This survey was conducted to investigate housing types of Korean native cattle and beef cattle farms in Korea. The farm sized over 50 heads of cattle, 7,433 farms were surveyed. Regarding housing types for Korean native cattle and beef cattle, litter barn, freestall, mooring+litter ground and others accounted for 87.1, 9.8, 3.0, and 2.9 %, respectively. Most of Korean native cattle and beef cattle farms (94.7%) used litter floor rather than scraper. As for roof types, slate, panel, iron plate, galvanized plate, colored iron plate and sunlight represented 32.2, 13.7, 12.2, 10.2, 9.7, and 8.9 %, respectively. Open side wall type and winch curtain were 55.6, and 47.6 %, respectively. Bigger farms seemed to used more winch curtain than open style. Utilization period of automatic feeder, waterer, electric facility, and cooling facility was 6.7, 8.0, 8.5, and 6.0 years, respectively.
To develop simple and accurate analytical method for freezing time prediction of beef and tylose under various freezing conditions, freezing time (Y) was regressed against the reciprocal $(X_3)$ of difference of initial freezing point and freezing medium temperature, reciprocal $(X_4)$ of surface heat transfer coefficient, the initial temperature $(X_1)$ and thickness $(X_2)$ of samples which should cover most situations arising in frozen food industry. As results of the multiple regression analysis, equations were obtained as follows. $Y_{tylose}=3.45X_1+7642.84X_2+4642.67X_3+2946.89X_4-431.33\;(R^2=0.9568)$ and $Y_{beef}=0.68X_1+7568.98X_2+2430.78X_3+3293.26X_4-299.00\;(R^2=0.9897)$. These equations offered better results than Plank, Nagaoka and Pham's models, shown in satisfactory agreement with models of Cleland & Earle and Hung & Thompson when were compared to previous models, and the accuracy of its was very high as average absolute difference of about 10% in the difference between the fitted and experimental results. Also, thermal diffusivities of beef and tylose were measured as $4.43{\times}10^{-4}m^2/hr$ and $4.39{\times}10^{-4}m^2/hr$ at $6{\sim}7^{\circ}C$, $2.42{\times}10^{-3}m^2/hr$ and $3.32{\times}10^{-3}m^2/hr$ at $-10{\sim}-12^{\circ}C$. Initial freezing points of beef and tylose were $-1.2^{\circ}C\;and\;-0.6^{\circ}C$, respectively. Surface heat transfer coefficients were estimated $20.57\;W/m^2^{\circ}C$ with no-packing, $16.11\;W/m^2^{\circ}C$ with wrap packing and $13.07\;W/m^2^{\circ}C$ with Al-foil packing, and the cooling rate of immersion freezing method was about 10 times faster than that of air blast freezing method.

The endeavors enhancing the grain quality of high-yielding japonica rice were steadily continued during 1980s∼1990s along with the self-sufficiency of rice production and the increasing demands of high-quality rices. During this time, considerably great, progress and success was obtained in development of high-quality japonica cultivars and qualify evaluation techniques including the elucidation of interrelationship between the physicochemical properties of rice grain and the physical or palatability components of cooked rice. In 1990s, some high-quality japonica rice caltivars and special rices adaptable for food processing such as large kernel, chalky endosperm aromatic and colored rices were developed and its objective preference and utility was also examined by a palatability meter, rapid-visco analyzer and texture analyzer. The water uptake rate and the maximum water absorption ratio showed significantly negative correlations with the K/Mg ratio and alkali digestion value(ADV) of milled rice. The rice materials showing the higher amount of hot water absorption exhibited the larger volume expansion of cooked rice. The harder rices with lower moisture content revealed the higher rate of water uptake at twenty minutes after soaking and the higher ratio of maximum water uptake under the room temperature condition. These water uptake characteristics were not associated with the protein and amylose contents of milled rice and the palatability of cooked rice. The water/rice ratio (in w/w basis) for optimum cooking was averaged to 1.52 in dry milled rices (12% wet basis) with varietal range from 1.45 to 1.61 and the expansion ratio of milled rice after proper boiling was average to 2.63(in v/v basis). The major physicochemical components of rice grain associated with the palatability of cooked rice were examined using japonica rice materials showing narrow varietal variation in grain size and shape, alkali digestibility, gel consistency, amylose and protein contents, but considerable difference in appearance and torture of cooked rice. The glossiness or gross palatability score of cooked rice were closely associated with the peak. hot paste and consistency viscosities of viscogram with year difference. The high-quality rice variety “Ilpumbyeo” showed less portion of amylose on the outer layer of milled rice grain and less and slower change in iodine blue value of extracted paste during twenty minutes of boiling. This highly palatable rice also exhibited very fine net structure in outer layer and fine-spongy and well-swollen shape of gelatinized starch granules in inner layer and core of cooked rice kernel compared with the poor palatable rice through image of scanning electronic mcroscope. Gross sensory score of cooked rice could be estimated by multiple linear regression formula, deduced from relationship between rice quality components mentioned above and eating quality of cooked rice, with high Probability of determination. The ${\alpha}$ -amylose-iodine method was adopted for checking the varietal difference in retrogradation of cooked rice. The rice cultivars revealing the relatively slow retrogradation in aged cooked rice were Ilpumbyeo, Chucheongbyeo, Sasanishiki, Jinbubyeo and Koshihikari. A Tongil-type rice, Taebaegbyeo, and a japonica cultivar, Seomjinbyeo, shelved the relatively fast deterioration of cooked rice. Generally, the better rice cultivars in eating quality of cooked rice showed less retrogiadation and much sponginess in cooled cooked rice. Also, the rice varieties exhibiting less retrogradation in cooled cooked rice revealed higher hot viscosity and lower cool viscosity of rice flour in amylogram. The sponginess of cooled cooked rice was closely associated with magnesium content and volume expansion of cooked rice. The hardness-changed ratio of cooked rice by cooling was negatively correlated with solids amount extracted during boiling and volume expansion of cooked rice. The major physicochemical properties of rice grain closely related to the palatability of cooked rice may be directly or indirectly associated with the retrogradation characteristics of cooked rice. The softer gel consistency and lower amylose content in milled rice revealed the higher ratio of popped rice and larger bulk density of popping. The stronger hardness of rice grain showed relatively higher ratio of popping and the more chalky or less translucent rice exhibited the lower ratio of intact popped brown rice. The potassium and magnesium contents of milled rice were negatively associated with gross score of noodle making mixed with wheat flour in half and the better rice for noodle making revealed relatively less amount of solid extraction during boiling. The more volume expansion of batters for making brown rice bread resulted the better loaf formation and more springiness in rice bread. The higher protein rices produced relatively the more moist white rice bread. The springiness of rice bread was also significantly correlated with high amylose content and hard gel consistency. The completely chalky and large gram rices showed better suitability for fermentation and brewing. Our breeding efforts on rice quality improvement for the future should focus on enhancement of palatability of cooked rice and marketing qualify as well as the diversification in morphological and physicochemical characteristics of rice grain for various value-added rice food processings.

The objective of this study was to investigate the physicochemical, microbiological and sensory properties of food additive-free grilled pork products manufactured using loin (T1), tender loin (T2) and ham (T3). The samples were heated for 30 min at $60^\circC$, and then 50 min for $150^\circC$. After cooling, vacuum packaged grilled pork samples was stored at $4\pm$$1^\circC$ for 40 days. The pH values of grilled pork samples ranged from 5.92 (T1) to 6.10 (T3) at the initial storage time, and from 6.28 (T1) to 6.60 (T3) after 40 days. The water holding capacities (%) was 85.99~93.24% for T1, 85.26~93.89% for T2 and 89.11~94.67% for T3, all of which were slightly higher than those of other pork products. The shear force values of T2 were significantly higher (p<0.05) than those of the other pork products throughout the storage period. The TBARS and VBN values of T2 were significantly higher (p<0.05) than those of T1 and T3. With regard to microorganisms, all grilled pork samples was in good condition, showing 1.93~3.48 log10 CFU/g via total plate counts, and 1.74~3.48 log10 CFU/g for lactic acid bacteria throughout the storage period. Regarding sensory evaluation, the scores of overall acceptability in all products were above 5.0 points through 40 days of storage.
This study was performed to provide the basic knowledge about the mushroom cultivation facilities. Classified current status of cultivation facilities in Gyeongnam province was investigated by questionnaire. The structure of Pleurotus eryngii cultivation facilities can be classified into the simple and permanent frame type. The simple frame structures were mostly single-span type, on the other hand, the permanent frame structures were more multi-span than simple structures. And the scale of cultivation facilities was very different regardless of structural type. But as a whole, the length, width and ridge height were prevailing approximately 20.0 m, $6.6\~7.0m$ and $4.6\~5.0m$ range, respectively. The floor area was about $132\~160\;m^2$, and floor was built with concrete to protect mushrooms from various harmful infection. The roof slope of the simple and permanent type showed about $41.5^{\circ}\;and\;18.6\~28.6^{\circ}$, respectively. The width and layer number of growing bed for mushroom cultivation were around $1.2\~1.6m$, 4 layers in common, respectively. Most of year round cultivation facilities were equipped with cooler, heater, humidifier, and ventilating fan. Hot water boiler was the most commonly used heating system, the next was electric heater and then steam boiler. The industrial air conditioner has been widely used for cooling. And humidity was controlled mostly by ultra-wave or centrifuging humidifier. But some farmers has been using nozzle system for auxiliary purpose. More then $90\%$ of the mushroom house had the independent environment control system. The inside temperature was usually controlled by sensor, but humidity and $CO_2$ concentration was controlled by timer for each growing stage. The capacity of medium bottle was generally 850 cc and 1100cc, some farms used 800 cc, 950 co and 1,250 cc. Most of mushroom producted has been usually shipped to both circulating company and joint market.
The natural change of winter night temperature from 00:00 to 04:30 O'clock with the different height of thermal screen in a venlo type glasshouse (W59×L68×H5.9 m) was studied using computational fluid dynamics (CFD). At the early stage of CFD analysis, the room temperature decrease of glasshouse with the 5.9 m height of thermal screen were faster than it with the 4.1m height of thermal screen, but at 2 hr after analysis it was slower than in it with the 4,1m, the temperature difference was 0.6℃ after 4 hr. If we consider that turn on the heater when the temperature were decrease below 13℃ at 1hr after CFD analysis, it is good for energy saving in the glasshouse with the 4.1 m height of thermal screen rather than in it with the 5.9 m height, because of the temperature decrease were slow during 2 hrs after analysis. The airflow at the height of 2 m which were grown tomato were fast and wide in the glasshouse with the 5.9 m height thermal screen rather than in it with the 4.1 m, the speed difference was 0.034m·s-1 at 1hr after CFD analysis. The effect of temperature decrease in summer season were compared with the different height of shading screen from 12:00 to 14:30 O'clock. The height of shading screen were 5.7, 3.9 m, the gap of it were 30%. The air-inflow quantity by the fan with duct at lower part of venlo glasshouse was 0.67 ㎥·s-1 until 1hr and to increase 3 times of it from 1hr after analysis. The roof window were open 100%. Until 1hr of CFD analysis, the temperature in the 30% open of shading screen was 0.9℃ higher than in the none shading screen. From 13:00 O'clock when the air-inlet quantity to increase 3 times, the temperature in case 30% gap of shading screen were decreased compare with the none shading screen, the temperature difference was 0.5℃ at 14:30 O'clock. The temperature on the floor surface in case 30% gap of shading screen were lower with it's height increase, the temperature difference was 8℃ compare with none shading screen. The relative humidity difference were insignificant by the height and gap of shading screen.
The objective of this study was to evaluate the effects of dietary cation-anion difference (DCAD) with or without ruminally protected fat and niacin on the thermoregulatory ability, milk yield and milk composition of lactating dairy cows during summer in Korea. Thirty mid-lactating Holstein cows (134±12.4 DIM and 23.4±2.3kg/d of milk yield) were divided into three groups (10 animals/group). Cows were housed in a free-stall barn and were provided with forced- air ventilation (wind velocity = 4 m/s) using 41 cm diameter fans. Diet one was formulated to contain low DCAD (+15 DCAD) while the remaining two diets were higher in DCAD (+30 DCAD). One higher DCAD diet was formulated to contain by-pass fat and the second higher DCAD diet contained the niacin along with by-pass fat. The maximum ambient temperature during July was 28.5℃ which could be seen as a period of mild heat stress. As summer progressed, August was characterized as a severe heat stress condition with maximum ambient temperature (32.4℃) and THI (74.0). Dry matter, crude protein and total digestible nutrients intake was not affected by the DCAD level and supplementation of ruminally protected fat or niacin. Milk production was higher in cows fed diets supplemented with fat and niacin than those fed un-supplemented diet. No difference in milk yield was observed in cows fed diets supplemented with fat or niacin plus fat. Milk fat and rectal temperature were not affected by the DCAD level and supplementation of ruminally protected fat or niacin. However, respiration rate was decreased in cows fed diets supplemented with either fat or fat and niacin compared to those fed. The results of the present study indicated that higher DCAD (+30) and supplementation of fat along with niacin can somehow mitigate the negative effects of heat stress on milk yield and physiology of lactating Holsteins during July and August in Korea. In present study reduced respiration rate and increased milk yield in lactating cows may be attributed to the cooling effect of supplemented fat along with vasodilatory functions of niacin. A nuclear plant ESF ACS simulator was designed, built, and verified to perform experiment related to ESF ACS of nuclear power plants. The dimension of 3D CAD model was based on drawings of the main control room(MCR) of Yonggwang units 5 and 6. The CFD analysis was performed based on the measurement of the actual flow rate of ESF ACS. The air flowing in ACS was assumed to have $30^{\circ}C$ and uniform flow. The flow rate across the HEPA filter was estimated to be 1.83 m/s based on the MCR ACS flow rate of 12,986 CFM and HEPA filter area of 9 filters having effective area of $610{\times}610mm^2$ each. When MCR ACS was modeled, air flow blocking filter frames were considered for better simulation of the real ACS. In CFD analysis, the air flow rate in the lower part of the active carbon adsorber was simulated separately at higher than 7 m/s to reflect the measured value of 8 m/s. Through the CFD analyses of the ACSes of fuel building emergency ventilation system, emergency core cooling system equipment room ventilation cleanup system, it was confirmed that all three EFS ACSes can be simulated by controlling the flow rate of the simulator. After the CFD analysis, the simulator was built in nuclear grade and its reliability was verified through air flow distribution tests before it was used in main tests. The verification result showed that distribution of the internal flow was uniform except near the filter frames when medium filter was installed. The simulator was used in the tests to confirm the revised contents in Reg. Guide 1.52 (Rev. 3).
Seeds of rice, cv. Ilpoom, and barnyardgrasses(Echinochloa crus-galli, vars. oryzicola, crux-galli, and praticola) were sown for a characterization of their responses to temperature during emergence under a dry direct-seeded condition. A laboratory-made aluminum block apparatus for emergence-temperature control conferred a linear continuous temperature gradient from 10 to $30^{\circ}C$ to the seeds from cooling to heating ends of the apparatus. The lowest temperature for emergence was $12.3^{\circ}C$ for rice cv. Ilpoom, and $11.0^{\circ}C$ for the three varieties of Echinochloa spp.. Percent emergence of rice increased sharply with an increase in temperature by ca. $20^{\circ}C$, then leveled-off, while those of barnyardgrasses increased almost linearly with temperatures up to $30^{\circ}C$. In rice the time required for emergence after seeding was shortened exponentially with increased temperature while those for barnyardgrasses were shortened almost linearly from 11 to $30^{\circ}C$. The temperature-response characteristic of rice in emergence-speed was almost the same among those for the 1st emergence, emergence by 25, 50, 75%, or average emergence time. At $13^{\circ}C$, $346.7^{\circ}C$ days of accummulated temperature(26.67 days) were required for the 1st emergence in rice while 131.7, 136.0, and $138.7^{\circ}C$ days(10.13, 10.46, and 10.67 days) were required for the 1st emergence in E. spp., vars. crus-galli, praticola, and oryzicola, respectively. Greater cold tolerance and increasingly faster emergence of barnyardgrasses than rice below $20^{\circ}C$ seem to render the barnyardgrasses as much more competitive than rice at lower temperatures.
The effect of local hyperthermia of 41 to $43^{\circ}C$ for 30 minutes on radiosensitivity of normal tissue was studied utilizing jejunal crypt microcolony assay. Hyperthermia of this range enhanced the radiation effect and the effect was mainly additive without significant effect on the slopes of cell survival curves. At the isoeffect level of 20 microcolony formation, the thermal enhancement ratio was 1.02, 1.10 and 1.39 for $41^{\circ},\;42^{\circ}\;and\;43^{\circ}C$, respectively. The distribution of microcolony formation along the circumference of jejunum was not uniform, having more colonies around the mesenteric border, and this suggests the effect of uneven cooling by blood circulation.
