부산지역 지역아동센터의 운영주체별 급식 실태 (Food Service Status at Community Child Care Centers in Busan)

  • The purpose of this study was to investigate the food service status of community child care centers in Busan. A survey was conducted from November 1, 2012 to November 30, 2012 using questionnaires. Overall, 66.7% of the community child care centers had a separate dining room. The satisfaction score of the kitchen facility was 4.32 and the satisfaction degree of the dining place was 3.95. Most of the community child care centers were not managed by professionals and the food service was in a relatively poor status. In 61.3% of the community child care centers, the director of the center purchased the foodstuffs. In addition, approximately 72% of the child care centers directly purchased foodstuffs. When preparing meals, nutrition (73.0%), cost (13.5%), and preference (4.5%) were considered as the important factors for respondents. Overall, there were demands for increasing meal costs and improving the food service facilities. In addition, a higher degree of hygiene management resulted in a higher degree of satisfaction from children. Therefore, to improve food service performance at community child care centers, food services should be assisted by professionals and the person in charge of foodservices should be educated food service management.

계층적 분석법(AHP)을 이용한 어린이급식관리지원센터 핵심성과지표(KPI)의 상대적 중요도 분석 (Analysis of Relative Importance of Key Performance Indicators for Center for Child-Care Foodservice Management through Analytic Hierarchy Process (AHP))

  • The objectives of this study were to assign reasonability to importance of weight selection issue in key performance indicator for performance evaluation of Centers for Child-care Foodservice Management (CCFSM) developed by using Balanced Scorecard (BSC), to draw key performance indicator (KPI) by perspective and to analyze differences in recognition on importance. From September 25 to October 9, 2012, we conducted a questionnaire-based study via e-mail, targeting chiefs and team leaders of nationwide 21 CCFSMs (43 persons), officials of local governments where CCFSM was established (21 persons), officials of Korea Food and Drug Administration (2 persons) and foodservice management experts (27 persons) in order to estimate the relative importance on 4 perspectives and 14 KPIs and analyzed its results by using 61 collected data. The results showed that relative importance of perspectives was estimated in order of importance as follows: business performance (0.3519), customer (0.3393), resource (0.1557), learning and growth (0.1531). Relative importance of KPIs was in order of importance as follows: Evaluation of sanitary management level in child-care foodservice facilities (0.1327), Level of customer recognition and behavior improvement (0.1153), performances of round visiting inspection on foodservice, sanitary, safety management, and foodservice consulting (0.0913). Our results showed that the recognition differences exist on the relative importance of perspectives and KPIs between officials of CCFSM, KFDA, local government and foodservice management experts. These observations will form the basis for developing evaluation systems, and it is considered that performance indicators developed on this basis will suggest direction of operation which CCFSM will have to perform.

학령전 아동을 위한 영양교육 프로그램의 개발 및 효과에 관한 연구 (A Study on the Development of a Nutrition Education Program and Measurement of It′s Effects)

  • The purpose of this study was to develop a nutrition education program for preschoolers, and to measure it's effects. This program consisted of text. pictures (cartoons), games and topics of discussion. This study was an experimental study undertaken by one pretest-posttest design group. The subjects were 17 preschoolers who were aged 5 and attending an educare center in Seoul. These were the effects of this program: The hypothesis of this study was that 'the preschooler's score will be improved after education' was supported (t=5.177, p=.000). Several correlates were examined. There weren't significant differences between pretest and posttest in the importance of balanced nutrition; in the result of under-nutrition; that the black food-group precipitated dental carries and obesity; or the reaction of foods after meals. It is recommended that the nutrition education program not only contain content about the prevent of obesity, but also about the knowledge of various foods and their effects on the human body.

어린이집 아동들의 식생활 태도에 관한 연구 (A Study on Dietary Attitudes of Preschool Children in Child Care Center)

  • This study aimed at examine dietary attitude, eating behavior and food preferences of children in child care center. The children involved in this study were 153 boys and 134 girls, aged 3 to 6 years old. The eating frequency of breakfast and the number of meal times a day were significant difference according to sex(P<0.01). Reason for skipping breakfast was ‘no appetite’(49.3%). It was found that 51.5% of the children belonged to ‘fair’ in food habit score, while children in ‘poor’ and in ‘excellent’ were 25.0% and 9.7% respectively. There was no significant difference in food habit score between boys and girls. Their preferred staple foods were ‘cooked rice’ and ‘Chajangmyon’, their preferred soup was ‘seaweed soup’. Also, their most preferred side dishes with animal foods were ‘fried chicken’ and ‘Bulgogi’. The preference of ‘hard boiled soybean curd’ and ‘pan fried soybean curd’ among the side dishes with vegetable foods were significant according to the obesity index(P<0.05). Children preferred side dishes with animal foods to those with vegetable foods. First considered item in meal preparation was child's favorite(58.1%). Mother's response to child's unbalanced diet was ‘trying to persuade the child’(56.6%). It was significant according to mother's occupation(P<0.01). The nutritional management program at child care center is required to enhance the nutritional status of children. Also the nutritional education for the children and their meal planners is required for better growth and health promotion of preschool children.

영유아 보육시설의 영양관리 시범사업(I): 유아의 식생활 현황 (Baseline Dietary Behaviors of Children for Nutritional Management Programs at Child Care Centers in Korea)

  • The aim of this investigation was to collect the baseline data about growth, dietary behaviors, nutrient intakes and dietary quality of children at child care centers for planning nutritional management program. The dietary intakes were measured by weighing method for intakes at child care centers and by dietary records by children\\`s mothers for intakes at home. The weight and height were measured and calculated z-scores by using standard of the same age groups. The children were 163 boys and 168 girls and the mean age were 55.6 months(12-78 months) and 56.0 months(16-78 months). respectively. The Z-score for height(0.33) and weight(0. 11) showed that the growth of children were above average. Nutrients intakes such s energy, protein, fiber, iron, sodium, potassium, vitamin A, vitamin B$_1$, vitamin C, niacin of boys from lunch and snack at day care centers were significantly higher than those of girls, and the meals at child care centers provided 20-37% of RDAs. The daily energy intakes were 1332.2kcal(83.1% RDA), protein 44. 26g(109.3% RDA), calcium 437.73mg(72.4% RDA), iron 7.24mg(72.4% RDA), vitamin A 459.6RE(113.1% RDA),vitamin B$_1$ 0.74mg(93.4% RDA), vitamin B$_2$0.79mg(79.7% RDA), niacin 7.66mg(69.9% RDA) and vitamin C 56.84mg(142.1% RDA). The nutrients which more than 50% of subjects ate less than 75% RDA were calcium, iron, niacin, and vitamin B$_2$.The average mean adequacy ratio was 0.80 and mean dietary variety score was 22.42, and those are positively correlated to % RDA of nutrient intakes. In summary, the children using child care centers consumed most nutrients below level of RDA and the nutritional management program at child care center is required to enhance the nutritional status of them. 부산시내 일부 사립국민학교 부속 유치원 어린이의 영양 실태에 관한 연구 1. 영양 섭취실태 및 건강실태 조사 (Nutrition Survey of Children in A Kindergarten of a Private Elementary School in Pusan 1. A Study on Nutrient intake and Nutritional Status)

  • A nutrition survey of 152 children , in the kindergarten attached to a proivate elimentary school of Pusan, was undertaken between Dec. 1 and Dec.14, 1993, to investigate dietary intake and nutrition status. The results are summarized as follows. 1) Compared with the Korean child development standard, their development conditions showed 113.1% , 102.2% , 103.3%, 101.75 in weight, height, head and chest, respectively. 2) By the standard of WLI(Weight Length Index) , proper to the children between age 4 and 6 , there proved to be 25% overweight and 4% obesity, 25% overweight and 19% obesity , 28 overweight and 26% obesity in 4-year-old, 5 year-old, and 6 -year-old children, respectively. 3) The children between age 4 and 6 averaged 37.6% in hematocrit and 12.4-12.8 5 in hemoglobin. these values were higher than those of the Korea child development standard. but the numbers of erythocyte, leucocyte and platelets were normal . Only a single child was considered suffering from aenmia . The 8% of them were over 200mg/이 in cholesterol, dangerously approaching the atherosclerosis. The 31% averaged 120mg/이 in triglyceride . And the 6% proved 100mg/이 in blood glucose when hung교. So it came out that not a few children had some factors dangers to diabetes, atherosclerosis and heart diseases : complications arising from obesity. 4) The intake of nutrients , except the 4-year-old children , ranged 108.4% to 2665 from the recommended value. The rates of carbohydrate, fat and protein to be much correlation among total intake of nutrients, development , results of blood test and WLI. The degree of obesity was proportionate to the intake of nutrients.
