한우 도체에 대한 전기자극 및 지연냉각이 쇠고기의 이화학적 특성에 미치는 영향 (Effect of Electrical Stimulation and Delayed Chilling on the Physicochemical Characteristics of Hanwoo Beef)

  • These experiments were carried out to investigate the effects of electrical stimulation(ES) and delayed chilling (DC) on the quality characteristics of Hanwoo beef. The left half carcass was treated with ES(550V, 90sec)within postmortem 30min. The electrical stimulated half carcass was subjected to chilling at 16$^{\circ}C$ for 24hr, and then stored at 2$\pm$2$^{\circ}C$ for 15days (ESDC). The right half carcass was stored at 2$\pm$2$^{\circ}C$ for 15 days (NES). ESDC showed a rapid pH fall and tended to reach to pH5.54 at postmortem 2 hrs. But, there was no consistent effect of electrical stimulation and delayed chilling on meat color, cooking loss and water holding capacity. Myofibril fragmentation index was higher than that of NES during storage. ESDC showed lower shear force value and strength consistently than NES. SDS-PAGE band patterns of myofibrils showed the rapid breakdown of troponin T and troponin I band in ESDC, compared with NES, and revealed the specific band below myosin light chain-2 pattern in ESDC.

침지냉각 조건에 따른 닭 도체의 수분 흡수 및 감량 비교 (Comparison of Water Retention and Loss of Chicken Carcasses by Different Water Chilling Condition)

  • 본 실험은 닭고기 가공 공장별로 침지냉각에 따른 닭 도체의 수분 흡수율 및 감소율 그리고 신선도를 측정 비교하여 품질의 균일화 제고를 위하여 실시하였다. A도계장과 B도계장 닭고기 가공 공장에서 1회 각 40수씩 3회에 걸쳐 총 240수에 대하여 수분 흡수율 및 신선도를 측정하였으며, 수분 흡수율 실험이 완료된 도체에 대하여 개체 포장, 운송하여 실험실 냉장고($4{\pm}1^{\circ}C$)에 입고 후, 저장일별 수분 감소율 및 신선도를 측정하였다. 실험 결과, 수분 흡수율은 A도계장 4.8%, B도계장 4.2%로서 유의적인 차이는 발견되지 않았다. B도계장 실험 도체의 신선도가 냉각 전후 모두, A도계장 실험 도체보다 신선도가 유의적으로 높게 조사되었다. 저장일별 수분 감소율은 A도계장 실험 도체와 B도계장 실험 도체 사이에 유의적인 차이는 나타나지 않았다. 저장일별 신선도는 A도계장 실험 도체가 B도계장 실험 도체에 비해 낮게 조사되었다. 결론적으로 수분 흡수율은 chiller의 길이나 침지시간에 크게 영향을 받지 않으나, 수분 감소율은 침지 시간, 수온 및 심부 온도의 영향을 받는 것으로 예측되었다.

도축공정중 식육의 미생물 오염실태 조사 (Microbiological quality of pork meat in the stage of slaughter process)

  • The growth of bacteria on the surface of the meat was monitored to investigate the relationships between microbiological quality and some environmental factors such as the chilling temperature, alcohol spraying, and transport in slaughter process of pigs. The temperature changes of the surface and inner part of pork carcass were monitored with GreenTrack$\textregistered$ system during the process of chilling and transport Of the 100pigs tested, the prevalence of level on number of standard plate count (SPC) less than $10^4$ CFU/$\textrm{cm}^2$ and Escherichia coli less than $10^2$ CFU/$\textrm{cm}^2$ in pig were 82% and 80%, respectively. Suface bacterial numbers are decreased in the course of chilling process of the carcass. Alcohol spray process before packing meat also could decrease the surface bacterial count. In conclusion, this study could be overemphasized the importance of relationship between microbiological quality and refrigerating temperature in the process of refrigeration and cutting.

Vascular rinsing and chilling carcasses improves meat quality and food safety: a review

  • Rinse & Chill® technology (RCT) entails rinsing the vasculature using a chilled isotonic solution (3℃; 98.5% water and a blend of dextrose, maltose, and sodium phosphates) to rinse out the residual blood from the carcass. Infusion of pre-chilled solutions into intact animal carcasses immediately upon exsanguination is advantageous in terms of lowering the internal muscle temperature and accelerating chilling. This technology is primarily used for purposes of effective blood removal, favorable pH decline, and efficient carcass chilling, all of which improve meat quality and safety. Although RCT solution contains some substrates, the pre-rigor muscle is still physiologically active at the time of early postmortem and vascular rinsing. Consequently, these substrates are fully metabolized by the muscle, leaving no detectable residues in meat. The technology has been commercially approved and in continuous use since 2000 in the United States and since 1997 in Australia. As of January 2022, 23 plants have implemented RCT among the 5 countries (Australia, US, Canada, New Zealand, and Japan) that have evaluated and approved RCT. All plants are operating under sound Sanitation Standard Operation Procedures (SSOP) and a sound Hazard Analysis Critical Control Point (HACCP) program. No food safety issues have been reported associated with the use of this technology. RCT has been adapted by the meat industry to improve product safety and meat quality while improving economic performance. Therefore, this review summarizes highlights of how RCT technically works on a variety of animal types (beef, bison, pork, and lamb).

Physical and Biochemical Mechanisms Associated with Beef Carcass Vascular Rinsing Effects on Meat Quality: A Review

  • Carcass vascular rinsing and chilling involves infusing a chilled isotonic solution (98.5% water and a blend of mono- and di-saccharides and phosphates) into the vasculature immediately upon exsanguination. Primary purposes of carcass vascular rinsing are to (1) effectively remove residual blood from the carcass; (2) lower internal muscle temperature rapidly; and (3) optimize pH decline by effective delivery of glycolytic substrates in the rinse solution. Previous studies have revealed that the beef carcass vascular rinsing early postmortem positively affects meat quality, product shelflife, and food safety. Thus, the objective of this review is to provide a more comprehensive understanding of the physical and biochemical mechanisms associated with beef carcass vascular rinsing, focusing on the relationship between quality attributes (CIE L*, a*, b*; chemical states of myoglobin; oxygen consumption and sarcomere length) and muscle metabolic response to various substrate solutions (Rinse & Chill®, fructose, sodium phosphate, and dipotassium phosphate) that stimulate or inhibit the rate of glycolysis early postmortem. In addition, this review discusses the absence of metabolite residues (phosphorus, sodium, and glucose) related to the application of the chilled isotonic solution. This review primarily focuses on beef and as such extending the understanding of the mechanisms and meat quality effects discussed to other species associated with vascular rinsing, in particular pork, may be limited.

도계육 냉각공정 방식에 따른 보존성 비교 (Comparison of preservation in poultry carcasses processed by different chilling systems)

  • Cold air or ice water are used to chill poultry carcasses after slaughter. In order to compare the microbial reduction effect of two different chilling systems in poultry carcasses, Pre-and post-chilled carcass samples were tested for contamination agents such as aerobic bacteria counts, E. coli counts and Salmonella spp. counts. Water chilling system showed higher reduction ratio of bacteria than air chilling system during the three seasons. Also, aging of slaughter facility was related with bacterial contamination of pre-chilld carcasses. And additional volatile basic nitrogen (VBN) test were conducted in poultry packing meats and it increased steadily during 15 days. VBN at 8~9 days were over 13 mg% with putrid smell. Poultry packing meats by water chilling system were fresher than air chilling system during early storage time. But those decayed faster after 9 days.

  • Intensive selection for muscle development and against fat deposition in pigs during the last 50 years has contributed to the increased incidence of porcine stress syndrome (PSS) and pale soft exudative pork (PSE). Genetics, nutrition and management, preslaughter animal handling, stunning, dehairing and carcass chilling influence the incidence and magnitude of the PSE condition. The normal incidence of PSE has been reported to range from 10 to 30%, but in some isolated instances is up to 60%. The elimination of halothane-positive pigs in breeding programs has reduced PSS and PSE. Further improvements in meat quality by terminal sire evaluation and selection can be achieved within halothane-negative populations because around 20% of the variation in meat color and water binding capacity seems to be genetically related. Pre-slaughter handling on the farm, during transit to the packing plant and at the packing plant can greatly influence the meat quality, contributing 10 to 25% of the variation. An effective stunning method, skinning instead of scalding/dehairing and rapid post-slaughter chilling further reduce the incidence of PSE pork. In addition to proper care and handling a carcass-merit based marketing system, that reflected the value differential between desirable and undesirable meat quality in the pricing system for pigs, would provide a great incentive to change pork production systems in order to improve meat quality, thus improving the image and usefulness of pork as food.

돼지의 계류시간, 전살전압 및 도체냉각조건에 따른 PSE 발생율 비교 (Comparison of Incidence of PSE Pork by Lairage Time, Use of Electrical Probe, Stunning Voltage and Chilling Condition)

  • 동일 냉각조건하에서 계류 유무 및 전기봉 사용 유무에 따른 PSE 발생율을 조사한 결과 전일 계류를 실시하고 전기 봉을 사용하지 않았을 때 PSE 발생율은 22.2%이었으나, 계류하지 않고 전기봉을 사용한 경우 59.3%로 발생율이 37.1%가 증가되었다. 이러한 결과는 무계류로 인하여 PSE 발생율이 증가되었을 뿐만 아니라 더불어 전기봉 사용으로 더 높은 PSE 발생율을 야기시킨 것으로 보인다. 저전압(230 V) 전살 조건을 적용하였으며, 이때 PSE 발생율은 42.37%로 고전압 (500 V) 전살조건을 적용한 도축라인에서는 66.67%였다. 따라서 전살조건 및 도축라인에 따른 PSE 발생율 차이는 24. 3%인 것으로 조사되었다 예냉후 등심 심부온도 관리에 따른 PSE 발생율을 조사한 결과 도축 처리장에서 예냉(도축후 70분)후 등심 심부온도를 38$^{\circ}C$ 이상으로 관리시 PSE 발생율은 52.2%였으나, 3$0^{\circ}C$ 이하로 관리하였을 때 발생율은 39.6 %로 예냉후 심부온도를 3$0^{\circ}C$ 이하로 관리함으로써 PSE 발생율을 12.6% 감소시킬 수 있었다. 그리고, PSE 발생율은 도체중과는 무관하였다.

Prevalence and Microbial Flora of Chicken Slaughtering and Processing Procedure

  • This study has been performed to measure the prevalence and microbial flora on chicken slaughtering as well as the processing process from the months of October to November. Whole-chicken rinsing technique was used in order to analyze the incidence of microorganisms on chicken carcass at the stage before chilling (after evisceration), after chilling and after cutting. The swab technique was used on processing the processed samples, such as working plates and cutting knives. Brine and cooling water from four cooling tubs were taken from each processing processes and were used as samples. Furthermore, the matrix-assisted laser desorption/ionization mass spectrometry (MALDI MS) for whole cell fingerprinting in combination with a dedicated bioinformatic software tool was used to identify the isolated microorganisms. Of the tested samples and processes, brine ($4.50{\pm}0.64$ Log CFU/mL) and chicken carcass before chilling ($4.15{\pm}0.46$ Log CFU/mL) showed the highest population of microorganisms; the predominant microbial flora of them were Moellerella wisconsensis (54.84%), a member of the Enterobacteriaceae family, and Escherichia coli (60.36%), respectively. However, the predominant microbial flora of cut carcass was changed to Staphylococcus aureus (27.32%), which is a kind of pathogenic microorganism that can cause a food-borne illness. Therefore, the slaughtering and processing procedure of chicken are needed to be controlled more hygienically.

상등급과 등외등급 쇠고기의 기호특성 비교 (Comparison of the Palatability Related with Characteristics of Beef Carcass Grade B2 and D)

  • 도축 후 24시간 냉장한 상등급(B2 등급)과 등외등급(D 등급) 쇠고기 지육에서 등심부위를 분할하여 두 쪽으로 나누어 한 쪽은 랩으로 싸서 1일간 냉장하고, 다른 한 쪽은 500g씩 자르고 진공포장하여 30일간 냉장하여 전자는 신선육, 후자는 냉장육이라 하였다. 상등급육과등외등급육의 기호특성을 비교하고 등외등급육의 냉장효과를 알아보기 위하여 신선육과 냉장육의 색도, 연도, ATP 관련물질, 지방산 조성 및 관능평가에 대한 실험을 하였다. 신선육의 경우 상등급육이 등외등급육에 비하여 pH. 젖산함량, 미오글로빈 함량이 낮고 표면색이 우수하였다. 상등급육은 경도와 저작성이 낮으면서 근원섬유 소편화도가 높아 연한 현상을 보였다. 상등급육은 포화지방산 함량이 낮고 단일 불포화지방산에 대한 포화지방산의 비율(MUFA/SFA)과 ATP 함량이 높고, 생육향이 우수하였다. 상등급육은 가열감량 및 가열단축도가 낮은 반면 가열육의 기호성이 현저히 우수하였다. 등외등급육은 상등급육에 비해서 경도, 저작성, 근원섬유 소편화도 및 MUFA/SFA에 대한 냉장효과가 크게 나타났다. 그러나 냉장육의 연도, 가열육 향 그리고 기호성이 등외등급육에 비해 상등급육이 현저히 우수하였다.
