나주지역 중학생의 식생활 관여도와 식행동 연구 (A Study on Food Involvement and Dietary Behavior of Middle School Students in Naju Area)

  • 본 연구는 중학생들의 영양지식, 식생활 관여도 및 식행동 실태를 파악하고 영양지식 정도에 따른 식생활 관여도와 식행동 차이를 비교 분석함으로써 남 녀 중학생들의 바람직한 식행동을 유도하여 청소년들의 건강증진에 이바지할 수 있는 식생활 교육의 기초자료를 제공하고자 하였다. 이를 위해 나주시 소재의 남 여 중학생 528명을 대상으로 구조화된 설문지를 사용하여 자료를 수집하였다. 자료의 분석은 SAS/PC 프로그램을 이용하여, 빈도, 백분율, 평균, 표준편차를 산출하였고, t-test, 일원변량분석을 수행하였으며, 사후검증으로 Duncan의 다중범위검증을 실시하였다. 주요 연구 결과를 요약하면 다음과 같다. 첫째, 중학생의 식사행동 인식은 세끼 식사 중 아침식사를 중요하게 생각하는 경우가 가장 많았으며, 음식 선택의 기준은 맛을 가장 우선시하였다. 주문 배달음식 섭취는 일주일에 1$\sim$2회가 가장 높았고 주문 배달음식 종류는 서양음식이 가장 높게 나타났다. 본인의 체중 인지는 살찐편이라고 생각하는 경우가 높게 나타났고, 체중조절 방법으로 운동을 하고 있는 경우가 가장 많았으며, 그에 따른 운동의 규칙성은 응답자의 절반 가량이 규칙적으로 하지 않았다. 실시하고 있는 운동의 종류는 걷기, 달리기, 윗몸 일으키기 등이었고 자신의 식생활에서 개선할 점에서는 편식과 불규칙한 식사시간을 고쳐야할 점이라고 높게 인식하고 있었다. 식생활 정보 수집원으로는 TV를 통해 얻는 경우가 40%임을 볼 때 영양정보 전달의 효과적인 대중매체의 책임있는 교육 프로그램이 개발, 보급되어야 하겠다. 둘째, 관련변인에 따른 식생활 관여도는 성별, 학년, 모 학력, 체중의 인지, 체중 조절 방법, 운동 형태, 개선할 식생활의 인지에 따라 유의한 차이가 나타났다. 관련변인에 따른 식행동은 학년, 식사의 우선 순위, 음식 선택 기준, 체중 조절 방법, 개선할 식생활의 인지에 따라 유의한 차이를 보였다. 셋째, 영양지식 정도에 따른 식생활 관여도의 차이는 영양지식이 '상'과 '중'인 집단에 비해 '하'인 집단이 낮게 나타났다. 영양지식 정도에 따른 식행동의 차이는 영양지식이 높은 집단이 식행동이 양호하게 나타났고, 영양지식이 낮은 집단이 식행동도 낮게 나타났다. 이는 청소년 시기에 습득한 영양지식이 실제 식생활 태도에 크게 작용하는 점으로 보아 올바른 식습관 형성에 도움을 줄 수 있는 체계적이고 지속적인 학교교육과 가정교육의 필요하다고 하겠다. 넷째, 식생활 관여도에 따른 식행동의 차이는 식생활 관여도가 높은 집단의 식행동이 식생활 관여도가 낮은 집단보다 식행동이 유의적으로 높게 나타났다.

초등학교 저학년 자녀를 둔 취업모의 다중역할의 질과 심리적 안녕감이 양육행동에 미치는 영향 (The Effect of Employed Mothers's Quality of Multiple Role and Psychological Well-Being upon Mothers' Parenting Behavior)

  • This study was conducted to identify adults' knowledge, dietary behavior related to sodium, and attitude towards. The purpose of this study is to examine the effects of the quality of multiple roles and psychological well-being upon parenting behavior among employed mothers. The subjects were 172 employed mothers living in Seoul, Korea. The results are as follows. First, the quality of parental role was related to all of subscales of parenting behaviors of employed mothers. Second, employed mothers' higher autonomy was significantly associated with greater intimacy and reasoning guidance in their parenting. Third, employed mothers with greater positive relationship and autonomy were more likely to exhibit limit setting. Finally, higher level of environmental mastery and autonomy was related to greater parental involvement. Mothers' psychological well being was not significantly related to mothers' responsiveness.

초등학생의 올바른 식습관 형성을 위한 연관교과 내 식생활교육의 효과판정 -식습관 변화를 중심으로- (Effect-Evaluation on Nutrition Education in Related Curriculums for Elementary School Children -Focused on Change of Dietary Habits-)

  • The purpose of this study was to develop of nutritional education activities and effect evaluation in related curriculums for all Dongbu Elementary School children in Jinhae by the teacher in charge. This educational purpose was to build a desirable dietary behavior for optimal growth and health in elementary school children. The educational program contents were developed according to 1) selection of content related curriculums 2) analysis of contents related on dietary habits by grade 3) preparation teaching plans to build desirable dietary habits 4) development of teaching manual by turns. Twelve hours of nutrition education at all school classes were done from March 2 to December 10 2004 in Dongbu Elementary School in Jinhae, Gyeongnam. The education effects were evaluated through the questionnaire surveys before and after the education and their comparative analysis. The results of this study were summarized as follows : Forty percent of the underweight group, $22.8\%$ of the normal group, $42.2\%$ of the obese group had the wrong perceptions on their body figures, but after nutrition education $80.5\%$ of the underweight group, $94.3\%$ of the normal group, $97.9\%$ of the obese group gleaned the correct perceptions on their body figures (p < 0.001). As the effects of the education, the subjects who exercise more than 3 times in a week increased in all groups (p < 0.01-0.001), notably in the obese group. Meal regularity (p < 0.001) , skipping meals (p < 0.001), eating rate and snack selection patterns (p < 0.01-p < 0.001) also improved by nutrition education. We could also observe the effects of the nutrition education through the affirmative statements which appeared in their dietary records. These results showed a possibility of nutrition education activities in related curriculums to improve in dietary habits of school children. Next year, we will start with the system of nutrition teachers in elementary school, but nutrition teacher cannot undertake the task of teaching and food service management alone. 강원 영동지역 일부 남자 대학생에서 기숙사 거주와 자취에 따른 식습관 및 가공식품 이용관련 식행동 조사 (Food Habits and Dietary Behavior Related to Using Processed Food among Male College Students Residing in Dormitory and Self-boarding in Gangwon)

  • The purpose of this study was to examine food habits and dietary behavior related to using processed food among male college students residing in dormitory and self-boarding in Gangwon. A total of 344 students (dormitory group: 227, self-boarding group: 117) were surveyed from May to June of 2012. The results are summarized as follows: self-boarding group had a significantly higher frequency of skipping breakfast and lunch and frequency of out meal compared with the dormitory group (p < 0.05, p < 0.05, p < 0.05 respectively). The self-boarding group had a significantly lower the score of 'eat vegetables and Kimchi at every meal' (p < 0.001) and 'eat a variety of food everyday' (p < 0.001) compared with the dormitory group. The self-boarding group had a significantly higher the preference for meat products (p < 0.05) and canned food (p < 0.01) for selecting processed food compared with the dormitory group. The consideration for selecting processed food was ranked by 'taste', 'price', 'expiration', 'appearance' and 'nutrition' in both dormitory and the self-boarding group. In the dormitory group, nutrition labels were identified certainly 2.6%, sometimes 12.8%, and rarely 17.2%. In the self-boarding group, nutrition labels were identified certainly 1.7%, sometimes 18.0%, and rarely 24.8%. The necessity of nutrition education was high in both dormitory group (51.6%) and the self-boarding group (62.4%). Therefore, development of an educational program and application of the information from nutrition labels for male college students, especially self-boarding students will be effective in improving dietary life in order to maintain healthy dietary habits.

한국노인의 식습관 및 식사행동에 관한 조사 연구 (A Study on the Food Habits and Dietary Behaviors among the Korean Elderly)

  • As the elderly population has increased in the advanced countries, food intake, relationship of nutrient intake and disease has become major problem in the aged. To investigate the dietary behaviors and the preference of food of the elderly for developing meal planning, the study was conducted through survey questionnaires including 24-hr dietary recall, dietary behaviors, food preference and frequency of food intake to 352 elderly (104 male and 248 female) who were more than 60 years old and living in Seoul. Most of subjects ate three meals regulary and the most preferred taste was sweet and the less preferred taste was sour. Dietary behaviors according to educational level were shown that the skipping meal time and duration time of one meal were significant difference in educational level. Most of the elderly subjects like kimchi and soybean paste soup. The more educated elderly were preferred milk. The reason of dislike of milk was bad flavor and diarrhea. Most of them who graduated from university and high school selected fishes because of good for health primary, otherwise no educated, elementary school and middle school graduated elderly selected vegetables primary. Meats, fishes, seaweeds, mushrooms, fruits, milk and milk products, eggs and vegetables intakes of total elderly subjects were significantly positively related to educational level. With respect to milk and milk products intakes, cheese, yogurt (curd) and milk intake of elderly was significantly negatively related to age. Therefore education for developing desirable dietary behaviors and improving the meal patterns should be in forced to elderly, especially who had poor educational background in order to manage the meal planning and to care for their health in the later life.

비만 아동의 식이 섭취 양상과 혈청 콜레스테롤 수준과의 상관성 (The Relationship between Serum Cholesterol Level and Dietary Intake in Obese Children)

  • To assess the relationship between serum cholesterol level and dietary intake in obese children, 50 subjects were selected as an obese group and 50 subjects as a normal group depending upon body mass index. Fasting blood samples were obtained and analyzed for serum total cholesterol(TC), high density lipoprotein cholesterol(HDLC), low density lipoprotein cholesterol(LDLC) and triglyceride(TG). The dietary intake and information on dietary behavior and family environment were obtained by questionaire using 24 hour dietary recall method for 2-consecutive days. The concentrations of TC, LDLC, HDLC and TG of obese group were estimated to be 193.3mg/dl, 122.5mg/dl, 53.7mg/dl and 86.0mg/dl, respectively. The obese group showed higher TC, LDLC, TG level(p<0.001) and lower HDLC level(p<0.001) than normal group. Food intakes in obese group were similar to those of normal group except meats & fishes(P<0.01), milk & dairy products, fruits(p<0.05), and green & yellow vegetables(p<0.001). Nutrient intakes in obese group exceeded Korean recommended dietary allowance for the corresponding ages. Saturated fatty acid(p<0.05) and cholesterol(p<0.001) intakes in obese group were higher than those of normal group. In correlation analysis, meats & fishes, eggs and milk & dairy products intakes were positively related to serum TC, LDLC and TG ; on the contrary, green & yellow vegetables and fruits intakes were negatively related to serum TC, LDLC and TG ; but positively to HDLC. Obesity index, serum cholesterol level, cholesterol and saturated fatty acid intake were positively correlated with parent's obesity index, frequency of snack per day, eating rate and late snack.

패밀리 레스토랑 고객의 외식 행동과 서비스 품질 만족 요인에 관한 연구 (A Study of Dining Behavior and Customer Satisfaction in Service Quality in Family Restaurants)

  • The purpose of this study was to obtain strategies for more effective management of family restaurants. A quantitative methodology was used to obtain the results. A questionnaire was designed to elucidate consumer dining patterns, as well as the factors that are important for consumers satisfaction in terms of the foodservice quality. The questionnaires were used to gather information from consumers at family restaurants and were then analyzed and evaluated. The results of this study indicated that there were important factors related to consumer satisfaction and the service aspects of family restaurants. As the results of empirical analysis, service quality factors in family restaurants were categorized into four factors such as inner shape of food, outer shape of food, facilities and service factors respectively. The analysis showed statistically significant difference at the 5% significance level in outer shape of food, facilities and service factors. These results will be used to assist in menu planning and quality reforms in the foodservice industry.

경기 지역 소비자의 주류 소비 행태 및 약주에 대한 인식 조사 (Consumption of Alcoholic Beverages and Perception about Korean Yakju in the Gyunggi Area of Korea)

  • This study was conducted to investigate consumer behavior and perception related to alcoholic beverages and Korean rice wines (yakju). Self-administered questionnaires were collected from 254 male and female adults in the Gyunggi-area of Korea. Male respondents were significantly more likely to drink more often, consume greater amounts and spend more on alcoholic beverages. Male respondents preferred, in order, soju, beer and wine. Female respondents preferred, in order, beer, wine and soju. Most of the respondents (69.2%) showed conservative consumption behaviors, and indicated they would drink a new product when it became popular. Flavor/taste was the most important attribute when selecting alcoholic beverages. The reasons for drinking yakju were "high quality" and "considering health". The most answered reason for low market share of yakju was lack of publicity and marketing.

백화점 종사자의 식행동과 건강상태에 관한 조사 (A Study on Dietary Behavior and Health Condition of Employees at Department Stores)

  • A study has been performed to provide the basic information about the current dietary habits, health related behaviors, and body indices and to bring forward the importance of this information to the people's attention based upon the relation between employee's life patterns and health conditions in their daily lives. Three hundred and five department store workers were examined from August 2006 to September 2006. With the average BMI values $23.9{\pm}2.2$ for males and $20.0{\pm}1.9$ for females, both gender groups were in normal, but 62.2% of the males were overweight and 15.4% of the females were under-weight. Regarding dietary and health related factors on how they perceive themselves, as normal were 204 (66.9%) the most and bad and very bad were respectively 43 (14.1%) and 5 (1.6%). Half of the subjects (43.2%) perceived sleeping hours to be insufficient, and 64.4% of them need to exercise regularly. As problems related to eating habits, they reported irregular meal times, overeating, preference of hot and spicy food, skipping meal, unbalanced meals. Regarding weight control they have attempted were the most (73.0%), after weight reduction, 51.2% of the subjects had side effects, such as gastrointestinal troubles, anemia, dizziness, sense of fatigue, constipation, physiological disorder, and diarrhea, etc. In the food habit score, it was shown that overall average score of the subjects was $62.63{\pm}9.86$ which is lower than other studies. Female ($62.76{\pm}10.15$) had better score than male ($61.67{\pm}8.06$). While the item with the highest point was eat all three meals of the day, that was the lowest point, exercise every day. The food habit score of the younger group had lower than older group, and also they preferred sweet foods to other group. The results suggest that nutrition education for workers at specific working fields needs to be more focused on the improvement of dietary habits and health status of workers.

근로자들의 대사증후군과 건강위험 요인과의 관련성 연구 (An Investigation on the Metabolic Syndromes and Health-Related Risk Factors among Male Workers)

  • This study is performed to estimate the prevalence of metabolic syndrome among male workers and to identify the relationships with many related factors including anthropometry, hematological index, serum lipid level, dietary-related behaviors and health-related behaviors. According to the age groups, the 20s are significantly higher in normal and risk groups than in the metabolic syndrome (MS) group, the 30s are significantly higher in MS group than the other groups. The levels of AST and ${\gamma}$-GTP both show significant differences in the order of MS group ($30.3{\pm}8.8U/l$, $91.1{\pm}40.2U/l$) > risk group ($25.7{\pm}8.1U/l$, $41.8{\pm}20.2U/l$) > normal group ($22.8{\pm}6.0U/l$, $26.6{\pm}10.7U/l$). For the frequency of breakfast consumption, the response of 'Every day' is significantly higher in MS group than normal and risk groups, but the response of 'Not at all' is significantly higher in normal group than MS and risk groups. The drinking amount is positively correlated with ${\gamma}$-GTP in normal group, and it is negatively correlated with the hematocrit level, but it is positively correlated with the systolic blood pressure in MS group. AST is positively correlated with glucose concentrations of the MS group. The ALT is positively correlated with waist circumferences and systolic blood pressure in the risk group. The results of this study show that breakfast frequency, education level, drinking amount, drinking frequency, exercise frequency, AST, ALT and ${\gamma}$-GTP levels are all important risk factors of MS. Therefore, it is very important to maintain a healthy life style for the prevention of MS incidence.
