Effect of the Cellulose on Yackwa Quality (셀룰로오스 첨가가 약과의 품질에 미치는 영향)

  • This study was performed to the investigate the Yackwa quality according to the addition level of cellulose(0, 1, 3, 5 and 7% w/w flour). The color(L, a and b value), hardness, crude lipid content and sensory evaluation of Yackwa were measured. The values for color(L, a and b value) were not shown any significant difference among the all of Yackwa groups, but L(lightness) tended to be increased in 5 and 7% cellulose Yackwa groups than cellulose free Yackwa(control). The 7% cellulose Yackwa was harder than control, but the hardness of Yackwa didn't show difference in groups added below 5% cellulose compare to control. Crude fat contents showed no significant difference in the all Yackwa groups but tended to decrease in Yackwa groups added above 1% cellulose than control. It could be thought that fat absorption of Yackwa was affected due to adding a cellulose. There were not found any significant differences in the taste values for sensory evaluation according to cellulose level, and overall acceptability in below 5% cellulose Yackwa groups didn't differ from control. On the other hand the higher level of cellulose, the more crispness which was positively associated with overall acceptability. These findings could be thought that the addition of 3% cellulose(w/w) in preparing Yackwa were needed to reduce the fat absorption and to increase the crispness without changing the tastes and overall acceptability of Yackwa.

Comparison of the Physicochemical and Gelatinization Properties of Various Barley Cultivars (보리 품종의 이화화적 및 호화 특성 비교)

  • This study compared the physicochemical and gelatinization properties of naked barley, tetrastichum barley, and waxy barley. Compared to tetrastichum barley and waxy barley, naked barley had shorter and rounder grains with a 1.43 length/width ratio. Tetrastichum barley had lower crude protein, crude lipid, and crude ash content and higher amylose content compared to naked barley and waxy barley. The L, a, b color values of waxy barley were significantly higher than those of naked barley and tetrastichum barley. The water absorption index (WAI) and the water soluble index (WSI) were highest in waxy barley. The X-ray diffraction pattern was type A in all samples, and the peak intensity was highest in waxy barley. The maximum viscosity, cooling viscosity, breakdown, and setback of amylogram properties were the highest in tetrastichum barley. The thermal properties through the differential scanning calorimeter showed that the waxy barley had higher values of the onset, peak, conclusion temperature and enthalpy (?H). In conclusion, the variety of barley influenced the physicochemical and gelatinization properties, which could be important factors in the manufacture of processed foods. These results would thus useful inputs for the manufacturing of these foods using barley.

Quality Characteristics of Soybean Curd Prepared with Lotus Leaf Powder (연잎 분말을 첨가한 두부의 품질 특성)

  • This study was conducted to investigate the quality characteristics of tofu prepared with different concentrations of lotus leaf powder. The determined values for moisture, crude ash, carbohydrate, crude protein, and crude lipid in were 2.97%, 8.09%, 65.18%, 22.83%, and 0.93%, respectively. The yield rates of the tofu samples did not differ significantly according to the level of added lotus leaf powder; however, there was a significant decrease in pH and a significant increase in acidity. The L- and a-values of samples decreased as the amount of lotus leaf powder in the formulation increased, whereas the b value increased. Furthermore, hardness significantly increased as the level of lotus leaf powder increased. In terms of overall acceptability, the preferred tofu samples were the control and that containing 0.2% lotus leaf powder.

Biodegradation of Crude oil by Marine Bacterium Pseudomonas sp. CHCS-2 and Composition of the Biosurfactant (해양세균 Pseudomonas sp. CHCS-2에 의한 원유분해 및 생물유화제의 성분 분석)

  • marine bacterium Pseudomonas sp. CHCS-2 produced the biosurfactant in the culture broth which contained 2%(w/v) arabian light crude oil and the productivity of biosurfactant was increased with the addition of glucose. The crude oil in the culture broth was degraded by this strain and carbon chain of $_nC_{12}~_nC_{22}$ was completely degradaded during the incubation for 196 h. The crude biosurfactant was purified by Amberlite XAD-7, Sepharose CL-4B and DEAE-Sepharose CL-6B column chromatography. Therefore, 0.21g/L of the purified biosurfactnat was obtained. The purified biosurfactant was a type of lipoprotein and the molecular weight was estimated as 67kDa by SDS-PAGE. The lipid composition was identified as octadecanoic acid by gas chromatography/mass spectrometry. And then, the N-terminal amino acid sequence of the protein was determined as Ser-Val-lle-Asn-Thr-lle-X-Met-lle-Gly-Gln-Gln- and the sequence did not show homology to any other known lipoprotein. Therefore, the purified lopoprotein was predicted novel biosurfactant.

Antioxidative Activities of Anthocyanins in Red Mustard Leaf Kimchi (적갓김치 Anthocyanins의 항산화 특성에 관한 연구)

  • Red mustard leaf (RML) kimchi was prepared with native Brassica juncea czerniak et coss as a major raw material and antioxidative characteristics of crude anthocyanin (CA)/refined anthocyanin (RA) isolated from RML kimchi were studied. Among crude pigment fractions, CA fraction showed a higher inhibition rate of peroxide formation in linoleic acid autoxidation system. These effects seemed to be increased with the increase of CA concentration. CA also was considered to have a role of electron donor by the experiments using DPPH ($\alpha$, $\alpha$'-diphenyl-$\beta$-picrylhydrazyl) reaction. Furthermore, various RA fractions had a higher antioxidative activity and especially RA-fraction 3 demonstrated the highest score of the antioxidative characteristics in terms of the prevention of lipid peroxidation and scavenging of free radicals.

Effects of Protein and Lipid Levels in Extruded Pellets on the Growth and Body Composition of the Olive Flounder Paralichthys olivaceus during the Summer and Whiter Seasons

  • Feeding trials were performed at two different water temperatures (summer and winter seasons) to identify suitable protein and lipid (energy) levels to be used in formulating extruded pellets for olive flounder. Experiments were conducted to determine the effects of protein and lipid levels in extruded pellets on the growth and body composition of the flounder in both feeding trials. Six experimental diets were prepared containing three protein levels (46%, 51%, and 56%) and two lipid levels (10% and 17%). In the first experiment, during the summer season ($22{\pm}2.2^{\circ}C$), a triplicate group of fish (initial weight, 114 g) were fed to satiation one of the six diets for 11 weeks. The highest weight gain was observed in fish fed the 56/17 (% protein/% lipid) diet, but this weight gain was not significantly different from that of fish fed the other diets, except for those fed the 46/10 diet. The feed efficiency and protein efficiency ratio of fish fed the 17% lipid diets were higher than those of fish fed the 10% lipid diets at each protein level. In the second experiment, during the winter season ($13{\pm}1.5^{\circ}C$), a triplicate group of fish (initial weight, 107 g) were fed to satiation one of the six diets for 9 weeks. Weight gain was not significantly different among all groups. The feed efficiency and protein efficiency ratio tended to increase with increasing dietary lipid level at each protein level. The whole-body crude lipid content of the of fish fed the 17% lipid diets was significantly higher than that of fish fed the 10% lipid diets at each protein level in both feeding trials. Based on the data obtained in this study, the inclusion of dietary protein at a level of 46% appears to be sufficient to support optimal growth, and increasing the dietary lipid level from 10% to 17% had no beneficial effects on the growth and feed utilization of olive flounder (110-300 g), except for fish fed a 56% protein diet in the summer season.

Antioxidant and Antidiabetic Activities of Aralia elata Seeds

  • Aralia elata seeds were successively extracted with water, methanol, ethanol, acetone and chloroform. The crude extracts were investigated for antioxidant and antidiabetic activities. The antioxidant properties of various extracts were evaluated by antioxidant tests, such as DPPH free radical-scavenging activity, hydroxyl radical-scavenging assay, metal-chelating activity, lipid peroxidation inhibition activity and reducing power assay. The 70% methanol extract exhibited the highest activity in the in vitro models of DPPH free radical-scavenging activity, metal-chelating activity, and reducing power assay. Acetone extract showed good effects on lipid peroxidation inhibition and hydroxyl radical-scavenging assay at a low concentration. In addition, the $\alpha$-glucosidase inhibition assay showed that 70% methanol extract had the highest activity. These results indicate the high possibility of using A. elata seeds for medical application due to their efficient antioxidant properties.

Effects of Dietary Chitosan on Lipid Oxidation, Fatty Acid Composition, Blood Profile of Pork Meat during Storage Periods (저장기간에 따른 키노산 급여 돈육의 지방 산화, 지방산 조성 및 혈액성상에 미치는 영향)

  • The effects of dietary chitosan on lipid oxidation, fatty acid composition and blood profile of porks were investigated. A total 24 pigs(55$\pm$5kg) were fed a control diet (a commercial diet) or chitosan-supplemented diets (T1; 0.2% chitosan, T2; 0.4% chitosan, T3; 0.6% chitosan) for 6 weeks. After six weeks, pigs were slaughtered and bellies were collected from each treatment group. Samples were stored at 0$\pm$1$^{\circ}C$ for 14 days. The thiobarbituric acid reaction substance(TBARS) values of all the treatments increased until 7 days of storage. The fatty acid and crude fat composition of all the treatments were not changed during storage significantly. The total cholesterol and triglyceride in blood chemistry tend to lower chitosan supplemented groups then control group.

  • The antihepatic and hypolipidemic activities and total lipid levels of water extract of Plantaginis Herba, used for respiratory and renal disorder in folk medicine, were evaluated in streptozotocin-induced diabetic rats. Diabetes was induced by a single injection of streptozotocin (50 mg/kg, i.p.). Water extract of Plantaginis Herba recovered enzyme activities such as GOT, GPT, ALP and LDH increased by streptozotocin (STZ) treatment. This crude drug also suppressed the enhanced production of lipid in hyperglycemia. These results strongly suggest that Plantaginis Herba be a promising liver-protective and hypolipidemic agent.

  • Nutritional value of azalea pollen and its effect on the carbontetrachloride induced liver damage were investigated in this experiment. Azalea pollen was primary composed of 58.96% of carbohydrate, 21.86% crude protein, 2.26% fat, and 2.89% ash. 17 amino acids and 22 fatty acids were quantitatively analyzed, and the major component of them was lysine, and linolenic acid, respectively. After administration of pollen and carbontetrachloride concomitantly. serum ALT, AST, LDH activities and tissue lipid peroxidation decreased significantly, but serum total lipid and cholesterol levels did not changed.
