호텔 레스토랑의 식자재 조달 관련 공급 체인 관리와 푸드 생산 전략 간의 관계 분석 (Analysis of Relationship between Supply Chain Management and Food Production Strategies for Food Supplies in Hotel Restaurants)

  • This research aimed to understand the relationship between comparative superiority elements of the supply chain activities for food supplies in the hotel industry. The samples are obtained from exclusive hotels located in the Seoul area. A statistic package program called SPSS was employed to conduct reliability analysis, factor analysis, t-test, correlation analysis, and multiple regression analysis. Results of a multiple regression analysis between supply chain management and food production strategies were as follows; company's characters and cooperative relations with suppliers had a significant impact on cost while quality was significantly affected by company's characters, information system, cooperative relations with suppliers, and supply chain activities. It was revealed that all factors had a significant impact on flexibility and delivery date.

커피와 커피박 침출주의 항산화 활성 및 주요 생리활성 물질의 비교 분석 (Antioxidant activity and comparative analysis of major functional compounds in liqueur using coffee and coffee-ground)

  • 본 연구는 커피의 부산물로 발생되는 커피박으로 침출주를 제조함으로써 커피박의 산업적 활용 가치 재고를 알아보기 위하여 진행되었다. 커피박의 항산화 활성과 생리활성 물질을 분석, 비교하기 위하여 커피와 커피박을 각각 25%와 35% 담금술에 침지하여 CL, CGL를 제조하였다. 제조한 담금술을 대학생을 대상으로 관능평가를 실시한 결과 상대적으로 CGL가 CL에 비해 상대적으로 우수한 기호도를 보였다. 기호도가 높은 CGL와 기호도가 낮은 CL의 항산화 활성 정도를 비교하기 위해 동량의 건조물을 이용해 총 페놀 함량과 항산화 활성 실험을 실시하였다. 총 페놀 함량 분석 결과 35% CGL(1개월)이 $1,000{\mu}g/mL$에서 169.5 mg GAE/g of dried extract으로 가장 높게 나왔고, 항산화 활성 실험 결과 CE와 CL, CGL 모두 유사한 DPPH 라디칼 소거활성과 FRAP 활성을 나타내었다. 따라서 커피 가공 부산물인 커피박에도 DPPH 라디칼 소거활성과 FRAP 활성을 유도하는 phytochemical로서의 생리활성 물질이 잔존하는 것으로 판단된다. 결국 커피박에도 커피와 유사하게 생리활성 물질이 존재하는지 알아보기 위하여 동량의 건조물을 이용해 HPLC 정성 정량 분석을 실시한 결과 CGL(35.0~38.5 mg/g of dried extract)는 CE(34.9 mg/g of dried extract)에 비해 클로로겐산 함량이 0.3~10.5% 가량 더 많았고, CGL(39.2~42.1 mg/g of dried extract)는 CE(35.6 mg/g of dried extract)에 비해 카페인 함량이 10.0~18.2% 가량 더 많은 것으로 나타났다. 본 연구 결과를 종합해볼 때, 커피 가공 부산물인 커피박이 대표적인 생리활성 물질로 알려진 클로로겐산과 카페인을 일정 수준 이상으로 함유하고 있어 커피와 유사한 라디칼 소거활성 등 in vitro 항산화 활성을 가지고 있음을 확인하였다. 더불어 침출주의 경우 커피 대비 기호도도 상대적으로 우수하여 산업적으로 충분히 활용 가능할 것으로 판단된다.

빅데이터를 활용한 무인카페 소비자 인식에 관한 연구: 텍스트 마이닝과 의미연결망 분석을 중심으로 (A Study on the User Experience at Unmanned Cafe Using Big Data Analsis: Focus on text mining and semantic network analysis )

  • Purpose - The purpose of this study was to investigate the perception of 'unmanned cafes' on the network through big data analysis, and to identify the latest trends in rapidly changing consumer perception. Based on this, I would like to suggest that it can be used as basic data for the revitalization of unmanned cafes and differentiated marketing strategies. Design/methodology/approach - This study collected documents containing unmanned cafe keywords for about three years, and the data collected using text mining techniques were analyzed using methods such as keyword frequency analysis, centrality analysis, and keyword network analysis. Findings - First, the top 10 words with a high frequency of appearance were identified in the order of unmanned cafes, unmanned cafes, start-up, operation, coffee, time, coffee machine, franchise, and robot cafes. Second, visualization of the semantic network confirmed that the key keyword "unmanned cafe" was at the center of the keyword cluster. Research implications or Originality - Using big data to collect and analyze keywords with high web visibility, we tried to identify new issues or trends in unmanned cafe recognition, which consists of keywords related to start-ups, mainly deals with topics related to start-ups when unmanned cafes are mentioned on the network.

커피박으로부터 생리활성물질 생산 증대를 위한 열수추출 공정 개발 (Optimization of Hot-water Extraction Conditions of Bioactive Compounds from Coffee Residue Extracts)

  • 커피침출 공정의 부산물인 커피박을 이용한 고부가가치 식품 및 화장품 소재 생산을 위해 열수추출 공정의 폴리페놀 추출인자(용매, 온도, 시간, 농도) 최적화를 수행하였다. 실험에 적용 된 모든 추출인자가 폴리페놀 생산에 유의한 효과가 있음을 확인할 수 있었고 NaOH 농도가 폴리페놀 생산에 미치는 효과가 가장 큰 것으로 평가되었다. 특히, 열수추출 보다는 산 또는 염기를 이용한 열수추출이 폴리페놀 추출 효과가 높았으며 NaOH 0.1 mol 첨가 시 증류수를 이용한 열수추출에 비해 1.5배 추출 효과가 증가하여 열수를 이용한 추출에 비해 염기-열수 추출이 보다 효과적임을 알 수 있었다. 폴리페놀 추출의 최적 조건인 $100^{\circ}C$, 2 mol NaOH와 30 min 추출 조건에서 36.5 mg GAE/g DM를 얻을 수 있었다. 이는 최적화 이전의 열수추출에서 얻은 12.5 mg GAE/g DM 대비 2.9배 증가된 결과로 커피박은 항산화 활성 등 기능성 강화 소재로 식품 및 화장품 산업에 활용이 가능할 것으로 판단된다.

  • This study is the 2nd report following "A Study on the Characteristics of Material in the Korean Up-cycling Fashion Brands (Part I)" that handled the development of upcycling props using the characteristics of upcycling material. The 2nd report analyzed product types and materials focusing on 21 foreign upcycling fashion brands. It analyzed the characteristics of upcycling fashion materials using the case analysis of coffee bean bag and waste denim based on external characteristics and internal characteristics. We then classified the external characteristics into environment/economic feasibility and availability/mixture and the internal characteristics into historicality/story and originality/scarcity. Five bags were designed and produced for the actual commercialization of fashion products based on such characteristics of materials, with the use of coffee bean bags and waste denim as upcycling materials. This study is differentiated from existing research by its suggestions for the utilization of fashion product upcycling coffee bean bags and waste denim. Also, upcycling fashion products could be competitive products in eco-friendliness and originality that can be a driving force for the sustainable development of fashion industry through the differentiation of existing fashion products.

마이크로플루트 골판지의 열전도도 및 전기저항 특성에 대한 연구 (Studies on Thermal Conductivity and Electric Resistance Properties of Microflute Corrugated Paperboard)

  • When micro flute corrugated paperboards are used for food packaging, they necessarily need to meet the requirements for the distribution, transportation, and storage of food. The requirements could vary ac-cording to the contents in the packaging boxes. Microflute corrugated packaging paperboard for hot foods such as just-made coffee and hamburger requires to have a decent resistance property against high temperature. Along with a recent trend for small-quantity-multi-item upgraded packaging, semiconductor products and consumer-electronic appliances become to be packed using the environmental friendly micro flute corrugated paperboard. In this case, the electric resistance property of the microflute corrugated paperboard becomes important. This study was carried out to investigate on the thermal conductivity and electric resistance properties of micro flute corrugated paperboard.

  • This paper examines the current status of the Korean tea culture industry and explores ways to restore and develop Korean tea culture by referring to the responses of the neighboring countries of China. In order for the Korean tea industry and tea culture to expand, based on a strong tea industry, high-quality tea should be created to satisfy consumers' needs, health, convenience, and reasonable prices, and effective promotion and marketing should be carried out. In addition, it is necessary to reinterpret the traditional tea house and inherit the spirit of tea.

중국소비자의 커피제품 추구편익이 한국 커피전문점 만족도와 애착 및 충성도에 미치는 영향에 관한 연구 - 한류태도 매개효과를 중심으로 - (The Effect of Chinese Customer Coffee Benefit Sought on Korean Coffee Shop Satisfaction, Attachment, and Loyalty - Based on Mediating Effect of Korean Wave Attitude -)

  • 본 연구의 목적은 중국소비자의 커피제품 추구 편익이 한국 커피전문점 만족도와 애착 및 충성도에 미치는 영향과 한류태도의 매개 효과를 검증하고자 하였다. 설문지는 2015년 3월 10일부터 6월 25일까지 중국 베이징, 상하이, 하얼빈 3개 도시에서 한국 커피전문점을 이용한 경험이 있는 고객을 대상으로 하였고, 280부 배부, 213부 회수, 200부를 분석에 이용하였다. 연구 결과는 다음과 같다. 첫째, 가설 1의 경우, 추구편익(기능 및 경험적 편익, 상징적 편익)은 한국 커피전문점 만족도에 유의한 영향을 미치는 것으로 나타나 채택되었다. 둘째, 가설 2는 한국 커피전문점 만족은 한류태도에 유의한 영향을 미치는 것으로 나타나 채택되었다. 셋째, 가설 3과 4는 중국소비자의 한류태도가 한국 커피전문점 애착과 충성도에 유의한 영향을 미치는 것으로 나타나 채택되었다. 넷째, 중국소비자의 한류태도는 한국 커피전문점 만족과 한국 커피전문점 애착 및 충성도 간에 매개 역할을 하는 것으로 나타나 채택되었다. 본 연구 결과를 통해 다음과 같은 시사점을 얻을 수 있다. 첫째, 매장에 들어서면서부터 드라마에서 보았던 한국의 분위기를 느낄 수 있도록 하는 인테리어, 한국의 맛을 느낄 수 있도록 하는 메뉴 구성, 교육을 통한 친절한 한국식 바리스타의 서비스 등을 경험하게 하는 것이 필요하다. 또한, 한국드라마 PPL 등을 활용한 적극적인 홍보를 펼친다면 경쟁 우위를 구축할 수 있을 것으로 사료된다. 둘째, 한국인 바리스타가 직접 커피를 만들어 서비스를 한다든지, 유명 바리스타들과 중국인 바리스타들 간의 커피 토크 콘서트 등을 개최하여 브랜드의 우수성을 알리는 것도 좋은 전략이다. 셋째, 홈페이지나 SNS를 통해 한국의 커피전문점을 방문해 볼 수 있는 이벤트를 기획하는 것이다. 본 연구를 통해 중국으로 진출하는 커피전문점 기업뿐만 아니라, 개인 커피전문점 경영자들이 중국 소비자들의 커피 제품에 대한 편익 속성을 정확히 인지하여 적합한 STP 전략을 구축하고, 한류를 활용하여 글로벌 기업과의 경쟁 속에서 지속적인 경쟁우위를 차지하는데 기여하고자 한다.

성별, 세대별 식생활 인식이 식품군별 섭취 빈도에 미치는 영향 (Effects of the Dietary Consciousness on Intake Frequency of Foods by Gender and Generations)

  • This study investigated the effects of dietary consciousness of gender and generation on food intake frequency in Daegu, Sangju, Kimchen and Gumi. There was a total of 359 subjects, which consisted of elementary students, college students, and adults. The survey period was from March to May 2011, and it was a self-questionnaire by convenience sampling. The results were as follows: 1. A 9 point scale on intake frequency of 59 kinds foods was classified into 17 groups. Gender had significant differences on intake frequency of meats, beans, root vegetables, tuber vegetables, fruit vegetables, mushrooms, nuts, liquors, and cola. Sixteen food groups, except for fats, showed significant differences in intake frequency by generation. 2. Dietary consciousness consisted of 15 items, and it was divided into nutritional consciousness and meal consciousness. Meal consciousness was significantly higher in females than in males, as well as college students and adults than in elementary students. 3. Nutritional consciousness had significant effects on intake frequencies of grains, leaf vegetables, root vegetables, fruit vegetables, milk and milk products, fat and fatty oils. Meal consciousness had effects on intake of grain, leaf vegetables, root vegetables, seaweeds, teas and coffee. 4. Meal consciousness of males had significant effects on intake frequencies of grains, leaf vegetables, root vegetables, seaweeds, teas, and coffee. Elementary students showed significant effects on grains, leaf vegetables, root vegetables and seaweeds.

LDA 알고리즘을 이용한 프랜차이즈 연구 동향에 대한 토픽모델링 분석 (Topic Modeling Analysis of Franchise Research Trends Using LDA Algorithm)

  • Purpose: This study aimed to derive clues for the franchise industry to overcome difficulties such as various legal regulations and social responsibility demands and to continuously develop by analyzing the research trends related to franchises published in Korea. Research design, data and methodology: As a result of searching for 'franchise' in ScienceON, abstracts were collected from papers published in domestic academic journals from 1994 to June 2021. Keywords were extracted from the abstracts of 1,110 valid papers, and after preprocessing, keyword analysis, TF-IDF analysis, and topic modeling using LDA algorithm, along with trend analysis of the top 20 words in TF-IDF by year group was carried out using the R-package. Results: As a result of keyword analysis, it was found that businesses and brands were the subjects of research related to franchises, and interest in service and satisfaction was considerable, and food and coffee were prominently studied as industries. As a result of TF-IDF calculation, it was found that brand, satisfaction, franchisor, and coffee were ranked at the top. As a result of LDA-based topic modeling, a total of 12 topics including "growth strategy" were derived and visualized with LDAvis. On the other hand, the areas of Topic 1 (growth strategy) and Topic 9 (organizational culture), Topic 4 (consumption experience) and Topic 6 (contribution and loyalty), Topic 7 (brand image) and Topic 10 (commercial area) overlap significantly. Finally, the trend analysis results for the top 20 keywords with high TF-IDF showed that 10 keywords such as quality, brand, food, and trust would be more utilized overall. Conclusions: Through the results of this study, the direction of interest in the franchise industry was confirmed, and it was found that it was necessary to find a clue for continuous growth through research in more diverse fields. And it was also considered an important finding to suggest a technique that can supplement the problems of topic trend analysis. Therefore, the results of this study show that researchers will gain significant insights from the perspectives related to the selection of research topics, and practitioners from the perspectives related to future franchise changes.
