A Study on the Nutritional Knowledge, Food Habits, Food Preferences and Nutrient Intakes of Rural Housewives. (경상북도 안동군 농촌지역 주부들의 영양지식, 식습관, 식품기호도 및 영양소섭취실태에 관한 조사 연구)

  • This nutritional survey was conducted from January 20 to February 8, 1994, in order to investigate the nutritional knowledge, food habits, nutritional attitude, food preferences and nutrient intakes of housewives living in Andong district, rural area of Korea. The subjects of this survey were 181 rural housewives living in Andong area. The completely answered questionnaires were analyzed for nutritional knowledge, food habit, nutritional attitude, food preferences and nutrient intakes of rural housewives. The results obtained are summarized as follows: The subjects had a high level of perceived knowledge (79.9%), that is the knowledge that each subject believed she had, but the accuracy of the knowledge was only 66.6%. The average nutritional knowledge score was 7.93 out of possible 15 points, and food habit score was 5.08 out of 10 points. Most of the subjects belonged to "Fair" or "Poor" food habit group, which is considered to be relatively bad. With increasing age, the percentage of perceived knowledge, accuracy, and nutritional knowledge score were getting lower. Food habit score and nutritional attitude score were getting lower with increasing age, too. The correlation between nutritional knowledge score and food habit score was low(r=0.01). The correlation between nutritional attitude score and food habit was low, too(r=0.15). Food preferences for kimchi, cooked rice, potato, milk, beef, chicken, and carrot were high. Average calorie and protein intakes of the subjects were 1915.7㎉ and 77.0g respectively. The ratio of caloric nutrients intake was carbohydrate 65.9%, protein 14.9%, and fat 19.2%.

  • 중학생의 체형인식과 식생활태도, 영양섭취 상태 및 식이 자기효능감을 조사하여 이들 간의 상호 관계를 알아보기 위하여, 경남 마산시, 진주시, 진해시에 소재하는 중학교 3개교를 선정하여 남녀 학생을 대상으로 설문지법을 이용하여 2002년 4월 8일부터 4월 22일 까지 조사를 실시한 결과는 다음과 같다. 남학생은 평균 신장이 161.8 cm, 평균 체중이 52.4 kg, 여학생의 평균 신장은 157.1 cm, 체중 47.9 kg이었고, 체중부족군에서는 23.9%, 정상군에서는 24.5%, 체중과다군의 57.1%, 비만군의 62.5%만이 스스로의 체격을 정확하게 인식하고 있었다. Evaluation of the Effectiveness of Dietary Education and Exercise Program on Obese Adults in Chuncheon Area (춘천지역 일부 비만인 성인대상 식생활교육과 운동중재 프로그램의 효과평가)

  • The purpose of this study was to evaluate the effectiveness of an intervention program using dietary consult and physical exercise conducted by public health center in Chuncheon city for obese adults. This study used a pretest-posttest design. The subjects were 58 out of 90 obese adults with body mass index (BMI) greater than $25kg/m^2$ who completed all education sessions for 8 weeks. Data on dietary habits, dietary behaviors, nutritional knowledge, anthropometric parameters and biochemical indices and daily nutrient intakes assessed by a 24-hour recall were collected before and after the intervention program., in order to evaluate program effectiveness. After the intervention, there were positive changes in exercise status and dietary habits and nutrition knowledge accuracy. Especially, the answer of 'I drink a cup of milk every day' were significantly improved (p<0.001), and the answer of 'I don't overeat', which is a dietary attitude question was significantly improved (p<0.05). Dietary intakes of most of nutrients were not significantly different between pre-test and post-test. But calcium (p<0.05), potassium (p<0.05), vitamin A (p<0.01), vitamin E (p<0.05), and folic acid (p<0.05) were significantly increased in the female group after the intervention. Weight (p<0.05), BMI (p<0.01), blood pressure (p<0.001), were significantly decreased after program, but changes of skeletal muscle mass, body fat mass were not significant. Resting heart rate (p<0.01), flexibility (p<0.001), whole body reaction (p<0.05), grip strength (p<0.01) and balance (p<0.01) showed positive changes after the intervention. Blood glucose level in serum was significantly decreased (p<0.001). These results indicated that dietary education and exercise program was effective not only for weight reduction but also for the improvement of physical fitness in obese adults.

Salt content of school meals and comparison of perception related to sodium intake in elementary, middle, and high schools

  • Excessive sodium intake leading to hypertension, stroke, and stomach cancer is mainly caused by excess use of salt in cooking. This study was performed to estimate the salt content in school meals and to compare differences in perceptions related to sodium intake between students and staffs working for school meal service. We collected 382 dishes for food from 24 schools (9 elementary, 7 middle, 8 high schools) in Gyeonggi-do and salt content was calculated from salinity and weight of individual food. The average salt content from elementary, middle, and high school meals were 2.44 g, 3.96 g, and 5.87 g, respectively. The amount of salt provided from the school lunch alone was over 80% of the recommended daily salt intake by WHO. Noodles, stews, sauces, and soups were major sources of salt intake at dish group level, while the most salty dishes were sauces, kimchies, and stir-fried foods. Dietary knowledge and attitude related to sodium intake and consumption frequency of the salty dishes were surveyed with questionnaire in 798 students and 256 staffs working for school meal service. Compared with the staffs, the students perceived school meals salty and the proportions of students who thought school meals were salty increased with going up from elementary to high schools (P < 0.001). Among the students, middle and high school students showed significant propensity for the preference to one-dish meal, processed foods, eating much broth and dipping sauce or seasoning compared with the elementary students, although they had higher nutrition knowledge scores. These results proposed that monitoring salt content of school meals and consideration on the contents and education methods in school are needed to lower sodium intake.

A Study on Eating Behavior, Recognition of Body Image, Weight Control Method, Nutritional Status, and Blood Parameters of Obese Children in Iksan City (익산지역 비만 아동의 식습관, 체형 인식, 체중 조절 행동, 영양 섭취 상태와 혈액성상에 관한 연구)

  • The factors for the childhood onset obesity were assessed to provide informations for the nutrition education program targeting the primary school children. The subjects of this study were 529 primary school children in Iksan City, Jeon-buk Province. Children were classified into obese(236) and control(293) groups by the obesity index. Anthropometric measurement dietary intake through 24-hour recall method, blood analysis and questionnaire response including nutritional knowledge and attitude, body image recognition and eating habits were conducted The mean age of subject was 12.0 years. The average body weight(p<0.001), BMI(p<0.001), and obesity index(p<0.001) in obese group were significantly different from those in control group; their values in the former were 26.5 kg/m2 and $37.7\%$ and 43.0 kg, 19.8 kg/m2 and $3.2\%$ in the latter, respectively. The average scores of self-satisfaction were significantly different in two groups (p<0.001), 31.2, and 34.1, respectively. Among the obese subjects, $60.6\%$ were unsatisfied or very unsatisfied with their body image, and $76.5\%$ had experiences of weight control and $67.5\%$ took diet control as a weight control method Among mothers of obese subjects, $89.1\%$ were unsatisfied with their children's body image. $64.4\%$ of obese subjects had obese parents. Average intake of energy were $76.7\%$ of RDA in obese group and $74.9\%$ of RDA in control group. Average intake of cereals(p<0.01), potatoes & starch(p<0.01) and eggs(p<0.01) between obese and control subjects were significantly different; 295.4g, 76.2g, 55.6g in the former and 277.9g, 38.1g, 45.6g in the latter, respectively. The mean serum triglyceride(p<0.05), GPT(p<0.05), hemoglobin(p<0.001) concentration of the obses and control subjects were significantly different; in the former, 103.6mg/dL, 24.6U/L, 13.4g/dL, and in the latter, 93.7mg/dL, 19.9U/L, 13.1g/dL, respectively, The results suggest that practical nutrition education for the prevention of childhood onset obese should be provided to primary school children.

Food Habits and Dietary Quality by the Presence of Perceived Major Chronic Disease among Male Manufacturing Company Workers in Their 40s (40대 남자 생산직 근로자의 주요 만성질환 유병 인지 상태에 따른 식습관 및 식사의 질)

  • This study aimed to investigate the association between awareness of having a chronic disease with food habits and dietary quality among 320 male manufacturing workers in their 40s. Participants were categorized into groups. The first group comprised workers who were aware of having chronic diseases (ACD, n=160) and had been diagnosed with any one or more of the following major chronic diseases: Metabolic syndrome, hyperlipidemia, hypertension, obesity, and cardiovascular disease. The second group comprised those who had experienced none of the above diseases were classified as a group of people who were a ware of not having chronic diseases (ANCD, n=160). The mean age of the subjects was 44.2 years. The mean weight (P<0.001) and body mass index (BMI; P<0.01) were significantly higher in the ACD than in the ANCD group. The frequency of alcohol consumption and the number of current smokers were not significantly different between the two groups. Dietary attitudes were not significantly different between the two groups. The frequency of egg consumption was significantly higher in the ACD group (P<0.05). Picky eating, vegetable intake, checking nutrition labels, and healthy eating behavior were not significantly different between the two groups. The frequency of exercise was significantly lower in the ACD group compared to the ANCD group (P<0.05). The mean nutrition quotient (NQ) score was 51.9, with no significant difference between the two groups. Based on these results, the awareness of suffering from chronic diseases was not significantly related to dietary attitudes, food habits, and overall dietary quality among production workers. Therefore, there is a need to develop and implement nutrition education programs to inculcate an awareness of health status that can lead to dietary changes.

Impact of the 'Korean wave' on the Recognition and Attitudes to Korean Traditional Pood - Among Japanese Tourists Visiting Korea - (한류가 한국 음식에 대한 인식과 태도에 미치는 영향 -방한 일본인 관광객을 대상으로-)

  • This questionnaire study was conducted to investigate the levels of recognition and attitude for Korean traditional food among Japanese tourists. The aim was to provide basic data for making a detailed marketing direction alignment of globalization and commercialization of Korean traditional food. The results can be summarized as follows. The 'Korean wave(Hanliu)' was 'the number of known Korean star performers'(3.77 points), 'the number of watched Korean dramas'(3.67 points), 'the number of watched Korean movies'(3.44 points), 'the number of owned Korean singer's tapes or CDs'(3.04 points), 'the number of read books'(2.83 points), and 'the number of viewed cartoons'(2.49 points), in order. The high-intake frequency of Korean traditional foods was 'Bibimbap', 'Galbigui', 'Baechookimchi', 'Bulgogi', 'Kkakdugi', 'Tteokbokki', 'Japchae', 'Galbitang', 'fajeon', and 'Namullyu' in order. On the other hand, the intake frequency of 'Songpyeon', 'Inielmi', 'Sikhye' and 'Sujeonggwa' was very low. The most effective 'Hanliu' item for raising the recognition of Korean traditional food was 'the number of read books'. The most effective 'Hanliu' item for raising the experience of Korean cooking was 'the number of read books', followed by 'the number of watched Korean movies', 'the number of watched Korean dramas', and 'the number of viewed cartoons' in order. The most effective 'Hanliu' item for raising the intake frequency of Korean traditional food was' the number of watched Korean dramas', followed by 'the number of watched Korean movies' and 'the number of read books' in order.

Preference and Dietary Behavior for Kimchi among Elementary School Students in Chungnam (충남 일부지역 초등학생의 김치에 대한 기호도 및 식행동 조사)

  • The purpose of this study was to estimate the preference, intake frequency and eating behavior for kimchi as well as analyze the differences by gender among fourth to sixth grade students (n=410) in a Chungnam region. Approximately 64% of the students liked the spicy taste of kimchi, 75.9% liked the saltiness, and 48.5% liked well-fermented kimchi. The disliking factors of kimchi were its sour taste (38.5%), strong scent (20.1%), and salty taste (15.4%). The most preferred type of kimchi was Baechukimchi, followed by Kkakduki, Yeolmukimchi, and Chonggakkimchi. Further, the most frequently consumed type of kimchi was Baechukimchi, followed by Kkakduki, Chonggakkimchi and Yeolmukimchi. Oisobaki, welsh onion kimchi, sesame leaf kimchi, Gatkimchi, Nabakkimchi and Baekkimchi were rarely consumed. About 34% of the students consumed 5 to 7 pieces of kimchi per meal, and 84.1% enjoyed eating kimchi, mostly because of its good taste (61.3%). The reason for not eating kimchi was because other side dishes are more delicious (30.2%). About 80% of the students responded that they prepared kimchi at home. Moreover, 74.3% of the students eat kimchi much more at home than at school. Improvements to be made for kimchi at school were as follows: less salty (34.9%), less spicy (27.6%), and sweet (22.5%). In conclusion, students enjoyed eating kimchi because of its good taste. Further, they showed preference for Baechukimchi, Kkakduki, and Yeolmukimchi and consumed them frequently. Because kimchi appears to be more preferred and more frequently consumed, it is necessary to develop a menu using kimchi along with the proper eating guidance for helping students consume various types of kimchi at school or at home.

Effects of Nutrition Education and Personalized Lunch Service Program for Elderly at Senior Welfare Center in Jeonju (전주지역 복지관 노인대상 영양교육 및 맞춤형 점심 급식 프로그램 효과)

  • The purpose of this study was to investigate the effects of a nutrition education and personalized lunch service program in a senior welfare center. A total of 30 elderly (14 males, 16 females) aged 62~89 years participated in this study. Nutrition education lessons (2 hour/lesson/week) were provided for 4 weeks. Also, ten weeks from week 3rd to week 12th, personalized lunch providing 1/3 personal needed energy was served 5 times for a week. After the nutrition intervention program, we compared anthropometric characteristics, blood biochemical characteristics, nutrition knowledge, dietary attitude and dietary intake using 24 hr recall with those before the intervention. The body weight (p < 0.001) and body mass index (BMI) (p < 0.001) were decreased. There were significant increases in score of nutrition knowledge (p < 0.01) and consumption of milk & milk products for snacks. There was a positive effect on fasting blood sugar (FBS) showing significant decreases in portion of impaired fasting glucose and diabetes mellitus (p < 0.05). Also, serum triglyceride (TG) was significantly decreased (p < 0.05). In evaluation of nutrient intake by Dietary Reference Intakes for Koreans (KDRIs), riboflavin (p < 0.01), vitamin C (p < 0.001), calcium (p < 0.05) were positively improved. The index of nutritional quality (INQ) and intakes of vitamin C (p < 0.001), riboflavin (p < 0.05), Ca (p < 0.01) and Fe (p < 0.05) were increased. In conclusion, this nutrition education and lunch service program providing 1/3 personal needed energy can be used to develop and implement a tailored nutritional intervention programs in the setting of a community senior welfare center to improve health and nutritional status of Korean elderly.

Dietary Behavior and Attitude for the Food and Nutrition Section in the Home Economics Curriculum of Middle School Students in Rural Area (농촌 중학생의 식행동과 가정과 식생활단원에 대한 태도)

  • The study was performed to investigate the dietary behaviors and attitudes toward the lesson of Food and Nutrition in Home Economics course among middle school students in rural area. The participants of the study were 647 second-grade students in a middle school in Geumsan-gun, Chungcheongnam-do. The main nutrition problems of the students were found to be deviated food-intake habits and irregular meal time. Twenty six percent of female students and 14.8% of male students skipped breakfast. Seventy three percent of the total students have a tendency of food aversions. The food groups they dislike most were vegetables and pulses. They answered they got nutrition information mostly from the class at school. Their favorite topic in the lesson of Food and Nutrition was cooking. Some students did not like Food and Nutrition because it requires too much memorization. Teaching methods they liked were lecture, discussion, and audio-visual presentation. Although 81.7% of the students thought that the lesson of Food and Nutrition was useful, only 17.1% of the students practiced what they learned from the lesson. These results confirm that nutrition education in middle school is essential to the students in rural area and that it is needed to find an effective teaching method and materials for them to change positively their food behaviors at daily life.
