티백 형 수정과의 관능적 특성 및 소비자 기호도 조사 (Descriptive Sensory Evaluation and Consumer Acceptability of Sujeonggwa in a Tea Bag)

  • Sujeonggwa is a popular Korean traditional beverage. However, consumers only prepare it at home on special occasions due to the time and effort required. Developing a convenient form of Sujeonggwa may promote its consumption. The objectives of this study were to 1) develop Sujeonggwa in a tea bag using different sweeteners and 2) describe the characteristics of Sujeonggwa's flavor in tea bag samples and 3) determine how well consumers accept the tea bag samples. A total of four types of Sujeonggwa in a tea bag were developed: two samples with varying amount of sugar, another sample using sugar and stevia and the last sample using sugar and short chain fructo-oligosaccharide as a sweetener. A commercial ginger tea and cinnamon tea were used as control products. Descriptive analysis was conducted on the same six samples and a descriptive panel identified its attributes. A total of 61 consumers evaluated acceptability using a nine-point hedonic scale and how they felt about intensities of the samples using a just-about-right scale. The results indicated that consumers liked Sujeonggwa samples in a tea bag more than commercial ginger tea and cinnamon tea.

부산지역 어묵 브랜드제품 개발에 관한 연구 (A Study on Brand Planning and Product Development of Busan Fish-Paste Products)

  • The objective of this study is collecting the basic information about the consumption of fish paste for developing Busan Fish-Paste products. Also, we tried to validate the effects of Busan Fish-Paste's Brand factors for its consumers. A survey was conducted to analyze the consumers who purchased fish paste products. The result showed that 60 percent of the respondents preferred Busan Fish-Paste. And 41 percent of the respondents considered the taste of fish paste products when purchasing them. As for brand, the perceived quality of Busan Fish-Paste had extremely positive influence on consumers' satisfaction. And consumers' satisfaction had significantly positive influence on brand preference and brand loyalty.

해외 소비자의 건강관심도에 따른 식품선택 동기 분석: 미국 및 일본 소비자를 중심으로 (Analysis of food choice motivation according to health consciousness of overseas consumers: focus on American and Japanese consumers)

  • 본 연구의 목적은 미국과 일본을 타깃시장으로 선정하여 건강관심도에 따른 인구 통계학적 분석과 식품선택 동기를 파악함으로써 소비자 니즈를 반영하여 마케팅 전략 구축의 기초자료로 활용될 수 있으며 향후 해당 국가의 소비자들의 건강하고 올바른 식품 선택에 도움이 되고자 하였다. 미국 115명, 일본 120명의 현지 소비자들을 대상으로 수집된 자료를 SPSS (ver. 25.0) 통계 프로그램을 이용하여 분석을 진행하였다. 전체 소비자의 군집별 미국과 일본 소비자를 대상으로 진행한 건강관심도에 따른 인구 통계학적 분석과 식품선택 동기에 관한 연구 결과는 다음과 같다. 건강관심도에 따라 '건강한 식습관 지향 집단', '영양 균형 지향 집단', '건강 무관심 집단'으로 군집을 나누었으며, 건강관심도에 따른 인구통계학적 분석은 국가, 성별, 연령, 교육 수준의 항목에서 유의적인 차이를 나타냈다. 건강관심도 집단별 식품선택 동기의 결과로는 건강 무관심 집단은 다른 집단과 비교했을 때 건강, 효율성, 가치, 기분 4가지 요인 모두 상대적으로 낮게 조사되었으며, 군집에 따라 점수의 차이는 있지만 세 집단 모두 자신이 투자한 시간에 대비하여 맛이나 조리시간 등의 효율성을 중요하게 생각하는 것으로 나타났다. 이는 전 세계적으로 생활양식이 변화하면서 식품선택 동기가 변화하고 있음을 반영하는 것으로 소비자들이 식품 소비에 있어 투자한 시간이나 자산대비 더 높은 만족감을 얻고자 함을 알 수 있다. 본 연구 결과는 미국과 일본 소비자의 건강하고 올바른 식품 선택을 기반으로 하는 해당 국가의 외식시장 진입전략의 기초 자료로 활용할 수 있을 것이며, 소비자의 니즈가 반영된 제품개발 방향을 제시하여 미국과 일본 소비자의 건강하고 올바른 식품 선택에 기여할 수 있으리라 판단된다.

바나나의 품질 특성 및 한일 양국의 소비 현황에 관한 연구 (The Study on Characteristic Quality for banana and the both of Korea and Japan Consumption Condition)

  • The purpose of this study is for researching consumptions of the Korean and Japanese's consumers and qualities on the bananas which rank first in market share of the fruits market. The survey was conducted from the 180 Korean women living in Gangnam and Bundang. It was also compared and analyzed on the basis of data from the Japanese's R company. This analysis was done using SPSS 12.0 Vir. and analyzed according to its purposes. First, the difference between Korea and Japan in terms of bananas intake was studied. Second, consumption situations and types of Korean and Japanese's women were compared and analyzed. Therefore, this is the basic analytic study for finding out Korean consumers' recognitions and purchase behaviors on the bananas compared those of Japan. This will be utilized as useful material to understand the domestic consumers' consumption behaviors of the bananas which are one of the imported agricultural products.

베이커리 소비자의 특성 및 구매행동에 따른 선택속성 차이 (Difference in Bakery Choice Attributes according to Consumers' Characteristics and Purchasing Behavior)

  • The purpose of this study was to analyze the difference in bakery choice attributes according to consumers' general characteristics and purchasing behavior. Among 350 questionnaires distributed to bakery consumers, 277 complete questionnaires (79.1%) were analyzed. Bakery choice attributes were classified into five factors: "environment and image", "bakery product features", "location", "employee service", and "price and sales promotion"; the mean scores of these factors' importance levels were 3.59, 3.58, 3.49, 3.36, and 3.00, respectively. Males considered 'employee service' factor significantly more than did females. Further, the importance level of 'employee service' factor was significantly greater as consumer's age increased. The importance levels of 'bakery product features' and 'employee service' factors were considered significantly more by consumers who spent KRW10,000-15,000 than those who spent KRW5,000 or less. 'Price and sales promotion' was considered to be more important by consumers who obtained information from the Internet than from the TV and radio. 'Location' factor was considered to be more significant as purchasing frequency increased. Such differences in importance level of bakery choice attributes according to consumers' gender, age, job, and purchasing behavior should be considered and applied to the development of marketing strategies targeted at consumers.

유제품 및 식품 분석 업무의 중요성 (분석학자의 관점) (Importance of Dairy and Food Analyses from an Analyst's Point of View)

  • Processes that products we consume that contain dairy foods comprise planning → design → production → quality/suitability assessment → safety verification → launch → distribution → consumption. Analysis of nutrients and potential toxins at each stage in the production process is essential to verify food quality, suitability, and safety. Products display ingredient lists and nutrient content to help consumers choose healthy foods. These products should also be fully assessed for microbes and toxins before reaching consumers. Products require verification through test inspections. However, this step has reduced value from a food manufacturer's viewpoint, because it does not visibly impact real economic trends. The most important first step in determining the quality and suitability of products is the inspection capability of food companies.

중국 고령친화형 HMR 제품 개발을 위한 소비자 요구도 (Consumer Needs for HMR Product Development of Chinese Elderly Consumers)

  • This study analyzed consumer needs for the development of elderly-friendly HMR products in China. In developing the products, items needed to be improved, types and packages of the necessary products, additional improvements and food preferences were investigated. According to the demographic characteristics of elderly Chinese consumers, these was analyzed as well. A survey was conducted on a total of 370 elderly people, and data analysis was performed using SPSS 18.0 program. Items related to product quality safety, such as "marks of origin by ingredient", "rich nutrients", "expansion of letter size of packaging", "rich nutrients" and "clear manufacturing date and expiration date", were required to develop HMR products. The types of products that should be developed were porridge and noodles, and the packaging types that should be developed were eco-friendly packaging and recycled packaging. In addition, "low-calorie HMR", "development of various seasonings", "use of eco-friendly food ingredients" and "HMR to digest easily" should be improved. The demand for product improvement and food preference showed significant differences according to the degree of education, monthly income and oral health. The results were intended to prepare basic data for setting the direction when developing elderly-friendly HMR.

  • The purpose of this study is to compare preferences of consumers between food items made from modified cassava flour and plain flour using sensory tests. This study is a qualitative research with an experimental approach and four food items, namely streamed brownies, cookies, fried mushrooms, and seasoning flour have been used for the study. Each of these food items are made from modified cassava flour and plain flour. Panelists wore blindfolds and tasted the food items except the seasoning flour. Based on the data analysis, the panelists have different preferences towards the four food items. The result of the paired Wilcoxon test showed that there is not any different preference in terms of taste of steamed brownies made from mocaf or plain flour, while there is a significant difference in terms of color, aroma, texture, and appearance between the steamed brownies made from mocaf and plain flour. Consumers decide to buy products made from mocaf because these products use local flour and are gluten-free. This article describes the customer's preference based on sensory analysis between products made from mocaf and ones made from plain flour. The result can be used as the basis for developing food items made from local flour and alternative food for customers allergic to gluten.

소비자의 식품안전에 대한 태도와 친환경농산물 구매행동에 관한 연구 (A Study on Consumer's Attitude for Food Safety and Purchase of Environment Friendly Agricultural Products)

  • This study is to assess the level or consumer's attitude or food safety and their effects on the purchase or environment friendly agricultural products. For these purposes, the survey was implemented to 550 adults who resided in Seoul and metropolitan area. As a results, a lot of respondents perceived the five food hazards, pesticides, food additives, BSE, chemical materials, GMOs as the severest food risks. Results revealed that women, the most educated, married, and the older respondents were more likely to be negative about food safely. And Also, consumer's knowledge of environment friendly agricultural products was lower than the median. The respondents who have bought environment friendly agricultural products were 80.5% of the entire respondents. Also, the educated and the consumers who had the knowledge of the environment friendly agricultural products started to purchase them. The consumers who had higher income, perceived the food hazards(BSE), assessed agricultural products safety negatively, had willingness to pay them and more knowledge of environment friendly agricultural products were likely to purchase them usually.

지역 임산물의 공유가치창출에 대한 소비자의 인식에 따른 지역 임산물의 구매행동에 관한 연구 - 정읍시를 중심으로 - (Effect of Consumers' Perceived Creating Shared Value on Purchasing Behavior of Non-timber Forest Products in Jeongeup City, Korea)

  • Local non-timber forest products can be easily accessed by tourists. These also provide opportunities for tourists to experience the local culture. Many local governments are paying constant attention to the development of non-timber forest product brands to revitalize the local economy and increase the profits of local farmers. Although there are many forest products and tourism resources in each region of Korea, there is no local specialized strategy to sell non-timber forest products and promote consumers' purchase intentions. In this study, we aimed to explore the consumers' perceived creating shared value (CSV) and its association with purchasing behavior of non-timber forest products in Jeongeup city, Korea. Data were collected from 1,066 consumers who had purchased non-timber forest products. Purchasing patterns of local specialty products differed depending on consumers' perceived CSV levels. In addition, consumers with higher levels of perceived CSV showed higher awareness and familiarity with Jeongeup city and experienced Jeongeup city's non-timber forest products. Our findings suggest that improving consumer perception towards CSV of non-timber forest products can be used as a marketing strategy for local non-timber forest products to revitalize the local economy.
