An Analysis on the HMR Purchasing Behavior based on the Life Style of the Customers of Convenience Stores

  • In this study, the influence of the life style on the HMR purchasing behaviors and repurchasing intents and the purchasing behavior on the repurchasing intent were examined in order to provide the basic data for developing competitive HMR product and invigoration of marketing. As results, of the life style factors, the health affected the quality, the taste the convenience and safety, and the economy the convenience, and the convenience the quality, and the safety the safety, significantly. Of the life style factors, health affected the repurchasing intentions negatively, while taste affected the repurchasing intent positively. Of the HMR selection properties, quality, convenience, and safety all affected the repurchasing intent positively. It can be conducted from the study that it is necessary to develop a strategy to enhance the quality and safety of the HMR and enhance the taste and economy of the HMR products for the taste and economy-oriented customers. When developing a new HMR product, the development and formulation of the strategy for quality, convenience, and safety and the overall strategy that covers from production, logistics, sales, and promotion, are supposed to be well established and discussed.

Analyses of Essential Oil Components and Contents in Artemisia sp According to Heat Treatments (가열처리 방법에 따른 쑥의 정유 성분 및 함량 분석)

  • The essential oil obtained by steam distillation from a medicinal plant of Artemisia princeps. The essential oil was analyzed by GC-MS. The heat treatments in roasted condition of temperatures were $80^{\circ}C$, $110^{\circ}C$, and $230^{\circ}C$, and the lengths of the time were 6 min, 10 min, and 14 min, respectively. The blanching conditions($100^{\circ}C$) of the treatments lasted 1 min, 2 min, and 5 min while the times of oven dry ($50^{\circ}C$) was 5 min. As the result, the essential oil content of the control plot was higher than the others, and that of the roasted ones was the second highest in low temperature with short treatment time. The major components were eucalyptol, cyclohexadience, phenol, terpineol, and caryopbyllene.

Market Segmentation and Satisfaction according to the Motives of Food Festival Attendants - Focusing on the Case of Seoul Food Festival - (푸드 페스티발 참가자의 동기에 따른 시장세분화 및 만족의 차이 - 서울푸드페스티발을 중심으로 -)

  • The motives of festival attendance have been used as a valuable marketing tool for promotion and understanding segment characteristics. This study attempted to segment the food festival market based on delineated motives and find the difference of characteristics and satisfaction among the segments. The study also explored the influence of motivation factors on satisfaction. The results are as follows : (1) Derived factors of the motivation of food festival attendance were 'food', 'information', 'education', 'cultural events', and 'experience'. (2) A cluster analysis identified two segments for five motivation factors. Two segments named 'utilitarian motivation group' and 'hedonic motivation group' were found to be different according to age, occupation, income, company, information source. (3) Two groups show the difference on satisfaction about festival programs. Utilitarian motivation group was more satisfied with 'holiday food performance' and 'food performance', whereas hedonic motivation group presented more satisfaction with 'cocktail show'. (4) Three(cultural events, food and information) out of five motivation factors had significant influence on satisfaction.

Investigation on the Perception of the Ginseng and Ginseng Products among University Students in Yeongsu, Gangwon-do (강원 영서지역 남, 여 대학생의 건강 기능성 식품인 인삼 및 인삼제품에 대한 인식도 조사)

  • The objective of this study was to investigate the perception of ginseng and ginseng products among university students living in Yeongsu, Ganwon-do. 196 university students participated in the survey for our study. The ginseng intakes of male students(59.1%) was significantly(p<0.05) higher than the intake of female students(40.9%). The primary reasons for consuming ginseng were to "Maintain my [one's] health" and to, "Restore my [one's] energy". The reasons for not consuming ginseng were "Taste" and, "Physical constitution". Consumers purchased the following ginseng products at the market: For males, ginseng wine(21.7%), ginseng beverage(17.4%), ginseng candy(17.4%) and ginseng kimchi(17.4%) for females, Korean ginseng snacks(23.3%), ginseng yogurt(20.9%), ginseng candy(14.0%), and ginseng jelly(11.6%).

Quality Characteristics and Antioxidant Effects of White Bean Paste added Aronia Powder (아로니아 분말 첨가량에 따른 아로니아 앙금의 항산화 활성 및 품질 특성)

  • This study investigated the physicochemical and sensory characteristics of white bean paste prepared with various amounts of aronia powder (as ratios of 0%, 2%, 4%, 6%, 8%, 10%). The result shows that the pH of white bean paste decreased significantly with the addition of aronia powder. From chromatography, the brightness, L-value was decreased by increasing the adding rate of aronia powder. The a-value of sample group adding 2% of aronia powder was the highest and that of sample group adding 8% was the lowest (p<0.01). Sample group adding 8% of aronia powder achieved the highest appraisal from many factors, such as springiness, cohesiveness, chewiness, brittleness, and adhesiveness. The total polyphenols and anthocyanin contents were proportionally increased with increasing the level of aronia powder added in white bean paste. The antioxidant activity measured by DPPH and NSA radical scavenging activities was significantly higher than control and increased proportionally to the aronia powder concentration. The result of sensory test shows that sample group adding 6% of aronia powder achieved the highest. Based on the above results, this study suggests that the addition of 6% aronia powder may be the best substitution ratio for white bean paste of the improvement of sensory preference and antioxidant.

The Effects of Intake of Whangseoke-Jeot with Chitosan on the Hematological Changes (키토산을 첨가한 황석어젓 섭취가 혈액학적 변화에 미치는 영향)

  • This study was carried out to investigate the effects of intake of whangseoke-jeot with chitosan on the hematological changes. Twelve male students were divided into two groups and have been dieted for 3 days with whangseoke-jeot supplemented with/without 10% of chitosan(50,000 dalton) into seasoning. In order to decrease fishy smell and increase palatable taste effectively, minced ginger, garlic and onion as well as oil and roasted powder of perilla were included into the seasonings. Blood pressure was monitored everyday and serum was prepared following blood collection before and after 3 day diet. Chitosan was shown to decrease systolic pressure and total serum protein. On the other hand, albumin was decreased in the control group. It is noteworthy that seasoned whangseoke-jeot including perilla oil and powder seemed to decrease creatinine and total cholesterol and increase HDL. In conclusion, chitosan and perilla oil and powder might be proposed as good additives into whangseoke-jeot to relieve its highly salty effects on diet.

Quality Characteristics of Cookies with Added Dried Laver (Porphyra tenera) Powder (김 분말을 첨가한 쿠키의 품질특성)

  • This study investigated the quality characteristics of cookies containing laver powder, which is well known for its various functions and biological activity. This study assessed the quality characteristics of cookies containing various concentrations (0, 2, 4, 6 and 8%) of laver powder(LP). To analyze quality characteristics, pH of dough, moisture content, color, hardness, and sensory properties were measured. Qualities, such as pH, brightness, and redness and yellowness and hardness decreased significantly (p<0.001). The total flavonoid and total polyphenol and ABTS radical scavenging activity were proportionally increased with increasing the level of laver powder added in cookies(p<0.001). The antioxidant activity measured by total flavonoid and total polyphenol activities was significantly higher than control and increased proportionally to the laver powder. The result of sensory test shows that sample group adding 2% of laver powder achieved the highest. Based on the above results, this study suggests that the addition of 2% laver powder may be the best substitution ratio for cookies of the improvement of sensory preference and antioxidant. This study exhibited both the functional and health based benefits of laver when it is added to cookies and confirmed the development feasibility of laver cookies considering consumer satisfaction.

  • This study began with the expectation that work spirituality according to self - sacrificing leadership of a company recognized by hotel employees could positively affect superior liking and innovation behavior. The results of this study can be summarized as follows; the exercise of authority and the self - sacrifice in reward distribution are very important in the social exchange relationship. And the experience of joy and meaning, which is a behavior that meets the values, showed that it fulfilled the sense of accomplishment that the employees realized as a value, and it increased the satisfaction of pursuing the value of the boss and participating in and contributing to the world. Moreover, the hotel employees were likely to favor the bosses when they gave up or refrained from their authority or delegated to their subordinates, or when their bosses delayed or gave up rewards that had to be distributed to them. Also, self-sacrifice on the supervisor's job assignment is considered as an essential part of inducing the innovative behavior of the subordinates, regarded as desirable behavior or qualities.

Characteristics of Myofibrillar Protein Extracted Leg and Breast Muscles of Dog Meat (개고기 다리와 가슴 근육에서 추출한 근원섬유 단백질의 특성)

  • This study investigated the extractability, solubility, Mg$^{2+}$-, Ca$^{2+}$- and EDTA-ATPase activity of actomyosin prepared from leg and breast muscle of dog meat. The actomyosin extractability of breast muscle(2,100.6 mg/l00 g) was higher than that of leg muscle(500.8 mg/l00 g). The Mg$^{2+}$-ATPase activity of actomyosin had a high ionic strength of 0.02$\sim$0.05 M KCI and did not differ between leg and breast muscle. The Ca$^{2+}$-ATPase activity of actomyosin had a high ionic strength of 0.02$\sim$0.10 M KCI and leg muscle had a higher level of Ca$^{2+}$-ATPase activity than breast muscle did. The EDTA-ATPase activity was lower in low ionic strength and showed higher in high ionic strength, and increased sharply with increasing ionic strength up to 0.3 M KCI. The solubility of actomyosin did not differ between leg and breast muscle, and the solubility started and ended at KCI concentrations of 0.35 M and 0.4 M, respectively.
