한국농촌주민(韓國農村住民)의 계절별(季節別) 식품섭취조사연구(食品攝取調査硏究) (A Study on Seasonal Variations of Food Consumption of Korean Farmers)

  • This is the report of a food consumption survey of 193 members of 30 farm families in three rural villages of Korea. From a total of 188 households of the three villages, namely Wolgok in Kyunggi Do Province, Wachon in Kangwon Do Province, and Sobong in Cholla Namdo Province, 30 households were chosen for the survey. Four consecutive seasonal surveys, beginning in the autumn, November 1974 and finishing with the summer, August 1975, were made and each survey covered three consecutive days. The Precise Weighing Method was used in evaluating the kinds of food and nutrient intakes of the subjects. This method entails the accurate weighing of all foods by the investigator just prior to their consumption by the subjects under investigation. This survey was male to determine the actual food eaten by the members of these farm families at each season of the year, and to note any special differences in the foods consumed. The results obtained are summarized as follows: Food Intake The traditional ordinary diet of Korean farmers consists mainly of rice and other cereals as staple foods, and simple subsidary foods. The nutritional shortcomings of rice as a staple food are evident in the subclinical status of nutritional deficiencies. The mean consumption of cereals and their products was very high and it was more than half of the daily total food intake throughout all the seasons. The consumption of animal food, fruits, and fat by the farmers was very low. Fruit intake during winter and spring was almost nil. One of the special foods in the Korean dietary pattern is Kim-chi, a variety of pickled and fermented vegetables. The mean intake of Kim-chi during autumn and winter was very much higher than the other seasons. Korean farmers have difficulties in balanced year-round supply of food due to seasonality of food production and lack of food preservation. As nutrition problems of Korean farmers are highly influenced by seasonal variations, the expansion of an appropriate food preservation and storage programme should be encouraged. Special consideration should be given to new methods of preservation, the types of foods preserved, and production and consumption of nutritionally valuable foods for the improvement of the nutritional status in rural communities. Nutrient Intake Average adult rates for calorie and protein in the three study areas were 0.80 and 0.87 respectively, with little variations by villages. The adult caloric intake in averaged 2,928 kcal for autumn, 2,662 for winter, 2,673 for spring, and 2,760 for summer. Cereals contributed most of the total calories. In terms of the recommended daily dietary allowances for the Korean given by the Korea FAO Association, the diets in this survey were adequate except in the winter and spring. The protein intake averaged from 76.4 grams in autumn to 83.4 grams in summer and was near the recommended allowance, but a relatively large proportion of the total protein came from cereals and their products. The fat intake was unsatisfactory, ranging from 19.2 grams to 29.3 grams for the four seasons, and the consumption during farming season was higher than other seasons. It is apparent that the diet of the Korean farmers should be supplemented by calcium during autumn and winter. The highest calcium intake, with a mean of 583.5 milligrams, was recorded in summer. The mean intake of iron ranged from a low of 9.2 milligrams in the autumn to a high of 15.0 milligrams in the spring and it was satisfactory for all seasons. Among the vitamin group, the daily average intakes of vitamin A, thiamine, riboflavin, and ascorbic acid were lower than the desired intake throughout all the seasons. The mean vitamin A intake as ${\beta}-carotene$ ranged from a low of 2,807.8 IU to a high of 5,221.0 IU. The thiamine intake ranged from 0.98 milligrams to 1.19 milligrams, while mean riboflavin intake ranged from 0.92 milligrams to 1.13 milligrams. Ascorbic acid intake was 37.3 milligrams, the lowest, and the highest 47.8 milligrams. Niacin intake among Korean farmers was higher than the recommended allowance throughout all the seasons, and the mean intake ranged from 18.3 milligrams to 25.8 milligrams. The main character of the Korean farmers' diet has been found low in quality of protein and high in carbohydrate. Attention should be paid to the low intake of vitamin A, thiamine, riboflavin, and ascorbic acid among Korean farmers.

국내 유통 약용식물 중 잔류농약 모니터링 및 위해성 평가 (Monitoring of Pesticide Residues and Risk Assessment for Medicinal Plants)

  • 약용식물 중 잔류농약의 안전성을 평가하고자 2012년 전국 9개 도시에서 유통되고 있는 인삼과 도라지에 대하여 전체 112점의 시료를 수거하여 잔류농약을 분석하였다. 122종의 농약에 대해 GC-ECD, GC-NPD 및 HPLC-UVD를 이용한 다종농약 다성분 분석법으로 잔류농약을 분석하였고, 분석 결과 12점의 시료에서 7종의 농약이 검출되어 10.7% 검출률을 보였다. 농약 성분별 검출 빈도는 procymidone, kresoxim-methyl, endosulfan, cypermethrin, tralomethrin, tetraconazole, chlorfluazuron 순이었다. 농약이 검출된 시료 중 잔류허용기준을 초과한 시료는 2점으로 1.8% 검출률을 보였으며, 도라지 1점에서 tetraconazole, 인삼 1점에서 cypermethrin이 검출되었다. 해당 작물에 대한 잔류허용기준이 설정되어 있지 않거나 품목고시 되어 있지 않은 시료는 10점에서 5종의 농약이 검출되어 8.9% 검출률을 보였다. 본 연구에서 검출된 농약이 해당 약용 식물의 섭취로 인체에 유입될 일일섭취허용량 대비 일일 섭취추정량은 최저 0.006%에서 최고 0.333%로 낮은 %ADI 값을 보여 인체 위해도는 낮은 것으로 판단되었다.

  • Of 1,244 junior high school students of boys and girls and their families in Tokyo and Seoul, we investigated the present situations of the participation in cooking and table manners. In both countries, the average age of parents was 40's, and the ratio of the kinds of fathers' job was similar including 75% of full-time salaried workers, while that of mothers' in Japan was 63%, in Korea 23%. The male participation in cooking in both countries was found in younger generations and that of fathers and boys in Korea was significantly fewer than in Japan, which is regarded as the influence of Confucianism and employment of housekeepers. The figure of frequency of supper taken together daily was 27% in Japan and 54% in Korea where they didn't begin eating until all families gathered or the elders began. In Japan the civilities before and after meals were so often customarily expressed and they had the regular order of seats. The figure of frequency of taking meals with TV watching was about 45% in Japan of breakfast and supper and more than 30% in Korea of supper. As for the participation in cooking and table manners, national characteristics were clearly found out. In both countries, the newly modernized and democratized style of dietary behaviors was being made, rather sooner in Japan, out of the specific East-Asian traditional dining culture.

유통 수삼 중 잔류농약 모니터링 및 안전성 평가 (Monitoring and Safety Assessment of Pesticide Residues in Ginseng (Panax ginseng C.A. Meyer) from Traditional Markets)

  • 국내산 유통 수삼 중 농약의 잔류특성을 구명하기 위하여 전국 15개 지역의 45개 재래시장 상점에서 45점의 시료를 채취한 후 GC-MS/MS와 LC-MS/MS를 이용한 다성분동시분석법을 이용하여 잔류농약을 분석하였으며, 검출된 농약은 GC-ECD/NPD를 이용한 개별분석으로 수삼 중 잔류농약을 정량하였다. 잔류농약 분석 결과 총 45점의 시료에서 cypermethrin, fenitrothion, fludioxonil, thifluzamide, tolclofos-methyl이 검출되었으며, 검출율은 35.6%이었다. Tolclofos-methyl이 가장 높은 검출빈도를 보였으며, 인삼에 대한 안전사용기준과 잔류허용기준이 설정되어 있지 않은 fenitrothion이 검출되었다. 수삼에서 검출된 농약은 모두 잔류허용기준 미만이었다. 수삼 중 검출된 농약의 일일섭취허용량 대비 일일섭취추정량은 0.03-16.67%이었다.

  • Herbal medicine has been traditionally used in Asian countries for a long time. Many pharmacological effects are identified in the herbs and these herbs are believed to be safe for human. However, the safety or adverse effect of some traditional herbal medicines has not been established. We have chosen Cyperi rhizoma based on the Korea Herbal Pharmacopoeia and which have been widely used for an anti-inflammatory effect in Korea. The object of the study was to evaluate safety of Cyperi rhizoma in rats. The aqueous extract of Cyperi rhizoma was prepared according to the standard hot water extraction method of the Korea Pharmacopoeia. In the sub-chronic study, the aqueous extract of Cyperi rhizoma was orally administered once daily as 0, 125, 250, 500, 1000 and 2000 mg/kg/day to male and female F344 rats for 13 weeks. There were no treatment related abnormalities in mortality, clinical signs, food consumption, ophthalmologic examination, hematology, serum chemistry, urinalysis, gross observation, organ weight and histopathologic examination. In conclusion, The NOAEL (No Observed Adverse Effect Level) for Cyperi rhizoma aqueous extract was determined as more than 2000 mg/kg/day in the present experimental condition.

기능성 유제품의 생산 현황 및 관리제도 - 미국.유럽을 중심으로 - (Current Status and Regulation Issues of the Functional Dairy Products in European Countries and the United States of America)

  • This work has been conducted as a part to set up the regulations and the scientific evaluation systems for the functional dairy products with health claims in Korea. Toward this end, current regulations, requirements, and all kinds of provisions related to the functional dairy products overseas were taken into accounts and feasible recommendations of new initiatives on the current regulations as well. By doing so, not only protecting hopefully the innocent consumers from the false labeling statements and fake advertisements, but also eventually to revitalize the stagnated domestic dairy industries. Currently, functional daily products are simply regarded as "Dietary Supplements" in the United States, and subjected to the regulations under the Dietary Supplement Health and Education Act, established m 1994. Manufacturers and sales distributors should notify their products to the FDA, which is in charge of the dietary supplements on nutrition and labeling, in advance when they start marketing a new dietary ingredient or any foods containing it in the States. For EU countries, there exists keen interests about the functional food products between the member countries of the European Union even though the products are categorized into "Food Supplements" similar to those in the United States. Therefore, they maintain a cautious attitude in applying the health claims to the functional food products. On the other hand, under the Japanese health food system, functional foods are qualified to the functional health foods in terms of legal status as long as any traditional foods can meet the legal standards in its effectiveness, safety as well as quality, along with significant scientific evidences related to the products, thus categorized into "Foods for Specified Health Uses and "Foods with Nutrient Function Claims". Through this study, we may have some expectations and potential utilizations as follows: Legal regulations of dietary supplements especially for the dairy products will be implemented by the outcomes of this research and proposed a tentative amendment of functional ingredients for the sake of consumer protection from the false advertisements and overstatement labeling. Current regulations on the animal foods processing and advertisements will be amended and supplemented in order to revitalize the current downturn dairy sales and to harmonize the international Codex recommendations. The results obtained from this study will make the consumers a wise selection of the dairy products with health claims and be utilized for consumer education and advertisement of the functional products as well.

Subacute Oral Toxicity Study of Korean Red Ginseng Extract in Sprague-Dawley Rats

  • Ginseng is a well-known traditional medicine used in Asian countries for several thousand years, and it is currently applied to medicine, cosmetics, and nutritional supplements due to its many healing and energygiving properties. It is well demonstrated that ginsenosides, the main ingredient of ginseng, produce a variety of pharmacological and therapeutic effects on central nerve system (CNS) disorders, cardiovascular disease, endocrine secretions, aging, and immune function. Korean red ginseng extract is a dietary supplement containing ginsenoside Rb1 and ginsenoside Rg1 extracted from Panax ginseng. While the pharmacokinetics and bioavailability of the extract have been well established, its toxicological properties remain obscure. Thus, four-week oral toxicity studies in rats were conducted to investigate whether Korean red ginseng extract could have a potential toxicity to humans. The test article was administered once daily by oral gavage to four groups of male and female Sprague-Dawley (SD) rats at dose levels of 0, 500, 1,000, and 2,000 mg/kg/day for four weeks. Neither deaths nor clinical symptoms were observed in any group during the experiment. Furthermore, no abnormalities in body weight, food consumption, ophthalmology, urinalysis, hematology, serum biochemistry, gross findings, organ weights, or histopathology were revealed related to the administration of the test article in either sex of any dosed group. Therefore, a target organ was not determined in this study, and the no observed adverse effect level (NOAEL) of Korean red ginseng extract was established to be 2,000 mg/kg/day.

시판 청어(Clupea pallasii ) 과메기의 위생 및 영양학적 특성 (Sanitary and Nutritional Characterization of Commercial Kwamegi from Pacific Herring Clupea pallasii)

  • The objective of this study was to investigate the sanitary and nutritional requirements for the industrialization of commercial kwamegi from Pacific herring Clupea pallasii (CK-PH). The proximate composition of CK-PH was 46.4-47.2% moisture, 24.7-25.6% crude protein, 23.6-25.2% crude lipid, and 2.5-2.9% ash, which differed significantly from that of commercial kwamegi from the Pacific saury Cololabis saira. According to the volatile basic nitrogen content, heavy metal content, and viable cell and coliform group counts, products K and F (prepared by a general process) maintained their freshness, whereas product T (treated with green tea extract) did not. Products K and F contained five types of biogenic amine: agmatine sulfate (2,596 and 2,067 mg/kg, respectively), putrescine dihydrochloride (8.5 and 8.0 mg/kg, respectively), cadaverine (3.7 and 3.9 mg/kg, respectively), histamine (17.0 and 12.4 mg/kg, respectively), and spermidine (8.7 and 8.0 mg/kg, respectively). Product T contained six amine types: tyramine (12.5 mg/kg), agmatine sulfate (2,723 mg/kg), putrescine dihydrochloride (29.4 mg/kg), cadaverine (321.6 mg/kg), histamine (45.3 mg/kg), and spermidine (13.6 mg/kg). The total amino acid content of product K (22.16/100g) was 5.8% lower than that of product F. The major amino acids of products K and F were aspartic acid, glutamic acid, leucine, and lysine. No difference was found in the fatty acid composition of products K and F. The major fatty acids in products K and F were 18:1n-9, 20:5n-3, and 22:6n-3. Based on the recommended daily dietary allowances for Koreans, the significant minerals in products K and F were calcium, phosphorus, and magnesium.

의식주(衣食住)에 나타난 인삼의 상징성과 역사 전통 (Historical Reviews on Traditional Symbolism of Ginseng in Everyday Life)

  • Ginseng, a Korean native herb, has been a symbol of mystic cure-all which provides longevity benefits throughout Korean history. According to Chinese historical records, a major source of wild ginseng has been described as Korean peninsula, which is the most suitable ginseng production area, and the Manchu region near Mt. Baekdu and the Maritime Province. Since Tang dynasty period (618-917 CE), Chinese has also called ginseng as "Goryeo Ginseng", which is named after "Goguryeo" (37 BCE-668 CE), an ancient kingdom of Korea, from which they mainly imported the herb as the region was famous for its high quality of ginseng. To date, it refers to Korean ginseng. This study compares the medicinal properties of ginseng as stated in the ancient Korean medical books with the major Korean historical records regarding the usage of ginseng and its symbolism of longevity in everyday life. By contrasting these findings, we tried to figure out how the actual medicinal properties of ginseng and the anticipation of longevity are related. It was confirmed that the expectations about longevity were widely applied to everyday life. In addition, the study investigates the various usage of ginseng as a motive for decorative patterns and as an ingredient for daily products including snacks, health drinks, various types of food, clothing patterns, and so on. Finally, the usage of ginseng ingredients in the cosmetic products fulfilled the desire of Korean people to purchase, showing the aesthetic recognition and medicinal understandings about the herb. These findings suggest that ginseng is an important medicinal agent that not only symbolizes longevity and good health but also has a great influence on the lives of Koreans.

국내 유통 과실류의 잔류농약 모니터링 및 위해성 평가 (Monitoring of Pesticide Residues and Risk Assessment for Fruits in Market)

  • 국내 유통 농산물의 잔류농약 안전성을 평가하고자 2012년 전국 6개 도시에서 유통되고 있는 과실류인 사과와 복숭아에 대하여 123점의 시료를 수거하여 잔류농약을 분석하였다. 122종의 농약에 대해 GC-ECD, GC-NPD 및 HPLCUVD을 이용한 다성분분석법으로 잔류농약을 분석하였고, 분석 결과 총 농약이 검출된 시료는 관행농산물에서 38점, 저농약농산물에서 6점, GAP농산물에서 1점으로 시료에서 16종의 농약이 검출되어 33.6% 검출률을 나타내었다. 농약 성분별 검출 빈도는 cypermethrin, lufenuron, fenvalerate, bifenthrin, chlorfenapyr, iprodione 순이었다. 농약이 검출된 시료 중 잔류허용기준을 초과하는 시료는 18점으로 14.6% 검출되었으며, 해당 작물에 대한 잔류허용기준이 설정되어 있지 않거나 품목고시 되어있지 않은 농약은 2점의 시료에서 2종의 농약이 검출되어 1.6% 검출률을 보였다. 본 연구에서 검출된 농약이 해당 농산물의 섭취로 인체에 유입될 잔류농약의 일일섭취허용량 대비 일일섭취추정량은 최저 0.033%에서 최고 2.748%로 농산물 섭취에 의한 위해성은 낮은 것으로 나타났다.
