A Study on the Stress Levels and Dietary Patterns of University Students (대학생의 스트레스 정도와 식생활 양상에 관한 연구)

  • The purpose of this study was to investigate the stress levels and the dietary patterns of 390 male and female University students in Seoul and to analyze the correlation between the two. Informations of the subjects were obtained by questionnaire. As a result of this research study, male students had such bad dietary patterns as their stress increased(P<.05). Female students were more affected in dietary patterns by stress level and both male and female students exhibited a tendency to be in a higher state of intake as their stress level increased.

Analysis of Dietary Informations in Newspapers and Magazine for Children (2002) (어린이신문 및 잡지에 게재된 식생활 관련 정보 현황조사(2002년))

  • Children regard newspapers and magazines as the important source of information. Because informations about diet in the newspaper and magazines are regarded as good, it is necessary to find out whether informations provided to children are correct. Thus, this study shows the present situation of informations on diet by monitoring 3 newspapers (Kids. Chosun, Kids. Donga, Kids. Hankook) and 2 magazines (Earinee - Dongsan, Sae-But) for children. This study focused on the quantitative and the qualitative analysis for articles and advertisements. For the quantity, rate and number were calculated. For the quality, the accuracy was analyzed. Result of this study were as follow; Analyzed the number of articles and advertisements on diet, there are 2 times more number of advertisements (339 cases) than that of articles (180 cases) in the newspaper. There are slightly more number of advertisements (24 cases) than that of articles (18 cases) in the magazine. Most of advertisements are about processed foods and children' favorite foods. Especially, the advertisement of processed foods are ranked first by the quantity with 245 cases (75%) in the newspaper. In the magazine, 10 cases (42%) are about processed foods. About source of advertisements on diet informations in the newspaper, there are 300 cases (86.7%) without evidence based data and 34 cases (9.8%) of interview with entertainers, from the total 346 cases. In the magazine, there are high rate of cases without evidence based data and interview with entertainers. For the evaluation of the information about diet in the newspaper, there are 148 cases (19.7%) with no clear guidance and position, some cases with advertisements for specific products and etc. Discordance between subjects and contents, and emphasis of specified field or some parts are found from the total 750 cases. About the accuracy of contents, from the total 180 cases in the newspaper, 99 cases (55%) are inappropriate and 19 cases (10.6%) are appropriate. In magazines from the total 18 cases, 7 cases (38.9%) are inappropriate and 11 cases (61.1 %) are appropriate. With these results, we can conclude that informations about diet in newspapers and magazine for children needs improvement. Therefore, for newspapers and magazines contents should be reported scienifically by inspecting contents and by taking professional advice, in order to spread the accurate information about diet. The Dietary Behavior of Obese and Normal Weight Elementary School Children with Maternal Guidance for Their Dietary Behavior (초등학교 비만아동 및 정상체중아동의 식행동과 어머니의 식행동 지도)

  • This study was conducted to investigate whether there were any differences in the body image perception, dietary behavior and maternal dietary guidance between an obese group (“OG”) and a normal weight group (“NWG”), and furthermore, to provide basic informations for comprehensive educational programs for obese children. For this purpose, the questionnaire method was used. The subjects were 1,501 elementary school children, in the 4th to the 6th grades in Seoul, Busan, Daegu, Gwangju, and Andong, and their mothers (1,459). The percentage of the children who misperceive their body image was higher among the girls (30.4%) than the boys (22.6%) The average scores for balanced dietary behavior as assessed by the children was higher in the OG than in NWG; the average scores for dietary control as assessed by their mothers was higher in the NWG than in the OG. The scores for dietary behavior as assessed by the children was different from those as assessed by their mothers. Assuming that the mothers would give more correct and balanced answers, the development of a reliable questionnaire for dietary behavior that could be more accurately answered by the children is necessary. Maternal dietary guidance for dietary control was more frequently given in the OG as compared with the NWG and more frequently in girls as compared with boys ; while that for balanced diet was more in the NWG as compared with the OG. The worse the mothers estimate of the dietary behavior for their children, the more they tried to guide their children in dietary behavior. It is recommended that the children should be taught to correctly recognize the degree of their obesity, and receive the appropriate educational program accordingly, including the maternal dietary guidance.

Dietary attitudes and eating behaviors of housewives in Wonju-Gun rural area (원주지역내 농촌생활권 주부들의 건강관련 식생활태도 및 식행동에 관한 조사)

  • The purpose of this study was to find out the dietary attitudes and behaviors, intake frequencies of food groups, health-related opinions and practices, and sociodemographic characteristics of housewives in Wonju-Gun rural area. Interviewers asked 413 housewives about obove informations and then recorded. The results were as followes : Using the factor analysis processing, 17 questions about dietary attitudes and behaviors were categorized into 5 groups such as fidelity of diet, the healthful dietary attitudes, the eating practices concerning about items and amount, eating speed and the extent of coincidence in food preference within a family. The role of the housewives was a major factor affecting the dietary attitudes and behaviors. Those who work as housewives and farmers concurrently had good dietary practices concerning about items and amount, but they were interested about health-directed dietary attitudes at a significantly lower level. Food frequencies of 9 groups, animal protein food, fruits and vegetables, milk and milk products, small fishes such as anchovy, soybean curd and beans, seaweeds, vegetable oil, frying food, soybean paste were significantly associated with subjects' age, role, and education and income level. Whether or not intake of soybean paste was considered. protein food intake was altered, and the difference between two situations increased much more as age was higher. We noticed that intake of soybean paste improved the status of protein nutrition. Our subjects ate calcium sources and dishes using vegetable oil insufficiently. Those who had much interests for good health, revealed to be an active practitioner in the aspects of healthful dietary attitudes, but fidelity of diet, eating practices concerning about items and amount showed significant association with balanced life style.

Dietary Habits and Nutrition Knowledge of the Teachers at Day-care Centers in Seoul (서울시내 어린이 집 교사의 식습관과 영양지식)

  • A nutrition education program for teachers and caregivers of the preschool children can be most effective when it is based on a comprehensive needs assessment dealing with sociodemographic factors, dietary habits, and nutrition. The purpose of the present study was to investigate current dietary habits and nutrition knowledge of the teachers and caregivers of the day-care centers. Two hundred forty two teachers and caregivers were administered a questionnaire which was designed to ascertain informations on sociodemographic data, dietary habits and nutrition knowledge. Dietary habits of the teachers were found to be significantly different by sociodemographic variables; breakfast skipping/meal irregularities (age, p=0.011); frequency of snacking (education level p=0.031); preference for salty taste(age, p = 0.000, marital status p=0.038); preference for sweet tarte (age p=0.009); preference for vegetables (income level p=0.050); frequency of eating out (age p=0.028, marital status p=0.001); frequency of coffee drinking (age p=0.019). Daycare center teachers' nutrition knowledge level was found to be less than adequate expecially on nutrients that are liable to be deficient in young growing children and their food sources. Proportions of the teachers who answered correctly to the questions on foods rich in vitamin A, iron content of milk, bioavailability of calcium in plant foods were as low as 20.2%-54.5%. The most frequently used sources of nutrition information were mass media such as TV, radio, newspaper and magazines. Only 2.9% of the subjects reported that they obtain nutrition information from health professionals such as nutritionists/dietitians, physicians, and nurses. These findings are applicable at the planning and implementation stages of various nutrition programs for the improvement of dietary habits and nutrition knowledge of the teachers and caregivers of the daycare centers. Further studies are needed to investigate the effects of teachers' dietary of habits and nutrition knowledge on food habits of young growing children.

A Study on the Climacteric Symptoms and Dietary Patterns in Middle-Aged Women (중년여성의 갱년기 증상과 식생활 양상에 관한 연구)

  • The purpose of this study was to investigate relationship between the climacteric symptoms and the dietary patterns. The study was conducted with 285 middle-aged women(150 premenopause and 135 postmenopause) and the informations were obtained by questionnaires. The menophania of the premenopause and of the postmenopause women began to 15.6 and 16.6 years old, respectively. And it seemed that the middle-aged women had neutral attitude about menopause-related altitude. There was a positive correlation between the nutrition knowledge and the food habit, but these knowledge and habits had a little correlation with the climacteric symptoms.

Quality Characteristics of Bread Added with Concentrations of Paecilomyces japonica Powder (동충하초를 첨가한 식빵의 품질 특성)

  • We evaluated chemical, sensory and mechanical properties of breads containing different amount of Paecilomyces japonica powder to provide the basic informations for the development of functional bread. The pH of dough with 2% Paecilomices japonica powder was the highest but the pH of dough with 3% Paecilomices japonica powder was the lowest. Baking loss rate of bread added 3% Paecilomices japonica powder was the lowest but that of bread added 1% Paecilomyces japonica powder was the highest in that. The result of sensory evaluation showed that bread added 1% Paecilomices japonica Powder was significantly more preferable in chewiness, mouth feel, texture quality and overall quality. Sensory properties of softness, wheat flour odor, moisture, and mouth feel were positively correlated with the acceptability. Mechanical properties of hardness and chewiness had negative correlation with sensory properties, but springiness, gumminess and brittleness had positive correlation with those. The results of various measurements and evaluations showed that the quality of bread containing the Paecilomices japonica powder could be well accepted organoleptically. And this in turn proves the possibility of functional bread by use of Paecilomices japonica.

The Survey of Infant Feeding in Seoul and Kyunggi-Do Area (서울 및 경기지역 영유아의 영양법에 관한 실태조사)

  • This study was designed to assess the current status of infant feeding through an retrospective survey on feeding method. The survey was executed for 417 mothers bringing up a child below 24 months in Seoul and Kyunggi-Do province from September to October, 1993. Analysing a few influential environmental factors while assessing the level of knowledge today's mother have on infant feeding. Incidence of breast feeding was 27.8% of the interviewed mothers, which showed lower percentages than those of previous surveys. This research proved the major influencing factor generally depended on its mother rather than babies. Generally mothers knew the information of infant feeding, but their knowledge actually didn't work. The source of mothers' informations on the infant nutrition showed the grandmother, books and magazines, doctor were many by the order. among the reasons of resent formula and mixed feeding, lack of breast milk' was the commonest as 50.5% and the next reason was 'because of job' as 12.6%.

The Study of Awareness and Practice of Korean Dietitians in Food Exchange Lists , Serving Size and Dietary Guidelines (우리 나라의 식품교환표 , 식품의 서어빙 분량 , 식사지침에 대한 영양사들의 인지도 및 실천에 관한 조사 연구)

  • Dietitians in various fields have used food exchange lists for food preparations. However it seems that the present food exchange lists are complicated, thus they cause many problems for dietitians to use in the fields. Therefore this study evaluated to the extent of awareness and utilizations of KDA food exchange lists in dietitians and also collected dietitian's opinions for revising food exchange lists such as serving size, serving calories, and for unifying food guidelines and dietary and dietary guidelines for Korean to one simple guideline. 192 dietitians who presently work in urban and rural areas were recruited and data based on survey were collected. As results, most of dietitians(87.5%) knew well about food exchange lists, but only 7.8% of them always would use food exchange lists for menu planning, 56.3% of dietitians did not use it at all and 34.4% occasionally use it. And 88.0% of dietitians wanted to revise food exchange lists totally or partially, 69.8% of dietitians hoped to amend various calories per one serving in food exchange lists to one serving calorie. The desirable on serving calorie was selected as 100kcal(51%) or 50kcal(38%) by dietitians. The dietitians in this study understood very well dietary guidelines(86.5%) and food guidelines(88.5%) for Korean, and 66.1% dietitians wanted to unify both guidelines. In case of unification of guidelines, dietitians answered that 7-8 items(30%) or 5-6 items(27%) should be included in guideline. In the question about reference value for daily allowance, most dietitians(56%) satisfied with the present various reference values for various generation while 28% of dietitians wanted to change to have one reference value (standard with 2000kcal, adult female). This study will provide basic informations for revising or adjustment of food exchange list and dietary or food guidelines for Korean.

A Study on the Nutritional Knowledge, Nutrients Intake and Dietary Behavior of Old People in Incheon Area (인천지역 가정거주 노인의 영양지식 정도와 영양소 섭취량 및 식생활에 관한 연구)

  • This study was conducted to investigate the nutritional knowledge, nutrients intake and the assessment of dietary behavior of old peoples living in Incheon area. Two hundred and three elderly were examined using the questionnaire. The results of this study are summarized as follows. 1. The old people was lacking in correct information about nutrition and diseases. 2. The nutritional knowledge scores of old women were higher than those of old men and the scores went up according to the amount of pocket money. 3. The amount of vitamin C and phosphorus intakes were higher than those of the RDA, protein intake reached the level of the RDA. The vitamin B$_2$intake, however, was below 75% of the RDA and that of calcium was very low in women, especially. 4. Most of subjects had a meal regularly three times a day and the skipping rate of breakfast was very low. Dey had a moderate meal volume and did not have an unbalanced diet. Dey nearly do not take the processed food, dine out and exceed in the cholesterol intake. 5. They took green and yellow vegetables and, milk and milk products relatively small. On the other hand, the intake of caffein beverage was relatively high. the rates of drinking and smoking were low. From these results, we may propose the conclusion as follows: The old people were much concerned about the nutrition and diseases, but they had no correct informations about them. Therefore, the program of nutrition and dietary behavior for their healthy elderly life had to be prepared and to be applied to them immediately.
