The effects of palm oil and soybean oil as a high energy source diet on the performance of broilers under the warm humid environment were studied. Palm oil and soybean oil, either singly or mixed, were incorporated in the experimental diets to a total of 6% of the diet. The performance of the chicken improved (though not significant) with increasing unsaturated fatty acid content in the diets, but the responses to treatments were not consistent. The carcass fat content was generally higher in all the treated groups compared to the control but the differences were not statistically significant. The results also failed to show any effect of combining two sources of oils. Fatty acid composition in the body was found to be influenced greatly by dietary fat. When soybean oil was used instead of palm oil, the amount of linoleic and linolenic acids in the carcass were increased proportionately.

This experiment was designed to examine the effects of supplemental vitamin D on laying performance, metabolic profile and egg quality of hens fed diets containing different fat sources and levels. Lohman strains (n = 480) were assigned to one of 10 diets: basal diet (BD), BD plus 2.5 and 5.0% sunflower oil (SO) or tallow (T) at vitamin D provided $1{\times}$ and $3{\times}$ of the current recommendation. The experiment lasted from week 30 to 44 of age. Each diet was tested in 12 replicate cages of 4 hens. Production, metabolism, and egg quality data were subjected to three-way ANOVA. Both fats decreased feed intake (FI) as compared to BD. Increasing SO and T levels linearly decreased and quadratically increased FI, respectively. The dietary factors did not affect egg production (EP) and egg weight. Vitamin D supplementation increased and decreased EP when diets contained SO and T, respectively. Feed conversion efficiency (FCE) for hens fed SO was lower than for hens fed T. However, increasing T level improved FCE, whereas increasing SO level worsened FCR. Vitamin D supplementation increased serum vitamin D and glucose concentrations. Vitamin D supplementation also caused a decrease and an increase in serum vitamin D concentration when diets contained SO and T, respectively. Serum glucose concentration for hens fed SO was lower than hens fed T. Increasing fat level linearly increased serum triglyceride and VLDL concentrations, regardless of the fat type. Increasing SO level linearly decreased serum cholesterol concentration. Vitamin D supplementation did not alter lipid metabolites. The dietary factors did not affect serum total protein, Ca, and P concentrations. As compared with BD, feeding SO decreased dry tibia and ash weights more than feeding T. Vitamin D supplementation tended to increase dry tibia weight and decrease tibia ash weight. Eggshell strength and thickness, yolk and albumen indexes, and Haugh unit were not responsive to the dietary factors. Eggshell strength quadratically increased with increasing T level. Yolk color for hens fed SO was lower than for hens fed T. The dietary factors did not affect most of yolk fatty acids. Increasing SO level quadratically decreased yolk $C_{18:2}$ concentration. Vitamin D supplementation increased and decreased yolk $C_{18:2}$ concentration when diets contained SO and T, respectively. In conclusion, increasing fat level improved laying performance without altering metabolic profile and egg quality. Vitamin D supplementation had minor alteration effects on laying performance, metabolic profile, and egg quality in response to fat feeding.
This study was performed to investigate nutritional effect of various dietary fibers on lead absorption and metabolism of protein and lipid in growing rats. Forty eight male rats of Sprague-Dawley strain weighing 75.7$\pm$0.7g were blocked into six groups according to body weight and fed six kinds of diet different with fiber source(non-fiber, cellulose, pectin) and lead level(0%, 1% ) for 4 weeks. Results are summerized as follows: 1) Food intake, weight gain, FER and PER were remarkably decreased in lead(Pb) added groups, and FER and PER in Pb-added pectin group were significantly lower than those in Pb-added non-fiber group. 2) Weight of liver, kidney and epididymal fat pad, bone weight and length, hematocrit, and hemoglobin content were decreased in Pb-added groups. 3) Total protein content in serum was tended to be decreased in Pb-added groups, but total lipid and cholesterol contents in serum were not different with dietary Pb level and fiber source. 4) Nitrogen, lipid and cholesterol content in liver were tended to be deceased in Pb-added groups, and especially those of the Pb-added pectin group were the lowest among groups. 5) Daily urinary and fecal excretions of nitrogen, lipid and cholesterol were decreased in Pb-added groups. Especially fecal excretions of nitrogen, lipid and cholesterol in Pb-free groups were significantly increased by dietary cellulose and pectin. 6) Pb content in blood was significantly increased in Pb-added pectin group. There was no significant decrease in Pb contents of liver, kidney and tibia, and increase in excretion of Pb by feeding dietary fibers. In conculsion, dietary fibers had no effect on the absorption of Pb, and dietary pectin seemed to increase Pb poisoning by decreasing bioavailibility of protein, lipid and other nutrients in the diet.

This study was conducted to investigate effects of dietary pigment sources on shell color of juvenile abalone, Haliotis discus hannai. Three replicate groups of the abalone, average weight 173 mg, were fed the diets containing various pigment sources such as Porphyra powder, Spirulina, yeast astaxanthin and paprika extract for 16 weeks. Survival and weight gain were not affected by dietary pigment sources (P>0.05). Shell color of abalone fed diets containing Porphyra powder and Spirulina was approached to yellow-red and orange which are similar to shell color of wild abalone. However, shell color of abalone fed the diets containing yeast astaxanthin and paprika extract were similar to that of control diet showing bright green. Porphyra powder and Spirulina contain not only fat-soluble pigment such as chlorophyll and carotenoids but also water-soluble pigment such as phycoerythrin and phycocyanin. These results would be useful information to change shell color of abalone in aquaculture.
On the basis of the concept retained in nutition label(NL) the consumer's perception use and demand on NL nutrition knowledge(NH) purchase of nutrient controlled food and dietary modification for health were examined. The subjects were 1203 house wives mainly in the age of 30-40 and self administered questionnaire was employed. The results were as follows. Subjects' demand on nutrition information was greater while the availablity and usefulness of NL was unsatisfactory. The purchase frequencies of nutrient controlled foods were higher compared to NL reading. The use comprehenison reliability of nutrition information were better in high NK group compared to low NK group except the reliability on health claims. The required nutrients for content information were in the order of calorie Ca cholesterol Fe protein and total fat. The demand for nutrient content information was carrelated with intention of subjects' dietary modification but not the use of NL. These results indicate that NL be a good source of nutrition information and the consumers' demand for NL was based on their dietary purpose though the use of NL was unconfirmed.
This study was carried out to examine how dietary protein and calcium levels in rats fed fat-enriched diet affect the total lipid and cholesterol contents of blood and tissues. Male Sprauge-Dawley rats weighing approximately 200g were fed six purified diets which contained 18%(w/w) beef tallow, 1% (w/w) cholesterol, two source of protein, casein or isolated soy protein (ISP) and three levels of dietary calcium, 0.1%, 0.4% and 1.0%, first, for four weeks, and second, for eight weeks. The contents of the total lipid, cholesterol and triglyceride in blood, liver, heart and feces were determined. After four weeks feeding serum lipid and cholesterol concentrations significantly decreased in rats fed 1.0% (w/w) level calcium, regardless of dietrary protein sources. After eight weeks, these concentrations were significantly lower in the rats fed soy protein than in casein-fed rats. As dietary calcium level increased serum and tissue lipid and cholesterol contents were decreased and fecal lipid excretion increased. It is concluded that hypolipidemic and/or hypocholesterolemic effects of soy protein and calcium were partly due to decrease in lipid absorption.

Objective: This experiment aimed to investigate the effect of different sources and inclusion levels of dietary fat on productive performance and egg quality in laying hens raised under hot environmental conditions. Methods: A total of 480 Hy-Line Brown laying hens at 31 wk of age were randomly allotted to 1 of 5 experimental diets. The control diet contained 2,800 kcal/kg nitrogen-corrected apparent metabolizable energy with no fat addition. Four additional diets were prepared by adding 2.0% or 4.0% of animal fat (AF) or soybean oil (SO). Energy and nutrient concentrations were consistent among all diets. Diets were fed to hens for 4 weeks. Average daily room temperature and humidity were $26.7^{\circ}C{\pm}1.52^{\circ}C$ and $77.4%{\pm}4.50%$. The heat stress index was approximately 76, indicating that hens were raised under heat stress conditions. Results: Final body weight (BW) was greater (p<0.05) for hens fed diets containing 2.0% or 4.0% AF than for those fed the control diet or diets containing 2.0% or 4.0% SO. The BW gain and feed intake were greater (p<0.05) for hens fed diets containing additional AF or SO than those fed the control diet. Eggshell thickness was the greatest (p<0.05) for hens fed the control diet, but the least (p<0.05) for hens fed diets containing 4.0% SO. Egg yolk color was the greatest (p<0.05) for hens fed the control diet, but the least (p<0.05) for hens fed diets containing 4.0% SO. Conclusion: Inclusion of supplemental fat (AF and SO) in diets exhibits preventative effects on BW loss for hens raised under hot environmental conditions when energy and nutrient concentrations in diets were maintained. The effects were greater for AF than for SO. However, inclusion of supplemental fat in diets decreases eggshell thickness and egg yolk yellowness, possibly due to a reduction in Ca absorption and intake of egg yolk colorants.
Ten college women were divided into 5 groups and treated in randomized block design for 5 weeks with 1 interval between treatments and subjects serving as their own controls. The experimental diets were corn oil diet as a source of n-6 linoleic acid, perilla oil diet as a source of n-3 $\alpha$-linolenic acid, and fish oil diet as a source of n-3 EPA and DHA. Dietary fat was supplied at 30% Cal and modified to give the total amount of saturated fatty acids and monoenoic acids at constant level. There was no significant effect on serum cholesterol level by different PUFA. However, on a gram-for-gram basis, there was a trend that the decrease in serum cholesterol was proportionate to the degree of fat unsaturation. On the other hand, only fish oil diet significantly decreased TG level but no significant effect on the relative proportion of TG in VLDL. The degree of hypotriglyceridemia did not corrleate with the degree of unsaturation. The relative proportion of CE in LDL was reduced by all PUFA diets but significant only by perilla oil diet. The relative amount of apoprotein in LDL was significantly reduced by n-3 PUFA. HDL-Chol content was significantly increased only in fish oil diet but no change in the relative proportion of its chemical components of HDL.
The effects of dietary n-3 fatty acids, ${\alpha}$-linolenic acid (18:3), eicosapentaenoic acid (EPA, 20:5), and docosahexaenoic acid (DHA, 22:6), on brain phospholipid content and fatty acid composition were compared in rats fed with a diet containing constant ratios of saturated fatty acid/monounsaturated fatty acid/polyunsaturated fatty acid (PUFA) and n-3/n-6. The dietary fat in each diet was added at the level of 10%. In each diet, n-3 PUFA comprised two-thirds of the PUFA and the remaining one-third was linoleic acid (18:2). Dietary fat containing linoleic acid as the sole source of PUFA was also given to the control group. The content of brain phospholipid in the three n-3 PUFA groups was significantly lower than that of the linoleic acid group. This reduction was greater in the EPA and DHA groups than in the ${\alpha}$-linolenic acid group. The decrease in phospholipid content in rats fed n-3 fatty acid-rich diets was largely due to the decrease in the phosphatidylethanolamine fraction. Each dietary n-3 PUFA was found to affect the fatty acid composition of brain phospholipids; the most pronounced alteration was observed in phosphatidylethanolamine fraction. Furthermore, the proportion of DHA in the phosphatidylethanolamine fraction tended to be higher in the DHA group than in other PUFA groups. In conclusion, dietary ${\alpha}$-linolenic acid, EPA and DHA can influence the phospholipid content, phospholipid subclass, and fatty acid composition in rat brain.
Objectives : Ma-huang is a traditional Chinese medicinal herb, derived from Ephedra sinica Stapf and other Ephedra species, used to treat asthma, nose and lung congestion, and fever with anhidrosis. It contains 0.5-2.5% by weight of total alkaloids, of which ephedrine accounts for 30 to 90%. Recently, Ma-huang has been used as a source of ephedrine in many dietary supplements formulated for the treatment of obesity, since ephedrine has been found to be effective in inducing weight loss in the obese. In this study the effects of the methanol extract of Ma-huang on the adipocyte of epididymal and brown fat pads in rats fed a high fat diet for six weeks were studied. Methods : Male Sprague Dawley rats weighing an average 94g (4 weeks old) were fed either a regular diet (RE) or a high fat diet (HF), and the HF group was subdivided into a Ma-huang methanol extract (30mg/100g body weight) group (HF+MH). The weight of epididymal fat pad and brown adipose tissue were measured. The cell size and cell number per unit area of epididymal fat pad were investigated. Results : The yield weight of methanol extract of Ma-huang was 3.63mg per l00g of Ma-huang. The body weight gain of the HF group was similar with that of the HF+ MH but higher than that of the RE. The weights of the epididymal fat pads and brown adipose tissue of the RE group were lower than those of HF and HF+MH groups. The cell sizes and numbers per unit area of epididymal fat pads of the RE and HF+MH groups were larger than those of HF group. The cell numbers per unit area size of epididymal fat pads were the smallest in the RE group. Conclusions : It could be concluded that the Ma-huang extract has no effect on the epididymal fat pads in rats fed a high fat diet and the clinical application of Ma-huang for the treatment of obesity should be re-considered.
