  • This study was performed to investigate the degree of different stresses in university students of outer region of Seoul and to search the influence of food habit and nutrient intakes in stress. The data was collected by questionnaire method for self-diagnosed different stresses, dietary habit, and physical status and 24 hours recall for nutrient intakes. The subjects were 282 students attended at the lecture Food and Health. Diet balance was no difference with gender but food intakes were more diverse in female. Nutrient intake of male students was lower in vitamin A and riboflavin, but that of female was low in vitamin A and iron. The university students outer region of Seoul had more stress situation in frustration, deprivation and self-efface than in the stress of the noise and Type-A behavioral stress. Total self-diagnosed dietary habit score was better in the group of no susceptive overload stress than that of the high susceptive group. Same trend of dietary behavior score was in the group of no noise and anxiety-response stress than that in the susceptive groups. The quantity of nutrient intakes was correlated with different kind of stress. Niacin intake was positively related with the stress from life-events, and food induced stress. Thiamin intake was positively related with food induced stress. But the intake of iron, calcium, niacin and riboflavin were negatively related with the stress of noise. Therefore, we could concluded that different kind of stresses were influenced in dietary behavior and vitamin-mineral nutrient intakes. More research would be needed at the aspects of health promotion in the stressful situation of modern society.

  • This study was designed to study sources of variability(subjects, day by day, season, day of week, sequence, number of repeated days, compliance etc.) in multiple 24-hour dietary recall method. Dietary intakes of college women in Seoul were obtained using 24-hour dietary recalls, consecutive 7 days, 4 times for 1 year. The result of this study shows that 1) the reproducibility of multiple 24-hour recalls is low(intraclass correlation coefficient<0.3), 2) the intraindividual variations of all nutrients are more than 80%, 3) the major components of variation are interindividual vriability and intraindividual variability(within person variability and methodologic error). There were small but statistically significant season and compliance effects. 4) the ratio within-person varation to between-person variation for absolute and transformed nutrient intakes except some nutrients such as vitamin A, vitamin C, energy from protein and fat etc, was less than 1.7 the minimum numbers of days needed in 24-hour dietary recalls to estimate usual intake for this group were 1 to 21 days. And the numbers of days needed to get the usual intake of an individual varied among individuals and within individuals for different nutrients, ranged from 1 days for log carbohydrate(% energy) to 470 days for Na. 6) There were greater than 0.7 correlation coefficients between the average nutrient intakes of 12 days and intakes of 28 days. Therefore, it was desirable to take the 24-hour recall more than 12 times, repeating 3 days every season.

  • The aim of this investigation was to collect the baseline data about growth, dietary behaviors, nutrient intakes and dietary quality of children at child care centers for planning nutritional management program. The dietary intakes were measured by weighing method for intakes at child care centers and by dietary records by children\\`s mothers for intakes at home. The weight and height were measured and calculated z-scores by using standard of the same age groups. The children were 163 boys and 168 girls and the mean age were 55.6 months(12-78 months) and 56.0 months(16-78 months). respectively. The Z-score for height(0.33) and weight(0. 11) showed that the growth of children were above average. Nutrients intakes such s energy, protein, fiber, iron, sodium, potassium, vitamin A, vitamin B$_1$, vitamin C, niacin of boys from lunch and snack at day care centers were significantly higher than those of girls, and the meals at child care centers provided 20-37% of RDAs. The daily energy intakes were 1332.2kcal(83.1% RDA), protein 44. 26g(109.3% RDA), calcium 437.73mg(72.4% RDA), iron 7.24mg(72.4% RDA), vitamin A 459.6RE(113.1% RDA),vitamin B$_1$ 0.74mg(93.4% RDA), vitamin B$_2$0.79mg(79.7% RDA), niacin 7.66mg(69.9% RDA) and vitamin C 56.84mg(142.1% RDA). The nutrients which more than 50% of subjects ate less than 75% RDA were calcium, iron, niacin, and vitamin B$_2$.The average mean adequacy ratio was 0.80 and mean dietary variety score was 22.42, and those are positively correlated to % RDA of nutrient intakes. In summary, the children using child care centers consumed most nutrients below level of RDA and the nutritional management program at child care center is required to enhance the nutritional status of them. • The purpose of the present study was to investigate the relationship between nutrient status, and bone mineral state which influenced by aging process. The subjects were 196 people over 65 years old(male 72, female124). The present dietary intake was estimated by the 24-hr, recall method, and individual dietary history concerning consumption of meat, fish and dairy products was obtained by questionaires. The syndrome of senility including seniliy was evaluated according to "Cornell Medical Index". The five subjects who showed 'Good' grade in bone senility, and five subjects who showed 'Risk' and 'Danger' grade were selected and their spine and femur bone density was measured by "Dual Photon Absorptiometry". The bone density measurement showed that the subjects with 'Good' grade in bone senility had bone density above that of normal person, and their nutrient status were satisfactory, whereas the subjects with 'Risk' and 'Danger' grade in bone senility had severe osteoporotic pattern, and their nutrient status were very poor. The food consumption score showed that the subject with higher intake of meat rather than milk had good grade in bone senility (p<0.05). Therefore, past meats consumption can be considered to be a significant factor in the present bone status. The nutrient intakes appeared to be significant factors in bone status in male, whereas there was little effect of nutrients intakes in female. Therefore, the risk of osteoporosis can increase as syndrome of bone senility and nutrient intakes were worse, and its is possible to evaluate bone status and predict osteoporosis simply from informations concerning syndrome of bone senility and nutrient intakes in old population over 65.

  • This study assessed yearly trends of food and nutrient intake among high school students aged 16 to 18 years (n=2,377) using the 2007~2015 Korea National Health and Nutrition Examination Survey (KNHANES). Yearly trends of food or nutrient intake were analyzed via logistic regression analysis. The results showed that consumption of sugars & sweets, and beverages & alcohols was increased rapidly during this period (p<0.0001). Intake of meat & meat products, and fish & shellfish also was increased (p=0.0008). Intake of grains and grain products was increased until year 2011 but declined after 2012 (p=0.0025). Consumption of vegetables, and milk & milk products was decreased (p=0.0395). Intake of protein, fat, thiamin, riboflavin, niacin, and iron was increased (p=0.0445). Carbohydrate energy ratio was decreased, whereas fat energy ratio was increased (p=0.0235). Most nutrient intakes satisfied the dietary reference intakes for Koreans except dietary fiber (19.6~26.2%), calcium (46.9~55.2%) and sodium (more than 221.4%) during this period. There was a significant positive correlation between most food group intakes and most nutrient intakes (p=0.0468). Therefore, it is crucial to increase dietary fiber and calcium intake and decrease consumption of sugars, fats and sodium through diverse eating of food groups to ensure balanced nutrition of subjects.

  • This study was conducted to investigate the anthropometric data, bone density, serum profiles, nutrient intakes and diet quality of premenopausal and postmenopausal women. For the study, we obtained data for analysis from the combined 2008~2011 Korean National Health and Nutrition Examination Survey (KNHANES). The height and weight were 157.8 cm and 58.7 kg in premenopausal women and 155.5 cm and 58.3 kg in postmenopausal women, respectively. The obesity rate was 27.49% in premenopausal women and 34.98% in postmenopausal women (p<0.001). Total cholesterol, LDL-cholesterol, triglyceride, GOT, GPT and alkaline phosphatase in postmenopausal women were significantly higher than those in premenopausal women (p<0.001). The prevalence of osteoporosis was 0.0~0.89% in premenopausal women and 0.48~13.22% in postmenopausal women (p<0.001). In postmenopausal women, rates of hypertension, stroke, myocardial infarction, depression, and diabetes were significantly higher than those in premenopausal women. Water, fat. ash, sodium, retinol, thiamin, riboflavin and niacin intakes in premenopausal women were significantly higher than those in postmenopausal women. Water, fiber, Ca, and, K intakes were below KDRIs (Dietary Reference Intakes for Koreans) in both groups. The mean adequacy ratio (MAR) of premenopausal women was higher than that of postmenopausal women (p<0.001). The index of nutritional quality (INQ) in premenopausal women was also higher than that of postmenopausal women except iron and vitamin C. Therefore dietary guidelines and an education program should be developed for desirable improvement of health, bone density, nutrient status and dietary quality of postmenopausal women.

  • This study was carried out to compare the dietary behaviors and nutrient intakes among the students(13 years of age) of middle schools between in industrial complex and in non-industrial complex. The subjects of each group were composed of 192 male and female teenagers living in Ansan city in Korea, and this study was performed by questionnaire and dietary survey. As a result, mothers' education level and monthly family income were lower in industrial complex-families(ICF) than those in non-industrial complex-families(NICF). The subjects in ICF took dinner more irregularly than did those in NICF. The subjects in ICF skipped the meals often as there was no person preparing meals'. The subjects in ICF tended to take ra-myun, cookie or bread more often as a lunch, and they considered size and price of snack more imporandy when they chose snack than those in NICF. And the subjects in ICF had lower degree of flood habits and satisfaction on their meals than those in NICF. The daily intakes of calorie, vitamin B$_2$, calcium and iron of subjects of two groups were lower than the Korean RDA, and these intakes were lower in ICF than in NICF. These findings show that dietary behaviors and nutrient intakes were poor among the students of middle schools in ICF, in part it seems to be related to the fact that the group of ICF has low family income and mothers of ICF have the jobs that are finished late or irregularly. Therefore, these results underscore the need to provide the nutritional education for the students of middle schools and their mothers in ICF with respect to the importance of optimal nutrition through sound dietary behaviors during the adolescence.

  • This study was done to evaluate the nutritional status and the desirable time and period for making dietary records in male high school Taekwondo athletes. Nutrient and flood intake was investigated using dietary record method during usual training (UT, for 29 days) and special training (ST, for 17 days) periods in nine Taekwondo athletes. Nutrient intake by 7-d and 3-d dietary record were compared to the standard nutrient intake, which was computed from dietary record during total period of UT or ST. Total mean energy intake was 2278 kcal, 84% of RDA, and mean intakes of riboflavin, Ca and Fe were less than 77% of RDA. Mean intakes of energy, carbohydrate, protein, fat, cholesterol, thiamin, riboflavin, and P decreased during ST (p < 0.05 or p < 0.01). Mean intakes of vegetables and grains ware the highest in the two periods and following were beverages and instant floods in UT, and meats and fruits in ST. During ST, mean intakes of mushrooms, meats and their products, and instant floods decreased, and sugars and sweets increased (p < 0.05 or p < 0.01). The contribution of grains and their products, instant floods, and meats and their products to mean intakes of energy, carbohydrate, protein and fat were high. In snacks, the contribution of instant floods, breads and confections and beverages was high. During UT, cholesterol intake at weeks 1 and 3, and intakes of protein, fat, thiamin, riboflavin and niacin at week 4 by 7-d dietary record were different from their standard intakes (p < 0.05 or p < 0.01). Intakes of VA, Ca and Fe at week 1, and intakes of carbohydrates, cholesterol rind crude fiber at week 4 by 3-d dietary record were different from their standard intakes (p < 0.05 or p < 0.01). During ST, VC intake at week 5, and energy intake from carbohydrate and cholesterol intake at week 6 by 7-d dietary record were different from their standard intakes (p < 0.05 or p < 0.01). Cholesterol intake at week 7, and energy intake from carbohydrates and fat, and intakes of protein, fat, cholesterol and riboflavin by 3-d dietary record were different from their standard intakes (p < 0.05 o. p < 0.01). In conclusion, empty-calorie floods can be a main source of diet and snacks for Taekwondo athletes, and education about desirable nutrients and floods intakes is needed to help them control their weight. When investigating the nutritional status of Taekwondo athletes in the future, the 7-day or 3-day dietary record is desirable provided they are conducted in the milddle of each period artier distinguishing UT from ST period.
