건조방법과 향신료 추출물 첨가가 육포의 품질특성에 미치는 영향 (The Effects of Drying Method and Spice Extracts Added to Beef Jerky on the Quality Characteristics of Beef Jerky)

  • To develope Hanbang beef jerky as health food, six kinds of beef jerky were prepared by adding sugar (A), licorice (B) and three kinds of spice extracts (clove: C, fennel fruit: D and Chungyang green pepper extract: E) and mixture of all extracts (F). The effects of the drying method and added spice extracts on the quality characteristics of the beef jerky were evaluated. In general, the air-blast dried beef jerky contained $31{\sim}33%$ moisture, $50.0{\sim}51.2%$ crude protein, $7.2{\sim}7.8%$ crude lipid and $3.0{\sim}3.3%$ crude ash. For the mineral content of the air-blast dried jerky, the most prevalent mineral was Na $(1540.08{\sim}1838.17$ mg%), followed by K, P, Mg, and Ca. The Ca content of the beef jerky was highest in the mixed extract group (88.53 mg%), and the lowest content was in sugar-added group (53.12 mg%). For the color properties, the L-value (lightness), a-value (redness) and b-value (yellowness) were higher in the air-blast dried beef jerky than in the hot air dried samples. The drying methods showed their greatest affect on the redness (a) for all six jerkies (p<0.001). For the preference by sensory evaluation, the beef jerky samples with added sugar (A) and licorice extract (B) had significantly higher scores than the beef jerky samples with the added spice extracts, for both of air-blast drying and hot air drying (p<0.05). Preference for the air-blast dried beef jerkies with added clove (C) and fennel fruits (D) were significantly higher, in terms of taste, color, softness and aftertaste as compared to the respective hot air dried jerkies (p<0.01). Considering all the obtained results, we concluded that licorice and spice extracts can be used as natural preservatives in the development of health foods and the air-blast drying method is recommended to improve the quality characteristics of beef jerky.

김천지역 실생묘 유래 호두나무의 수령별 수확량 및 과실 품질 (Yields and Fruit Quality of Different Aged Walnut Trees (Juglans sinensis Dode) Derived from Seedlings in Gimcheon)

  • 본 연구는 실생묘 유래 호두나무의 수령별 수확량 산정과 과실 품질을 비교, 분석하기 위해 호두 주산지인 김천지역의 재배임가를 대상으로 실시되었다. 공시목은 10년생부터 60년생까지 9등급으로 구분하였으며, 각 등급별 15본을 선정하여 총 135본이다. 수령별 생육특성을 조사한 결과, 평균 수고는 10.3 m, 평균 수관면적은 63.7 ㎡으로 나타났다. 수령별 결실특성을 조사한 결과, 본당 착과수는 평균 573.1개이며, 35년생 호두나무가 974.0개로 가장 많은 반면 10년생 호두나무가 124.7개로 가장 적은 것으로 조사되었다. 또한 결과모지당 착과수는 35년생 호두나무가 3.1개로 가장 많은 것으로 나타났다. 수령별 과실특성을 조사한 결과, 과실 유형별 평균 무게는 각각 청피호두 58.7±4.0 g, 알호두 10.5±0.5 g, 인 4.9±0.2 g인 것으로 조사되었다. 과실 유형별 평균 수확량은 청피호두 32.5±13.8 kg, 알호두 5.9±2.5 kg, 인 2.8±1.2 kg이었으며, 수관면적, 결과모지당 착과수, 1 ㎥당 착과수 등과 정의상관관계를 보였다. 실생묘 유래 호두나무의 수령에 따른 본당 수확량 추정식은 청피호두의 경우 y=8993.9·ln(수령-9)+8230.3, R2=0.8531와 알호두 y=1647.1·ln(수령-9)+1442.1, R2=0.8527로 산출하였다.

  • Two ergosterins and two triterpenoids were isolated from the dried fruit bodies of Ascomyce Bulgaria inquinans. By means of chemical (hydrolysis) and spectroscopic methods (NMR, EIMS), their structures were established as betuinic acid (1), cerevisterol (2), (24R)ergosta-7, $22E­diene-3\beta,\;5\alpha,\;6\beta-triol-3-O-palmitate$ (3) and ursolic acid (4). Compound 3 is a new compound.

  • For the development of Boxthorn organic cultivation techniques, we investigated effect of several organic compost as a foundation fertilizer and growing plant fertilizer. And we adopted partly opening rain shelter greenhouse to protect anthracnose. In organic compost applying test yield characteristics of 'Mixed organic compost' treatment was the best but in betaine content measurement of dried fruit, 'Mixed organic compost and nitrogen guano' treatment was the best and it's chlorophyll and 100 fruit weight were also better than the other treatments.

Multivariate statistical analysis of the comparative antioxidant activity of the total phenolics and tannins in the water and ethanol extracts of dried goji berry (Lycium chinense) fruits

  • Antioxidant activity in water and ethanol extracts of dried Lycium chinense fruit, as a result of the total phenolic and tannin content, was measured using a number of chemical and biochemical assays for radical scavenging and inhibition of lipid peroxidation, with the analysis being extended by applying a bootstrapping statistical method. Previous statistical analyses mostly provided linear correlation and regression analyses between antioxidant activity and increasing concentrations of phenolics and tannins in a concentration-dependent mode. The present study showed that multiple component or multivariate analysis by applying multiple regression analysis or regression planes proved more informative than linear regression analysis of the relationship between the concentration of individual components and antioxidant activity. In this paper, we represented the multivariate analysis of antioxidant activities of both phenolic and tannin contents combined in the water and ethanol extracts, which revealed the hidden observations that were not evident from linear statistical analysis.

Effect of dried Hovenia dulcis fruit powder on quality characteristics and antioxidant properties of cookies

  • Hovenia dulcis fruit powder (HFP) has shown diverse functional activities; thus, it is rational to incorporate HFP into suitable food products with enhanced nutritional and functional quality, and their incorporation into bakery products such as cookies could be a good alternative for the increase of consumption. The aim of this study was to examine the effect of HFP addition on the quality characteristics of cookies. The pH of cookie doughs ranged from 5.80-6.34, with no remarkable differences by HFP addition. Density of cookie doughs significantly decreased upon addition of HFP (p<0.05), but there were no significant differences among samples added with HFP (p>0.05). Moisture content and spread factor of cookies significantly increased with higher content of HFP in the formulation (p<0.05). For color values of cookie surface, $L^*$ and $b^*-values$ decreased while $a^*-value$ increased as a result of HFP substitution (p<0.05). 2,2-Diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid (ABTS) radical scavenging activities were significantly increased (p<0.05) with higher substitution of HFP, showing a positive correlation. Hedonic sensory results indicated that cookies supplemented with 4% HFP received the most favorable acceptance scores for sensory attributes. Overall, HFP-added cookies could be developed with improved physicochemical qualities without sacrificing consumer acceptability.

Effects of Temperature and Moisture on the Survival of Colletotrichum acutatum, the Causal Agent of Pepper Anthracnose in Soil and Pepper Fruit Debris

  • The survival of Colletotrichum acutatum was investigated in soil, infected fruits, and infected fruit debris incorporated into soil at several temperatures with different soil moisture levels. Samples were examined at 2-week intervals for 18 weeks to determine the survival of the pathogen based on the number of colony forming unit (CFU) of C. acutatum recovered on a semi-selective medium. C. acutatum conidia survived in both sterile and non-sterile soil at 4 and $10^{\circ}C$ for 18 weeks. If infected pepper fruits were completely dried, C. acutatum survived for 18 weeks at temperature from 4 to $20^{\circ}C$. Soil temperature and moisture affected the survival of C. acutatum in infected fruit debris incorporated into soil after air-drying. The effect of soil moisture on survival was weaker at low temperatures than at high temperatures. For up to 16 weeks, conidia were recovered from fruit debris in soil that had been kept at 4 to $20^{\circ}C$ and below 6% soil moisture. Conidia were recovered from fields until approximately 6 months after pepper fruits were harvested. Using PCR with species-specific primers and a pathogenicity test, we identified conidia recovered from soil and infected fruit from both the laboratory and field as C. acutatum and as the primary inoculum causing pepper anthracnose.

  • A wide array of natural products have been identified to possess potenital cancer chemopreventive properties. Of particular interest is Polyporus umbellatus frs.. that exhibits antimutagenic and cytotoxic effects. The crud drug "chorei" prepared from the dried fruit body of Polyporus umbellatus is used for kidney and other such disease. In the study, we are isolating the minor components of Chorei and examined their antimutagenic and cytotoxic effects.(omitted)

시설 참외 관비재배시 생육단계별 질소시비기준 설정 (Establishment of the Optimum Nitrogen Application Rates for Oriental Melon at Various Growth Stages with a Fertigation System in a Plastic Film House)

  • 본 연구는 토양검정시비량에 준하는 비료량을 기준으로 그 처리량을 가감하여 점적관수로 관비하였을 경우 참외의 생육과 수량에 미치는 영향을 조사하고 참외의 생육단계별 양분흡수특성을 검토하여 관비재배 시에 생육단계별 참외 질소시비기준을 설정하고자 수행되었다. 이를 위하여 토양검정 질소시비량 ($N:P_2O_5:K_2O$=249:408:315 kg $ha^{-1}$)의 0배, 0.5배, 1.0배, 1.5배에 해당하는 질소량을 8회로 나누어 정식 후 10일 간격으로 관비하였다. 점적관비에 의한 참외 생육기간 중 참외의 생육, 수량 및 무기양분흡수 등을 조사하였다. 잎, 줄기 중 T-N의 함량은 정식 30일까지 증가한 후 점점 감소하는 경향을 보였고, 질소관비량이 증가할수록 T-N함량도 증가하는 경향을 볼 수 있었다. 질소관비량이 증가할수록 참외의 생체중과 질소흡수량은 증가하였지만 총수량 및 상품수량은 그렇지 않았다. 총수량과 상품수량은 검정시비 0.5배구에서 각각 44,550 kg $ha^{-1}$와 42,880 kg $ha^{-1}$로 가장 높았다. 또 상품과율도 0.5배구에서 95%로 가장 높았다. 결과적으로 과실의 총수량, 상품수량, 상품과율 등을 고려할 때, 검정시비 0.5배구에 해당하는 질소량의 관비가 참외의 생육 및 수량 증가에 가장 효과적인 것으로 판단된다.

감마선 조사에 따른 동결건조과일의 품질 특성 평가 (Evaluation of Quality Properties of Gamma-irradiated Freeze-dried Fruits)

  • The quality properties of freeze-dried apples, pears, strawberries and pineapples gamma-irradiated at 0, 1, 2, 3, 4, and 5 kGy were evaluated to develop germ-free products for immuno-compromised patients. The initial count of total aerobic bacteria in non-irradiated apples, pears, strawberries and pineapple was 2.5, 3.1, 2.6, and $3.2{\log}\;CFU{\cdot}g^{-1}$, respectively. Microorganisms were not observed in apples after 1 kGy, in pears and strawberries after 4 kGy, and in pineapples at 5 kGy within a detection limit of $10{\log}\;CFU{\cdot}g^{-1}$. In addition, the sterilization of each sample was confirmed at the same dose. The score for the overall acceptance of freeze-dried fruit irradiated at a sterilization dose was 5.5 for apples, 4.1 for pineapples, and 4.0 for the other fruits, whereas that of non-irradiated control sample was 5.6 for apples, 5.2 for pears, and 5.8 for strawberries and pineapples with a 7-point scale. As a result, gamma irradiation of 1 kGy for apples, 4 kGy for strawberries and pears, and 5 kGy for pineapples is sufficient to sterilize each freeze-dried fruit with acceptable sensory properties.
