Effects of Various Thermal Treatments on Physicochemical Properties of Wheat Bran (밀기울에 대한 열처리가 이화학적 특성에 미치는 영향)

  • Various thermal treatments such as toasting, roasting, drum drying, autoclaving+drum drying, microwaving+drum drying and extrusion were attempted to investigate their effects on chemical composition (proximate composition, Klason lignin, neutral sugar, uronic acid, starch, free sugar, dietary fiber, phytic acid, etc) and functional properties (water solubility index, water absorption index, water holding capacity, oil holding capacity, bulk density, swelling, etc) of wheat bran. Thermal treatments on wheat bran increased soluble dietary fiber (SDF) content from 2.7% (raw sample) to 4.6% (toasted), 4.5% (roasted), 4.6% (drum dried), 5.2% (autoclaved), 3.7% (microwaved), 5.6% (extruded). In contrast, total dietary fiber (TDF) content remained nearly constant regardless of thermal treatments, reflecting the concomitant decrease in insoluble dietary fiber (IDF). It was also found that water holding capacity (WHC) increased $20{\sim}75%$ due to thermal treatments employed in this research. Both bulk density and swelling were not directly relevant to WHC, but thier multiplication exhibited good correlation $(R^2=0.94)$ with WHC. Scanning elctron microscopy (SEM) exhibited that structure of raw wheat bran was significantly modified, whose degree and shape well reflected the types of thermal treatments.

Physicochemical Properties of Onion Powder as Influenced by Drying Methods (건조방법에 따른 양파분말의 품질특성)

  • Physicochemical properties of onion powder as influenced by drying methods were investigated. Moisture contents of onion powder were 13.29%, 12.99%, and 10.78% for samples dried using hot-air dryer, freeze dryer, and vacuum dryer, respectively. There were no significant differences in crude fat, crude protein, and crude ash content (p>0.05) depending on the drying methods. Samples prepared by freeze drying showed a significantly higher L-value as compared with those prepared by hot-air and vacuum drying (p<0.05). Scanning electron micrographs showed that freeze drying produced smaller particle-sized sample which in turn resulted in the higher porosity of the sample. Freeze dried samples revealed significantly lower degree of rehydration than other samples (p<0.05) probably due to small particle size of the sample. Water solubility of freeze dried sample appeared to be higher than that of other drying methods while the swelling ratio of the same sample appeared to be lower than that of the others. Browning index was significantly lower in samples prepared by freeze drying (p<0.05) but not significantly different between samples dried by hot-air and vacuum drying. Vitamin C content was higher in freeze dried onion powder due to the lower temperature applied to the sample. Freeze dried onion powder contained significantly lower amount of total polyphenol and higher amount of total sugar as compared to other samples (p<0.05).

Effects of Drying Methods on the Quality and Physiological Activities of Blueberry(Vaccinium ashei) (건조방법에 따른 블루베리의 품질 및 생리활성)

  • This study was performed to determine the effects of drying methods on the quality and physiological activities of blueberry. Blueberries(Vaccinium ashei) were dried by hot-air ($60^{\circ}C$), cyclic low pressure ($50^{\circ}C$), and freeze drying methods. They contained high properties of carbohydrates(68.48~80.00%), crude protein(1.63~5.41%), crude fat(0.58~1.25%), and ash(0.71~1.11%) regardless of the drying methods. There were no differences in pH according to the drying methods. Browning index increased as the drying temperature increased. The L, a values of the freeze-dried sample were higher than those of the other dried samples, whereas the b value of the cyclic low pressure dried sample was higher than that of the other samples. The free sugar contents of the hot-air sample were higher than those of the other samples. Vitamin C content of the freeze dried sample was higher than that of either the hot-air or cyclic low pressure dried sample. The contents of total polyphenols and anthocyanins were higher in the freeze dried sample. The DPPH radical scavenging activity of freeze drying sample was higher than that of either the hot-air or cyclic low pressure dried sample. The result indicated that there were no differences in product quality depending on the freeze-drying and cyclic low pressure drying methods.

Quality Evaluation of Ginger Dried using a Molecular Press Dehydration Method or Employing a Dehydration Liquid (분자압축탈수 방법과 탈수액을 이용한 건조생강의 품질평가)

  • The qualities of ginger prepared by an MPD (molecular press dehydration) method using maltodextrin, or dried using reused dehydration liquid, or prepared by freeze-drying or hot-air drying, were compared in terms of approximate overall composition, color, water absorption index, water solubility index, total sugar level, reducing sugar concentration, antioxidant activity, and gingerol content. The approximate composition of ginger prepared by the MPD method was lower in overall biochemical content than were those of gingers prepared using other methods. Ginger prepared by the MPD method retained the original ginger color. The water absorption and solubility index of ginger prepared by the MPD method (using maltodextrin) were better than those of gingers dried using other methods. The total sugar content did not change noticeably upon processing. The reducing sugar content of ginger prepared by hot-air drying was low. The antioxidant activity of ginger prepared by the MPD method was higher than that of freeze-dried and hot air-dried ginger samples, with values lower than those of BHA (3(2)-t-Butyl-4-hydroxyanisole) and BHT (2,6-Di-tert-butyl-4-methylphenol). The gingerol content of ginger prepared by the freeze-drying method was higher than that of gingers prepared by other methods. However, ginger constituents were present in the dehydration liquid used in the MPD method. The results indicate that both the MPD method (using maltodextrin) and the use of reused dehydration liquid are efficient methods by which ginger can be dried.

Physicochemical characteristics and optimal drying temperature condition of Agaricus(Agaricus Blazei) mushroom (건조 아가리쿠스의 품질 특성 및 최적 건조 온도)

  • As its high functional properties to be used as medicine or food, the cultivation of Agaricus mushroom has been expanded and iぉ commercialization required better storage methods that can extend its functional and nutritional value for longer period. We selected drying as the most plausible method to meet such requirement, and several drying conditions were investigated to locate the optimum drying condition that can be used to keep the quality of mushroom. Drying temperature of 50$^{\circ}C$, 60$^{\circ}C$, 100$^{\circ}C$ were selected to trace the drying time required to achieve the moisture content of mushrooms less than 10%. The drying temperature at 50$^{\circ}C$ required 29 hrs of drying time, while 100$^{\circ}C$ required only 10 hrs of drying tune. However, their quality characteristics on the following categories, on the degree of browning and color were investigated to find the optimum drying condition. In addition, sensory evaluation was conducted to evaluate the quality of dried mushrooms produced by each drying condition. The browning of the mushroom was evidently increased as the higher drying temperature was used and 50$^{\circ}C$ drying produced the most desirable quality of all in pileus or stipe. The aeon of browning intensified by drying temperature was comparable to the result of whiteness index value, which resulted lower L values as drying temperature increased. and the 50$^{\circ}C$ drying resulted the most highest L values among all drying samples. As the browning and whiteness results implied, the sensory evaluation result gathered from the present research indicated that the 50$^{\circ}C$ drying was the most favorable drying condition by scoring the most highest average scores on flavors, color, appearance, and overall acceptability conducted by the 10 evaluation panels.

Monitoring the Desiccation of Inland Wetland by Combining MNDWI and NDVI: A Case Study of Upo Wetland in South Korea (MNDWI와 NDVI의 통합을 통한 내륙습지의 육화현상 추적: 우포늪을 사례로)

  • This research is primarily intended to explore a novel way to monitor desiccation of inland wetland by combining MNDWI (Modified Normalized Difference Water Index) and NDVI (Normalized Difference Vegetation Index). The changes for vegetation and water condition on Upo Wetland located at southeastern Korea were investigated by MNDWI and NDVI derived from 2002, 2010 and 2015 Landsat data. The integrated use of MNDWI and NDVI made it possible to identify area-wide vegetation cover changes and to assess water storage changes on multi-annual time scales simultaneously. Comparing MNDWI with NDVI reveals the quantitative evidences for anthropogenic and environmental influences (such as road, building, water) causing an accelerated wetland desiccation. In fact, our monitoring approach raises critical issues regarding the hydrological cycle and its inter-annual changes for inland wetland under threat of drying up and highlights the important role of MNDWI and NDVI integration for any urgent or long-term treatment plan. This research presents scientific and objective evidences to support integrated approach of NDVI and MNDWI in exploring drying up trends of wetlands.

Effect of Emulsion Treatment on the Separation of Quick-Cooking Rice Kernel and the Quality of Reconstituted Rice (즉석건조쌀밥의 건조후 밥알분리 및 품질에 미치는 에멀젼처리 효과)

  • The effect of emulsion treatment on the separation of quick-cooking rice kernel after drying and the quality of reconstituted quick-cooking rice made of a Japonica variety were investigated. Among the several stages of emulsion treatment tested, immersion of cooked rice before drying was the most effective on the separation index. Immersion condition of 3 min at $30^{\circ}C$ was found to be the most desirable. Emulsion composed of 5% soybean oil and 0.5% sucrose fatty acid ester (HLB : 9.5) was found to be the most effective to yield the separation index of 86%. By applying the above mentioned emulsion, the separation index was improved by 30 compared with untreated one. The quality of the quick-cooking rice manufactured by the emulsion treatment was found to be as good as untreated one.

Assessment of drought stress in maize growing in coastal reclaimed lands on the Korean Peninsula using vegetation index (식생지수를 활용한 한반도 해안 간척지 옥수수의 한발스트레스 해석)

  • The Republic of Korea reclaimed land to increase its food self-sufficiency rate, but the yield was reduced due to abnormal climate. In this study, it was hypothesized that rapid and continuous monitoring technology could help improve yield. Using the vegetation index (VI) analysis, the drought stress index was calculated and the drought stress for corn grown in Hwaong, Saemangeum, and Yeongsan River reclaimed tidal land was predicted according to drying treatment. The vegetation index of corn did not decrease during the last 20 days of irrigation when soil moisture rapidly decreased, but decreased rapidly during the 20 days after irrigation. The reduction rate of the vegetation index according to the drying treatment was in the order of Saemangeum>Yeongsan River>Hwaong reclaimed tidal land, and normalized difference vegetation index(NDVI) decreased by approximately 50% in all reclaimed tidal lands, confirming that drought stress occurred due to the decrease in moisture content of the leaves. In addition, structure pigment chlorophyll index (SIPI) and photochemical reflectance index (PRI), which are calculated based on changes in light use efficiency and carotenoids, were reduced; drought stress caused a decrease in light use efficiency and an increase in carotenoid content. Therefore, vegetation index analysis was confirmed to be effective in evaluating and predicting drought stress in corn growing on reclaimed tidal land corn.

Effect of Drying Condition of High Solid Coating on the Coated Paper Properties (고농도 도공의 건조조건이 도공지의 품질에 미치는 영향)

  • Effects of drying condition (IR radiation) on the optical properties and the printability of coated paper were elucidated at various latex sizes and low and high coating color concentrations. It was found that the smaller latex provided better rheology and higher dry and wet pick strength than the larger one. The high solids coating resulted in higher paper gloss and smaller roughness than the low solids coating, even though the clay addition was reduced by 20 parts in the high solids coating. Increasing IR radiation prohibited binder migration into the base paper. Thus it improved binder distribution and decreased pores in the coated layer, resulting in the increased dry and wet pick strength and the improved printing gloss. On the other hand, the color trapping and ink set-off was impaired with increasing IR radiation. Print mottle index passed through a maximum with increasing IR radiation.

  • The purpose of this study is to investigate the change of shrinkage, tensile strength, elasticity, light-fastness and color-fastness of 100% cotton upper under wear after acidic treatment and repeated washing and drying. Both of warp and welt were shrinked, especially in the early washing stage. Tensile strength was not weakened by 15 times of repeated washing. Hunter whiteness(HW) of white-underwear decreased, but color difference($\Delta$E) and yellow index(YI) increased corresponding to the frequency of washing and sunlight drying. The discoloration of color-underwear was significant in the early stage.
