The Composition of Dietary Fiber on New Vegetables (쌈샐러드 채소류의 일반성분과 식이섬유에 관한 연구)

  • This study was conducted to determine on the proximate analysis and the several structural carbohydrate for 11 kinds of new vegetables. The samples were dried at 6$0^{\circ}C$ for 24 hrs and ground to pass a 0.5 mm screen. The crude protein and crude fat contents of new vegetables were 2∼3 times higher than those of grain as dry matter basis. However the crude ash content of new vegetables was 7 times higher than that of grain. Total dietary fiber was ranged from 32.61% (Costamary) to 41,22% (Treviso) as dry matter basis. Insoluble dietary fiber was ranged from 21.58% (Red leaf beet) to 28.95% (Treviso) as dry matter basis. Soluble dietary fiber was ranged from 6.60% (Nakai) to 14.70% (Common danelion) as dry matter basis. Total carbohydrates was ranged from 73.62% (Salad bowl) to 36.30% (Red leaf beet) as dry matter basis. Neutral detergent fiber was ranged from 48.83% (Nakai) to 29.60% (Red leaf beet) as dry matter basis. Acid detergent lignin was ranged from 27.65% (Salad bowl) to 2.92% (Corn salad) as dry matter basis. Hemicellulose was ranged from 22.55% (Nakai) to 2.15% (Salad bowl).

Comparative Studies on the Dietary Fiber, Amino Acids and Lipid Components of Yullmoo and Yeomjoo (율무와 염주의 식이섬유, 아미노산 및 지질 성분의 비교)

  • The study was conducted to compare the components such as proximate composition, total dietary fiber(TDF) content, acid detergent fiber(ADF) content, lignin, water binding capacity(WBC), amino acid composition and lipid components from brown Job's tears, dehulled Job's tears, brown Yeomjoo and bran of Job's tears. The results from this study are summerized as follows: Total dietary fiber(TDF) content of Job's tears, brown Job's tears, brown Yeomjoo and bran of Job's tears were 2.70%, 3.86%, 4.33% and 13.3% each. Water-binding capacity(WBC) of TDF and ADF were $2.63{\pm}0.02g\;H_2O/g$ TDF and $5.89{\pm}0.15g\;H_2O/g$ ADF each. In amono acids composition of samples, glutamic acid content was the highest and the next was leucine. Chemical score of leucine in dehulled Job's tears was very high(189), in contrast lysine was very low$(22{\sim}23)$ So lysine was a first limitting amino acid in Job's tears and Yeomjoo. Neutral lipid contents were 90.89%-96.55%, glycolipid contents were 2.35%-7.48% and phospholipid contents were very low. The major fatty acids of lipid fractions were palmitic acid. oleic acid and linoleic acid.

Effect of Heat Treatment on In Vitro Hydrolysis Index of Commercial Saengshik (시판 표준 생식의 전분 가수분해지수에 열처리가 미치는 영향)

  • In this study, we assessed the effects of heat treatment on the in vitro hydrolysis indices of commercial Saengshik. Thermal treatment on grain flour and commercial Saengshik increased soluble dietary finer(SDF) and insoluble fiber(IDF), while total dietary fiber(TDF) content remained nearly constant regardless of thermal treatment. Among the samples, COS(Commercial Ohaeng Saengshik) showed the highest TDF and IDF content in raw and heated samples. Additionally, the resistant starch(RS) contents in unheated samples were shown to be high. After heating, the RS levels of all the samples were reduced significantly, by over 12%. The degree of gelatinization in the unheated samples was lower than that of the heated samples, whereas the degree of retrogradation in the unheated samples was higher than that of the heated samples. The hydrolysis indices(HI) of the unheated samples were relatively low, whereas the heated group evidenced high levels. The HI must be affected by content of RS and IDF in samples.

A Study of the Chemical Components of the Halophyte Suaeda asparagoides $M_{IQ}$ (염생식물 나문재(Suaeda asparagoides $M_{IQ}$)의 이화학적 성분 조성)

  • To obtain basic information on the utilization of Suaeda (S.) asparagoides $M_{IQ}$ as a raw material in food, it's chemical components of were investigated. S. asparagoides $M_{IQ}$ from the Hwaseong-si in Korea was used after drying and grinding with powder. The total dietary fiber, insoluble dietary fiber and soluble dietary fiber contents of S. asparagoides $M_{IQ}$ were found to be 39.41%, 37.63% and 1.78%, respectively. Macromineral components of S. asparagoides $M_{IQ}$ were Na (7.6%), K (2.4%) and Mg (0.6%). High contents of microminerals such as Cu, Mn and Zn were also found. Lysine and methionine which are essential amino acids were detected with the value of 215 mg/100 g and 23.2 mg/100 g, respectively. S. asparagoides $M_{IQ}$ that was harvested in May was higher in crude protein than that harvested in September but the crude fat content of that which was harvested in September was twice as high as that harvested in May.

Edible Basis and Ingredient Analysis of Song-gi Used for Pyeon of Jong-ga Ancestral Ritual Food (종가 제례음식 편(䭏)에 사용하는 송기(松肌)의 식용 근거와 성분 분석)

  • This study examined the traditional edible basis and ingredients of Song-gi used for Pyeon of Jong-ga ancestral ritual food. Through an investigation of references, a case study, and ingredient analysis for traditional edible basis of Song-gi, the nutritional value and availability as food material were reviewed. Among the 4 kinds of pine trees from 4,705 types of edible materials usable as food listed in the ${\ll}$Korea Food Standards Codex${\gg}$, 'Pinus radiata D. Don', in which the husk is acknowledged as an edible food, was applied in this study. This study processed the Song-gi following the method of jong-ga and divided into pine inner bark (PIB) and pine inner bark powder (PIBP) to analyze the general composition and dietary fiber. The main composition of PIB was carbohydrate, in which the content was 88.7% per 100 g. The content of dietary fiber was 73.7% per 100 g and the insoluble dietary fiber reached 92.3% in total dietary fiber. In conclusion, the edibility of Song-gi, which has a considerable amount of insoluble dietary fiber caused constipation because it absorbed the moisture in the intestine due to the lack of nutrients but may be developed as a functional food that helps the digestive activation of the intestine and improve the health of the intestine if taken with balanced nutrition.

Quality Characteristics and Consumer Perception of Dacquoise with Rice Bran Dietary Fiber (현미 식이섬유를 대체한 다쿠아즈의 품질 특성 및 소비자 기호도)

  • People have become more interested in fiber intake due to the rise of noncommunicable diseases such as hyperlipemia and abdominal obesity. This study was carried out to develop dacquoise incorporating different amounts of rice bran dietary fiber (5%, 10%, 15%, and 20%). Dacquoise characteristics such as viscosity, specific volume, moisture content, color, and texture were measured. Consumer acceptance and check-all-that-apply on characteristics of dacquoise with rice bran dietary fiber were observed. Increasing amounts of rice bran dietary fiber resulted in increasing viscosity of batter as well as higher specific volume, lightness, and hardness of finished product. On the contrary, yellowness and redness of dacquoise increased as the amount of rice bran dietary fiber increased. While there was no effect of rice bran dietary fiber on moisture content (range of 26.53~25.35%). According to the consumer acceptance test, dacquoise with 5% of rice bran dietary fiber showed the highest liking score in color and overall acceptance (5.9 and 5, respectively). The findings from the principle component analysis of principle component (PC) 1 (71.04% explanation) showed that as rice bran dietary fiber increased, texture of the product got drier, and consumers described the product with 20% rice bran dietary fiber as cotton mouth and 5% rice bran dietary fiber as sticky. PC2 (16.54% explanation) demonstrated 5% and 10% rice bran dietary fiber, and dacquoise had nutty and soybean notes while 15% and 20% rice bran dietary fiber dacquoise had flour, bitter, and salty flavors. Based on these results, the optimum addition level of rice bran dietary fiber for dacquoise is 5%.

Preparation and Improvement of Physicochemical and Functional Properties of Dietary Fiber from Corn Cob Fermented by Aspergillus niger

  • Corn cobs were fermented with Aspergillus niger to produce soluble dietary fiber (SDF) of high quality and excellent food safety. In this work, the fermentation process was optimized by single-factor test and response surface methodology (RSM). The optimal fermentation conditions were determined to be a material-liquid ratio of 1:30, an inoculum concentration of 11%, a temperature of 32℃, a time of 6 days, and a shaking speed of 200 r/min. Under these conditions, the SDF yield of corn cob increased from 2.34% to 11.92%, and the ratio of soluble dietary fiber to total dietary fiber (SDF/TDF) reached 19.08%, meeting the requirements for high-quality dietary fiber (SDF/TDF of more than 10%). Scanning electron microscopy (SEM) and Fourier-transformed infrared spectroscopy (FT-IR) analysis revealed that the fermentation effectively degraded part of cellulose and hemicellulose, resulting in the formation of a loose and porous structure. After fermentation the water swelling capacity, water-holding capacity, and oil-holding capacity of the corn cob SDF were significantly improved and the adsorption capacity of glucose, cholesterol, and nitrite ions all increased by more than 20%. Moreover, the total phenolic content increased by 20.96%, which correlated with the higher antioxidant activity of SDF. Overall, the fermentation of corn cobs by A. niger increased the yield and enhanced the functional properties of dietary fiber (DF) as well.

Separation of Tofu-residue (biji) into Dietary Fiber and Protein Fractions (콩비지의 식이섬유와 단백질 분리)

  • Tofu-residue (biji) which was made on a laboratory scale from the three U.S. and three Korean soybean varieties contained approximately 57% dietary fiber, 20% protein, while the commercial residue contained 59% dietary fiber and 17% protein. The percent soluble fiber in total dietary fiber were 3% and 46% for residue and tofu, respectively. The tofu-residue was wet milled by blade grinding once or twice, followed by sieving and centrifugation of the liquid fraction. For twice-ground residue, the dietary fiber content increased from 58.70 to 80.6% in the sieved residue, with a fiber recovery of 90.4%. On the other hand, twice-ground centrifuged solids contained 46.8% protein, representing 42.4% of the total protein. Lipid levels in the sieved residue were much lower than in the original residue.

Effect of Rice Bran Dietary Fiber Level on Serum Lipid Concentration, Bowel Function, and Mineral Absorption in Rats (미강 식이섬유 첨가량이 흰쥐의 혈청지질농도, 장 기능 및 무기질 흡수율에 미치는 영향)

  • This study was performed to investigate the effect of rice bran dietary fiber powder on serum lipid levels, bowel function, and mineral absorption in rats. Four weeks old male Sprague Dawley rats(SD rat) were divided into four groups : control group fed 5% cellulose as a fiber source, RB10 fed 5% of cellulose and 10% of rice bran dietary fiber powder, RB20 and RB30. The animals were fed the experimental diets for 4 weeks. Serum lipid levels were not significantly different among the groups. But, fecal total cholesterol(TC), triglycerides(TG), and high density lipoprotein cholesterol(HDL-c) excretion increased in the RB30 group. Fecal weight and fecal water content were higher in the rice bran added groups than those in the control group. Transit time was significantly shorter in the rice bran fiber-added groups than that in the control. Weight of the stomach and large intestine in the RB20 and RB30 groups were significantly greater than those in the other groups. Absorption rates of Ca, Mg, P, and Zn decreased significantly in the RB30 group compared to those in the other groups. A high amount of rice bran increased fecal lipids, including TC, TG and HDL-c. Rice bran increased fecal weight and fecal water content and shortened gastrointestinal transit time. However, a high level of rice bran diet decreased mineral absorption rates.

Properties on the Quality Characteristics of Bread Added with Angelica keiskei Koidz Flour (신선초가루를 첨가한 식빵의 품질 특성)

  • Effects of adding of Angelica keiskei Koidz flour on the quality characteristics of bread were inves tigated. The content of total dietary fiber was 31.89% in flour of Angelica keiskei Koidz leaf and 43.37 % in that of stem. The content of insoluble dietary fiber increased by blanching, but those of soluble dietary fiber and insoluble dietary fiber increased by steeping in NaCl solution. In the results of sensory evaluation of Angelica keiskei Koidz flour, leaf steeped in NaCl solution and blanched stem showed good overall preference. With the addition of Angelica keiskei Koidz flour, water binding capacity and loaf weight increased, while the loaf volume decreased. The loaf volume of bread added with leaf steeped in NaCl solution and blanched stem were higher than those added with natural Angelica keiskei Koidz flour. The lightness and redness values decreased with the increase of Angelica keiskei Koidz flour content in bread but yellowness values increased. In the texture analyzer measurement for bread added with Angelica keiskei Koidz flour, hardness and springiness somewhat increased, while cohesiveness, gumminess and chewiness decreased. As the results of sensory evaluation of bread added with Angelica keiskei Koidz flour, the score of the breads added with 5% leaf steeped in NaCl solution and 5%, 10% blanched stem were somewhat lower than those of control bread. In terms of rate of addition of Angelica keiskei Koidz flour, the bread added with leaf at 5% level, natural stem at 5% level and stem by blanching at 5%, 10% level had good overall preference.
