창원시 소재 한정식업소에서 제공되는 1인분 제공량과 섭취량 실태조사 (Survey on Nutrients of Served and Consumed Foods in Korean Restaurants in Changwon)

  • The objectives of this study were to conduct preliminary research to investigate full course meals in Korean style restaurants in order: i) to analyze the nutrient contents of full course meals per servings, and ⅱ) by analyzing the above, to examine the amount and the quality of the foods served in the full course meals by Korean style restaurants in Changwon. A total of 20 restaurants in Changwon participated in this study, and two investigators visited there, consumed and investigated it. A key finding was that restaurant patrons tended to overconsume nutrients as compared to the Korean Recommended Daily Allowance(RDA), and restaurants generated large amounts of food wastes due to the excess food served. Other findings were as follows: 1) 1,821.2Kcal were served, 1,052.6Kcal were consumed and 768.6Kcal which is equivalent to 1/3RDA were thrown away on average. 2) The average carbohydrate:protein:fat(CPF) ratio of caloric nutrients was 42:27:31. 3) The correlation between the consumed and unconsumed calories was r=0.661 and the correlation between served and unconsumed calories was r=0.819. Both consumed and unconsumed calories were closely related to the served calories. 4) The result of the research showed that mean INQ in most nutrients was higher than 1.0, especially INQ in unconsumed food is mostly higher than INQ in provided and consumed food. 5) The unconsumed food and the meal prices were closely correlated in terms of price loss. These findings indicate the Korean style full course meals consisted of a high-protein, high-fat and high-caloric intake, which is similar to a westernized caloric nutrient pattern. They should also be strongly encouraged to play an active role in improving their customers’ nutritional status, as well as reducing the restaurants wastage of food. Lastly, further research should be conducted to improve the quality of the menus in Korean restaurants.

뽕잎분말 첨가 절편 섭취가 남자 대학생의 혈청 지질 수준에 미친 효과 (The Effects of Mulberry Leaf-Jeolpyun on the Serum Lipid Level in Male University Students)

  • Recently, it appears to have a trend of adult having weight increase in Korea. The number of obese people is increasing in Korea due to the changes of meal pattern and the lack of physical activities. Currently, obesity is the prevalent health problem in the world. The purpose of this study was to investigate the effect of mulberry leaf-Jeolpyun on the serum lipids of overweighted male university students. After 3 days of education and adaptation on this study, twenty male university students with 20.9yrs old average were fed a uniformed dormitory foodservice, and they ate constant amount of 9% mulberry leaves added-rice cake, Jeolpyun(100g) instead of boiled rice(l00g) , on each meal. Experiment was conducted during 14 days period. All meals were provided promptly. and the subejects were required to have breakfast, lunch, and dinner on weekdays. Mean height, weight, and BMI were 176.55cm, 90.OOkg, and 28.73, respectively. Although it was not very significant, body weight of the subjects appeared to be reduced after consuming the 100g substitute diet of mulberry leaf-Jeolpyun. Daily energy Intake of the subjects was 2,360.6kcal, which represents 94% of the Korean RDA. The ratio of energy obtained from carbohydrate, protein, and fat was 55: 17'27 As compared with the Korean RDA, 65 : 15 20, carbohydrate consumption was decreased but protein and fat consumption was a little bit increased. The ratio of animal-protein source was 58%, and animal-fat intake was 42%. Triglyceride concentrations decreased. but HDL-cholesterol was in the reversed manner The concentrations of HDL-cholesterol increased significantly after the 2wk-lOOg subtitute diet of mulberry leaf-Jeolpyun (p<0.05) . However, there were no significant differences in total cholesterol and LDL-cholesterol con concentrations .

중국 성인의 가정식, 급식, 외식을 통한 점심식사의 질 비교 : 2011년도 중국국민건강 영양조사 자료를 이용하여 (Comparison of lunch quality through home meals, institutional meals, and eating-out in Chinese adults: analysis of the data from the 2011 China Health and Nutrition Survey)

  • 본 연구에서는 2011년 중국국민건강영양조사 자료를 이용하여 20 ~ 64세 중국 성인이 섭취한 점심식사의 질을 가정식, 급식, 외식으로 구분하여 분석하였으며, 그 결과를 요약하면 다음과 같다. 첫째, 총 대상자 3,708명 중 76.7%가 가정에서 점심식사를 하고 있었으며, 급식은 15.6%, 외식은 7.7%에 해당하였다. 가정식군은 여성이 남성보다 많았으나, 급식군과 외식군은 남성이 여성보다 많았다. 가정식군은 농촌 거주자가, 급식군과 외식군은 도시 거주자가 더 많았다. 둘째, 식품군별 섭취량을 분석한 결과, 곡류·서류·콩류와 생선류는 세 군 모두 권장섭취량 범위에 있었으나, 육류 섭취량은 세 군 모두 과다하였다. 특히 급식군과 외식군의 경우 권장섭취량의 2배 이상 섭취하고 있었다. 가정식군과 급식군의 채소류 섭취량은 권장섭취량 범위 내에 있었지만, 외식군은 20 g 이상 부족하였다. 과일류와 우유 및 유제품류 섭취량은 세 군 모두에서 매우 부족한 것으로 나타났다. 셋째, 다빈도 섭취 식품을 분석한 결과 전체적으로 섭취빈도가 가장 높은 식품은 쌀과 돼지고기였고, 가장 많이 섭취한 채소는 청경채와 배추였다. 외식군은 가정식군과 급식군에 비해 채소류로 섭취한 식품의 종류가 적었고 쇠고기의 섭취 빈도가 높았으며, 빵 및 면류 식품의 섭취빈도가 높았다. 넷째, 식품군 섭취패턴을 분석한 결과, '곡류+ 육류+ 채소류' 패턴이 55.5%로 가장 많았다. '곡류+ 육류+ 채소류' 패턴은 급식군에서 그 비율이 가장 높았고, 외식군에서 상대적으로 낮았다. 가정식군에서는 '곡류+ 채소류' 패턴이, 외식군에서는 '곡류+ 육류' 패턴의 비율이 상대적으로 높았다. 다섯째, 전체적으로 식품군점수는 5점 만점에 평균 2.4점, 식품섭취 가짓수는 평균 3.4개로 섭취한 식품의 다양성이 부족한 것으로 나타나 개선의 필요가 있었다. 급식군의 식품군점수와 식품섭취 가짓수가 가정식군이나 외식군보다 유의적으로 높았다. 본 연구결과를 종합해보면, 중국 성인의 점심 식사는 육류 섭취가 과다하며, 과일류와 우유 및 유제품류의 섭취가 매우 부족한 공통적인 문제점이 있었다. 가정식의 경우 식사의 다양성 측면에서 곡류, 육류, 채소류를 모두 섭취할 수 있도록 영양교육이 필요하며, 외식의 경우 육류의 섭취가 지나치게 많고 채소류 섭취가 부족하여 개선의 필요가 있다. 또한 급식은 외식이나 가정식보다 식품 다양성 측면에서 바람직한 것으로 나타났으나, 점심식사의 기본적인 구성요소라고 할 수 있는 곡류, 육류, 채소류를 모두 섭취한 비율이 2/3에도 미치지 못하고 있어 체계적인 급식 프로그램을 도입할 필요가 있다.

초등학생의 식습관과 영양지식 및 건강상태 조사 (A Study of Food Habit, Nutrition Knowledge and Health Status of Elementary School Students in Kyung-buk)

  • This study was conducted to investigate the food habit, nutrition knowledge and health status of elementary school students in Kyung-buk area. As for dietary Pattern, 65.8% of students ate breakfast and 82.9% ate dinner on a daily basis. Their main dish for the meal was boiled rice with soup and this combination accounted for 60.3% of the breakfast items and 67.8% of the dinner items. Students in both rural and urban areas had dinner more regularly than breakfast. Overall knowledge on nutrition was 7.31 points out of 10. Urban students earned 7.33 while rural students did 7.29. Out of the maximum of 20 points, the overall grades on physical health were 15.57. (15.44 in rural areas and 15.70 in urban areas). As a result of their spiritual health condition, rural children recorded 6.63 point and urban children recorded 6.81 point on a 10 point scale. Furthermore, 32.8% of the children of the respondents had spiritual awareness phenomenon. The better the understanding of nutrition, the sounder mind and physical health stemed from the good dietary habits. Also the data showed that relatively young Parents had better dietary habits than the older ones.

농촌지역 노인의 영양상태와 활동량 (Nutritional Status and Energy Expenditure in the Elderly in a Rural Community)

  • In this study, nutrient intake status and energy expenditure were examined to investigate the nutritional status of the elderly in a rural community. The results obtained by questionaries, the 24 hour recall method, and time-diary were as follows: The elderly men surveyed were 73.8 years old, on the average. The elderly women surveyed were 73.5 years old, on the average. The proportion of the elderly with diseases was 51.9%. Most of the subjects (86.1%) had a regular meal pattern of consuming three meals a day. The average daily energy intake of the rural elderly was much lower than the Korean RDA. The dietary assessment data showed that each energy intake of the males and the females was 79.5% and 84.3% of the RDA, respectively. The dietary intake of Ca, Fe, niacin, thiamin, and riboflavin was lower than the Korean RDA, and that of P and Vitamin C was adequate. The Fe intake was significantly different with respect to age and sex (p < 0.05). Although, in both elderly men and elderly women it decreased with age, the elderly men's intake was lower than the elderly women's. The heights of the elderly men and the elderly women was 159.7 cm and 147.5 cm, respectively, and the weights were 60.0 kg and 52.2 kg, respectively, and the BMI was in the moderate range. Heights significantly decreased with age (p < 0.05). According to daily living schedules, leisure time (11.0 hour) was the longest, physiological time (9.6 hours) was next, and work time (3.4 hours) was the shortest. Energy expenditure significantly decreased with age (p < 0.01). Energy intake also decreased with aging. Energy balance (energy expenditure/energy intake) was 93.4% in elderly men and 104.0% in elderly women. Especially, in elderly men in the 65 to 74 age range, the energy balance was the lowest, and the nutrient intake was also much lower than that of elderly women.

경북 성주지역 장수 노인의 식행동 특성 (Characteristics of Eating Behaviors of the Long-lived Elderly People in Kyungpook Sung-Ju)

  • The purpose of this study was to find out the common characteristics of eating behaviors of the long-lived elderly in order to offer the basic data for establishing dietary guidelines for a long and healthy life for the general population. The subjects were three-hundred elderly people over age 85 living in Kyungpook Sung-ju who have no problems in daily living. The general characteristics, nutrition knowledge and attitudes, meal patterns, and food preferences of the subjects were surveyed by individual intervies. The levels of the nutrition knowledge of the subjects were very low(average score ; 4.3) and the correlation coefficient between their nutrition knowledge and attitude score was also low(r=0.323, p=0.000). Most of the subjects(93%) had a regular meal pattern consuming three meals a day. The major staple food was rice mixed with other grains(75%) and the number of side dishes was mostly under four(99%). A majority(73%) had no habit of overeating and 51% of the subjects were taking snacks besides regular meals. Thirty one percent of the subjects had drinking habits and 80% of the drinking subjects had over 40 years of drinking history. The most common frequencies for intakes of various food groups were ; more than once a day(95%) for vegetables ; 2∼3 times a week(74%) for green and orange color vegetables ; 2∼3 times a week(72%) for fruits ; once a day(70%) for fish, eggs and legumes ; 2∼3 times a week(49%) for milk ; 2∼3 times a week(72%) for fruits ; once a day(70%) for fish, eggs and legumes ; 2-3 times a week(49%) for milk ; 2-3 times a week(85%) for seaweeds and 2-3 times a week(81%) for foods cooked with oil. The most preferred foods by the subjects were white rice(staple foods), soybean paste soup(soups), beef and eggs(meats and eggs), yellow croaker and hair tail(fish and shellfish), yoghurt(milk and milk products), all vegetables except carrot(vegetables), and watermelon(fruits). The popular food preparation methods included mixing with seasonings and the most preferred taste was sweet. The results showed that the eating pattern of long-lived elderly was characterized by regularity, simplicity, and no overeating.

거주형태에 따른 공주지역 여대생의 식생활양상 비교 (Dietary Patterns of University Female Students in Kongju City : Comparisons among Subgroups Devided by Residence Type)

  • This study was aimed at comparing the dietary patterns of university female students according to their residence type. As for subjects, one hundred and twenty students of Kongju national university were chosen as a total. They were devided into three groups ; those who live in family home, or university dormitory, or self-boarding house. In this study, intakes of food and nutrient and dietary behaviors of each group were investigated through two-day food records and questionnaire. The result was that mean daily intakes of calcium and iron were lower than RDAs in all groups. According to residence type, subjects of family home and self-boarding seemed to have more serious problem in the nutrients mentioned above considering the proportions of less than 2/3 of RDAs. Especially, iron status was poorer than any other nutrients in the aspects of this proportion and food source. Iron was taken largely from vegetable foods which were recognized as a source of low bioavailability of iron. The average distribution ratios of breakfast, lunch, dinner and snack to total calorie intake was 22, 29, 30 and 19. Thus, it proved that breakfast tended to be more negligent than any other meals, and that snack was an important means to give nutrients for subjects. This meal pattern might be one of the factor for the decrease of the dietary quality. Processed foods were founded to be an important source for providing nutrients. Percentages of calorie, carbohydrate and fat consumed by processed foods to total nutrients. Percentages of calorie, carbohydrate and fat consumed by processed foods to total nutrients intake were 30.6, 29.5 and 46.2. However, other nutrient intakes from processed foods such as vitamin and mineral were small. And processed foods which give nutrients were mainly cereal products like ra myon, bread, and milk and milk products. Consequently, processed foods seemed to be selected as a combinient substitute food which supply calorie to fill their hunger. According to the living type, dormitory students had them more frequently than any other groups. Food habit score was within the category of poor or fair. Particularly, the score of self-boarding students was the lowest of groups(p<0.05). The major dietary problems were small or overating, missing meal and irregular eating. The degree of these problems was a little different among groups(P<0.01). Nineteen kinds of food were consumed per day, and family home and self-boarding students had foods less variously than dormitory students(P<0.05). Proportions of skipping breakfast, lunch and dinner were 20.8, 12.5 and 8.3%. Accordingly, breakfast was missed more often than any other meals. And self-boarding students missed breakfast more often than any other groups. As a conclusion, subjects should take more calcium and iron, and eat diverse foods to improve their nutritional status. And it is also necessary that breakfast should be regarded more importantly, and that processed foods should be taken considering nutritional balance. In view of residence type, subjects of family home or self-boarding had more dietary problems than dormitory subjects. Thus, these results suggest that university female students might have low ability of meal management, and dietary patterns were different by their residence type. Therefore, nutrition education for them should be carried out with respect to dewelling environment.

Relationships Between Feed Intake Traits, Monitored Using a Computerized Feed Intake Recording System, and Growth Performance and Body Composition of Group-Housed Pigs

  • The objective was to determine the relationship between feed intake levels and patterns, and growth performance and body composition of barrows and gilts using automatic feed intake recording equipment (F.I.R.E.). This system records the time of visits to the feeder and the duration and size of meals for individual animals housed in groups. Ninety-six crossbred pigs were grown from $33.4{\pm}0.51$ to $109.7{\pm}1.39kg$ live weight over a 13-week period. Eight mixed-sex groups of 12 pigs were used and 4 dietary treatments were compared giving 2 pens per treatment. The dietary treatments consisted of corn-soybean meal diets with differing protein levels which ranged from 14.7% to 19% between 30 to 55 kg, from 13.3% to 16.9% between 56 and 85 kg, and from 12.3% to 16.8% for the remainder of the study. Animals were ultrasonically scanned to measure loin-eye area and backfat thickness to estimate carcass fat-free lean content at the beginning and end of the study. Barrows had higher daily feed intake than gilts (2.67 vs. 2.46 kg resp. p<0.05) which was the result of a longer feeder occupation time per visit (4.77 vs. 4.54 min, resp. p<0.05), higher feed consumption rates (30.4 vs. 29.0 g/min, resp. p<0.05), and higher feed intakes per visit (136.9 vs. 126.8 g, resp. p<0.01). Gilts had less backfat and greater loin-eye area than barrows (p<0.05). Diet had no significant effect on growth performance and had limited impact on feeding patterns. Body weight showed high correlations with ADG (r=0.74), feed intake per visit (r=0.51) and feed consumption rate (r=0.69). Positive correlation were also found between daily feed intake and feed intake per visit (r=0.45), feeder occupation time per day (r=0.56), and feed consumption rate (r=0.55), and between daily feed intake and backfat thickness (r=0.32) and feed consumption rate and loin-eye area (r=0.32). There were negative correlations between number of feeder visit per day and daily feed intake (r=-0.54), and between feed intake per visit and number of feeder visits per day (r=-0.43). However, correlations between feed intake traits and carcass traits were generally low. Visits to the feeder were greatest during the morning (0700 to 1100 h) and lowest during the evening and nighttime. These results highlight limited variation among the sexes in feeding patterns and suggest important relationships between feeding behavior and feed intake.

정상(正常) 한국인(韓國人) 혈청(血淸) 포도당(葡萄糖), Insulin 및 C-Peptide의 일중(日中) 변동(變動)에 관(關)한 연구(硏究) (Diurnal Variations in Serum Glucose, Insulin and C-Peptide of Normal Korean Adults)

  • It is already well known that many factors are involved in maintaining normal blood glucose level. The amount and components of meal are also thought to be some of the factors which affect the blood glucose and insulin levels. It is reported that as for Koreans sugar takes up over 75% out of 2,098 kcal, the average daily calorie intake per adult. It implies that Koreans take a high-sugar diet compared with Westerners who take $40\sim50%$ of sugar out of their total average daily calorie. For the purpose of studying diurnal variations in serum glucose, insulin and C-peptide of normal Korean adults based on ordinary Korean diet, we selceted 13 normal Korean male adults and divided them into two groups, Group I (7 persons) and Group II (6 persons). We put Group I on 3,100kcal and 75% sugar diet, and Group II on 2,100 kcal and 69% sugar diet per day for over 4 days. Serum glucose, insulin and C-peptide were checked every 30 minutes or every hour throughout 24 hours. Results are as follows: 1. As for serum glucose level, in the prep ran dial fasting state in the morning, $mean{\pm}S.D.$ of Group I was $91.1{\pm}8.2mg%$, while that of Group II is $82.5{\pm}4.4mg%$. Both groups showed peaks of increased glucose level at postprandial 1 hour after each meal. The peak returned to the level shown during the fasting state at postprandial 1 hour after breakfast while the relatively high glucose levels were maintained respectively even for 2 or 3 hours.after lunch and dinner. 2. As for serum insulin level, Group showed $mean{\pm}S.D.$ of $14.7{\pm}3.0{\mu}U/ml$ while Group II shows that of $7.0{\pm}2.6{\mu}U/ml$ in the fasting state. Group I particularly showed the largest peak from preprandial a half or one and half an hour to postprandial one hour of lunch, and made relatively small peaks $(47.7{\pm}10.8{\mu}U/ml)$ at postorandial 1 hour after breakfast and dinner. No such large peak was marked in Group II, though it showed relatively similar patterns of peak after each meal. 3. As for C-peptide, in the fasting state, Group I and Group II showed $3.50{\pm}1.85$ and $1.66{\pm}0.53ng/ml$ of $mean{\pm}S.D.$, respectively. Group II showed peaks parallel to those for insulin level. None out of seven in Group I showed expected increase in C-peptide based insulin secretion at a half or one and half an hour before lunch. On the contrary, C-peptide increased in 5 subjects out of seven in Group I at 11:00 p.m. when insulin did not increase. 4. According to the integrated concentration method for a measurement of 24-hour total. insulin secretion rate, the $mean{\pm}S.D.$ of Group I was $76.4{\pm}15.2$ U and that of Group II was $58.6{\pm}21.1$ U. The above results confirm that Koreans, when given ordinary diet of 2,100 kcal and 69%, sugar, show insulin secretion pattern essentially similar to that of Westerners. On the contrary, when they are put on a high-calorie diet of 3,100 kcal a day, 75% of which is sugar, insulin secretion can be increased before lunch without increase in blood glucose. These results implies that insulin secretion can be affected by some other factors. The observation that an increase in C-peptide after 11 : 00 p.m. independent of insulin level supports an assertion that insulin secretion and C-peptide secretion can be thought as being physiologically dissociable, and these changes of diurnal patterns in the levels of serum insulin and C-peptide are thought to be resulted from the large meal and high-carbohydrate diet.

순창군 장수인의 영양섭취 실태 (Nutritional Status of the Oldest-elderly Population in Sunchang County)

  • This study was investigated nutrient intakes and dietary evaluation index of the healthy subjects over 85 of Sunchang County to explore the improved dietary pattern for healthy aging of the elderly. The survey was conducted by personal interview to 161 elderly subjects (59 males and 102 females over 85) in 2006, and their daily dietary intake was assessed by 24-hr recalls and weighing one meal. The daily energy intakes of males were 1,335 ${\pm}$ 67 kcal, and those of females were 1,095 ${\pm}$ 38 kcal comprised of 66.8% and 68.4% of the EER for the age group of 75. The proportions of energy from carbohydrate : protein : lipid were 70.7 : 14.6 : 14.6 for males and 68.6 : 14.0 : 17.4 for females. The average protein intakes were 95.4% for males and 85.0% for females of RI, and the average calcium intakes were 54.3% for males and 43.6% for females of RI. The daily vitamin intakes were below 70% except vitamin A, vitamin $B_6$, and vitamin E. The proportion of the relative risk groups of protein, phosphate, iron and vitamin A ranged 40-49% of RI over 75 year groups. The other nutrient intakes showed that there were over 50% risk groups. Especially for nutrients such as calcium, vitamin $B_1$, vitamin $B_2$, vitamin C, folate and niacin over 70% of the subjects were under risk. The median value of all nutrient intakes did not reach AI. The INQ of nutrients were over 0.8 except for folate and vitamin C. Calcium intakes were relatively low and needed attention. However, the ratio of calcium and phosphate showed 1 : 1.6, which appeared to be superior to the other districts. The DVS were higher as the dietary balance scores, KDDS were higher, and the groups with high KDDS had high intakes of nutrients compared to the groups with low KDDS. The high risk groups as judged by simple nutrition screening test had lower nutrient intakes than the groups of middle risk or low risk groups. The subjects in Sunchang area had relatively low intakes of several nutrients. However, judging from the desirable patterns of the energy proportion from three major nutrients, ratio of calcium and phosphate and INQ of nutrients there is a possibility that extended healthy aging might be related to the quality of nutrients and relative ratio between nutrients. To improve nutrient status of the elderly of the surveyed area further application involving KDDS and DVS appeared to be required.
