Effects of Rice Bran Fiber on Changes in the Quality Characteristics of Raw Ground Pork during Chilled Storage

  • Ground pork containing 0, 1, 2, or 3% rice bran fiber was prepared. pH increased as the amount of rice bran fiber added increased (p<0.05) but decreased during storage. The lightness and redness values of the raw ground pork decreased with the addition of rice bran fiber, and ground pork containing 3% rice bran fiber had the highest yellowness value during early storage (p<0.05). Moreover, adding rice bran fiber was not associated with color stability during storage. Samples containing 2 or 3% rice bran fiber had improved cooking loss, hardness, gumminess, and chewiness. Furthermore, rice bran fiber enhanced tenderness, juiciness, and overall acceptability on a sensory evaluation. These physico-chemical properties were maintained to the final storage period. The best results were obtained with ground pork containing 2 or 3% rice bran fiber. Rice bran fiber combined with useful antioxidants may be a more effective approach to increase the stability of ground pork during cold storage.

Changes in the Physicochemical Properties of the Muscles from Low-Fat Pork Cuts during Chilled Storage (냉장저장 중 돼지 저지방 부위 근육들의 이화학적 특성 변화)

  • This study was conducted to investigate the changes in the physicochemical properties of five muscles from low-fat pork cuts during storage at $4^{\circ}C$ for 14d. As the chilled-storage time increased, the moisture and fat contents and the pH of the muscles did not significantly (p>0.05) change, but the water-holding capacity of the supraspinatus, semitendinosus, and longissimus dorsi muscles significantly (p<0.05) improved. The purge loss of the five muscles significantly (p<0.05) increased with the increase in the storage time, but their cooking loss and hardness did not significantly (p>0.05) change as the chilled-storage time increased. It can be seen from these results that the physicochemical properties of the five muscles do not changes greatly during the 14-day cold storage. Therefore, it is possible to distribute such five pork muscles to fresh-pork-meat retail stores or shops without meat quality degradation.

Effect of Soy Protein Hydrolysates Prepared by Subcritical Water Processing on the Physicochemical Properties of Pork Patty during Chilled Storage

  • The present study was carried out to investigate the effects of soy protein hydrolysates (SPHs) addition on the quality characteristics of pork patties. The SPHs was prepared by subcritical water process (SWP) at 180℃ without holding time and mixed with the pork patty components at varying concentrations (0-3%), and the patties were stored at 4℃ for 14 d. As quality parameters, instrumental color, thiobarbituric acid-reactive substances (TBARS), pH, water holding capacity (WHC) and shear force were measured at the end of storage. Regardless of SPHs concentration, the addition of SPHs significantly manifested low L* and high a* values compared to those of untreated control (p<0.05). For b* value, addition of SPHs in the 0.5-1.5% was unaffected, while >2.0% of SPHs caused significantly lower b* than control (p<0.05). The color changes in pork patties with and without SPHs were also identified in visual appearance where the pork patties containing 0.5-2.0% showed bright red color which was comparable to brownish color of control and patties containing >2.5% SPHs. Lipid oxidation was delayed by the addition of 0.5-1.5% SPHs, while it was accelerated by the addition of 3% SPHs. The pH of patties increased with increasing concentration of SPHs, whereas there were no significant differences in WHC and shear force of patties. Consequently, the results indicated that the addition of 0.5-1.5% SPHs had a potential advantage in suppressing oxidative deterioration of fat-containing meat products during chilled storage.

Studies on the Thermal Stability of Free Drip Released from PSE Pork Muscle (PSE돈육 드립의 열안정성에 관한 연구)

  • The objective of this study was to investigate the characteristics on the thermal denaturation of free drip released from pork loin during chilled storage using DSC(differential scanning calorimetry). DSC thermogram of drip released from normal pork(NORD) was characterized by a minor peak and two major peaks with temperature maxima at $61.5^{\circ}C$, $71.7^{\circ}C$ (associated with sarcoplasmic proteins) and $84.3^{\circ}C$ (associated with protein-protein interaction and aggregation). In the denaturation temperature of drip released from PSE pork (PSED), the peak(Tmax) at $59.0^{\circ}C$ was reduced by $2.5^{\circ}C$. When the thermograms were divided into segments correponding to the three peaks, $\Delta$H2 was shown to be reduced by 10% in PSED as compared to NORD. With the decrease in the solubility of sarcoplasmic proteins in PSE muscle, there was a corresponding increase the drip loss during the storage.

Effect of Gamma Irradiation on Shelf Life of Pork Loin (감마선 조사가 돈육의 저장성에 미치는 영향)

  • Microbial populations (total bacteria, lactic acid bacteria and coliforms), TBA, VBN and POV were investigated for evaluating the shelf life of pork loins gamma-irradiated at doses of 1, 3, 5 and 10 kGy with air-contained and vacuum-packaged methods. The initial microbial populations decreased with gamma irradiation depending upon the dose and microorganisms in the vacuum-packaged samples were inhibited more than those in the air-contained samples. POV, TBA and VBN values were higher in the air-contained samples than in the vacuum-packaged samples. In conclusion, the combination of gamma-irradiation and vacuum-packaging could extend the shelf life of chilled pork loin.

  • To evaluate the sensory characteristics of domestic or imported chilled and frozen pork butts, six samples were purchased and investigated. Sixty panels of sensory evaluation were consisted of six groups by sex and age. In the appearance test, many panels preferred the domestic frozen butt A obtained good scores in fat color and fat attachment (p<0.001). In the age group, the 20's consumer preferred the domestic chilled pork butt of A company, whereas the 30's and 40's consumers preferred the imported frozen butt of A company. According to the results from the triangle test, the combinations of domestic frozen butt B and imported frozen butt A was the most significantly distinguished among the pairs of raw and cooked butts.

  • This study was conducted to investigate the changes in haem pigments, peroxide value, TBARS, free fatty acid contents and fatty acid composition of five muscles from low fat pork cuts during storage at $4^{\circ}C$ for 14 d. The myoglobin contents (Oxy, Met and Total) did not change significantly (p>0.05) as storage time increased. In addition, the peroxide value did not change significantly (p>0.05), but the thiobarbituric acid reactive substances were significantly (p<0.05) upregulated during chilled storage. The total free fatty acid contents of the longissimus dorsi muscle were significantly (p<0.05) upregulated, but the saturated, unsaturated, mono-unsaturated and poly-unsaturated fatty acid composition of the muscles did not change significantly (p>0.05) during chilled storage.

Effects of Wrap and Vacuum Packaging on Shelf Life of Chilled Pork (랩포장과 진공포장이 냉장돈육의 저장성에 미치는 영향)

  • 랩포장 및 진공포장이 냉장 돈육이 저장성에 미치는 영향을 조사하기 위해 돈육의 등심부의를 랩포장 및 진공포장한 후 냉장저장하면서 저장기간에 따른 세균수,휘발성 염기질소, pH, 보수력 드립감량, 가열감량 및 경도의 변화를 측정하였다. 랩포장의 경우 일반세균수는 저장 10일에 2.0$\times$$10^{7}$ CGU/㎤의 수준에 달하였고, 휘발성 염기질소 함량은 저장 15d일에 26mg%로서 식육의 부패수준인 20mg%를 초과하였으며 , pH는 저장 7일 이후 급속하게 증가되어 저장 10일에 5.98의 수준이었다. 반면에 진공포장의 경우에는 일반세균수가 저장 30일에 7.7$\times$$10^{6}$ CGU/㎤의수준에 달하였고, 휘발성 염기질소 함량은 저장 30일에 19.8mg%로서 부패수준인 20mg%에 근접하였으며, pH는 저장기간이 경과됨에 따라 매우 완만하게 증가되어 저장 30일에 pH5.75의 수준이었다. 보수력은 저장 1일에는두 시험구가 75.0%의 수준으로 비슷하였으나, 저장기간이 경과됨에 따라 랩포장이 진공포장에 비해 급속하게 증가되었다. 드립감량과 가열감량은 저장초기인 저장 7일까지는 진공포장이 랩포장에 비해 다소 높은 수준이었으나 그 이후에는 랩 포장이 높은 수준이었다. 경도는 두 시험구 모두 저장 1일에 가장 높았고, 저장 기간이 경과됨에 따라 점차 저하되었으며, 랩포장에 비해 전공포장이 비교적 완만하게 저하되었다.

The New Storage Technology: Effect of Far Infrared Ray (FIR) Ceramic Sheet Package on Storage Quality of Pork Loin

  • A total of 30 pork loin sections were utilized to evaluate the effects of FIR ceramic sheet in PE and vacuum package on preserving the quality of chilled pork stored at 4 and $0^{\circ}C$. Based on meat color, results indicated that pork loin packaged in ceramic sheet and control treatment showed that the samples of the control treatment tended to darken gradually in comparison with the samples at 0 day, but FIR treatment had few changes. Among the total plate counts of sliced loin in PE and loin in vacuum package under different storage times at 4 and $0^{\circ}C$, results showed that FIR ceramic sheet package treatment had lower total plate counts and significant differences (p<0.05). In VBN value, both treatments tended to rise high with the increasing of storage time, but the FIR treatment was significantly lower (p<0.05) than the control treatment. Its results had a corresponding relationship with the total plate counts. Regarding the drip loss of sliced loin in PE and loin in vacuum package, it showed that FIR ceramic sheet package treatment had lower drip loss and significant differences (p<0.01). These results showed that the use of FIR ceramic sheet package, including PE and vacuum package, is an effective method of maintaining the quality of meat.
