This study was carried out to investigate dietary habits and nutrition knowledge of teachers, who are in charge of actual education of nutrition knowledge and dietary habits for students, of the elementary schools. Five hundred male and female teachers, who attended the programs for teacher's qualification of 1st and 2nd grades and function education during summer vacations, were surveyed using of questionnaire at Jeollabuk-do Educational Training Institute. A lot of teachers have had undesirable dietary habits. The most frequently(65.4%) used sources of nutrition knowledge were mass media such as TV, radio, magazines and newspapers, About 93% of teachers recognized nutrition education for the students, and 75.6% of them answered that their dietary habits may have an influence on students' dietary habits. Or, teachers' nutrition knowledge level was found to be low in general. The improvement of dietary habits and their nutrition knowledge of the teachers are very important because their dietary habits and nutrition knowledge have an influence on formation of students' dietary habits.
The purpose of this study was to provide fundamental data on the importance of eating breakfast by analyzing the dietary habits, dietary attitude, dietary behavior, and nutrition knowledge between of male high school students according to breakfast eating status. The subjects consisted of 400 male high school students living in Chungnam. There was no significant difference according to grade, height, and weight between students who skipped breakfast and those who ate breakfast. Further, satisfaction and perception about body weight were not statistically different between the two groups. Regarding relationships with friends, to the response 'I have a lot of relationships with friends' was 25.5% in the skipping breakfast group and 45.7% in the eating breakfast group. The academic records of the students who ate breakfast were much higher. Meal regularity, meal satisfaction, and dietary attitude of the eating breakfast group were better than those of the skipping breakfast group. Regarding the level of nutritional knowledge, students who skipped breakfast scored $7.6{\pm}2.9$ points while the students who ate breakfast scores $7.9{\pm}3.1$ points, indicating no significant difference. The students who ate breakfast had better friendships, higher academic achievement, and better dietary behavior and attitude. Therefore, it is necessary to increase nutrition education and reduce the skipping of breakfast through a variety of methods, such as school food service and simple recipes for Korean food. It should also be considered that nutrition education for parents be widely provided.
We aimed to evaluate the effect of nutrition education program on nutrition knowledge, dietary behavior, dietary intakes and anthropometric parameters in primary school children. Eighty five 4th grade children (boys = 43, girls = 42) were enrolled in the intervention program for 5 months. The subjects were asked to fill out a questionnaire about nutrition knowledge and dietary behavior two times, at the baseline and after completion of the program. Dietary intake information was collected from participants using a 3-day food record and their anthropometric parameters were measured. Upon completion of the intervention program, both nutrition knowledge and dietary behavior scores were significantly improved in all subjects. Energy intake was increased from 1,571.9 kcal to 1,734.1 kcal with significant improvements in nutrient density for protein, Ca, P, K, vitamin A and niacin. While subjects' height, weight, lean body mass and soft lean mass were significantly increased during the program, significant decreases were observed in the rohrer index, percent body fat, waist-hip ratio and body fat mass. The changes in nutrition knowledge scores were positively correlated with the changes in dietary behavior scores, micronutrient intakes and anthropometric parameters. These results indicate that enhancement of nutrition knowledge through well-planned long-term nutrition education program is effective not only for the improvement of dietary behaviors and dietary intakes but also for the positive changes in anthropometric parameters among primary school children.
The purpose of this study was to investigate dietary habits, dietary attitudes, perceptions for nutritional importance, nutritional knowledge and frequency of food intake to get the basic data of effective nutritional knowledge to form desirable dietary habits of students. This study was carried out through a questionnaire. The subjects were 362 teenagers (boys 161, girls 201) in some farming and fishing regions of Jeonnam. The most desirable dietary habit was that both boys and girls never skipped their lunch, the undesirable dietary habit was that boys ate too fast and girls had too many snacks. While boys ate faster than girls (p < 0.01), girls skipped dinner more frequently than boys (p < 0.01). In terms of dietary attitudes, boys had more desirable attitudes than girls in that they "choose nutritious food" (p < 0.01), "enjoyed healthy food more than favorite food" (p < 0.01), "think about basic food groups when having something" (p < 0.01) while girls had more desirable attitudes than boys in that they "only have favorite food" (p < 0.01). In nutritional knowledge, girls showed a percentage of more correct answers than boys in "is likely to suffer anemia without enough iron" (p < 0.05), and "it doesn't need to eat fat, which causes obesity" (p < 0.05). In general, girls had higher nutritional knowledge than boys. For frequency of food intake, boys ate more fried and broiled food than girls (p < 0.05). In general, boys had nutritional unbalanced diets more than girls. As a result, girls had higher levels of nutritional knowledge and boys had more desirable dietary habits and attitudes. We should have systematic and repetitive education about nutrition so that teenagers could practice their nutritional knowledge in diets. Moreover, it is necessary to develop proper education for their genders.
This study was designed to investigate dietary life related to sodium of participants in hypertension and diabetes preventive education at the public health center located in Incheon Metropolitan City. Subjects were comprised of 301 adults (males: 102, female: 199) of age 50 years and above. The questionnaire for dietary life and salty taste assessment were performed on the subjects. Data were analyzed using SPSS package (ver. 18.0). According to the result of questionnaire for dietary behavior, 70% of the subjects were in the low salt intake group (p<0.001). In the result of questionnaire for dietary frequency, all ages groups were in the low salt intake group (p<0.01). The data of questionnaire for dietary behavior showed that the subjects of age above 75 years preferred salted seafood, soup, and kimchi (p<0.01). The data of questionnaire for dietary frequency showed that the subjects of age between 65 and 74, least chose fried kimchi, noodle, and soybean paste soup with clams (p<0.05), and the healthy adult groups chose kimchi stew, ssam and ssamjang (p<0.05). The score for dietary behavior in male subjects was higher than female subjects (p<0.01). In particular, the score for dietary frequency was the lowest in the subjects of age between 65 and 74 (p<0.01). The mean value of salty taste assessment in the subjects was 0.41% which is higher than the ideal value of 0.3% (p<0.01). Offering more nutrition education and continuous feedback of healthcare center may be needed to improve the health status of the adults.
Objectives: The purpose of this study was to investigate effects of nutrition education providing school lunch by personalized daily needed food exchange units using Food Exchange System for adolescent athletes. Methods: The subjects were 60 sports high school students (educated group, 30 vs. noneducated group 30). Nutrition education was provided for 4 weeks (40 min/lesson/week). In addition, personalized school lunch was served for 4 weeks, nutrition education period. The personalized lunch were provided Food Exchange Units according to personalized daily needed energy. The lessons were '5 Major nutrients, functions and foods', 'My daily needed energy and food exchange units by Food Exchange System', 'My meal plan by food exchange units according to my daily needed energy' and 'Smart choice of healthy snacks and eating outs'. After nutrition education, we examined the differences in anthropometric characteristics, nutrition knowledge, dietary attitude and dietary intake between the educated and the non-educated group. Results: We observed improvements in lean body mass in the educated group. With regard to nutrition knowledge, there were improvements in 'Functions of vitamins', 'Functions of minerals', 'Foods of fat', 'Foods of vitamin', and 'Foods of mineral' in the educated group. In relation to dietary attitude, there were improvements in 'Taking a meal with family and friend', 'Taking a meal at ease', 'Taking a meal with kimchi and vegetables', 'Taking a meal with three kinds of side dishes', 'Priority of choosing snacks' and 'Type of snacks' in the educated group. With regard to dietary intakes according to Dietary Reference Intakes for Koreans, there were improvements in intakes levels of fiber, vitamin A, vitamin C, folate, calcium, iron and zinc. The index of nutrition quality, as indicated by nutrition adequacy ratio also improved in the educated group. Conclusions: These results showed that a nutrition education program providing education lessons and personalized school lunch by food exchange units according to daily needed energy showed positive changes in nutrition knowledge, dietary attitude and dietary intake of adolescent athletes. Nutrition education program providing personalized school lunch by Food Exchange Units may improve dietary behaviors and dietary intakes of adolescents.
The purpose of this study was to obtain an understanding of the association of personality preferences and food behavior factors in middle school students. The subjects were 319 boys and girls in a middle school located in Kyunggi province. A self-administered questionnaire was used to assess demographic factors, dietary habits and psychosocial factors including self-efficacy, perceived benefits and barriers. The MMTIC (Murphy-Meisgeier Type Inventory for Children) test was used to assess the personality preferences of the students. Sixty-seven percent of the subjects were extrovert, 53.9% were the sensing type, 76.8% were the feeling type and 81.8% were the perceiving type in personality preferences. The extrovert had higher self-efficacy than the introvert. The feeling type perceived more benefits and fewer barriers than the thinking type. The education levels of the parents, especially mothers, were positively related with self-efficacy and dietary habit scores of the students. The self-efficacy and perceived benefits and barriers were significantly associated with dietary habits of the students (explained variance: 17.9%). Results of this study presented the relationship of character types and parents' education levels on psychosocial food behavior factors and a need for the development of tailored nutrition education program considering these factors.
The increased number of elderly in Korea presents great challenges for community nutrition programs. Strategies to enhance elderly nutrition are needed, as well as dietary advice that are reality-based and tailored to the need of the elderly. The purpose of this study was to evaluate the overall effectiveness of an elderly nutrition improvement program(ENIP), by assessing changes in nutrition knowledge, attitudes, and behavior after program completion. ENIP was conducted in Suwon for 4 months in 1998 at 5 centers for the elderly. The program provided individual nutrition counseling and brief biweekly group education sessions. To stimulate participation and motivation, the elderly in two centers were served free milk packs(200ml) three time a week during the program(milk+education group), and the elderly in 3 other centers were served yoghurt on the program day(education group). Altogether, 102 subjects finished the program(milk+education group 67 ; education group 35). Data about nutrition knowledge, dietary attitudes, diet records(24 hour recall) and dietary habit was collected before(baseline) and after the program(follow-up). The Drop-out rate for the milk+education group(2.9%) was significantly lower than that for the education group(30.0%)(p<.001). The Nutrition Knowledge fo females milk+education group increased significantly after the program, but no significant differences were observed in other groups. Over 60% of all the elderly showed positive responses to the healthy eating attitudes. Energy, protein, vitamin A, riboflavin, Calcium and Potassium intakes improved in the male milk+education group. The Vitamin C intake improved in the male education group. Energy and vitamin A intakes improved in the female milk+education group and energy, vitamin A, thiamin, riboflavin, niacin, Ca nad P in the female education group. A stepwise multiple regression analysis was performed to examine the effects of food intake changes on overall nutrient quality. For all elderly, the fish intake explained 12.6% of the variance, followed by candy intake and vegetable intake(model $R^2$=19.6%). Dietary habits such as meal time regularity and salty food reduction were markedly improved in both groups. Sixty-one percent of the milk+education subjects stated their participation was voluntary and active, while 51% of education subjects did. Sixty four percent of the subjects stated their interest on diet increased remarkably through program participation. Considering the results, it is conjectured that ENIP had a great impact on nutrient intake, dietary attitudes and habits. Milk supplement showed no direct effects on elderly nutrition improvement, but it encouraged the program by reducing drop-out rates and inducing voluntary participation. Therefore milk supplement could enhance the community nutrition education program. Moreover it is strongly suggested that the ENIP be expanded to other communities.
Objective: The purpose of this study was to understand the characteristics of dietary education in South Korea and Japan, and find directions for dietary education by comparing the contents of the two countries' dietary education in their national child-care curriculums and evaluations. Methods: To this end, a qualitative content analysis was conducted on the guidebooks for the Standard Child-care Curriculum and the Accreditation Index for Child-care Center in the case of South Korea, and the handbook for the Child-care Guideline and the Third Party Evaluation in the case of Japan. Results: The findings of this study were as follows: First, South Korea showed differences in the focus of child-care curriculums and evaluations. The contents about proper eating such as nutrition and table manners comprised a high portion of the curriculums, whereas the contents about cleanness and hygiene accounted for a high portion of the evaluations. In the case of Japan, its national child-care curriculums and evaluations consistently emphasized contents related to enjoying eating oneself, and suggested various methods for this. Second, in terms of the two countries' approaches to dietary education, South Korea focused on food-related knowledge, whereas Japan mainly created the contents of dietary education based on daily experiences. Conclusion/Implications: The above results suggest a direction to improve the currently publicized dietary guidance problem and a need for consistent the national child care curriculum and evaluation indicators in South Korea to emphasize the importance of joyful eating.
The purpose of this study was to evaluate the effectiveness of an intervention program using dietary consult and physical exercise conducted by public health center in Chuncheon city for obese adults. This study used a pretest-posttest design. The subjects were 58 out of 90 obese adults with body mass index (BMI) greater than $25kg/m^2$ who completed all education sessions for 8 weeks. Data on dietary habits, dietary behaviors, nutritional knowledge, anthropometric parameters and biochemical indices and daily nutrient intakes assessed by a 24-hour recall were collected before and after the intervention program., in order to evaluate program effectiveness. After the intervention, there were positive changes in exercise status and dietary habits and nutrition knowledge accuracy. Especially, the answer of 'I drink a cup of milk every day' were significantly improved (p<0.001), and the answer of 'I don't overeat', which is a dietary attitude question was significantly improved (p<0.05). Dietary intakes of most of nutrients were not significantly different between pre-test and post-test. But calcium (p<0.05), potassium (p<0.05), vitamin A (p<0.01), vitamin E (p<0.05), and folic acid (p<0.05) were significantly increased in the female group after the intervention. Weight (p<0.05), BMI (p<0.01), blood pressure (p<0.001), were significantly decreased after program, but changes of skeletal muscle mass, body fat mass were not significant. Resting heart rate (p<0.01), flexibility (p<0.001), whole body reaction (p<0.05), grip strength (p<0.01) and balance (p<0.01) showed positive changes after the intervention. Blood glucose level in serum was significantly decreased (p<0.001). These results indicated that dietary education and exercise program was effective not only for weight reduction but also for the improvement of physical fitness in obese adults.
