서울시내 유아기 어린이의 간식실태 및 기호도에 대한 조사 연구 (Analysis of Research on Snack Preference of the preschool Children in Seoul)

  • This study estimate the amount of snack intake of 290 children from ages 3 to 6 living in Seoul, to provide some basic information for a nutrition education program for the promotion of health. Average height and weight of the children were 110.5cm and 19.7kg, respectively. Their body mass indes was 16.2kg/$m^2$ and obesity indesx was 6.5% Calorie intake from snacks was 294kcal, and protein, fat, carbohydrate were 11.3g, 9.3g and 40.6g, respectively. The 117(40.3%) boys prefered boiled-eggs and 112(38.6%) girls prefered fruits. The 133(45.9%) mothers of the children were in their thirties, and 123(42.4%) of them had a college degree. One hundred and thirty one(45.2%) mothers were house keepers, and they had been givins snacks to their children 1 or 2 times daily(245, 84.5%) The daily snack budget was 1,500 won(109, 37.6%). The person who served the snack was a mother(141, 48.6%). As a result, snack intake of pre-school children showed very good but partially showed a potential problem. We hope that the results of this study can be helpful for the nutrition education program for the health and nutrition of pre-school children.

창원지역 일부 비만아의 식습관과 식행동 및 영양지식에 대한 조사연구 ( 1 ) (A Study Food Habits , Food Behaviors and Nutrition Knowledge among Obese Children in Changwon ( 1 ))

  • The purpose of this study was to obtain basic data of nutrition education for obese children and to examine food habits, food behaviors, and nutrition knowledge. A convenience sample of 84(male:62, female:22) obese children was selected from "98 Children Nutrition Camp". The survey design employed a structured questionnaire. The results of this study were summarized as follows. 1. The percentage of the subjects who overestimated their body weight was higher in female compared to male. Only 35.9% of highly-obese subjects considered them as 'very fat'. The experience of weight control was higher in female than in male, and it was also higher moderately- or highly-obese subjects compared to mildly obese. 2. 64.3% of subjects reported that they regularly eat breakfast. The percentage of the subjects who indicated that they eat at regular meal time or they eat very irregularly was highest in the highly-obese subjects. 3. 34.5% of subjects reported that they eat very fast. The eating speed was slower in female compared to male, and in obese subjects. 55.4% of subjects reported that didn't eating out. 4. 80.9% of subjects had snacks, and most of them had snack between lunch and dinner. The reason the subjects eat snack was hunger. The most favorite snack was cookies. 5. The most preferred and distasteful food was meats(32.1%) and vegetables(67.1%), respectively. 6. The score of food behaviors was relatively low in most subjects. 7. The level of nutrition knowledge was in order of fair(83.1%), poor(9.6%), excellent(7.3%), and was higher in male compared to female. Consequently the results of this study showed to disagreement among food habits, food behaviors and nutrition knowledge, and feel keenly the necessity of education connecting of these. This education had to be practical education to change food behaviors.

초등학생의 식생활관리 태도에 따른 식품구매 행동 및 식생활 소비자능력 비교 (The Comparisons of Elementary School Children's Food Purchasing and Consumer Competency for a Healthier Diet by Their Attitude toward the Meal Management)

  • In this study elementary school children's food purchasing and consumer competency for a healthier diet were compared by their attitude toward the meal management. The subjects were 779 sixth grade elementary school children (417 boys and 362 girls) in Busan. They were classified into three groups: 'High' was composed of 226 subjects who had more than the mean +1/2 SD of attitude toward the meal management; 'Medium' was composed of 343 subjects who had the mean ${\pm}1/2$SD; and 'Low' was composed of 210 subjects who had the less than the mean -1/2 SD. The results were as follows. The high group had less pocket money than the low group, and thought that their allowances were adequate to their needs. They also had a habit of entering amounts into an account book. The children in the low group purchased mostly snacks without making or practicing a budget. The high group purchased yogurt, fruit, or bread as snacks more frequently than the low group. More children checked the nutrient facts on the package in high group than in the low group. There were no significant differences in the consumer's knowledge of a healthy diet among the groups; but there were significant differences in the consumer's skill, and the consumer's attitude toward a healthy diet among the groups. The high group had higher skills and more positive attitudes than the low group. This research suggests that education can elevate interest and can help develop more positive attitudes toward healthy diets among children. The education can help them to develop planned food purchasing habits, and improve their consumer competency for a healthy diet.

영양교육 체중조절 프로그램을 통한 비만 아동의 비만도, 영양지식, 식습관 및 영양소섭취의 변화 (Changes in the Obesity Index, Nutritional Knowledge, Food Habits and Nutrient Intakes in Obese Children after a Weight Control Program of Nutritional Education)

  • This study was conducted to investigate the change in the anthropometric values, biochemical index, nutritional knowledge, food habits and nutrient intakes in obese children after a weight control program. The subjects of the study were 22 obese children with an obesity index over 120%. The children that participated in this study took nutritional education for weight control along with exercise once a week. The weight control program was conducted for 10 weeks. The BMI, WHR (Waist-Hip ratio), body fat (%) significantly decreased at the end of the weight control program. Total cholesterol and LDL cholesterol were also significantly decreased. The nutritional knowledge scores and knowledge score about obesity were slightly improved. Energy intake significantly decreased from 1768 to 1421 kcal. Intake of Ca, Na, K, vitamin A, vitamin $B_6$, vitamin C and folate increased, while intakes of P, Zn, vitamin $B_1$, vitamin $B_2$, vitamin E and niacin decreased. The distribution of energy intake was significantly changed for the better. The percent fat consumed decreased from 26.5 to 19.7%. In addition, the distribution of energy intake in the meals was changed, where the percent calories consumed during lunch significantly increased from 31.4 to 40.1% and the calorie percentage consumed from snacks significantly decreased from 17.6 to 10.7%. In conclusion, the nutritional education in the weight control program, which was conducted for 10 weeks, was effective in improving the anthropometric values, biochemical index and nutrient intake although nutrition knowledge and eating behaviors only changed slightly. Thus, nutritional weight control programs for obese children should be continuously provided under the proper cooperation of a nutritional teacher at elementary schools.

음식모형을 활용한 어린이 식생활 교육 매체 개발 (Development of Food Replicas as Dietary Education Materials for Children)

  • The purpose of this study was to develop children-friendly education materials based on food replicas for the dietary education of lower grade elementary students. Through a literature review on current dietary problems and dietary education for children, five education themes were chosen: balanced diet, seasonal food, traditional food, noodle culture, and making instant noodles. A total of 304 key food items for food replicas were selected based on the themes: six basic food groups (113 items), balanced meals (37 items), dietary habits (74 items), spring foods (13 items), summer foods (17 items), autumn foods (16 items), winter foods (11 items), Korean traditional foods (52 items), Korean native noodles (18 items), noodles from foreign countries (19 items), and making instant noodles (46 items). Next, a food replica database was developed consisting of name of the food, picture, size, ingredient, recipe, reference, and attached code. Powerpoint slides and teaching plans for all education themes were developed utilizing the food replicas in order to raise interest and understanding of serving size and intake amount. This research provides a basis for the development of food replicas as effective dietary education materials for elementary students and their use in extra-curricular activities, after school programs, community health centers, or food companies.

미취학 아동의 영양교육을 위한 멀티미디어 개발에 관한 연구 (The Development of Multimedia Nutrition Education Program for Preschoolers)

  • The purpose of this study was to design an interactive multimedia nutrition education program for preschoolers. Computer technology provides the opportunity to explore new and creative methods of delivering nutrition education to pre-schoolers. If this method is effective, more preschoolers can be reached with accurate and consistent nutrition education with less time and teaching staff. This program is a computer-based multimedia nutrition education program for pre-schoolers based on the Dick and Carey (Dick & Carey 2001) model of instructional design which includes analysis, design, development, and evaluation. The overall instructional goal was based on the needs of the target population. The needs assessment was a self-administered survey distributed to 1,426 parents of preschoolers, focusing on the need for preschoolers' nutrition education. The results of the survey indicated that parents wanted their children to learn reasons for eating nutritious food. Therefore, a program titled 'Nutrition Exploration' was developed with the instructional goal of teaching preschoolers the 5 Food Groups. To achieve this goal, the preschoolers were engaged in a game. They could earn colored jewels by completing the game in five sessions. The story line was that people living in a peaceful kingdom become sick after they lose the jewels. The learner takes an adventurous journey through five different countries to retrieve the jewels. These countries are 'Giwoon nahrah' (foods containing carbohydrates, such as rice and potatoes), 'Sangsang nahrah' (foods that are rich in vitamins and minerals, such as vegetables and fruits), 'Sooksook nahrah' (calcium-con-taming products such as milk), 'Teunteun nahrah' (protein-containing foods such as meat and fish) , and 'Gakeum nahrah' (products with high sugar and fat content, such as instant foods and soda). The learner who obtains five jewels in five different countries can save the kingdom. For the program to be effective and efficient, the multimedia had to be easy for the preschooler to enter, use, and exit. The verbal instructions enhanced child autonomy, and the program was developmentally appropriate so that the young child could easily manipulate the software. This research provides the basis for the continued development of computer-based nutrition education materials.

비만아동을 위한 체중조절 프로그램의 효과 (The Effects of Body Weight Control Program for Obese Children)

  • The purpose of this study was to investigate the effects of body weight control program for obese children. The program included nutrition education, exercise and behavioral therapy for 20 weekly sessions. The results from this study were as follows. The average age of the subjects was 11.3 years, mean height and weight were 146.12cm and 59.42kg respectively. After weight control preogram, Rohrer index(Rl) was significantly decreased from 186.78 to 182.72(p<0.001). There were not significant differences in body fat percent(%) and fat weight(kg) but it showed decreased pattern. In the change of body circumferences, chest circumference was significantly increased(p<0.01) and mid-arm circumference was significantly decreased(p<0.001) after weight control program. Triglyceride(TG) level in serum was significantly decreased from 113.79 to 80.36(p<0.01) and total cholesterol and LDL-cholesterol level showed declind pattern. The food habits of obese children significantly improved(p<0.001) after weight control prgram. And there were desirable changes of food attitude, excercise and life habits. These results suggest that weight control program including nutrition education, exercise and behavioral therapy may be effective for helping obese children.

자폐범주성장애 아동의 나이에 따른 식행동 및 식품 기호도와 학부모의 영양교육 요구도 (Dietary Behavior and Food Preferences according to Age and the Parents' Nutrition Education Needs of Children with Autism Spectrum Disorder)

  • This study examined the eating habits and preferences of foods according to the age of children with autism spectrum disorders and identified the nutritional needs of parents to support their healthy eating habits and provide basic data for the development of educational programs. A survey of 100 parents of children with autism spectrum disorders was conducted on their children's snack intake, food preferences, and parents' nutrition education needs. As a result, there were four times more boys than girls, and the body mass index differed according to age (p<0.001). Most children ate snacks more than once a day, and parents found that they wanted to develop nutritious snacks that could replace high-protein, low-calorie meals with the minimal use of additives. For the food preference, there was a significant difference in grains and starches, vegetables/seafood and fruits, milk and dairy products (p<0.05), fats and sugars, and Korean fermented pastes (p<0.01) between the two age groups. Regarding whether nutrition education was required, many parents had a high demand for nutrition education (4.24±0.70), and the intention to participate was 3.62±1.09. The most important content to be dealt with in parent education was 'Inducing a change in bad eating habits and behaviors', which was the highest (63%), and mostly face-to-face education was preferred. In conclusion, young children require diet education, and older children need to focus on weight control and obesity.

  • The purpose of this study is to evaluate the effectiveness of hygiene and nutritional management and education in the kitchen for youth facilities registered at the center. For this purpose, hygiene and nutrition management checklist scores, satisfaction and participation rates for each training, and diet use rate were checked on a quarterly basis. Hygiene and nutrition management scores increased every quarter, with the average score in the fourth quarter reaching 89.9 points. The participation rate in youth education was high at 86.4%, and both youth and staff education showed a satisfaction rating of 4.8 points. The usage rate of the adolescent diet was 65.4%. Based on the research results, the effectiveness of visiting guidance and education was confirmed, and future direction of center operation was suggested.

경주지역 유치원 아동들의 식습관과 영양소 섭취상태 (The Status of Eating Habits and Nutrient Intakes of Preschool Children in Kyungjoo)

  • The purpose of this study is to estimate the nutrient intakes and food habits among preschool children in Kyungjoo city. The subjects were 210 preschool children, aged 4 - 6 years. Measurements of the weight, height, chest circumference, and head circumference of the children were conducted. And general home environment and factors related to eating habits for preschool children were collected using a questionnaire that included information about family income, parents' education and occupations. The average weight-length index (WLI) for the subjects was $103.9\%$. Using the WLI, $20.0\%$ of the preschool children were underweight, $48.6\%$ were normal, $19.0\%$ were overweight, and $12.3\%$ were obese. On the R$\ddot{o}$hrer index, $13.8\%$ of the preschool children were underweight, $38.5\%$ were normal, and $47.7\%$ were over weight or obese. The average daily intake ($\%$ of RDA) of energy and each nutrient was 1323.5 kcal ($81.3\%$), Ca 484.3 mg ($80.7\%$), Fe 7.05 mg ($88.1\%$), vitamin A 420.0 RE ($105\%$), vitamin $B_{2}$ 0.76 mg ($95.0\%$), vitamin $B_{2}$ 0.87 mg ($87.0\%$), and vitamin C 53.1 mg ($106.2\%$) , respectively. In particular, older subjects had lower intake in RDA $%$ of calcium and iron. The energy intake ratio from snacks was much higher than the recommended level of the preschool children. With regard to frequency of regularity of breakfast, $1.9\%$ of preschool children skipped every morning and $7.6\%$ of the children skipped more than 5 per week. With regard to the intake frequency of vegetables, fruits, complex carbohydrates, and milk, $13.3\%$, $19.9\%$, $22.8\%$, and $41.8\%$ of the children ate more than 5 times per week. The eating habit score was positively correlated (r = 0.18, P < 0.05) with household income. This study suggests that nutrition education to increase fruit and vegetable consumption for preschool children should be emphasized. Also a nutrition education program is needed to enhance consuming calcium and iron intake for adequate growth.
