바리스타의 윤리소비의식이 공정무역커피 판매에 미치는 영향 - 프랜차이즈 커피 전문점 바리스타를 중심으로 - (A Study on How Barista's Ethical-Consumption Consciousness Effects to Sale of Fair-Trading Coffee)

  • The coffee industry has grown very fast ever since international coffee brands were launched in the 1990's. Recently, consumers have begun to focus on coffee produced ethically. This phenomenon is due to ethical-consumption consciousness, which consists of three factors, emotional value, social value and function value. Most studies on this topic have focused on consumers who purchase fair-trade coffee. Thus, this study is novel in its focus on baristas who sell fairtrade coffee in their shops as well as differences from former studies. The three factors of ethical-consumption consciousness of baristas affected the sale of fair-trade coffee, except for the function value. Therefore, the sale of fair-trade coffee could be influenced by ethical-consumption consciousness of baristas. This study shows that education of baristas can promote the sale of fair-trade coffee. However, there are limitations as it only researched coffee brands ranked in the top 5, so further studies will be required in the future.

카페인 함유제품의 카페인 함량 및 소비형태에 관한 연구 (Amount of caffeine in caffeine containing products, and the pattern of caffeine consumption)

  • The contents of caffeine in caffeine containing products in Korea, i.e., coffee. tea, cocoa and cola, and the individual pattern of consumption of caffeine containing beverages were studied to know the pattern of caffeine consumption. The correlation in between the amount of caffeine consumption and the obesity were also investigated. In results, the average contents of caffeine in the instant coffee was $31.8\pm4.4mg/g(mean{\pm}SD)$. The amount of caffeine in coffee were $68.2\pm13.0\;mg/cup$ in the vending machine coffee, and $76.6\pm12.1\;mg/cup$ in the coffee shop coffee. Average daily caffeine consumption per person was investigated to be 128mg with the wide range of 26mg-341mg. There was no correlation in the amount of daily caffeine consumption and the obesity.

성인 남녀에서 3-in-1 커피 섭취량에 따른 대사적 지표 평가 : 2012~2015 국민 건강영양조사 자료를 이용하여 (3-in-1 coffee consumption is associated with metabolic factors in adults: Based on 2012~2015 Korea National Health and Nutrition Examination Survey)

  • 본 연구는 2012~2015년 국가 단위 대규모 데이터를 활용하여, 성인 남녀를 대상으로 연령대 (19~39세, 40~64세)로 구분 후 식생활 중 차지하는 비중이 높은 커피의 섭취 종류 및 섭취량 (정량적 식품섭취빈도조사 자료 활용)에 따른 일반사항, 영양소 섭취 상태, 대사적 지표 및 대사증후군 위험률에 대해 분석하였으며, 그 결과는 다음과 같다. 남성과 여성에서 모두 교육수준이 높을수록 블랙 커피를 섭취하는 비율이 높게 나타났으며, 현재 흡연자 비율은 3-in-1 커피를 1일 2잔 초과하여 섭취하는 군에서 높게 나타났다. 또한 열량 섭취량 및 영양소 섭취 밀도 분석 결과, 열량 섭취량의 경우 블랙 커피 섭취군에 비해 하루에 2회 초과 3-in-1 커피 섭취군에서 높은 결과를 보였으며, 40~64세 성인 남녀의 경우 3-in-1 커피의 섭취가 1일 2잔 초과하는 군에서 식이섬유소, 나이아신, 비타민 C, 칼슘, 인 및 칼륨과 같은 미량영양소의 섭취 밀도가 낮은 결과를 보였다. 40~64세 남성의 경우 3-in-1 커피를 1일 2잔 초과하여 마시는 경우 교란인자 보정 후 대사증후군 odds ratio가 2.03(95% CI 1.13~3.64)으로 나타나 40~64세 남성에서 3-in-1 커피의 섭취 증가는 블랙 커피 섭취에 비해 대사증후군 위험과 관련이 있다는 결론을 얻을 수 있었다. 이와 같은 결과는 성별과 특정 연령대에서 3-in-1 커피의 섭취 정도와 대사증후군 위험도와의 관련성을 제안할 수 있는 근거자료가 될 수 있을 것으로 사료된다.

세계 커피시장의 소비실태 및 수출입 동향 비교 분석 고찰 - 한국.미국.일본 시장을 중심으로 - (The Analysis toward Consumption State, Import and Export in the World Coffee Market - The Case of Korea, U.S.A., Japan Market -)

  • This research is to make an attempt the analysis award consumption state, import and export in the world coffee market. This research results were as follows. First, The result of the analysis of Korea coffee market, imports of green bean were 1,316,000 bags from export countries in 2000. Re-exports of processed coffee were 71,000 bags in 2000. Main suppliers were Brazil, Viet Nam, Honduras, Colombia, Indonesia. Second, The result of the analysis of United State coffee market, imports of all forms of coffee were 19.29 million bags. Main suppliers were Brazil(15%), Viet Nam(15%), Colombia(17%) etc. Third, The result of the analysis of Japan market, imports of green beans were 6.37million bags in 2001. Re-exports of processed coffee were 166.000million bags. Consumption per head in 2001 was about 3.5 kg and Japanese coffee consumer now drink on average 11.0 cups per week.

커피 소비와 생활습관 및 영양밀도의 관련성 (Correlation of Coffee Consumption, Lifestyle, and Nutrient Density)

  • This study evaluated the nutrient intake with increasing coffee consumption for 403 adults aged over 30 years in Korea. The 403 subjects were national health screening examinees, who visited Sahmyook Seoul Hospital's Comprehensive Check-up Center between 2017.11.01 and 2018.12.18. The subjects were asked to answer questionnaires covering a 24-hour recall fluid and dietary intake before the health examination. The research ethics council of Sahmyook University (2-7001793-AB-N-012019036HR) approved this study. Coffee consumption exceeding two servings daily was more likely in males, in those aged between 30 and 40 years, and in the smoking, drinking, non-exercise, non-breakfast groups compared to each counterpart. The correlation between the coffee consumption frequency and current nutrient density showed negative correlations in most micronutrients. The mean nutrient density decreased gradually with increasing coffee consumption (<1 serving daily, ${\leq}1{\sim}2$ servings daily, >2 servings daily) in the ANOVA analysis. Therefore, the progressive adverse health effects of excessive coffee consumption needs to be researched further, and a daily total caffeine limit should be suggested in education of the nation levels.

Association of coffee consumption with type 2 diabetes and glycemic traits: a Mendelian randomization study

  • BACKGROUND/OBJECTIVES: Habitual coffee consumption was inversely associated with type 2 diabetes (T2D) and hyperglycemia in observational studies, but the causality of the association remains uncertain. This study tested a causal association of genetically predicted coffee consumption with T2D using the Mendelian randomization (MR) method. SUBJECTS/METHODS: We used five single-nucleotide polymorphisms (SNPs) as instrumental variables (IVs) associated with habitual coffee consumption in a previous genome-wide association study among Koreans. We analyzed the associations between IVs and T2D, fasting blood glucose (FBG), 2h-postprandial glucose (2h-PG), and glycated haemoglobin (HbA1C) levels. The MR results were further evaluated by standard sensitivity tests for possible pleiotropism. RESULTS: MR analysis revealed that increased genetically predicted coffee consumption was associated with a reduced prevalence of T2D; ORs per one-unit increment of log-transformed cup per day of coffee consumption ranged from 0.75 (0.62-0.90) for the weighted mode-based method to 0.79 (0.62-0.99) for Wald ratio estimator. We also used the inverse-variance-weighted method, weighted median-based method, MR-Egger method, and MR-PRESSO method. Similarly, genetically predicted coffee consumption was inversely associated with FBG and 2h-PG levels but not with HbA1c. Sensitivity measures gave similar results without evidence of pleiotropy. CONCLUSIONS: A genetic predisposition to habitual coffee consumption was inversely associated with T2D prevalence and lower levels of FBG and 2h-PG profiles. Our study warrants further exploration.

  • COVID-19는 커피산업에도 영향을 주고 있다. 이에 새로운 소비 트렌드인 언택트 소비가 증가하고 있으며 언택트 소비를 대표하는 온라인 채널과 배달 어플리케이션을 활용한 소비가 일상화되고 있다. 커피산업에서도 최소한의 접촉만으로 주문이 가능한 드라이브스루, 스마트오더 시스템을 갖춘 커피전문점의 이용이 증가하고 있다. 그러나 언택트 서비스의 대부분이 프랜차이즈에서 선점하고 있는 반면, 개인 커피전문점에서는 차별화된 서비스로 고객과 소통하며 직접서비스를 제공하는 매장들이 많다. COVID-19 감염의 장기화와 함께 전염병으로부터 자유로울 수 없는 현시대의 커피전문점에서는 배달서비스에 대한 고민을 하지 않을 수 없다. 이에 본 연구는 커피배달 서비스에 영향을 미치는 요소들을 분석하였다. 연구결과 COVID-19의 영향으로 커피배달 서비스와 함께 정기배달 서비스 또한 증가하였다. 커피를 다양한 방법으로 즐기고자 하는 소비자들의 홈 카페 이용 증가로 정기배달 서비스가 커피배달 서비스에 중심적인 역할을 하게 될 것이다.

커피의 소비동기와 향후 소비의도에 관한 연구 (The Effect of Coffee Consumption Motivation on the Future Coffee Consumption Intentions)

  • 우리나라 사람들의 커피에 대한 소비는 급격하게 증가해왔고 지금은 모든 연령대에서 개인의 취향에 따른 커피를 즐기는 문화가 자리잡아가고 있다. 그래서 소비자의 연령층, 기호도, 만족도에 따른 마케팅 전략이 필수인 시점이 되었다. 커피가 건강에 도움이 되는지 아니면 안 좋은지에 대한 논의는 계속되고 있지만 카페인이 주는 각성과 커피를 마실 때의 심신의 안정과 마음의 여유는 부정할 수 없는 커피가 주는 즐거움이다. 본 연구에서는 커피를 소비하는 동기를 요인 분석한 결과 웰빙소비동기, 기분전환동기, 사회적 소비동기, 습관적 소비동기, 정서적 소비동기 등의 5가지 요인으로 분류하였다. 또한 이에 따른 사람들의 소비의도 요인 분석은 정신건강적 소비의도, 중독적 소비의도, 부작용 극복 소비의도, 가격적 소비의도, 사회심리적 소비의도 등의 5가지 유형으로 분류하였다. 본 연구의 조사대상은 서울시와 경기도에 거주하는 20세 이상의 성인들을 대상으로 2013년 1월 3일부터 2월 5일까지 설문조사를 실시하였다. 총 500부의 설문지를 배부하여 450부가 회수되었고, 이들 중 설문의 응답이 불성실한 22부를 제외한 428부를 최종분석에 사용하였다. 자료의 통계처리는 SPSS Win Ver 18.0 버전을 사용하여 타당성분석, 요인분석, 신뢰성분성, 군집분석, 일원분산분석(One-Way ANOVA), 다중회귀분석 등을 실시하였다. 주요 연구가설은 다음과 같다. 첫째, 커피소비동기는 소비의도에 영향을 미칠 것이다. 둘째, 인구통계적 특성에 따라 커피소비의도의 차이가 있을 것이다. 연구결과에서 커피소비동기는 커피소비의도에 부분적으로 영향을 미치는 것으로 나타났고, 공통적으로 영향을 미치는 요인은 정서적 동기로 나타났다. 인구통계적 특성에 따른 커피소비동기 차이분석과 커피소비의도 차이분석 모두에서 연령, 직업, 학력, 및, 월평균 소득에 따라 차이가 나타났다. 사람들의 커피소비유형은 기존의 알려진 사람들의 맛 추구나 커피전문점 속성선택 결과와는 달리 인체에 미치는 건강과 효능에 관련된 요인과 정서적 안정요인이 더 높았다.

공정무역 커피에 대한 소비가치가 브랜드 태도와 구매의도에 미치는 영향 (Effects of Brand Attitude and Purchase Intention on Consumption Values of Fair Trade Coffee)

  • When purchasing products or services, consumers tend to purchase multiple value attributes through the acquisition of a product rather than physical characteristics. This study empirically analyzed the relations between consumption value, brand attitude, and purchase intention of customers purchasing fair-trade coffee, by dividing consumption values that would have significant effects on consumers' actual purchase behavior into five levels. Among the consumption value factors of customers purchasing fair-trade coffee, the functional value, social value, emotional value, and rare value all had significant effects on brand attitude and purchase intention while the influence of situational value on brand attitude and purchase intention was not verified. These finding are partially concordant with those of preceding studies, and the consumption value of consumers purchasing fair-trade coffee has positive effects on purchase behavior; therefore, it would be necessary for companies selling fair-trade products to understand consumers' specific values. Moreover, analysis of the influence of brand attitude on purchase intention of customers purchasing fair-trade coffee revealed that purchase intention increased when brand attitude was higher. These finding indicate that it is necessary to identify measures to increase purchase intention by targeting consumer groups with high brand attitude with intensive promotions.

여대생의 커피 섭취량에 따른 영양섭취 및 식사의 질 평가 (A Study Evaluating Nutrient Intake and Diet Quality in Female College Students According to Coffee Consumption)

  • The purpose of this study was to assess nutrient intake and dietary quality in female college students according to their coffee consumption. The survey was conducted through questionnaires and 3-day dietary records with 353 students. The subjects were divided into three groups: students who didn't consume coffee (non-coffee group, N=119), students who consumed <250 ml coffee (light-coffee group, N=140), and students who consumed ${\geq}$250 ml coffee (moderate-coffee group, N=94). There were no significant differences in age, weight, height, and BMI among the three groups. The mean daily energy intake was 1800.8 kcal in the non-coffee group, 1724.9 kcal in the light-coffee group, and 1729.7 kcal in the moderate-coffee group. The moderate-coffee group consumed a significantly higher amount of alcohol than the light-coffee group (p<0.05). The average intakes of dietary fiber, vitamin A, ${\beta}$-carotene, and folate in the non-coffee group were significantly higher than those in the light-coffee and moderate-coffee groups. Indexes of Nutritional Quality (INQ) for vitamin A, niacin, and vitamin B6 were significantly higher in the non-coffee group than in the light-coffee group. Also the non-coffee group consumed a significantly higher amount of vegetables compared to the light-coffee group. There was no significant difference in the Dietary Diversity Scores (DDS) among the three groups. These results suggest that coffee consumption affects food and nutrient intake in female college students.
