Effect of Dietary Calcium and Fat on Plasma Cholesterol Level and Cholesterol Metabolism in 1, 2-dimethylhydrazine-treated Rats (Dimethylhydrazine으로 처리한 쥐에서 식이의 Calcium 함량과 지방종류에 따라 혈장 Cholesterol 수준과 Cholesterol 대사에 미치는 영향)

  • The study was designed to observe the effect of dietary calcium and fats on plasma cholesterol level, hepatic microsomal fluidity and HMG-CoA reductase activity as well as the excretion of fecal bile acids and neutral sterols in 1, 2-dimethylhydrazine(DMH)-treated rats. Male Sprague Dawley rats, at 7 weeks of age, were divided into 2 groups, 0.3% and 1.0% Ca levels and each group again subdivided into 2 groups of corn oil and perilla oil. Each rat was intramuscularly infused with DMH for 6 weeks to give total dose of 180mg/kg body weight and also fed experimental diet containing 15%(w/w) different fit and Ca(0.3% or 1.0%) for 20 weeks. High dietary calcium(1.0%) did not significantly influence on plasma cholesterol as well as hepatic microsomal fluidity and HMG CoA reductase activity, but significantly reduced the excretion of total bile acid per gram of faces and increased the excretion of total neutral sterol. However, high dietary Ca reduced the excretion of secondary bile acid(deoxycholic and lithocholic acids) which was known as promoter for colon cancer. Perilla oil rich in n-3 ${\alpha}$-linolenic acid significantly decreased plasma cholesterol by increasing hepatic microsomal fluidity compared with corn oil, but did not influence on HMG CoA reductase activity. Perilla oil did not influence on fecal excretion of total and primary bile acids, but reduced the excretion of secondary bile acids. Therefore, it could be recommended to consume more fish product and food rich in calcium and use more perilla oil in meal preparation to prevent from coronary hear disease and colon cancer especially when high fit diet has been practiced. The Effect of Dietary Protein Source and Sulfur Amino acid Content on bone Metabolism in Growing Rats (식이 단백질의 종류와 함황아미노산 함량이 성장기 쥐의 골밀도에 미치는 영향)

  • This study was performed to evaluate the effect of dietary protein source and sulfur amino acid content on bone metabolism in ra. Thirty male rats (body weight 145$\pm$2g) were divided into three groups. The rats in the first group were fed on casein 20% diet as animal protein source and those in the second group were fed on soy 20% diet as plant protein source. Sulfur amino acid ratio of these group was 1.07:1. The rats in the third group were fed on soy 20% diet and the sulfur amino acid were supplemented with the amount contained as much in the soy 20% diet. All rats were fed on experimental diet and deionized water ad libitum for 9 weeks, The total body, spine, femur bone mineral density and bone mineral content were measured using Dual Energy X-ray Absorptiometry Calcium, phosphate, pyridinoline, creatinine in urine and calcium, phosphate, alkaline phosphatase, osteocalcin in serum were measured. During the experimental period, plant protein (soy protein) group had a lower urinary Ca excretion, urine pyridinoline & crosslinks value and had a higher Ca efficiency in total bone and femur bone mineral density than animal protein (casein) group. There were no significant differences in serum calcium, phosphate, alkaline phosphatase and osteocalcin among the three groups of the rats. The findings from this study demonstrated that plant protein (soy protein) is beneficial of bone mineral density because it had a higher Ca efficiency in total bone and femur bone mineral density than animal protein (casein). However, the supplementation of sulfur amino acid on soy results were consistent with prior studies that dietary sulfur amino acid load had a negative effect on calcium balance. The rats fed sulfur amino acid supplementation diet increased urinary calcium excretion and decreased calcium efficiency for total and femur mineral density.   • To investigate dietary habits and health and nutritional status of the elderly with cerebrovascular disease(CVD), 31 hospitalized patients and 28 old people who had experienced stroke and were living at home were interviewed for the dietary habits and drinking and smoking habits. Their blood pressure and triceps skinfold thickness were measured and biochemical assessment of blood samples were conducted. The results were compared with those from 30 healthy elderly. Ca Index reflecting ca intake and intake of dietary fiber were significantly lower in the patient elderly groups than in the healthy elderly. Cholesterol intakes were not significantly different among the groups. Although salt intakes were almost similar among the groups, patient elderly tended to like salty taste as compared to the healthy elderly. Systolic and diastolic blood pressures of the patient elderly were significantly higher than those of the healthy elderly. Triceps skinfold thickness and serum total protein and albumin were significantly lower in patient groups than the healthy elderly. Serum cholesterol and hemoglobin concentrations were not different among groups. Among the above variables only Ca index was inversely correlated with blood pressure significantly.

Effects of Dietary Soy Protein and Soy Isoflavones on Cerebral Infarction Size and Antioxidant Enzyme Activities in a Rat Focal Ischemia Model

  • In this study we investigated the neuroprotective, antioxidative, and hypocholestrolemic effects of dietary soy protein and soy isoflavone in a rat focal brain ischemia model. Weaning Sprague-Dawley rats were fed a 20% casein-based diet (CA), 20% soy protein-based diet (SP), or 0.2% soy isoflavones-supplemented diet (ISO) for 6 weeks. The cortical infarction volume of the ISO group was significantly lower than that of the SP group. The thiobarbituric acid reactive substances (TBARS) were considerably lower in the ISO group than the CA group. Glutatbione peroxidase activities of the SP group were notably higher than those of the CA group. Acetylcholinesterase (AchE) activities of the SP group were significantly decreased compared to the CA group. LDL cholesterol levels and LDL/HDL ratios of the ISO group were lower than those of the CA and SP groups. Our results collectively suggest that soy isoflavones may contribute to neuroprotection by reducing the TBARS and serum LDL/HDL ratio, whereas soy protein may be associated with the regulation of cognitive functions by modulating AchE activity.

Dietary effect of silk protein on epidermal levels of free sphingoid bases and phosphate metabolites in NC/Nga mice (실크 단백질의 식이 공급이 아토피 피부염 동물 모델 NC/Nga Mice 표피의 스핑고이드 베이스 및 인산화물 함량 변화에 미치는 영향)

  • In our previous studies, dietary supplements of silk protein, sericin, and fibroin, were beneficial for improving epidermal levels of ceramides, which are the major lipids for maintaining the epidermal barrier. In this study, we investigated the dietary effects of silk protein on epidermal levels of free sphingoid bases and their phosphates such as $C_{18}$ sphingosine (So), $C_{18}$ sphinganine (Sa), $C_{18}$ sphingosine-1-phosphate (S1P), and $C_{18}$ sphinganine-1-phosphate (Sa1P), which are either synthetic substrate or degradative metabolites of ceramides. Forty-five male NC/Nga mice, an animal model of atopic dermatitis (AD), were divided into three groups: group CA was an atopic control and fed a control diet, group S was fed a 1% sericin diet, and group F was fed a 1% fibroin diet. Fifteen male BALB/c mice served as group C (control group) and were fed the control diet. All mice were fed with diets and water $ad$ $libitum$ for 10 weeks. Sa in group CA was lower than that in group C, but So in group CA was similar to that in group C. So and Sa were higher in groups S and F than those in group CA; So level was even higher than that in group C, and Sa level was similar to that of group C. The So/Sa ratio in group CA, which is reported to increase in AD, was significantly higher than that of group C. The So/Sa ratio was lower in groups S and F than that in group CA, and decreased further in group F. However, S1P and Sa1P in groups S and F were similar to those in group CA. Taken together, we demonstrated that silk protein, sericin and fibroin dietary supplements, increased So and Sa levels, and decreased the So/Sa ratio.

An Association between Menarche and Nutritional Status of Female Students of A Rural Primary School

  • The association of menarche and nutritional status was studied in 116 female students of the 6 th grade in a rural primary school. Participants were divided into two groups based on menarcheal status. The anthropometric data showed that mean heights and weights of menarcheal group on two occasions were significantly higher than those of the other group (p<0.01). Neither hemoglobin levels nor hematocrit values for determination of anemia were not associated with menarche. Twenty four hour dietary recall revealed that young females with menarche consumed less energy and Ca compared to the other group. Ca intake was 34.8% of RDA in menarcheal group. It might be suggested that effective intervention strategies need to be developed and include education programs for nutritional needs and food sources of Ca, targeting rural residents.

The Effects of Dietary Protein and Calcium Levels on Calcium Metabolism in Young Korean Women (한국여성의 단백질 및 칼슘섭취가 칼슘대사에 미치는 영향)

  • This study was performed to investigate the effects of dietary protein and calcium levels on calcium metabolism in eight healthy Korean adult females. The 2-day metabolic study consisted of a 2 day adaptation period and three 6-day experimental periods. Three experimental diets were low protein low calcium(LPLCa : protein 44g, Ca 422mg), higher protein low calcium(HPLCa : protein 85g, Ca 365mg), and high protein high calcium (HPHCa : protein 84g, Ca 727mg). The apparent calcium absorption was likely to be affected by the calcium intake rather than by the protein intake. Average calcium absorption rate was about 23-29% of calcium intake. The calcium balance was -21.44mg for LPCa, -25.02mg for HPLCa, and -3.22mg for HPHCa. Avergae urinary calcium excretion was 127.7mg for LPLCa, 108.6mg for HPLCa, and 215.4mg for HPHCa. Urinary calcium excretion was more closely related to the changes of calcium intake rather than of protein intake. These results seemed to be due to the interactions between the high phosphours contained in the high protein diet and the little discrepancy of protein intake levels.

Effect of dietary protein level on bone metabolism of young and aged rats (식이 단백질 수준이 어린쥐와 나이든 쥐의 골격의 대사에 미치는 영향)

  • To investigate the effect of levels of dietary protein and age on bone metabolism 40% and 5% casein were fed to the rats of 2 & 13 months of age for 12 weeks. High protein groups showed higher bone weight and Ca content than low protein groups and urinary Ca loss was increased in high protein groups but the difference disappeared gradually. A significant increase in urinary hydroxyproline excretion was noted in high protein groups of both age. Another short term study was undertaken to study if the above effect was related with renal function or PTH. Extremely high and low protein diets(60%, 6%) were fed to the rats of different ages(6wks, 6mos.) for 2 weeks, Urinary Ca excretion was significantly increased in high protein groups of young and aged rats and GFR was increased as well. There was no difference in serum iPTH levels between low and high protein groups, but it was elevated in aged rats. Alkaline phosphatase activity was higher in young rats, reflecting faster bone formation. The observed hypercalciuria in high protein groups, especially in aged rats, seems to be related to higher GFR, and PTH dose not appear to be a major mediator.

Physicochemical Characteristics and Antioxidative Effects of Korean Figs(Ficus carica L.) (국내산 무화과의 이화학적 특성 및 항산화 활성)

  • In order to obtain the basic data fer the processing adaptability of Korean figs(Ficus carica L.), physicochemical analyses were carried out with Korean common type figs in the different ripening stages. Moisture contents decreased, but the contents of protein, fat carbohydrate and soluble solids increased according to the ripening of fruits. K was detected as the most abundant one of all the minerals and Ca, Mg, Na, Fe, Mn, Zn and Cu were the next in order. The mineral contents decreased slightly with ripening. Especially, Ca, Mg, U, Fe and Zn were higher in the unripened H stage figs. The antioxidative activity was assayed with water and methanol extracts from ripened figs by the DPPH radical scavenging ability. The antioxidative activities of Korean figs were relatively high and increased in a dose dependent manner. The methanol extract showed the higher antioxidative activity than the water one. Therefore, the methanol was the better solvent than water for the antioxidative compounds. These results suggested that Korean figs are relatively the good sources of minerals, especially the Ca and the antioxidative compounds.

Associations between Dietary Intake and Health Status in Korean Elderly Population (한국 노인의 영양섭취 패턴과 건강)

  • As the elderly population has increased in recent years in Korea chronic degenerative diseases prevalent in the aged have garnered attention in relation to food behavior. In general, dietary intakes of elderly Koreans were inadequate in quality as well as in quantity. Especially, intakes of Ca, vitamin A, and riboflavin along with total energy were insufficient. They tended to consume high carbohydrate and low fat energy rates which may be resulted from long standing vegetable-based flood patterns. Relationships between dietary intakes and indices of cardiovascular diseases revealed that blood pressures and serum lipids patterns tended to be poor in individuals having high abdominal fat accumulations which seemed to be related with dietary consumption of high carbohydrate and insufficient intake of many nutrients. These results suggested that a nutritionally balanced diet including animal sources floods is needed in order to prevent an abdominal obesity and cardiovascular diseases. The bone health status of the Korean elderly appeared poor. It was more serious in women recording a higher prevalence rate of osteopenia and osteoporosis than in men. There were strong associations between dietary factors and bone health status. Bone mineral density was found to be higher with higher intakes of protein energy rate, the total amount of feeds, and many nutrients including Ca and p, indicating that a good quality diet is essential in maintaining healthy bone status in later life. mental health condition of the elderly as measured by cognitive function and the degree of depression was also inadequate and had strong association with dietary consumption. The positive results were obtained in individuals having an adequate dict. Therefore, it could be summarized that the physical as well as mental health in elderly Koreans are highly related with their dietary patterns. Thus, the older adults need te consume nutritionally well balanced diet in sufficient amount, which contains various flood items including significant amounts of animal source floods in a daily diet in order to maintain healthy condition.
