소비자의 외식관련 음식물 쓰레기에 대한 태도 및 감소 노력에 관한 연구 (A Study on Customer Attitude and Effort towards Reducing Food Waste When Dining Out)

  • As food waste problems become more severe, the need for reduction plans is increasing. Thus, this study aimed to discover the attitudes towards and the intentions to reduce restaurant food waste as well as the importance of and intentions to participate in reduction plans among adults customers A self-administrated questionnaire was given to 361 adults (216 men and 145 women) over 20 years old residing in Seoul and Gyeonggi province. According to the results, the respondents regarded restaurant food waste problems as serious (4.01). The biggest reason for leaving food was concern about hygiene (3.57), followed by tasting food (3.34) and portions that were too large (3.10). 57.6% responded that they try to reduce food waste when dining out. Women over 30 admitted to leaving food when dining out if the food did not taste as expected, if they had health concerns about additives such as condiments, and for body weight management. The overall average degree of awareness on the gravity of restaurant food waste problems was 4.06, indicating that respondents deeply empathized with the matter. Women showed higher alertness compared to men, and respondents in their 30s or over did more than those in their 20s. Also, respondents who try to reduce food waste when dining out had higher levels of concern than those who did not. According to the results from measuring the importance of and intention to participate in restaurant food waste reduction plans, taking away left-over food was the best option. In short, citizenship improvement campaigns should be designed for restaurants and related organizations in order to stimulate the need and effects of efforts to reduce dine-out food waste and induce aggressive participation by consumers. Diverse methods to increase actual consumer participation in food waste reduction plans that show high consumer participation intentions also needs to be developed.

부하지속곡선을 이용한 비점오염원 우선관리 지역 선정 및 관리목표 설정 연구 (Identifying Priority Area for Nonpoint Source Pollution Management and Setting up Load Reduction Goals using the Load Duration Curve)

  • The objective of this study is to identify the priority area where the nonpoint source pollution (NPS) management is required and to set up the load reduction goals for the identified priority area. In this study, the load duration curve (LDC) was first developed using the flow and water quality data observed at 286 monitoring stations. Based on the developed LDC, the priority area for the NPS pollution management was determined using a three-step method. The 24 watersheds were finally identified as the priority areas for the NPS pollution management. The water quality parameters of concern in the priority areas were the total phosphorus or chemical oxygen demand. The load reduction goals, which were calculated as the percent reduction from current loading levels needed to meet target water quality, ranged from 67.9% to 97.2% during high flows and from 40.3% to 69.5% during moist conditions, respectively. The results from this study will help to identify critical watersheds for NPS program planning purposes. In addition, the process used in this study can be effectively applied to identify the pollutant of concern as well as the load reduction target.

Dietary behaviors and body image recognition of college students according to the self-rated health condition

  • This study was done to investigate the relationship between the perception of body image, body weight satisfaction or dietary behavior and self-rated health status in Korean college students. Subjects, 285 college students, were divided into three groups (healthy, normal, and unhealthy) according to the answer for the self-rated health question. Information about demographic status, self-rated health condition, height and weight, perception of body image, satisfaction of body weight, concern for body weight control, dietary behavior, nutritional knowledge, and health-related characteristics collected by a self-reported questionnaire. The proportion of men and women in each group was not significantly different. The academic year, major, experience of nutritional education, and type of residence were not significantly related with self-rated health but the pocket money range was significantly associated (p<0.05) with self-rated health. The proportion of subjects rated their health as unhealthy was the lowest in 210-300 thousand won pocket money range and was increased in less than 210 thousand won or over 300 thousand won pocket money ranges. There were no significant differences for age, height, weight and BMI between the groups. The body image perception and body weight satisfaction levels of healthy group was significantly higher than those of unhealthy group (p<0.01 and p<0.001, respectively), but the level of concern for body weigh1 control in healthy subjects was significantly lower than that in unhealthy subjects (p<0.05). The proportion of subjects reported as healthy was significantly increased with increased frequencies of following food behaviors; weekly use of protein foods (p<0.01), vegetables (p<0.05) and dairy products (p<0.01), and food habits such as "regularity of meal time" (p<0.01), "eating in moderation" (p<0.05), and "eating breakfast" (p<0.001). Overall results suggested that the college students have tended to have a better perception of health when they have better body image perception, body weight satisfaction and dietary behaviors.

경북지역 고등학생의 식품 안전성에 대한 지식 및 행동 분석 (Analysis of Knowledge and Behavior about Food Safety of High School Students in Gyeongbuk Region)

  • 본 연구는 식품 안전성 확보를 위한 교육 프로그램 개발에 기초자료를 제공하기 위하여 경북지역의 고등학생을 대상으로 하여 식품 안전성에 대한 지식 및 행동 수준을 살펴보고 각각에 영향을 미치는 변수들을 파악하며 경로모형을 통해 식품 안전성에 대한 지식과 행동간의 인과관계를 살펴보았다. 본 연구의 자료는 경북지역에 재학 중인 고등학생을 대상으로 설문지를 통해 수집되었으며, 총 297부를 최종 분석자료로 이용하였다. 수집된 자료는 SPSS Windows V. 14.0 프로그램을 이용하여 빈도분석, Cronbach's alpha, Pearson의 적률상관분석, 회귀분석, 경로분석을 실시하였다. 연구 결과, 식품 안전성에 대한 지식 정답률은 평균이 63.1%이었으며, 3개의 영역으로 구분하여 정답률을 살펴본 결과 '식품의 구입 및 취급', '식품의 보관 및 저장', '식중독 및 식품오염' 순으로 정답률이 높았다. 회귀분석을 통해 식품 안전성에 대한 지식에 영향을 미치는 변수를 살펴본 결과, 어머니 연령, 식품 위해요인에 대한 관심도가 유의하였다. 식품 안전성에 대한 행동의 평균은 5점 만점에 3.44점이었으며, 이를 100점 만점으로 환산했을 때 61.1점으로 지식 수준의 평균보다 조금 낮았다. 영역별 행동 점수를 살펴보면 '식품의 보관', '식품의 섭취', '식품의 구입 및 취급' 순으로 평균값이 높았다. 식품 안전성에 대한 행동에 영향을 미치는 변수를 살펴보기 위해 회귀분석을 실시한 결과, 학년, 아버지 교육 수준, 식품 위해요인에 대한 관심도, 식품 안전성에 대한 지식이 유의한 것으로 나타났다. 식품 안전성에 대한 행동에 영향을 미치는 제 변수들 간의 인과관계를 살펴보기 위하여 경로분석을 한 결과 식품 안전성에 대한 지식에는 식품 위해요인에 대한 관심도가 유의한 변수로 나타났고, 식품 안전성에 대한 행동에는 학년(2학년), 학년(3학년), 아버지 교육 수준, 식품 위해요인에 대한 관심도, 식품 안전성에 대한 지식이 유의한 변수로 나타났다. 학년과 아버지 교육 수준은 식품 안전성에 대한 행동에 직접적인 영향요인으로 나타났으며 매개변수인 식품 안전성에 대한 지식은 독립적으로 식품 안전성에 대한 행동에 정적인 직접효과를 갖는 것으로 나타났다.

환경매체별 카드뮴의 생태위해성평가 (Ecological Risk Assessment for Cadmium in Environmental Media)

  • Objectives: We conducted ecological risk assessment for cadmium, a heavy metal and carcinogen, to identify safety standards by environmental media and to determine its impact on ecosystems by estimating and evaluating exposure levels. Methods: Species sensitivity distributions (SSDs) were generated using ECOTOX DB. A hazardous concentration of 5% (HC5) protective of most species (95%) in the environment was estimated. Using this estimate, predicted no effect concentrations (PNECs) were calculated for aquatic organisms. Based on the calculated PNECs for aquatic organisms, PNEC values for soil and sediment were calculated using the partition coefficient. Predicted exposure concentrations (PECs) were also calculated from environmental monitoring data with hazard quotients (HQs) calculated using PNECs for environmental media. Results: Chronic toxicity data were categorized into four groups and 11 species. In species sensitivity distribution (SSD) analysis, HC5 was $0.340{\mu}g/L$. Based on this value, the PNEC value for aquatic organisms was calculated as $0.113{\mu}g/L$. PNEC values for soil and sediments using a partition coefficient were calculated as 15.02 mg/kg and 90.61 mg/kg, respectively. In an analysis of environmental monitoring data, PEC values were calculated as $0.017{\mu}g/L$ for water, 1.01 mg/kg for soil, and 0.521 mg/kg for sediment. Conclusions: HQs were 0.150, 0.067 and 0.006 for water, soil and sediment, respectively. HQs of secondary toxicity were 0.365 for birds and 0.024 for mammals. In principle, it is judged that an HQ above 1 indicates a high level of risk concern while an HQ less than 1 indicates an extremely low level of risk concern. Therefore, with HQs of cadmium in the environment being <1, its risk levels can be considered low for each media.

단축형 연령통합척도 타당화 및 인구사회학적 특성과 연령통합인식 관계: 연령집단 간 비교 (Validation of Short Form Age Integration Scale and Relationships between Socio-Demographic Characteristics and Age Integration: A Comparison of Age Groups)

  • 본 연구는 정순둘 등(2015)이 개발한 연령통합척도를 Riley 등(1994)이 개념구성한 연령유연성과 연령다양성을 하위요인으로 한 단축형 연령통합척도로 척도의 타당성을 검증하여 척도의 실용성을 확보하고, 인구사회학적 특징에 따른 연령통합인식을 파악하는 것을 목적으로 하였다. 이를 위해 한국연구재단에서 지원한 사회과학역량강화지원사업(SSK)의 지원을 받아 수행된 '연령통합 및 세대통합 조사'자료의 총 1433명을 대상으로 분석하였다. 분석방법은 탐색적 요인분석, 확인적 요인분석, 다집단 요인분석, 평균비교 등의 방법을 활용하였다. 분석결과는 다음과 같다. 첫째, 척도는 총 28문항에서 13문항으로 수정되었으며, 연령다양성 8문항, 연령유연성 5문항으로 구성되었다. 둘째, 청년, 중년, 노년 집단으로 분류하여 다집단 요인분석에서 연령집단 간에 유의한 차이를 보이지 않는 것으로 나타나 전 연령에서 사용가능성이 확보되었다. 셋째, 연령집단 간 인구사회학적 특성에 따른 연령통합인식 차이에서 청년집단은 거주지역에서만 연령통합인식, 연령유연성, 연령다양성 차이를 보이는 것으로 나타났으며, 중년집단에서는 거주지역과 계층인식에서 연령통합인식, 연령 유연성, 연령다양성 차이를 보였다. 노년집단은 연령통합인식에서는 거주지역, 교육수준, 계층인식이 유의미하였으며, 연령유연성에서는 거주지역과 계층인식, 연령다양성에서는 거주지역과 교육수준에서 유의미한 차이를 보였다. 이러한 본 연구의 결과를 기반으로 향후 연령통합인식 향상을 위한 연구를 위한 방향과 정책 및 실천을 위한 함의를 제언하였다.

CBAM을 활용한 가정과교사의 과정중심평가 인식조사 (Home Economics Teachers' Perception on Process-Based Assessment Using the Concerns-Based Adoption Model)

  • 본 연구는 가정과교사의 과정중심평가에 대한 전반적 인식과 관심도, 실행도를 진단하여 학교현장에서의 내실 있는 과정중심평가 실행에 필요한 알맞은 지원책을 알아보았다. 이를 위해 전국의 가정과교사를 대상으로 CBAM을 활용하여 과정중심평가에 대한 전반적 인식과 관심도, 실행도를 묻는 설문조사를 실시하였다. 수집된 자료를 분석한 연구 결과는 다음과 같다. 첫째, 가정과교사들은 과정중심평가를 긍정적으로 인식하고 있었으며, 이는 과정중심평가가 결과중심평가에 비해 학생을 다면적으로 평가할 수 있다는 점과 가정과교사들이 과정의 교육적 가치를 중요하게 인식하고 있기 때문임을 살펴볼 수 있었다. 또한 과정중심평가가 학생과 교사 모두에게 더 유익하다고 인식하고 있었으며, 이는 피드백이 교사와 학생 모두에게 성찰의 기회를 제공한다고 생각하기 때문임을 파악할 수 있었다. 가정과교사들은 과정중심평가의 실행 시기에 관해서는 혼란을 보였으나, 과정중심평가에서의 피드백의 의미와 활용에 대해서는 비교적 높은 이해수준을 보였다. 둘째, 과정중심평가에 대한 관심도는 4단계(결과적 관심)에서 가장 높게 나타났다. 즉, 가정과교사들은 과정중심평가를 실행함으로써 개인의 전문성과 학생의 학습에 어떠한 결과나 나타날지에 가장 관심을 두고 있다고 해석할 수 있다. 셋째, 실행도 측면에서 대다수의 가정과교사들은 이미 한 학기 이상 현장에서 과정중심평가를 실행하고 있는 것으로 드러났다. 과정중심평가를 자신과 무관하다고 생각하거나, 실행에 관심을 두지 않는 교사는 보이지 않았으며, 미실행 중일지라도, 과정중심평가에 대한 정보를 조사하고 있는 1수준(입문) 상태이거나, 과정중심평가 실시 시기를 계획하는 등 실행을 위해 준비하고 있는 2수준(준비) 상태인 것으로 나타났다.

교육실습에 참여한 예비 과학교사의 과학수업 실행에 대한 관심 영역과 반성적 사고 (Pre-service Science Teachers' Areas of Practice Concern and Reflections on the Science Classes in Student-Teaching)

  • 본 연구의 목적은 교육실습에 참여한 예비 과학교사들의 과학수업 실행에 대한 관심 영역과 반성적 사고를 구체적으로 이해하고 이에 영향을 주는 요인을 파악하는 것이다. 본 연구를 위해 4명의 예비 과학교사들이 작성한 교육실습록,수업지도안 및 수업자료들을 수집하였고, 교육실습이 끝난후 심층면담을 실시하였다. 본 연구 결과는 다음과 같다. 첫째,예비 과학교사들의 과학수업 실행에 대한 관심은 수업환경 및 교수전략에 대한 관심이 공통적으로 가장 높았고 과학내용에 대한 관심은 가장 낮게 나타났다. 수업환경 및 교수전략에 대한 관심 영역 중에서는 수업운영에 대한 관심이 가장 높았으며 수업운영 중에서도 수업분위기에 대한 관심이 가장 높게 나타났다. 둘째,예비 과학교사들의 과학수업에 대한 반성적 사고를 하는 영역이 학생통제나 수업분위기 조성,과학교사의 역활,수업자료에 대한고민 등의 매우 제한적인 범위 내에서 반성이 이루어지고 있었다. 그리고 그들의 과학수업에 대한 반성적 사고의 대부분이 '즉각적인 수준'과 '기술적인 수준'에 머무르며, '숙고적인 수준'이나 '변혁적인 수준'은 전혀 나타나지 않았다. 셋째,예비 과학교사들의 이러한 과학수업에 대한 관심 영역이나 반성적 사고에는 교과 실습지도 교사의 영향이 가장 큰 것으로 내타났다.

과체중 및 비만여성의 식습관, 식이섭취실태 및 혈청지질 양상 비교 (Comparison of Food Intakes and Serum Lipid Levels in Overweight and Obese Women by Body Mass Index)

  • This study was done to investigate the health-related habits, dietary intakes and serum lipid levels in overweight and obese women by body mass index(BMI). Subjects were 137 pre-menopausal women aged 19 to 49 years. They were divided by 3 groups, overweight($23{\leqq}BMI<25$), obese($25{\leqq}BMI<30$) and morbidly obese($BMI{\geq}30$) according to their BMI. Body composition was determined by bioelectrical impedance analysis(BIA) method. Dietary intakes were examined by 3-day record method and nutrient intakes were analyzed by the Computer Aided Nutritional analysis program for professionals(CAN-pro 3.1). Serum lipid levels were measured using automatic biochemical analyzer(Selectra E). The average age, height weight and BMI of subjects were 31.7 years old, 159.3cm, 69.4kg, and $27.4kg/m^2$, respectively. Their average consumption of energy were 1712kca1 and 86.4% of estimated energy requirement(EER). Their mom ratio of carbohydrate:protein:fat was 55.2:14.6:30.2. Particularly, the fat consumption of subjects tended to be elevated with increasing BMI. There was no significant difference in nutrient intakes among 3 groups. But the mom intakes of Ca, Fe, vitamin C and Na of all the subjects were 70.1%, 81.2%, 75.7% of recommended intake(RI) and 258.9% of adequate intake(AI), respectively, The intakes of vegetables and seaweeds were significantly higher in morbidly obese group while the intake of fruits was higher in overweight group compared to the other groups. Serum lipid analysis showed that there were no significant differences in the levels of total cholesterol, triglyceride and LDL-cholesterol among the groups. But the serum HDL-cholesterol level of the overweight group was significantly higher than that of the other groups. LDL-/HDL-cholesterol ratio and AI index were significantly higher in the morbidly obese group compared to the other groups. In addition, The systolic blood pressure of morbidly obese group was significantly higher compared to the other groups. Overall data suggest that morbidly obese women have to more concern about reducing systolic blood pressure and nm lipid levels by decreasing their fat consumption and salt intakes as well as loosing body fat. In addition, all the subjects participated in this study have to be careful about their meals and health-related behaviors in order to prevent obesity-related chronic diseases.

Biochemical changes and drug residues in ascidian Halocynthia roretzi after formalin-hydrogen peroxide treatment regimen designed against soft tunic syndrome

  • Soft tunic syndrome (STS) is a protozoal disease caused by Azumiobodo hoyamushi in the edible ascidian Halocynthia roretzi. Previous studies have proven that combined formalin-hydrogen peroxide ($H_2O_2$) bath is effective in reducing STS progress and mortality. To secure target animal safety for field applications, toxicity of the treatment needs to be evaluated. Healthy ascidians were bathed for 1 week, 1 h a day at various bathing concentrations. Bathing with 5- and 10-fold optimum concentration caused 100% mortality of ascidians, whereas mortality by 0.5- to 2.0-fold solutions was not different from that of control. Of the oxidative damage parameters, MDA levels did not change after 0.5- and 1.0-fold bathing. However, free radical scavenging ability and reducing power were significantly decreased even with the lower-than-optimal 0.5-fold concentration. Glycogen content tended to increase with 1-fold bathing without statistical significance. All changes induced by the 2-fold bathing were completely or partially restored to control levels 48 h post-bathing. Free amino acid analysis revealed a concentration-dependent decline in aspartic acid and cysteine levels. In contrast, alanine and valine levels increased after the 2-fold bath treatment. These data indicate that the currently established effective disinfectant regimen against the parasitic pathogen is generally safe, and the biochemical changes observed are transient, lasting approximately 48 h at most. Low levels of formalin and $H_2O_2$ were detectable 1 h post-bathing; however, the compounds were completely undetectable after 48 h of bathing. Formalin-$H_2O_2$ bathing is effective against STS; however, reasonable care is required in the treatment to avoid unwanted toxicity. Drug residues do not present a concern for consumer safety.
