A Study on Ca, P and Fe Excretions in Healthy adult Koreans on Their Usual Diet (우리나라 성인의 칼슘, 인 및 철분의 배설량에 관한 연구)

  • Mean daily excretion of Ca, P, and Fe were measured in 49 healthy young Koreans(23 males and 26 females) form urine and feces samples cellected for three days. Dietary intakes of the subjects during the study periods were calculated from intake records. Main results of the study are as following: 1) Mean daily urinary, fecal, and total Ca excretions were 162$\pm$20mg, 346$\pm$39mg, and 508$\pm$50mg, respectively in males and 154$\pm$16mg, 262$\pm$26mg, and 416$\pm$24mg, respectively in females. The mean values of the two groups were not significantly different. 2) Mean daily urinary, fecal, and total P excretions were 751$\pm$45mg, 384$\pm$26mg and 1135$\pm$56mg, respectively in males and 552$\pm$29mg, 335$\pm$34mg and 894$\pm$50mg, respectively in females. Urinary and total P excretion in males were significantly higher than females(p<0.01), but such differences disappeared when the excretions were calculated per kg body weight. 3) mean daily fecal Fe excretions were 12.8$\pm$0.9mg in males and 10.1$\pm$0.8mg in females. The mean value in males was significantly higher than that in females(p<0.05) but when calculated per kg body weight, both groups excreted 0.2mg/kg body weight. 4) Mean daily intake levels of the minerals estimated from three day food intake records were Ca 543mg, P 1136mg, and Fe 14.3mg in males and Ca 533mg, P 869mg, Fe 10.8mg in females. These intake levels seem to be sufficient to supply the daily losses of the study subjects except P in females. However, the problem of estimating dietary intake levels by food intake record should be recognized. Especially females in the study are in menstration age and their Fe losses in the menstration (estimated to be 0.5mg of available Fe per day) should be also supplied in the diet.

  • To examine the main party of royal family in the Man Kyong Jeon, the authors analyzed“Jin Chan Eui Gue”, which is a historical record published in 1887(King Go-Jong). The results obtained from the study were as follows, 1. The dining tables were divided into two:fixed arranging tables(131) and taking-away tables. 2. Food and flowers were distributed to the 1238 attendants. 3. According to the status or class of the attendants, the pattern or size of table settings were differentiated in the kinds of food, hights of food, flowers china ware etc. 4. The seat of the King's Grand Mother was located facing the south. 5. Red silk table cloth was used in the main party. 6. At the main party for the King's Grand Mother, dishes were arranged in the following sequence, the first line : cakes made of flour, oil and honey etc. the second : oil and honey pastry the third : fruits the fourth : rice cake etc. the fifth : cooked meat and fried fish etc. the sixth : sliced raw fish and beverage etc. the seventh : noodles, soup and soy bean sauce the eighth : spoon and chopsticks. 7. In the arrangements of tables for the King's Grand Mother, the heights of food on the dishes were as following level, a dish : 1 chok and 5 chon (1척 5촌) 27 dishes : 1 chok and 3 chon (1척 5촌) 7 dishes : 1 chok. (1척)

The bibliographical Study on the Famine Relief Food of Chosun-dynasty (조선시대 구망식품의 문헌적 고찰)

  • This paper has made a close examination of Shingan Goohwang Chowalyo(1660), Cheesaeng yoram(1691), Sallim Gyungjae(1715) and Imwon simyook Jee(1827), to grasp what kinds of famine relief foods have been analyzed in terms of nutrition elements and cooking methods. And also this paper has surveyed the changes of these famine relief foods according to the times. Three hundred forty one famine relief foods are recorded in the above mentioned books, Among them, ten foods are recorded in common in these four books: pine needles, elm tree skin, soybeans, wax, jujubes, black beans, glutinous millet, turnip seeds white pine-mushroons and Chool-Atractylodes japonica. The methods of cooking and processing are most varied in the order of pine needles, black beans and elm tree skin, Pine needles are rich in protein and fat, and so may be regarded as the first of famine relief foods. Elm tree skin is of more than 50% carbohydrate and may be used in plate of cereals. I addition to these, Hwangui-milk vetch, Choonsu-cedrela Sinensis, Tacksa-Alisma Orientale Juzep and some other foods contain starch, glucose, fatty acids, and amino acids. So they may be used for replacing cereals and relieving famine. Before these famine relief foods are cooked or processed, according to their ingredients they should be soaked in water for a time in some cases the water should be changed several times. In Shingan Goohwang Chowalyo and Cheesaeng Yoram, measuring units are rarely recorded, while in sallim Gyungjae, they are explicitly shown. Imwon Simyook Jee clearly shows the use of oriental medicine materials. And the fur above mentioned books show no record of famine relief animal foods. To these days, vegetables have been boiled, squeezed and seasoned with salt and oil, but the better the economic conditions become, the less other famine relief foods are used. Nevertheless it is expected that these natural foods can be made favorite dishes with the best use of their good flavors and tastes.

The Effects of Smoking and Alcohol Drinking on Nutritional Status and Eating Habits in Adult Males (일부 남자성인의 흡연과 음주에 따른 영양소섭취상태, 식습관 및 혈액성상)

  • The purpose of this study was to investigate the effects of smoking and/or alcohol drinking on the nutrient intake, nutritional status, and eating habits of adult males. The subjects were 157 male adults aged 20-49 living in Daejon. Interviews with questionaire on smoking and alcohol drinking habits and eating habits, anthropometric measurement, biochemical blood test, and dietary assessment by one-day 24 hour recall and two-day diet record were carried out. The subjects were divided into four groups : control (non-smoking and non-drinking), drinking only, smoking only, and the both(drinking and smoking). The average numbers of smoked cigarettes were 17.8/d and 19.1/d in the smoking only group and the both group, respectively. The frequency of alcohol drinking was 8.3 times/month and 11.6 times/month in the drinking only group and the both group, respectively. Height was significantly higher(P 0.05) in the drinking only group than in the none and smoking only groups, while the other anthropometric indices were not different among the four groups. There were positive correlations between smoking and drinking or coffee intake. Alcohol drinking increased eating-out frequency and the intakes of energy, protein, dietary fiber, vitamin A, B$_1$,$ B_6,$ Fe and P, while smoking decreased snack frequency and intakes of energy, protein and vitamin $ B_6,$. Blood pressure was not changed in the smoking only and drinking only groups compared to the none group, while systolic blood pressure was elevated in both group(P 0.05). Alcohol drinking significantly elevated(P 0.05) serum total cholesterol and LDL-cholestrol level, while smoking did not change the serum lipid and cholesterol levels. Hemoglobin nd MCHC levels were significantly elevated(P 0.05) by smoking. From these data, it is suggested that both smoking and drinking have influence on some eating habits and nutrient intakes, and especially alcohol drinking can induce hypercholesterolemia.

  • In 1492 year, the corn originated in America continent had spread all over the world after spreading into Europe by Columbus. Since the Corn had a similar shape with adlai's one (Yulmoo(율무)), it had been written by the different name of adlai (Yulmoo) at the "訓蒙字會(Hun-mong-ja-hoe)(1527)". Therefore we should consider "Hun-mong-ja-hoe" is the first record of the corn and it is a significant historic record in the civilization exchange between the Orient and the Occident that this record has the only difference of around 30 years later after the spreading corn to Europe. However, this is on the assumption that it is correct for a scholar of Korean literature to persist in that '叡山本' of "Hun-mong-ja-hoe" could be considered as the first edition. The corn had been once classified as a same kind of the Chinese millet because the people had been recognized the corn as a similar group of the Chinese millet and the Indian millet. The Chinese millet contains a summer vigor and becomes as an ingredient of alcoholic drink. And we can find out that $C_4$ type plant (such as corn, Chinese millet, Indian millet, foxtail millet) mostly have a tendency to belong to the food for "Taeumin(太陰人)", because of its high energy efficiency, a flourishing absorption of fertilizing and a strong emission power. The fried corn with a strong summer vigor and a raised feature has a good effect to the treatment of the teethridge disease. And the tea of corn with an warm feature, thanks to its functions of making the stomach and intestines comfortably as well as urination, is a proper food for the 'Taeumin" who is apt to overeat themselves.

Effect of an abdominal obesity management program on dietary intake, stress index, and waist to hip ratio in abdominally obese women - Focus on comparison of the WHR decrease and WHR increase groups - (복부비만 관리프로그램이 성인 비만여성의 식이섭취, 스트레스지수 및 복부비만율에 미치는 영향 - 복부비만감소군과 복부비만증가군의 비교를 중심으로 -)

  • This study was conducted to evaluate the effects of an abdominal obesity management program on dietary intake, stress index, and waist to hip ratio (WHR) in abdominally obese women. The subjects were 195 adult abdominally obese women (WHR ${\geq}$ 0.80) who had been participating in a nutrition education (total of nine times) and dietary habits and life style modification programs (total of six times) for 12 weeks. The abdominal obesity management program focused on the nutrition provided by breakfast, lunch, and dinner, proper dietary habits, and practices to improve life style. The subjects were divided into a WHR decrease group and a WHR increase group according to changes in the WHR. Daily nutrient intake was assessed with a 3-day food record, body measurements and blood vessel age, stress index, and a health index that were measured at baseline and after 12 weeks. After the intervention, weight, waist circumference, hip circumference, WHR, and body mass index (BMI) decreased significantly in the WHR decrease group. Energy intake increased from 1486.2 kcal to 1541.4 kcal with a significant improvement in nutrient density for animal protein, total fat, animal fat, fiber, calcium, phosphorus, zinc, vitamin $B_6$, vitamin C, vitamin E, and saturated fatty acids in the WHR decrease group. Additionally, dietary diversity increased significantly in the WHR decrease group compared to that in the WHR increase group. The WHR decrease group showed a significant improvement in the stress and health indices. Changes in WHR were correlated with changes in nutrient intake (animal protein, total fat, animal fat, plant fat, fiber, calcium, iron, potassium, vitamin A, vitamin $B_2$, vitamin $B_6$, vitamin C, and folate) and medical index profiles (stress and indices) adjusted for age, birth status, baseline BMI, and baseline WHR. These results show that an abdominal obesity management program was effective not only for reducing the WHR but also to improve dietary intake and the stress index in abdominally obese women.

Predictors of Quality of Life among Hemodialysis Patients (혈액투석환자의 삶의 질에 대한 영향요인)

  • Purposes: Quality of life is an important health outcome for hemodialysis patients. The purposes of this study were to identify the level of quality of life and to identify the predictors of quality of life among hemodialysis patients. Method: A descriptive correlational study was conducted. Data were collected from 103 hemodialysis patients at the hospitals in a community using structured questionnaire and medical record. Data were analyzed using descriptive statistics, t-test, ANOVA, correlation, and stepwise multiple regression. Results: Quality of life among hemodialysis patients was relatively lower than that of previous studies. In the final analysis, quality of life was predicted by presence of comorbidity, emotional health, gender, physical health, and knowledge of disease. These variables accounted for 45% of variance of the quality of life. The presence of comorbidity was the most significant predictor of quality of life among hemodialysis patients. Conclusion: Interventions to increase quality of life among hemodialysis patients such as health promotion program and educational program for dietary compliance are needed. These must be developed and applied.

Reproducibility and validity of semi-quantitative food frequency questionnaire measuring dietary trans-fatty acids intake among Korean adults

  • BACKGROUND/OBJECTIVES: Compelling evidence indicates that consumption of trans-fatty acids (TFA) is associated with a wide range of diseases. However, few validated tools for TFA intake assessment are available in Korea. We aimed to validate a food frequency questionnaire (FFQ) estimating usual intake of TFA in Korean adults. MATERIALS/METHODS: Eighty-two healthy adults completed an FFQ with a 3-day diet record (3DDR), and 58 completed a second FFQ at a 1-month interval. To assess the reproducibility of the FFQ, we compared estimated TFA intakes from each FFQ. To assess the validity, we compared estimates from the FFQ with those from the 3DDR. RESULTS: The FFQ was reproducible (Spearman r = 0.71) and provided modest correlations with the 3DDR (Spearman r = 0.38). After adjustment for total energy intake, the correlations increased (r = 0.45). Measurement-error correction also de-attenuated the correlations (r = 0.57). When quintiles of the FFQ and 3DDR were joint-classified, 9% on average were misclassified into extreme quintiles. CONCLUSIONS: Our findings suggest that the developed FFQ is reproducible and reasonably valid in categorizing individuals according to TFA intakes among healthy young and middle aged adults in Korea.

Validity of Self-administered Semiquantitative Food Frequency Questionnaire by Conditions of One Portion Size (식품섭취빈도조사법의 1회 섭취분량 제시여건에 따른 정확도에 관한 연구)

  • This study was designed to estimate the improvement of Validity for food frequency questionnaire(FFQ) by offering multiple choice portion size in developing a questionnaire. Validity of the two methods(food frequency questionnaire I=FFQ I & Food frequency questionnaire II=FFQ II) was tested in comparison with reference method of the 7-day weighed record(7DWR). Dietary consumption data of the three methods(FFQ I, FFQ II & 7DWR) were collected from 101 female university students for the analysis. Validity was measured in two categories : One was the nutrient intake value from the three methods, the other was the identification of between individual variation within the group. Spearman's rank order correlation test and distribution graphs were used for the analysis. The result showed that individual intake value of the FFQII was closer to that of the 7DWR than that of the FFQ I.Spearman's rank order correlation between the FFQII and the 7DWR did not show any improved correlation. The distribution graphs of nutrient intake derived from both the FFQ I and the FFQII were different from that of the 7DWR. Therefore, it could be suggested that single one portion size food frequency questionnaire is an equally efficient method as a multiple choice food frequency questionnaire to be adopted in epidemiologic studies.

Daily Kimchi Consumption and Its Hypolipidemic Effect in Middle-Aged Men (김치 섭취수준이 남성의 혈중 지질농도에 미치는 영향)

  • A nutrition survey regarding daily kimchi consumption and its hypolipidemic effect were carried out with 102 of healthy Korean adult men aged between 40 to 64 years old who visited hospital for physical examination. The physical and biochemical parameters of blood were examined as well as food record, preferences for taste, personal life habit, and family history of disease. Data were expressed as quartile according to kimchi consumption. The average daily kimchi consumption for 1st, 2nd, 3rd, and 4th per centile group were 68, 118, 208, and 383g, respectively. The intakes of dietary fiber and Ca were found to be increased as kimchi intake increased(p<0.05). The kimchi consumption level was selected as the determining factor for HDL C level analyzed by stepwise multiple regression(p=0.09). When correlation coefficient between kimchi consumption and other parameters were analyzed, kimchi consumption was positively correlated with HDL C and negatively correlated with LDL C(p<0.05). The preference for hot taste was negatively correlated with systolic blood presure. It seems that kimchi consumption is beneficial to elevate HDL C and lower LDL C level.
