The Effect of Lab Classes Satisfaction of Culinary-Related Majors on Academic Stress and Class Participation in Local Colleges

  • 본 연구는 조리 전공 관련 실습수업 만족도가 전공 학업 스트레스와 수업 참여도에 미치는 영향 정도를 조사하였다. 2023년 2학기에 광주·전남·전북 소재 6개 전문대학의 조리 전공 1학년 228명 학생을 대상으로 조사하였다. 자료처리는 SPSS Ver. 25.0을 이용하였다. 조사 자료의 일반적 특성, 신뢰도 분석, 탐색적 요인 분석, 상관관계 분석, 다중 회귀 분석을 진행하였다. 본 연구 결과는 첫째, 조리 관련 실습수업 만족도 하위 구성 요인과 학업 스트레스 및 수업 참여도 간 상관관계가 있는 것으로 나타났다. 둘째, 조리 실습수업 만족도와 전공 학업 스트레스에 미치는 영향이 유의미하게 나타났다. 셋째, 조리 실습수업 만족도가 전공 수업 참여에 미치는 영향이 유의미하게 나타났다. 결론적으로 지방 전문대 조리 관련 전공 실습수업 만족도가 학업 스트레스와 수업 참여에 영향을 미치는 것으로 나타났다. 향후, 대학 입학 전 조리 실습 경험이 실습수업 만족도와 학업 스트레스, 진로 및 취업 준비에 어떤 영향을 미치는지에 관한 후속 연구를 기대한다.

Development of cooking method for senior-friendly food using fruits suitable for older adults with masticatory dysfunction

  • BACKGROUND/OBJECTIVES: The purpose of this study was to establish a fruit-cooking method suitable for older adults with masticatory dysfunction. MATERIALS/METHODS: Five types of fruits were selected to make fruit jelly and puree: apple, sweet persimmon, mandarin, Korean melon, and watermelon. Recipes were selected based on the Korean Industrial Standard (KS) for senior-friendly foods (KS H 4897), which classifies foods into 3 levels (L1-L3) based on their hardness and viscosity. RESULTS: In South Korea, senior-friendly foods are classified into 3 stages based on their hardness. Stage 1 is for foods that are able to eat with teeth (hardness greater than 50,000 N and less than 500,000 N), Stage 2 is for foods that are able to eat with gums (hardness greater than 20,000 N and less than 50,000 N), and Stage 3 is for foods that are able to eat with the tongue (hardness less than 20,000 N). As a result of measuring the hardness by varying the shape of the fruit, it was found that nearly all fruits could be eaten fresh by chewing with the teeth (L1) but did not meet the KS for mastication using the gums (L2) or tongue (L3), so the cooking method was selected as fruit jelly and fruit puree. Only sweet persimmon, which had a hardness of 61,624-496,393 N, was not suitable for consumption in fresh fruit, unprocessed form. Based on their hardness measurements, fruit jellies (27,869 to 36,343 N) and fruit purees (315 to 1,156 N) met the L2 and L3 requirements, respectively. The viscosity results of all fruit purees met the L3 requirement. CONCLUSION: These results offer a simple cooking method to prepare texture-modified fruits suitable for safe consumption by older adults living with masticatory difficulties in general households and nursing facilities.

부산지역 중학교 영양(교)사의 나트륨 저감화에 대한 인식, 실천 및 방해요인 조사 (Awareness, Practice, and Obstruction of Sodium Reduction by Middle School Dietitians in Busan Area)

  • The objective of this study was to expand sodium reduction practices by analyzing the awareness, practice, and obstruction of sodium reduction by middle school dietitians. Questionnaires were administered to 146 dietitians in the Busan area. The average score for the dietitians' awareness of low-sodium diets was 4.21/5.00, and dietitians in their 30s and over 40 reported significantly (p<0.05) higher awareness than those in their 20s The average practice scores for low-sodium diets was 3.74/5.00, 3.80/5.00 for cooking, 3.77/5.00 for food choice, and 3.60/5.00 for action. The average scores of obstruction for low-sodium diets was 3.58/5.00, 3.93/5.00 for low-sodium products, 3.88/5.00 for students, 3.71/5.00 for dietitians, 3.12/5.00 for facilities, 2.86/5.00 for cooks. Dietitians over 40 and those with graduate school degrees had significantly (p<0.05) higher scores for low-sodium products. Regarding practice and obstruction for low-sodium diets, dietitians with high awareness scores had significantly (p<0.01) higher scores for practice and lower scores for obstruction of low-sodium diets. These findings suggest that it is critical to develop diverse low-sodium products and recipes, and that dietitians should educate students about the necessity and the practice of reduced sodium diets.

전문대학 식품영양과의 실험실습 및 현장실습 운영실태에 관한 연구 (A Stidy on the Real Management of Experimental-practice and Spot-practice at Department of Food and Nutrition of Junior College in Korea)

  • This study was conducted to gather the baseline data on realities of experimental-practice and opinions toward spot-practice, and to examine how to cope with the problems raised at the Department of Food and Nutrition of Junior Technical College in Korea. Questionnaires were gathered from 42 chairmans of the Department of Food and Nutrition and 140 Present dieticians worked in Seoul, Bucheon am Seongnam area. The results are as follows, First, as a whole, each college had 2~3 experimental laboratory (Lab), in which Cooking Science Lab. Chemistry Lab and Microbiology Lab were occurred at higher frequency as Lab's name. Second, the numbers per experimental-practice class were more than 40 at most colleges. 85% of Present dieticians have answered to feel too much numbers per the class during their college days, whereas professors' opinions toward the numbers per class were suitable at 20~30 persons per class. Third, professors' opinion toward the adquate ratio of the theory subject classes to experimental subject classes was suitable at 60 : 40. Dieticians answered to take the theory subject classes partly or mostly on behalf of the experimental-practice classes. Fourth, the main reasons which inhibited normal experimental-practice class were the class for emphasis on examination, the shortage of experiment budget, the excess of class members, the shortage of experimental Lab Also, this results showed same propensity to present dieticians' opinion toward the same question above. Fifth, among the experimenta1-practice subjects established at the Department of Food and Nutrition, Diet Therapy Lab was highest frequency class emphasized on theory followed by Nutrition Counselling Lab, Food Processing and Storage Lab, Food Hygiene Lab and Food Microbiology Lab in that order. Here, Basic Chemistry Lab, Biochemistry Lab, Food Microbiology Lab were pointed as subjects far from the present task of dieticians. Sixth, Department of Food and Nutrition, as a whole, has conferred with spot-practice arrangement About 50% (all who want to join spot-practice) of second year students took part in spot-practice. In the other way, all colleges except for 2 colleges didn't give the credit for the spot-practice system. Seventh, according to the on analysis on spot-practice places, manufacturing company was at highest frequcney followed by hospitals, elementary school having group feeding system in that order. Especially, 16.7% (5 colleges) of the total colleges sent the students to the research institute related to food industry for spot-practice experience. Eighth, Professors' opinions toward the spot-practice time and period were preferable on summer vacation of second year and for 1~2 weeks, respectively. On the contrary, 74 dieticians answered to the adquate period as for 4 weeks. Ninth, 86 dieticians of the total 140 answered to complete the spot-practice during their college days, which helps the present task of them. Lacks of spot-practice program, Lacks of comprehension of upper personals and lacks of group feeding equipments ranks higher as difficulties in spot-practice management.

  • This study has been made on the basis of the theoretical model of Beeker's time allocation concerning housewives' advance into society-- a primary cause for enlargint the scope of our food service market and developing the food service industry as a whole. The primary purpose of this study is to clarify the close relationship between housewives' activities in the course of allocating their time and the demand for the food service through Beeker's theory of“Total income and Total price”, analyzing the information obtained through the questionaires sent to the housewives in metropolitan areas. The result of the questionaires shows that the demand of food service is closely related to women's market activities. Yet it has become clear that the demand for food service correlates with housewives' allocation of time in terms of sharing profits. As a result, it is true that the increase in housewives' income per hour has brought about the increase of the term of employment and the decrease in their cooking time, thus greatly increasing the opportunities to dine out. In order words, the increase of housewives' income and the decrease in their cooking time have come to make a great contribution to shortening the time needed to take care of family matters while increasing the demand for eating out, or food service. And it is also clear that the common practice to dine out is derived from the reduction in our domestic duties, indicating the choice of social division of labour, but is needs to be noted that the gradual increase in women's income is sure to have exerted a considerable influence on this practice of eating out.

전문가 델파이 기법을 통한 전공 대학생 대상 쌀 교육 프로그램 개발 (The Development of Rice Education Program for University Students through Expert Delphi Method)

  • The purpose of this study was to develop a rice education program and rice cooking practice for university students majoring in foodservice and nutrition. To achieve this purpose, 2 rounds of delphi survey was used by convenience sampling including total of 27 experts in the food and nutrition industry. Below are the findings. First, both the importance and suitability for macro-theme of theory education were in the following order: 'nutrition and health of rice', 'characteristics of rice in food science', 'history and culture of rice' and 'the consumption of rice. Second, the history and culture of rice(traditional culture related to rice, and the origin & history of rice), nutrition and health of rice(main nutritive components and efficacy of rice and prevention of disease), characteristics of rice as food(processed-products of rice and storage, the structure of rice), and the consumption of rice(current status of rice production and consumption) were found to be suitable for the micro-theme of theory education. Third, the education theme for rice cooking practice was determined. Barley sprout song-pyeon and beet song-pyeon were chosen for rice cake. For bread, coconut & walnut muffin, tofu & bean muffin, citron bread, red bean & sweet persimmon pound cake, and sweet potato bread were selected. Dong-rae-pa-jeon, Kimch-jeon-byeong, fried sweet potato fried shrimp were developed for the main dishes.

노인종합복지관 급식업무 종사자들의 위생지식 및 수행 평가 (Evaluation of Foodservice Workers' Food Safety Knowledge and Practices at Senior Welfare Centers)

  • The purpose of this study was to evaluate food safety practices and knowledge of foodservice workers at senior welfare centers. A self-administrated questionnaire was administered to 1200 foodservice workers at senior welfare centers in Seoul, Incheon and Gyeonggi province. Two hundred five responses were returned, with 181 usable for analysis. Statistical analyses were conducted using SPSS for Windows(ver.14.0). Volunteers of respondents comprised 64.1% while chefs and employees comprised 20.9%. Food safety practices were assessed using a 5-point scale(1: strongly disagree - 5: strongly agree), and the average score of food safety practices was 4.27. For specific practices, 'personal hygiene (4.46)' scored the highest, followed by 'cleaning and sanitizing(4.43)', 'separate handing(4.40)', 'cooking process(4.11)', and 'receiving and storing(4.05)'. There were significant differences in the practice average score by age(p<0.01) and experience of food safety education(p<0.01). The total score for food safety knowledge was 14.43 out of 20 points. In the category of food knowledge, 'equipment and facility(80.5%)' had the highest correct answer rate, followed by 'personnel hygiene(75.9%)', 'cooking process(70.4%)', and 'cleaning sanitizing(65.8%)'. There were significant differences in the knowledge total score by job type(p<0.05), age(p<0.05), working experience(p<0.05), chef certification (p<0.01), and frequency of food safety education(p<0.01). The knowledge and practice scores were significantly correlated(p<0.01). This study suggests that food safety education for foodservice workers should be conducted continuously and repetitively, and the development of proper education materials is needed to improve the effectiveness of food safety education for chefs, employees and volunteers at senior welfare centers.

경기$\cdot$인천지역 중학교 가정실 실내 환경과 활용 실태 (Interior Environment and Practical Usages of the Home Economics Practice Room in Middle School of Gyeonggi and Incheon)

  • 이 연구는 중학교 가정 교과 특별실인 가정실의 실내 환경. 교구와 설비, 활용 실태의 문제점을 파악하는데 목적이 있다 연구 자료는 경기도와 인천광역시에 소재한 중학교의 가술 $\cdot$ 가정을 담당하고 있는 150명의 교사를 대상으로 우편을 통한 설문지로 수집되었다. 조사 결과 대부분의 중학교는 가정실을 갖추고 있었다. 가정실은 가정 수업 외 다른 용도로 사용되어 때때로 가정실에서의 수업에 어려움을 주고 있었다. 가정실의 활용 실태는 저조하며 대부분 조리와 재봉수업으로 제한되었는데 그 이유는 실내 환경에서 냉$\cdot$난방과 환기의 부적합. 작업대와 의자 같은 설비뿐만 아니라 교구 등의 부족으로 나타났다. 교사들은 가정실에서 모든 단원의 가정수업이 다양한 형태로 이루어지기를 바라고 있었다. 가정실의 실내 환경과 교구의 개선은 가정실에서의 다양한 수업을 수월하게 할 것이다.

초등학교급식 식단에 대한 조리공정별 HACCP에 관한 연구 (A Study on Hazard Analysis and Critical Control Points(HACCP) in School Lunch by Analyzing Food Cooking Processes)

  • A study was conducted in order to develope HACCP model in school lunch in Korea. Results: 1. Of 22 menus 4(18%) were non heating processes (#1), 2(9%) were food handling by using hands (#2), and 16(73%) were heating processes (#3). Of 279 menus 36(12.9%) belong to process #1, 8(2.9%) to process #2, and 235(84%) to process #3. 2. The critical control points for process #1 were contamination by hands of food handlers, and unsanitary food preparation habits of food handlers. Those for process #2 were improper heating temperature, contaminations by food handlers' hands, and unsanitary food handling habits, and cross contamination by unclean utensils and equipment. 3. Management criteria for the CCPs were conditions of food storage, refrigeration, freezing, food cooking temperature, personal hygiene, washing and sanitization of utensils and equipment. 4. Monitoring criteria for CCPs were observation, temperature checking, inspection of utensils and equipment, and practice of good personal hygiene. 5. Corrective actions were refusal of unsafe products, correction of improper temperature, proper cleaning and sanitization, and proper reheating time and temperature.

여대생의 김치에 대한 의식과 섭취실태 조사 (A Survey on the Notion and Intake of Kimchi among College Women)

  • A survey of the notion and intake on Kimchi among college women in Pusan was conducted to get some basic information on kimchi. Two hundred sixty seven students in Pusan participated in this survey. Seventy five percent of students answered that they like kimchi. They preferred well-fermented kimchi with anchovy extracts, refreshing taste and crispy texture the saltly and sweet. Chinese cabbage kimchi (87.6%) was found to be the most favored kimchi and Kakdugi(seasoned pickles of cubed radish), Nabak kimchi and Chonggak kimchi (ponytail kimchi) were followed in the order. The most favorite food made from kimchi was stir fried kimchi with rice. They disliked traditional special kimchi, such as Puchu kimchi (leek kimchi), Pa kimchi (green onion kimchi), Kkennip kimchi (perilla leaf kimchi), Godulbaegi kimch (Korea wild lettuce kimchi) and Gat kimchi (Leaf mustard kimchi). About 93 grams of kimchi was consumed daily and this amount was a little. Seventy percent of students did not have any experiences preparing kimchi. Experiences of kimchi preparation were given by mother through kimchii-making event for the winter(71.7%), cooking practice in middle or high school (14.1%) and college(10.9%) and general cooking education (33%). They preferred to buy kimchi at the Agricultural Cooperative Association (48.5%) or a large kimch factory (32.75). College students believe that kimchi is a healthy food and are willing to learn how to make kimchi.
