중성지질 함량은 청둥오리알보다 기러기알이 더 낮았고, 두 종류 모두 달갈류보다 더 낮은 값이였다. 또한 당지질과 인지질은 청둥오리알보다 기러기알에서의 함량이 더 높았고, 두 종류 모두 달걀류보다 높게 측정되었다. 분획한 중성지질과 당지질, 인지질 모두 TLC에 의한 정성반응을 통해 성분 확인을 하였다. 필수 지방산 함량을 분석한 결과 linoleic acid 함량은 기러기알에서, linolenic acid 함량은 고센란에서 가장 높았다. Arachidonicacid와 EPA함량는 기러기알에서 가장 높게 나타났고, 달갈류에서는 EPA값이 측정되지 않았다. DHA함량은 기러기알>천연란>일반란>고센란>청둥오리알 순으로 기러기알에서 가장 높게 나타났다.

녹차 추출물에 가압 침지한 오리알의 항산화 활성 변화 (Changes in Antioxidant Activity of Duck Egg after Pressurized Soaking in Green Tea Extract)

  • 본 연구에서는 오리알에 녹차 추출물을 이용하여 가압침지처리를 함으로써 녹차의 기능성 성분을 침투시키고자 하였으며 가압침지 후 오리알의 성분변화와 항산화 활성의 변화를 연구하였다. 녹차의 활성성분을 함유하는 오리알을 제조하기 위해 녹차 10, 20, 30% 추출액에 오리알을 침지시켜 각각 1과 5 MPa 조건에서 30분 동안 상온에서 가압하여 녹차의 catechin 성분들이 침투되도록 하였다. 대조구(0.17 mg/100 g)와 비교하여 오리알 난백의 EGCG 함량은 20 mg/100 g(30% 녹차 추출물, 5 MPa)으로 약 100배 이상 증가하였으며 침지시료의 농도와 압력이 증가할수록 EGCG 함량이 증가함을 알 수 있었다. 항산화 활성과 세포 보호효과 및 ROS 제거 효과 모두 대조구보다 5 MPa 조건에서 증가하는 것으로 나타났다. 본 연구 결과는 비교적 간단한 공정과 경제적인 방법으로 녹차의 EGCG 함량이 증가된 오리알을 제조하는 방법을 연구하고 그 활성을 증명함으로써 국내 오리알을 이용한 고부가가치 가공식품 개발과 오리알의 소비촉진에 영향을 미칠 것으로 생각된다.

Selection and Crossbreeding in Relation to Plumage Color Inheritance in Three Chinese Egg Type Duck Breeds (Anas Platyrhynchos)

  • In China and South East Asia, the duck (common duck) is important in egg production for human consumption. Plumage color is a breed characteristic and of economic importance, together with egg production. Our aim in this study was to investigate the inheritance of plumage color in three Chinese indigenous egg-type duck breeds, Shan Ma (S), Putian White (F) and Putian black (P), and some of their crossbreds. These three breeds have different plumage color and are used in crossbreeding. The crossbred laying ducks $F{\times}(P{\times}S)$ and $F{\times}(S{\times}P)$ showed highly improved laying ability but heterogeneous plumage color. Genotypes at four relevant loci were investigated by studying down color and pattern in ducklings after crossbreeding. $F_1$ ducklings from the matings $F{\times}S$ and $S{\times}F$, $P{\times}S$, and $S{\times}P$ were classified into four classes of plumage color (the Shan Ma plumage color, black, white, or multicolored) over three generations. Parents were selected for the Shan Ma plumage color of their progeny. In the fourth generation, P male and P female ducks were selected according to the frequency of the desired class of plumage color (Shan Ma) of their $F_1$ progeny to obtain the so-called "Brown Putian Ma duck". The Shan Ma duck genotype was identified as having the restricted mallard color pattern ($M^RM^R$), full expression of any of the patterns or colors (CC), no extended black (ee) and no brown dilution D (D). The Putian White genotype was recessive white (cc), no extended black (ee) and no brown dilution D (D). The Putian Black genotype exhibited full expression of extended black (E gene) and no brown dilution (CCEE D [D]). It was shown that $F{\times}S$ and $S{\times}F$ tests should be implemented to eliminate the recessive white c allele in the S line and the dominant extended black E allele in the F line. It was also shown that the Brown Putian Ma obtained from Putian Black, with no extended black genotype (ee), could be used to get rid of the black plumage (E gene) in the crossbred ducks. This could provide a solution for producing 3-way crossbred ducks Putian $White{\times}$(Putian-$Ma{\times}Shan$ Ma) and Putian $White{\times}$(Shan $Ma{\times}Putian$-Ma), with the desired Shan Ma feather color.

Effect of Rosemary Extract on Lipid Oxidation, Fatty Acid Composition, Antioxidant Capacity, and Volatile Compounds of Salted Duck Eggs

  • The purpose of our study was to determine the impact of rosemary extract in duck eggs, as determined by in vitro antioxidant capacity, lipid oxidation, fatty acid profiles, and flavor analyses. Three groups of salted duck eggs were compared: A control group and group enriched with 0.1% and 0.5% (w/v) rosemary extracts for 28 days of salting. In a time-dependent manner, the radical scavenging activity and reduction power of eggs with 0.5% (w/v) rosemary extract were significantly higher those of the control at 28 days after salting. The fatty acid profiles of salted egg were significantly affected by rosemary extract and salting time. Palmitic acid was the most abundant fatty acid in salted egg treated with rosemary extract, followed by linoleic acid and arachidonic acid. Furthermore, the treated eggs contained more docosahexaenoic acid than the control ones. And the treated eggs also have a considerable impact on the lipid oxidation process (primary and secondary oxidation). As a result, rosemary extract can be used as a natural antioxidant spice to prevent oxidation and extend the shelf life of eggs during storage. Furthermore, flavor research using solid phase microextraction - gas chromatography - mass spectrometry and an electronic nose demonstrated that adding rosemary extract to salted eggs could give them a distinct flavor.

청둥오리 난황유에서 분리한 인지질이 쥐 뇌에 미치는 영향 (Effects of the Phospholipid separated from Duck Egg Oil on the Rat Brain)

  • 인지질의 기능적 특성을 조사하기 위하여 체중이 $180{\sim}220g$ 되는 Sprague-Dawley계 암컷 랫드를 사용하여 대조군(식이 제한군)과 청둥오리 인지질의 투여군으로 실험하였다. 대조군은 전 실험기간 동안 먹이를 주었고 청둥오리 인지질 첨가군은 임신 중에 임의로 주고 수유 3주 동안 제한사료를 주었다. 생후 3주에 새끼 쥐들을 어미 쥐로부터 분리시켰으며, 이후 4주 동안 임의로 사료를 먹도록 하였다. 각 군에서 0, 1, 2, 3, 5 및 7주에 새끼 쥐의 체중을 측정하고 희생하여 뇌 무게, 뇌의 protein, phospholipid, cholesterol 함량을 측정하였다. 그 결과 체중은 생후 1, 2, 3주에 대조군 및 인지질 첨가군 간에 체중이 증가하여 매우 유의적인 차이를 나타내었고, 생후 5주까지 그 차이가 나타났으나, 후기에는 유의적인 차이를 보이지 않았다. 뇌 무게는 생후 2, 3, 7주에 증가하여 유의적인 차이를 나타냈다. 뇌의 protein 함량은 생후 2주부터 대조군과 인지질 첨가군 사이에 증가하여 유의적인 차이를 나타내었으며, 그 차이는 식이회복 기간 중에도 나타냈다. 뇌의 phospholipid, cholesterol 함량은 생후 2, 3주에 두 군 사이에 유의적인 차이를 나타냈으며, 식이 회복 후기인 생후 7주에는 phospholipid(PL) 만이 점차적으로 증가하였다. 쥐를 대상으로 한 수동 회피 검사에서는 대조군에 비하여, Duck-PL 및 Pig-PL 첨가군의 수동 회피율이 우수하였다.

Antioxidative Activities of Hydrolysates from Duck Egg White Using Enzymatic Hydrolysis

  • Duck egg white (DEW) hydrolysates were prepared by five enzymes (papain, trypsin, chymotrypsin, alcalase, and flavourzyme) and their antioxidant activities investigated in this study. DEW hydrolyzed with papain (DEWHP) had the highest peptide content among the five enzymatic treatments. Besides, the peptide content of DEWHP increased when the enzyme to substrate ratio (E/S ratio) increased. It was suggested that higher E/S ratio contributed to elevate the degree of hydrolysis of DEW effectively. Similar results were also obtained by Tricine-SDS-PAGE. In addition, SDS-PAGE patterns indicated papain was the only one amongst all enzymes with the ability to hydrolyze DEW. In antioxidant properties, DEWHP showed more than 70% of inhibitory activity on linoleic acid peroxidation and superoxide anion scavenging. Moreover, the $Fe^{2+}$ chelating effect of DEWHP was greater than 90%, while no significant difference was observed in DPPH radical scavenging and reducing ability. The results of peptide contents, antioxidant activities and electrophoresis suggested that the higher the peptide content, the stronger the antioxidant activities in DEWHP.

COMPARATIVE STUDIES ON THE UTILIZATION OF CALCIUM BETWEEN LAYING TSAIYA DUCK AND LEGHORN HEN

  • Studies were conducted to compare the utilization of dietary calcium between brown laying Tsaiya duck and Leghorn hen. Birds were fed corn-soybean diets containing 1.0, 2.0, 3.0, 4.0 and 5.0% calcium, respectively, with five birds per treatment. The metabolizability of calcium was determined by the indicator method. Experiments were conducted three times each at the age of 27, 31 and 36 weeks. Results appeared that duck eggs were heavier with better shell quality in comparison with hen eggs. Ducks fed 1% calcium diet resulted in severely depressed egg production (19%), but not for hens which still had 56% egg production. The metabolizability of calcium for hens was significantly higher than that for ducks (P<0.05) when both were fed diets containing 1 or 2% calcium. As the dietary calcium level was increased to 3 to 5%, there was no significant difference in calcium metabolizability between ducks and hens. When the dietary calcium was between 2 to 5%, the ducks retained more calcium than did the hens. Plasma calcium content for both hens and ducks fed 1% calcium diet was about the same. When the amount of the dietary calcium was increased to 2-5%, the plasma calcium level of ducks was approximately 7-10 mg/dl higher than that of hens. The calcium content in the egg shell of duck was significantly higher than that of hens, too. As the dietary calcium level was increased, there was a decreased magnesium content in the eggshell of hens, but not for ducks. The magnesium level in the eggshell was higher in hens than that in ducks. It is concluded that ducks could retain significantly more calcium and maintain higher plasma calcium level which might be the reason for larger eggs with better shell quality by ducks.

PRODUCTION, EVOLUTION AND REPRODUCTIVE ENDOCRINOLOGY OF DUCKS

  • Duck is an important domestic animal, especially in Asia. Eighty five percent of ducks in the world are kept in Asia, especially in the East and South Asia regions. The ancestor of domesticated ducks was mallard (Anas platylhynchos), which are still migrating between north and southern parts in Eurasia. Ducks have been domesticated in China for at least 3000 years ago. Phylogenetic studies on ducks, employing electrophoresis of blood proteins, indicate a marked difference of genetic constitution between duck breeds in southeast Asia and those in northeast Asia. Duck embryonic ovary is much more active in secretion of sex steroid hormones especially estradiol than the embryonic testes. Estradiol secreted by the embryonic left ovary has an important role in female sexual differentiation in ducks. In the female ducks, plasma LH, estradiol and testosterone levels increase and reach peaks shortly before the first egg, while progesterone level reach a peak shortly after the first egg. In laying ducks oviposition mostly occurs in the last 3 hr of darkness and first hr of light ranging 02:00-06:00 under 14 hr light (05:00-19:00) and 10 hr darkness photoperiodic condition. Measurements of plasma hormone levels reveal that onset of darkness is a major signal for LH release from the pituitary and the subsequent release of progesterone from ovary, and for induction of ovulation in the female duck.

  • 본 연구에서는 지중내에 설치한 매설관에 작용하는 응력-변형 특성을 분석하였다. 연약지반의 수축과 팽창특성을 고려할 수 있는 Egg-Cam Clay 모델을 소개하였다. 기존에 사용하던 Cam Clay 모델은 연약지반의 수축 및 팽창 특성을 고려하지 못하는 단점이 있기 때문에 Cam Clay 모델을 수정하여 Egg-Cam Clay 모델을 제안하였다. 이와는 별도로 지중내의 매설관에 작용하는 응력-변형을 감소시키기 위하여 지오그리드, EPS 지오폼을 매설관과 함께 설치하였다. 탄소성모델을 이용하여 현장에 시험시공한 여러 단면에 유한요소해석한 결과 긍정적인 효과를 얻었다.

Antioxidant and antimicrobial activities of different enzymatic hydrolysates from desalted duck egg white

  • Objective: The objective of this study was to look for optimal preparation of hydrolysates of desalted duck egg white powder (DDEWP) by the three different proteases and to investigate their antioxidant and antimicrobial properties. Methods: DDEWP was hydrolyzed by three proteases, including pepsin (PEP), Bacillus spp. (BA) and natokinase (NAT) with three different enzyme concentrations (0.1%, 0.3%, and 0.5%), individually. The important key hydrolysis parameters such as hydrolysis degree, yield, antioxidant and antimicrobial activity were evaluated in this experiment. Results: The results showed that the degree of hydrolysis (DH) of all treatments increased with increasing hydrolysis time and protease concentrations. The antioxidant and antimicrobial activities of the hydrolysates were affected by type and concentration of protease as well as hydrolysis time. Hydrolysis of PEP significantly (p<0.05) obtained the highest yield of hydrolysates, however, both of BA and NAT showed substantially lower DH values and still did not exceed 5% by the end of hydrolysis. Among the different hydrolysates, PEP exhibited significantly higher 2, 2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity than BA and NAT. All DDEWP hydrolysates from PEP had low ferrous ion chelating activity (<37%) that was significantly lower than that of NAT (>37% to 92%) and BA (30% to 79%). Besides, DDEWP hydrolysates of PEP presented significantly higher reducing power than BA and NAT. In antimicrobial activities, Escherichia coli, Salmonella typhimurium, and Pseudomonas aeruginosa were not effectively inhibited by any DDEWP hydrolysates of PEP except for Staphylococcus aureus. Especially, the excellent antibacterial activity against S. aureus only was displayed in DDEWP hydrolysates of PEP 0.1%. Conclusion: DDEWP hydrolysates from PEP demonstrated significantly better DH, yield, DPPH radical scavenging activity and reducing power, furthermore, had excellent inhibitory on S. aureus due to large clear zone and moderated inhibitory in bactericidal inhibition.
