대전지역 남자 중학생의 스트레스와 식행동의 관련성 연구 (The Relationship Between Stress Level and Dietary Behavior Score of Middle School Male Students in Daejeon)

  • 본 연구는 청소년기 남자 중학생을 대상으로 스트레스 정도와 식행동 실태를 조사하고, 스트레스가 식행동에 미치는 영향을 분석하였다. 스트레스 요인으로 가족, 학업, 오락, 건강, 동성친구, 이성 친구, 교사, 일상생활의 8개 영역, 식행동 요인으로 식사의 규칙성과 균형성, 건강식의 3개 영역으로 구분하여 분석하였다. 대전 중구 지역에 위치한 남자 중학생 140명을 대상으로 2006년 7월 10일부터 7월 14일 사이에 설문조사를 실시하였으며, 수집된 설문지 140부 중 총 128부(91.4%)를 최종 분석에 사용하였다. 연구의 결과를 요약하면 첫째, 조사대상자의 스트레스 실태는 5점 만점에 평균 2.36으로 중간 정도 수준이었다. 영역별 차이는 크지 않았으며, 학업 영역에서의 스트레스(2.93)가 높았고, 이성 친구 관련 스트레스(1.96)가 낮았다. 둘째, 식행동 점수는 5점 만점에 3.02로 중간 수준이었다. 셋째, 스트레스 정도에 따라 낮은 군, 중간 군, 높은 군의 3개 집단으로 구분하였을 때, 중간 군의 식행동 점수가 가장 높았고 높은 군의 식행동 점수가 가장 낮았으나 유의한 차이는 아니었다. 넷째, 스트레스와 식행동의 상관관계를 살펴본 결과, 스트레스 총점은 식생활 균형성과 상관이 있었으며, 규칙성은 가족, 학업, 건강 관련 스트레스와 상관관계가 있는 것으로 확인되었다. 즉 가족, 학업, 건강 관련 스트레스를 많이 받을수록 규칙성 점수는 낮았다.

  • 오염지표생물로서 널리 활용되고 있는 깔따구는 잡식, 초식, 육식성 등 종에 따라 다양한 섭식형태를 보이는 것으로 알려져 있다. 그중 잡식성으로 알려져 있는 삼지창무늬깔따구 (P. scalaenum)는 국내의 다양한 하천 생태계에서 우점하기 때문에 하천 생태계 내 먹이 사슬에 있어 중요한 역할을 담당하고 있다. 그럼에도 불구하고 먹이원에 대한 자세한 정보가 부족한 실정이다. 이에 본 연구에서는 국내 4대강의 대표적인 보(이포보, 세종보, 죽산보, 강정고령보, 달성보) 구간에 서식하는 삼지창무늬깔따구를 대상으로 소화관 내용물을 분석하여 먹이원을 파악하고자 하였다. 이포보에서 채집된 깔따구 소화관에서 동물플랑크톤의 사체(부속지, 강모 등)가 다수 포함된 반면, 다른 4개보의 깔따구 소화관에서는 식물플랑크톤이 주를 이루고 있었다. 깔따구의 소화관 내용물과 환경에 식물플랑크톤 종 조성은 매우 유사하였으며, 정점 간 종 조성의 차이가 뚜렷하게 나타났다. 본 연구에서 수행된 삼지창무늬깔따구의 소화관 분석은 잡식성 깔따구의 섭식 특성을 파악할 수 있었으며, 특히 깔따구의 소화관 내용물 분석을 통한 주변 수환경 내 기초생산자의 종 조성 파악 연구의 가능성을 보였다.

음식모형을 활용한 어린이 식생활 교육 매체 개발 (Development of Food Replicas as Dietary Education Materials for Children)

  • The purpose of this study was to develop children-friendly education materials based on food replicas for the dietary education of lower grade elementary students. Through a literature review on current dietary problems and dietary education for children, five education themes were chosen: balanced diet, seasonal food, traditional food, noodle culture, and making instant noodles. A total of 304 key food items for food replicas were selected based on the themes: six basic food groups (113 items), balanced meals (37 items), dietary habits (74 items), spring foods (13 items), summer foods (17 items), autumn foods (16 items), winter foods (11 items), Korean traditional foods (52 items), Korean native noodles (18 items), noodles from foreign countries (19 items), and making instant noodles (46 items). Next, a food replica database was developed consisting of name of the food, picture, size, ingredient, recipe, reference, and attached code. Powerpoint slides and teaching plans for all education themes were developed utilizing the food replicas in order to raise interest and understanding of serving size and intake amount. This research provides a basis for the development of food replicas as effective dietary education materials for elementary students and their use in extra-curricular activities, after school programs, community health centers, or food companies.

조사 계절에 따른 식품섭취빈도 조사의 평균 섭취 횟수와 섭취량 변화 (Seasonal Variation of Food Intake in Food Frequency Questionnaire among Workers in a Nuclear Power Plant)

  • Objectives : This study was conducted to investigate the systematic error, such as seasonal change or inadequate food items, in a food frequency questionnaire administered to workers in a Nuclear Power Plant, Korea. Methods : We performed three repeat-tests with 28 subjects on May 13, July 8 and Dec 16, 1992. Our food frequency questionnaire (FFQ) comprised 84 foods organized into 7 food-groups, and was composed of the items of usual intake frequency (8 categories) and the amount per intake (3 or 4 categories) over the previous year. We compared the means of intake frequency and the frequency of the portion-size according to each season using Repeated Measures ANOVA and Pearson's chisquare test with Fisher's exact test. Results : We found the significant seasonal changes of several food items in intake frequency measurement. These items were typical seasonal foods such as mandarin orange, plum and green vegetables, while the single questions consisted of inadequate food items such as thick beef or similar soup and various kimchi products. Significant seasonal changes in portion-size were found in only two items: cooked rice-brown and fresh frozen fishes. Conclusions : The systematic errors observed could caused loss of validity in the FFQ. Consideration should be given for seasonal variation in FFQ survey and methodological concerns are needed to improve the quality for measuring usual diet pattern.

남녀 대학생의 지방에 대한 영양지식과 실천도 (College Students' Nutrition Knowledge and Practices toward Dietary Fat)

  • This study was made for male and female university students regarding the nutrition knowledge about fat, fat contents in food, and practice toward fat. The result is as follows;1.Out of 13 questions inquiring the knowledge about fat a significant difference was observed between female and male students in 10 questions. Male students' nutrition knowledge about fat was $6.33{\pm}0.16$, and that of female students' was $6.33{\pm}0.16$ and there was no significant difference. The ratio of correct answer was 49% and 59% respectively. Female students marked high ratio of correct answer such items as ${\omega}-3$ fatty acid, the relation between high fat diet and atherosclerosis(coronary disease), the relation between obesity and fat, the relation between ${\omega}-3$ fatty acid and heart disease, cholesterol, fatty acid in butter, degree of unsaturation in liquid oil, margarine, chicken fat, rancity of fat. 2.Male students' total score of knowledge about fat quantity in food was $4.91{\pm}0.10$ and that of female students was $5.58{\pm}0.10$. There was significant difference(p<0.001) and the ratio of correct answer was 55% and 62% respectively. Out of 9 food items, significant difference was observed in 7 items according to student's majoring subject. The ratio of correct answer for the questions about the quantity of fat in food female showed high figures in such items as white meat(p<0.01), whole milk(p<0.0001), skim milk(p<0.01), potato chips(p<0.001), biscuit(p<0.001). However, male students showed high figures on the question about the quantity of fat in vegetable margarine. 3. Out of 12 items observing the degree of diet practice on fat, significant difference was observed between male and female students in 6 items. Female students practice the question items positively with high ratio: intake of fish instead of meat(p<0.01), removing visible fat in meat(p<0.0001), removing chicken skin(p<0.0001), removing oil during cooking (p<0.05), selection of low fat milk or skim milk(p<0.05), selection of meat part(p<0.001). There was significant difference between male and female students in practicing diet on fat (p<0.001) and the total score was $31.52{\pm}0.52$ and $34.65{\pm}0.41$ respectively.

동해에 출현하는 낫돌고래(Lagenorhynchus obliquidens)의 위내용물 조성 (Diet of the Pacific White-sided Dolphin Lagenorhynchus obliquidens in the East Sea of Korea)

  • Pacific white-sided dolphins Lagenorhynchus obliquidens inhabit cool temperate waters; in Korean waters, they concentrate near the coast of Gangwon and Gyeongbuk from late autumn to early spring. We collected 15 individuals from Yeongduk, Gyeongju, Ulsan, and Busan between December 2018 and February 2019 and analyzed their stomach contents. Fresh prey items were identified to the species level, and residual stomach contents that were unidentified due to digestion were filtered through a sieve to find fish otoliths and cephalopod beaks. The most important prey items of Pacific white-sided dolphins were cephalopods, composing 68.0% of the diet by occurrence. Fishes were the second largest dietary component, making up 32.0% of the diet by occurrence. Of the cephalopod species consumed, Watasenia scintilans was the principal prey item.

대전지역 유치원 종일반, 반일반 유아와 이들 어머니의 식생활 비교 (The Dietary Life of Full- and Half-day Program Children and Their Mothers of Kindergarten in Daejeon)

  • The purpose of this study was to provide basic information need to promote early childhood's growth with balanced diet and preferable dietary attitude by observing the provision of food service management in kindergarten in Daejeon. We researched the dietary life of full- and half-day program children and their mothers. A questionnaire survey was conducted with 392 children attending kindergarten and their mothers. The questionnaire items examined general characteristics, dietary life, dietary behavior, frequency food intake etc. The results of the survey were as follows. The frequency of breakfast intake of the half-day program children and their mothers was higher than that of the full-day program children and their mothers. Most of the children had an unbalanced diet about soybean, kimchi, and vegetables, whereas their mothers had an unbalanced diet about processed food In general, the half-day program children showed higher scores than full-day children for the items of the dietary behavior of kindergarten. The dietary attitude and nutrition attitude scores of the half-day program children and their mothers were higher than those of the full-day program children and their mothers.

서울지역 산업체 급식소 고객의 급식 나트륨 저감화 운영 및 필요성에 대한 인식 (Customers' Perceptions of Operational Status of and Needs for Sodium Reduction in the Industry Foodservice in Seoul)

  • Objectives: This study aimed to compare customers' perceptions of the need for a low-sodium diet and sodium-reduced operations in the industry foodservice by age. The relationships between health concerns and perceptions of the need for sodium-reduced operations and low-sodium diets in the industry foodservice were analyzed. Methods: A survey was conducted among 340 industry foodservice customers aged 20-50 years and residing in Seoul, Korea. This study investigated the respondents' health concerns, their perception of the need for sodium-reduced foodservice operations, their perception of a sodium-reduced diet, and the general details of the foodservices they used. A cross-tabulation analysis and ANOVA were performed to identify differences in measurement items by age, and a simple regression analysis was performed to examine relationships between measurement items. Results: For the customers' perception of the need for a sodium-reduced foodservice operation, the item "it is necessary to provide separate spices and sauces to reduce sodium intake" achieved the highest score (3.88 points out of a possible 5 points). For the perception of a sodium-reduced diet, the item "I think it is helpful for one's health" obtained the highest score (4.13 points). Respondents' health concerns had a positive effect on increasing the level of perception of the need for sodium-reduced foodservice operations and that of a sodium-reduced diet. Conclusions: Foodservice nutritionists could help enhance their customers' perceptions of the needs for sodium-reduced foodservice operations and sodium-reduced diets by frequently providing them with sodium-related health information.

우리나라 젊은 성인 여성의 철분영양상태와 이에 영향을 미치는 식이요인 분석 (2) : 주요 식품의 철분 분석과 철분 섭취량 및 이용율 평가 (Iron Nutriture and Related Dietary Factors in Apparently Healthy Young Korean Women(2) : Analysis of Iron in Major Food Items and Assessment of Intake and Availability of Dietary Iron)

  • The iron content of 178 food items were analyzed by ICP to provide database to calculate dietary intake of iron in Korea. The analysis data showed significant deviations of iron contents in some food items compared with Food Composition Table of KRNI which is most widely used at present. Three day dietary intake records were collected from 96 female college students to estimate mean daily iron intake and bioavailability of dietary iron. Mean daily intake of total iron in the study subjects was 13.2mg and heme iron intake was 0.94mg, 6.7% of total iron intake. BGioavailability of dietary iron was calculated by two methods. Total absorbable iron was calculated by the method of Monsen, body iron storage of the subjects being estimated with serum ferritin concentrations, was 1.21mg and bioavailability of dietary iron was thus 9.3%. Bioavailability calculated with the method by Hallberg was 11.22%. Two values of dietary iron bioavailability of the present study are lower than the reported values in adult women consuming typical western diets but within the range estimated for vegetarians. Considering high prevalence of iron deficiency based on serum ferritin concentrations and low bioavailability of diet in young adult Korean women, more efforts should be made to increase the content and bioavailability of iron in diet of Korea adult women.

어린이 영양지수 (NQ, Nutrition Quotient) 개발을 위한 평가항목 선정 (Selecting items of a food behavior checklist for the development of Nutrition Quotient (NQ) for children)

  • The objective of this study is to select a simple and easy measurable food behavior checklist for the development of Nutrition Quotient (NQ) for children, which reflects children's diet quality, as well as to evaluate the validity of the items in the food behavior checklist. The first 36 items in the checklist were established by an expert review, modifying the preliminary 50 items in the checklist, which had been selected by a literature review and the Korean National Health and Nutrition Examination Survey data. 341 children in 5th and 6th grades at an elementary school participated in a one-day dietary record survey, and later responded to 36 food behavior questions of the checklist. Pearson's correlation coefficients between the responses to the food behavior checklist items along with the mean nutrient intakes of the children were calculated. From the result, in which responses of food frequency and food behavior items showed certain association with the dietary record data, a second checklist with 22 items was selected. A survey was conducted by using the second checklist. 1,393 children in the 5th and 6th grades at 12 elementary schools in metropolitan cities, such as Seoul, Busan, Gwangju, Daegu, Daejeon, and Incheon, participated in the survey. Further, an exploratory factor analysis was performed. After the analysis, 19 items (10 items from food frequency and 9 items from food behavior) were finalized as the food behavior checklist items for the NQ. The final 19 food behavior checklist items were composed of 5 factors: 'Balance', 'Diversity', 'Moderation', 'Regularity', and 'Practice'. This study is a significant first trial to establish a comprehensive system for evaluating children's food habit and diet quality. This checklist might need continuous modification and revision reflecting the change of children's dietary life and the social environment.
