  • The purpose of this study was to examine the obesity, physical activities, and dietary pattern, and to compare the physical activities and dietary pattern according to the degree of obesity in Korea adults, with data from the 7th Korea National Health Nutrition Examination and Survey VII-1(2016). This study found that compared with the obesity rate of females at 26.3%, the rate of males was very high at 43.7%. In both males and females, the obesity rate increased in proportion to age. In physical activity, the amount of physical activities among females was higher in normal weight group than obese weight group. In dietary pattern, among males, dietary fiber intake was higher in obese weight group, and among females, intake rate of fat was low and intake rate of carbohydrate was high in obese weight group. Based on the results of this study, it is necessary to develop and provide an intervention program consisting of physical activity and dietary pattern considering the recently changed obesity characteristics for the management of obesity in Korean adults.

Glycemic Index and Glycemic Load Dietary Patterns and the Associated Risk of Breast Cancer: A Case-control Study

  • The glycemic index (GI) and glycemic load (GL) have been considered risk factors for breast cancer, but association studies of breast cancer risk using simple GI and GL might be affected by confounding effects of the overall diet. A total of 357 cases and 357 age-matched controls were enrolled, and dietary intake was assessed using a validated food frequency questionnaire (FFQ) with 103 food items. GI and GL dietary patterns were derived by reduced rank regression (RRR) method. The GI and GL pattern scores were positively associated with breast cancer risk among postmenopausal women [OR (95%CI): 3.31 (1.06-10.39), p for trend=0.031; 9.24 (2.93-29.14), p for trend<0.001, respectively], while the GI pattern showed no statistically significant effects on breast cancer risk, and the GL pattern was only marginally significant, among premenopausal women (p for trend=0.043). The GI and GL pattern scores were positively associated with the risk of breast cancer in subgroups defined by hormone receptor status in postmenopausal women. The GI and GL patterns based on all food items consumed were positively associated with breast cancer.

Gender specific effect of major dietary patterns on the metabolic syndrome risk in Korean pre-pubertal children

  • There is a lack of data on metabolic risk factors during pre-puberty, which is important for identifying the subgroups of youth, at whom early interventions should be targeted. In this study, we evaluated the prevalence of metabolic risk factors and its subsequent relations with dietary patterns in Korean pre-pubertal children through a cross-sectional sample (n = 1,008; boys = 513) of pre-pubertal children (aged 8-9 years) from a sub-study of the Korea Metabolic Syndrome Research Initiatives (KMSRI) in Seoul, Korea. Measures of anthropometry and blood pressure as well as fasting blood samples were used in the analysis. A three-day food records were collected. The metabolic syndrome was defined according to the age-adjusted National Cholesterol Education Program Adult Treatment Panel III guidelines. An added metabolic risk score was calculated for each subject by summing the quintile values of the five individual risk factors. Among the 5 risk components of metabolic syndrome, high waist circumference (WC) was the major factor (P < 0.001). A significant increasing trend of the added metabolic syndrome risk score was observed with the increase of WC (P (trend) < 0.001) among both genders. The cutoff point for high WC for pre-pubertal children was 61.3 cm for boys and 59.9 cm for girls. The prevalence of high triglyceride (TG) values was significantly higher in girls than it was in boys (P < 0.01). Girls in the highest quintile of balanced dietary pattern scores had lower TG values (P (trend) = 0.032) than did those in the lowest quintile. Moreover, girls in the highest quintile of western dietary pattern scores showed increasing trend for the added metabolic risk score (P (trend) = 0.026) compared with those in the lowest quintile. Adverse associations exist between western dietary patterns and the accumulation of metabolic risks among girls, not in boys, even during pre-puberty.

Relations of Glaucoma and Dietary Pattern Factor (녹내장과 식사패턴요인의 관련성)

  • Purpose: This study was performed to identify the relations between glaucoma and dietary patterns in Korean adults, aged 30 years or older. Methods: 6,453 subjects (male 2,759, female 3,694 subjects) who aged 30 years or older from the Korea National Health and Nutrition Examination Survey were included. Glaucoma was assessed based on the subjects were diagnosed by a doctor. At first, waist circumference and body mass index (BMI) were compared to investigate the association between glaucoma and obesity index. Secondly, dietary patterns using factor analysis for external blue colored fish(mackerel), seaweed(seaweed, laver), bean(bean, soybean milk), vegetables(sprout, spin, carrot, cabbage, cucumber, pepper, tomato, pumpkin) and fruits(tangerine, apple, pear, strawberry, grape, peach) were obtained. Lastly, regression analysis was used for glaucoma and emerged dietary factors. Results: In glaucoma and normal group, waist circumference and BMI were $82.25{\pm}9.96cm$ and $23.27{\pm}2.84kg/m^2$, $75.79{\pm}13.79cm$ and $22.39{\pm}4.06kg/m^2$, respectively. There was statistically significant difference (p<0.05). Three dietary patterns were emerged from the factor analysis, and factor 1 was included sprout, spin, carrot, cabbage, seaweed, cucumber, mackerel, laver. The factor 1 of dietary pattern was inversely related to the prevalence of glaucoma (OR: 0.697, 95%CI: 0.496-0.980, p=0.038), and model adjusting for age and sex was showed the same trend (OR: 0.698, 95%CI: 0.497-0.982, p=0.039). Conclusions: This study was analysed first with glaucoma and dietary pattern in Korean, and vegetables, laver and mackerel significant associated to reduce the risk of glaucoma.

Effects of Medical Nutrition Therapy on Changes of Anthropometric Measurements, Dietary Pattern and Blood Parameters in Over Weight or Obese Women (과체중 및 비만 여성에서 의학영양치료에 의한 체격지수의 변화 양상 및 식사 섭취와 혈액학적 지표의 변화)

  • The purpose of this study was to investigate the effect of medical nutrition therapy (MNT) on anthropometric measurements, quality of diets, and blood parameters through the weight loss program in over weight or obese women. The subjects (n=76, $age\;31.1{\pm}8.4y,\;weight\;70.3{\pm}7.9kg,\;BMI\;27.2{\pm}2.4kg/m^2$) without medical disease were treated with MNT 5 times for 12 weeks by dietitian. Anthropometric measurements included height, weight, fat mass, lean body mass, triceps and thigh skin-fold thickness, mid-arm, waist, hip and thigh circumference. Dietary assessments were accomplished using 3-days food records, diet quality index (DQI), and dietary pattern. The dietary pattern was assessed by daily energy intakes from breakfast, lunch, dinner, and snacks of calorie density, and numbers of eating. Blood levels of leptin, lipid profiles (total lipids, total cholesterol, LDL-cholesterol, HDL-cholesterol), and insulin were analyzed. Anthropometric measurements decreased significantly after MNT (p<0.001). Waist circumference was reduced most rapidly and tricep skin-fold thickness was reduced most effectively after 12 weeks of MNT. Daily energy intake, calorie density and numbers of eating incidence decreased significantly $0796.4{\pm}395.5\;vs\;1402.9{\pm}217.8\;kcal/day,\;162.3{\pm}56.5\;vs\;113.4{\pm}30.1,\;5.0{\pm}1.4\;vs\;3.8{\pm}0.4$, respectively, p<0.05). The daily energy intake from breakfast and snacks significantly decreased (p<0.001). Calories from snack, calorie density of snack and numbers of snacking also decreased (p<0.05). The mean scores of DQI significantly increased ($7.6{\pm}2.1\;vs\;6.5{\pm}1.6$, p<0.05). The plasma levels of total lipid, triglyceride (TG), total cholesterol, LDL-cholesterol and leptin decreased significantly after MNT ($489.8{\pm}100.4\;vs\;447.0{\pm}87.3mg/dL,\;187.7{\pm}34.0\;vs\;175.9{\pm}31.5mg/dL,\;115.2{\pm}29.2\;vs\;109.2{\pm}26.7mg/dL,\;15.7{\pm}7.6\;vs\;12.4{\pm}5.9ng/mL$, respectively, p<0.05). These results indicate that MNT efficiently reduced the body weight through the changes in dietary intake, dietary patterns and dietary quality. MNT also changed body composition and reduced the levels of plasma lipid, cholesterol and leptin.

Estimation of the Dietary Fiber Intake by the Korean Population according to Urban and Rural Areas (한국인의 도시/농촌별 식이섬유 섭취량 추정)

  • The daily intake of dietary fiber by Korean population in urban and rural areas was computed from an optimized food intake based on national nutrition survey, food balance sheet, and the dietary fiber content of Korean foods. The average intake of dietary fiber the nationwide and in urban and rural areas were 24, 22 and 28g in the 1970's, 20, 21 and 20g in 1980's , and 22, 22 and 21g in the 1990's , respectively. As compared with the recommended dietary allowance of 20-25g for Koreans, the average intake of dietary fiber was within the normal range, regardless of urban and rural areas. Since the dietary pattern of korean people is being changed according to different life style, the exact intakes of dietary fiber by diverse specific population groups should be assessed in the future.

Evaluation of Dietary Risk Factors for Abnormal Serum Cholesterol in Korean Sedentary Male Adults

  • This study investigated whether dietary factors are more influential factor than other health behavior such as drinking, smoking and exercise on abnormal serum cholesterol level inspite of Korean dietary pattern differences compared to Europeans and Americans. A double case control study model has been used for the study design. One model consisted of high blood cholesterol cases and control. the other model consisted of low blood cholesterol cased and controls. 5.398 sedentary male workers who had taken medical examinations at a university hospital were used as the study subjects. Out of the study subjects, 36individuals with high blood cholesterol cases and 30 individuals with low blood cholesterol cases were selected. For the 66 individual control selection, the individual control selection, the individuals matching method was adopted. The food frequency method was used to collect the data for assessment of the dietary factors. A standardized questionnaire was used to investigate other health behavior. logistic regression analysis was employed to measure the relative importance between the factors considered. There were no statistically significant differences observed in nutrients consumption or other health behavior among the low, normal and high blood cholesterol groups, An overmatching effect had been suspected as the cause of those findings. However, the results of logistic regression analysis to identify the factors influencing high serum cholesterol showed that odd ratios of dietary factors such as tocopherol(3.0) and saturated fatty acid(1.6) were higher than I. I of smoking and 1.2 of drinking. Similar results were also observed incases of low serum cholesterol. The above findings imply that although the dietary pattern is quite different from that of Europeans and America, the dietary factor is still a significant factor for abnormal blood cholesterol in Koreans. Therefore, the dietary risk factor identified in high fat consumption populations are still relevant for the relatively healthy Korean as guideline for preventive health practices. A Study on the Differences in the Dietary Pattern and Nutrient Intake of Lacto-ovo Vegetarian and Non-vegetarian in Korean Preschool Children (학령 전 아동에서 Lacto-ovo Vegetarian과 Non-vegetarian의 식생활 습관과 영양소 섭취 차이에 관한 연구)

  • Korea used to be a country where individuals ate diets high in vegetables and rice, but in recent years, it has become a country where western-style diets are increasingly popular. Consequently, the age for chronicle disease, including obesity and diabetes, has become lower. The purpose of this study was to compare the dietary habits of kindergarten children between lacto-ovo vegetarian and non-vegetarian families. The data were collected from the children(n=300) at Sahmyook University Kindergarten. The results showed that non-vegetarians had higher intakes of cookies, cakes, processed foods, ice cream, and fast foods, while vegetarian children consumed high amounts of vegetables, fruits, and kimchi. The non-vegetarian children tended to have irregular meals, and ate high-fat meats such as kalbi and samgyupsal. However, the results show it is important that many children among both vegetarian and non-vegetarian families should be encouraged to have appropriate essential nutrients, because a high percentage of children in both groups appeared to have low intakes of energy, vitamin $B_2$, vitamin C, calcium, zinc, iron, etc.

Changes of Basic Food Groups accoriding to the Revision of Korea RDAs (한국인 영양 권장량의 개정에 따른 기초식품군의 변화)

  • Due to the continuous change of socio-economic circumstances and dietary pattern, the need to change recommended dietary allowances and the basic food groups has been required. Consequently, there have been six revisions of the Korea RDAs, the national recommanded dietary allowances. I reviewed the six sequences of revisions concerning the basic food groups. Up to the fifth revision, the ranks of the basic food groups were based upon the dietary needs of the people of the perspective era. However, in the sixth revision, there was no rank associated with the food groups, but the food groups were portrayed in a food composition tower that explained their importance and their necessary consumption amounts. I could indirectly observe the dietary pattern of each era by analyzing the basic food groups and the representative foods of each food group. I also studied information of pictorial representations of the basic food groups and compared the items of the representative foods with nutrient analysis table. By observing nutrient analysis table, I analyzed whether the clarified representative foods of the basic food groups are indeed foods that were eaten frequently by people daily.

Effect of Gooking on Water Insoluble Dietary Fiber in Vegetables (조리방법에 따른 채소의 불용성 식이섬유 함량 변화에 관한 연구)

  • Recently, interests of dietary fiber associated with critical physiological effects have been rising in Korea physiological effect in the body. In the present study, the contents of fiber components in 15 kinds of vegetables being consumed commonly in Korea were investigated, and the effects of various treatments (cooking and Kimchi fermentation) on fiber were studied. The results are summarized as follows. Fiber contents of vegetables were 11.8∼31.9% of neutral detergent fiber(NDF), total insoluble dietary fiber, 10.9∼25.4% of acid detergent fiber(ADF), 8.8∼23.8% of cellulose, 0.6∼10.6% of hemicellulose and 1.0∼5.2% of lignin, on dry weight basis. Especially, peppers had higher contents of NDF than the other vegetables. In the vegetables used in the present study, it was found that a great portion of NDF, total insoluble dietary fiber, was composed of cellulose because cellulose covered 63% of NDF. 'Cooking increased the NDF, ADF and cellulose contents, and most change was due to the change of cellulose. The values of hemicellulose and lignin showed an Irregular pattern upon cooking. Fermentation slightly increased NDF, ADF and cellulose, while hemicellulose and lignin showed irregular pattern.
