Changes in Effective Component Contents of Apple Cultivars by Ripening (사과 품종별 성숙에 따른 유용성분 함량 변화)

  • This study was conducted to select cultivars and determine the harvest period suited for the availability of biological activities in unripen apple. To analyze effective the components in the apple (Malus domestica), three cultivars, 'Summerking', 'Hongro', 'Fuji' were harvested from 40~50 days after full bloom to harvest time. Soluble solid content increased gradually by ripening but titratable acidity decreased with ripening regardless of the cultivars. The total phenol content significantly reduced with ripening from May 30 to July 30 (p<0.05). Substantially, the total phenol content of 'Hongro' in May 30 was four times higher than that of 'Summerking' in the same period and ten times higher than that of 'Hongro' in August 30. The total flavonoid content reduced with ripening regardless of cultivars (p<0.05) and that of 'Hongro' in May 30 was significantly highest (p<0.05). The ascorbic acid content was the highest in 'Hongro' in May 30 (p<0.05). The contents of tannin and ursolic acid significantly reduced with ripening from May 30 to July 30 (p<0.05), while no significant difference was observed between Hogro and Fuji after July 30. Therefore, 'Hongro' harvested in May 30 was considered to be best in the utilization of the effective components of immature apple.

Quality Characterization of Yanggaeng added with Jujube Extracts (대추즙을 첨가한 양갱의 제조 및 품질 특성)

  • This study was carried out to investigate the quality characteristics of yanggaeng added with jujube extracts. The jujube extracts were incorporated into yanggaeng at different levels (containing 25%, 50%, 75%, and 100% jujube extracts) based on the total weight of water. To analyze the quality characteristics in the manufacture of yanggaengs, pH, moisture content, density of dough, height, specific volume, baking loss, texture, color, antioxidant activity, total polyphenol content, and sensory test were determined. As the content of jujube powder increased, the pH of yanggaengs decreased but the acidity increased. There was no significant difference in the moisture content depending on the addition of jujube extracts. The color, lightness and redness of yanggaengs decreased as the concentration of the extract increased, whereas the yellowish color increased. As the jujube extracts content increased, total polyphenol content, antioxidant activity, reducing sugar and total tannins significantly increased. The yanggaeng contains jujube extract with acceptable sensory properties, such as color, sweet taste, and overall acceptability, which could be integrated into yanggaengs to meet the taste and functional needs of the consumers.

Analysis of Ginsenosides and Non-Saponin Components of Red Ginseng from Landraces and New Varieties

  • We quantitatively analyzed eight varieties of 6-year-old red ginseng, including four local landraces from the Inje, Geumsan, Jinan, and Punggi regions and four new varieties, Chunpoong, Yunpoong, Guempoong, and K-1, for 10 ginsenosides, acidic polysaccharide, crude polyacetylene, and total polyphenol content to find out which varieties are most suitable for producing red ginseng. Most of the new varieties contained more ginsenosides than the local landraces. While the acidic polysaccharide content of Geumsan red ginseng was lower than that of the others, its crude polyacetylene content was the highest, with a mean of 33.99%. The Inje, Geumsan, and Jinan red ginseng had a significantly higher total polyphenol content than the others.

Determination of Glucan Contents in the Fruiting Bodies and Mycelia of Lentinula edodes Cultivars

  • Shiitake mushrooms (Lentinula edodes) containing ${\beta}$-glucans may be beneficial for human health; they have been used in the treatment of cancer, hypertension, and high cholesterol levels. The objective of this study was to determine the ${\beta}$-glucan content in different sections of the fruiting bodies and mycelia of ten shiitake mushroom cultivars. The measured ${\beta}$-glucan content ranged from $20.06{\pm}1.76%$ to $44.21{\pm}0.13%$ in the pileus sections, and from $29.74{\pm}1.40%$ to $56.47{\pm}4.72%$ in the stipe sections. The results of this study indicate that the variance in ${\beta}$-glucan content dependent on the shiitake cultivar, and that the ${\beta}$-glucan content is higher in the stipe than in the pileus.

Contribution Rate on Soil Pysico-Chemical Properties Related to Fruit Quality of 'Kyoho' Grapevines (포도 '거봉' 품질에 미치는 토양이화학성의 상대적 기여도)

  • Detail management standard on soil conditions in 'Kyoho' grapes were not yet made. Therefore, this study was carried out to investigate the optimum soil environmental conditions on production of high fruit quality in 'Kyoho' grapes. We established using correlation between fruit quality and soil condition. These results were used to develop soil management guideline with promoting efficiency and minuteness in grape vineyard. Soil conditions were analyzed at total 80 vineyards in major grape producing areas such as Ansung, and Cheonan (40 orchards an area). The soil environmental factors affected fruit weight were soil pH of 36.6%, cultivation layer depth of 23.3%, and cation of 17.8%. The soil condition factors affected sugar content were soil hardness of 24.4%, cation of 24.1% and organic matter content of 22.1%. Cultivation layer depth, soil texture, and phosphate content were low as relative contribution. Coloring was involved with organic matter content, CEC (cation exchange capacity), and saturated hydraulic conductivity. while soil pH, cultivation layer depth, and phosphate content showed low contribution. Finally, relative contribution on fruit quality related with sugar content, fruit weight, and coloring were soil hardness of 28.0%, organic matter content of 25.0%, soil pH of 12.9%.

  • In this paper, we present a design and implementation of a personalized broadcasting system using TV-Anytime metadata for providing personalized services. The TV-Anytime specifies metadata schema, metadata coding and delivery, and provides service models to provide personalized broadcasting content services at anytime when users want to consume using metadata, which includes ECG (Electronic Content Guide) and content descriptive information in a PDR (Personal Digital Recorder)-centric environment. The proposed personalized broadcasting system consists of a server that provides metadata binary-coding, encapsulation and multiplexing, and a client terminal that takes charge of de-multiplexing, metadata decoding, and metadata processing for personalized content accessing and consumption. This paper presents the details of the design of each functional module, and the evaluation results with a set of service scenarios in an end-to-end broadcasting test-bed.

Interoperable DRM Framework for Multiple Devices Environment

  • As networks increase and cross-convergence occurs between various types of devices and communications, there is an increasing demand for interoperable service in the business environment and from end users. In this paper, we investigate interoperability issues in the digital rights management (DRM) and present a practical framework to support interoperability in environments with multiple devices. The proposed architecture enables end users to consume digital content on all their devices without awareness of the underlying DRM schemes or technologies. It also enables DRM service providers to achieve interoperability without costly modification of their DRM schemes.

Children's Use of Paid Content Based on Media and Monetary Concepts (아동소비자의 매체별 유료 콘텐츠 사용특성과 금전인식 연구)

  • This study examines the use of paid content by children and identifies their monetary concept based on the following three research questions: (1) What are the characteristics of paid-content use by children? (2) How can the monetary concept of children be classified? (3) How does this monetary concept vary across use groups? Data were collected from 245 elementary school students. Based on the results, there were two types of media content used by children: mobile and computer content. Children were classified into four consumer groups based on the type media content use and the amount of content use. In addition, monetary concepts of children using paid content had two dimensions: money for means and that for objects. For computer users, monetary concept for conspicuous consumption and mammonism were more likely in the high-use group than in the low-use group. For mobile users, there was no significant difference in money for means and money for objects between the high-use group and the low-use group. The limitations of this study offer some interesting avenues for future research.

Effects of Red Snow Crab Chionoecetes japonicus Leg Meat Powder on the Quality Characteristics of Noodles (홍게(Chionoecetes japonicus) 다릿살 분말 첨가가 국수의 품질 특성에 미치는 영향)

  • In this study, we investigated the quality characteristics of noodles supplemented with lyophilized leg-meat powder from the red snow crab, Chionoecetes japonicus (CP). The noodles were prepared by adding 0, 2, 4, 6, 8, 10% of CP on a wheat-flour basis. The ash, crude protein and crude lipid contents of noodles increased with increasing CP content. The cooked weight, volume and water absorption values of noodles decreased, whereas the turbidity increased, with increasing CP content. The L values of the noodles decreased with increasing CP content, whereas the a and b color values increased. The hardness, gumminess and chewiness values increased with increasing CP content increased, while springiness and cohesiveness showed no significant differences among the groups. In the sensory evaluation, cooked noodles with 4-6% CP had greater overall acceptability than the noodles with other CP levels.

PRELIMINARY STUDY OF WATER CONTENTS AND SIGNAL BEHAVIOR IN FINGERNAIL/EPR DOSIMETRY

  • Heating method using electric heater was used to reduce water content in fingernail clippings. Authors found that low water content is helpful to measure EPR signal of fingernail sample with enhanced variability. Generally, natural dehydration happens in normal room condition at least one month and needs much time for using in experiment. So, artificial heating method is applied in this study for time savings. Fingernail samples were tested to find effect of water content to the EPR signal on microwave power levels for dosimetry. Low water content in fingernail reduced variability of EPR signal and makes it possible to measure accurate EPR signal. It also made it possible to measure constant movement of EPR signals on several microwave power levels. Although this method was difficult to apply directly in fingernail/EPR dosimetry, we, authors, believe that this heating method would be useful to differentiate MIS2 and RIS which are generally located at the same g-factor and almost impossible to be identified with each other.
