Makgeolli is a traditional rice wine favored by the general public in Korea. This study investigated the fermentation and sensory characteristics of using wild yeast strains for brewing makgeolli. A non-Saccharomyces cerevisiae strain was isolated from nuruk and termed Y197-13. It showed 98% similarity to Pichia anomala and had an optimal growth temperature of $25^{\circ}C$. Makgeolli was manufactured using koji, jinju nuruk, and improved nuruk as fermentation agents. Y197-13 makgeolli brewed with koji had alcohol and solids contents of 11.1% and 13.9%, respectively. Sweet sensory characteristics were attributed to residual sugars in makgeolli with 6% alcohol. The makgeolli had a fresh sour taste and carbonated taste. Volatile component analysis showed the isoamyl alcohol, phenylethyl alcohol, isoamyl acetate, and fatty acid, including ethyl oleate and ethyl linoleate, relative peak area was higher in Y197-13 makgeolli than in makgeolli with Saccharomyces cerevisiae. These results suggest the wild yeast, Y197-13, as a candidate for brewing makgeolli.
Purpose: This study was performed to investigate demographic and disease-related characteristics that influence lower urinary tract symptoms in middle-aged women. Methods: The participants in this study were 301 middle-aged women and they completed structured questionnaire between May to June, 2008. Lower urinary tract symptoms (LUTS) were measured with Bristol Female Lower Urinary Tract Symptoms-short form (BFLUTS-SF) and categorized as voiding, filling and incontinence symptoms. The data were analyzed by using descriptive statistics, t-test, ANOVA, Pearson Correlation Coefficient, and multiple regression with SPSS PC 15.0 version. Results: The participants who have higher economic status and drink alcohol were more likely to have LUTS score than other woman who have lower economic status and don't drink alcohol at all. Also, frequent childbirth experiences and chronic diseases conditions such as diabetes and heart disease are positively associated with LUTS score. The symptoms of filling and incontinence were affected by number of childbirth, alcohol drinking habit and chronic disease conditions while voiding symptom was influenced only by alcohol drinking habit. In multiple regression analysis, LUTS were significantly predicted by parity, drinking carbonated beverage and alcohol. Conclusion: For proper nursing care related to lower urinary tract symptoms, nursing intervention should focus on improving alcohol drinking habit and carbonated beverage comsumption.
The purposes of this study were 1) to identify incidence, severity and duration of morning sickness; 2) to explore the diet relieving nausea; and 3) the demographic factors related to morning sickness. The data were collected on 281 pregnant women by the questionnaire comprized of demographic variables, obstetric characteristics, and pattern of morning sickness from 6 weeks gestational period to 30 weeks, who visited prenatal clinic of three general hospitals and a public health center in Seoul. The data were analyzed with descriptive statistics and $x^2$ test, using the program of SPSS/WIN 8.0. The results were as follows; 1. Incidence of morning sickness comprised of 72.3% pregnant women. Occurrence of morning sickness was gestational mean of 5.93 weeks, and morning sickness ceased after gestational mean of 14.62 weeks. 2. Of those women who experienced morning sickness 27.9% had morning sickness in the morning and 19.7% in the afternoon, and 45.3% had morning sickness for 1 hour in duration and 19.2% throughout the entire day. 3. Of those pregnant women 51.2% had moderate discomfort and 33.5% had severe discomfort in morning sickness. The situations that triggered morning sickness were 'hunger' for 32.9%, 'smell' for 30.3%, and 'cooking' for 23.3%. 4. The affects of morning sickness to lifestyle were 'moderate change' for 39.9%, 'mild change' for 33.5%, and 'much change' for 23.6%. 5. To remedy morning sickness 34.6% of pregnant women tried to eat fruits, and 14.8% tried to drink carbonated beverage. The effective foods relieving morning sickness were fruits for 38.4%, carbonated beverage for 15.6% and dry carbohydrate for 12.0% of pregnant women. The ineffective foods relieving it were milk for 31.0% and dry carbohydrate for 23.7% of pregnant women. 6. The level of relieving of morning sickness by diet were 'mild' for 55.7%, 'no change' for 21.7%, and 'moderate' for 17.7% of pregnant women. 7. There was a significant association with morning sickness and age, but no significant associations with morning sickness and parity, educational level, occupation, type of marriage, and type of family.

The purpose of this study was to observe the demineralization effects of children's range beverage on bovine enamel. 15 bovine teeth without dental caries were divided into 4 experimental groups (n=12) and control group (n=3). All samples immersed in beverages maintained 48 hours by $37^{\circ}C$ in incubate respectively. The surface microhardness values(${\Delta}VHN$) between before and after 48 hours treatment decreased and DIGNOdent value increased because enamel surface were corroded by experimentation beverage. Especially, there was statistical significantly difference in the carbonated drink. Morphological changes by scanning electron microscope were indicated that children's range beverage cause significant enamel demineralization effects on bovine tooth surface among five beverages.
This study used data from the 15th (2019) Youth Health Behavior Online Survey. A study was conducted to investigate the relationship between oral health behaviors and drink intake and oral symptoms in adolescents. The collected data was analyzed using SPSS/WIN 25.0 program, a software for statistical analysis. Logistic regression analysis using oral symptoms as a dependent variable revealed that gender, school classification, academic performance, dental treatment experience, carbonated beverages, energy drinks, and sweet drink intake were associated with oral symptoms. Based on the above results, consumption of carbonated beverages, energy drinks, and sweet beverages was found to have a negative effect on oral symptoms. In the future, it is thought that oral health education related to drinking intake will be needed by setting guidelines for sugar intake.
The caries activities of some commercially available children's beverages were measured to determine the risk of dental caries and provide basic data for preventing dental caries. For the experimental beverage, the beverages with the highest market share among carbonated beverages, fruit beverages, milk, and fermented milk products sold in the domestic market were selected. As a control, 0.25% glucose trypticase soy broth was prepared and used. The pH of the beverages, titrate acid and buffering capacity, and the acid production and vitality were measured over time after inoculating the beverages with Streptococcus mutans. The pH of children's beverages was the lowest in soda (2.61±0.02), and milk had the lowest in titratable acid (14.00±0.58). Fermented milk (80.33±3.64) had the highest buffering capacity, and carbonated beverage (9.40±1.06) had the lowest (P<0.05). Carbonated beverages (3 hr and 25 min) had the highest acid production, and milk (4 hr) had the lowest. In conclusion, thorough oral hygiene management is necessary after consuming children's beverages because they have a low pH promote high acid production of S. mutans.
Looking at the current status of beverages sold from vending machines in subway stations in Seoul, it was found that carbonated beverages accounted for the highest percentage of beverages on sale in vending machines, representing 36 % of all beverages sold. Survey respondents purchased carbonated drinks or sports drinks containing high levels of sugar to quench their thirst. Investigation of the sugar content of beverages frequently sold in vending machines showed that a serving of carbonated beverage contained an average of 30.4 g of sugar, or as much as 50.1 g of sugar (equivalent 10 to 17 cubes; 1 cube = 3 g of sugar). This amount corresponded, on average, with 60 % of the WHO recommended daily sugar intake (50 g). Surprisingly, with certain carbonated beverages, drinking a single can is equivalent to consuming the total recommended daily sugar intake of 50 g.

This study examined the food group and dietary nutrient intakes by sugar-sweetened beverage(SSB) intake level in high school students aged 15~18 years(n=2,377) using the 2007~2015 Korea National Health and Nutrition Examination Survey. Subjects were classified into three groups by SSB(included carbonated drinks, sports drinks, and caffeinated drinks that contained added sugars) intake level obtained from 24-hour recall method: SSB 1(SSB intake 0 g/d), SSB 2(0 g/d < SSB intake < 50th percentile) and SSB 3(SSB intake ≥ 50th percentile). Result of daily intakes of SSB were 160.6±10.5 g/d for boys and 98.6±7.1 g/d for girls and it increased for boys(p<0.0001) and girls(p=0.0280) by year. The highest intakes were carbonated drinks followed by fruit juices for boys and girls. Intakes of carbonated drinks increased as 2.7 times for boys(p<0.0001) and 1.6 times for girls between 2007 and 2015 year. Daily intakes of vegetables were the lowest in SSB 3 of three groups for boys and girls(p<0.0001), and those of fruits were lower in SSB 2 and SSB 3 than SSB 1 for boys(p=0.0013). Daily intakes of milk & milk products decreased toward SSB 3 group for boys(p<0.0001) while those were the lowest in SSB 3 of three groups for girls. Daily intakes of dietary fiber(21.3~25.3%) and calcium(49.6~59.8%) were very low compared to the dietary reference intakes. Percentage of daily intakes compared to the dietary reference intakes increased for energy for boys and girls(p<0.0001) while decreased for vitamin C toward SSB 3 group for boys(p<0.0001) and girls(p=0.0382). Those of calcium were the lowest in SSB 3 of three groups for boys(p<0.0001) and girls(p=0.0008). Ratio of excess intakes of energy/fat increased toward SSB 3 group for boys and girls(p=0.0002). Ratio of calcium deficiency was not different among groups but that was very high(85.9~92.5%). Therefore, it should be emphasized to reduce SSB intakes in order to improve diversity in food group and dietary nutrient intakes among high school students through dietary education and government support.
Objectives: This study investigated an association between sugar-sweetened beverage (SSB) intake and the dietary quality of adults in Deagu, Korea. Methods: A questionnaire survey was conducted in 1,022 adults aged 19 ~ 49 years (502 men and 520 women) in the Deagu area of Korea. Daily intake of SSB was obtained by the food frequency questionnaire, and the dietary quality was assessed using the nutrition quotient (NQ) for Korean adults. Multiple logistic regression analysis was used to estimate the association between dietary quality and daily intake of SSB in adults. Results: Daily intake of SSB was 463.6 mL/d for total subjects, and the highest intakes were sweetened coffees (192.7 mL/d), followed by carbonated drinks (77.1 mL/d). Higher intake of SSB was associated with higher intake frequency of fast food or sweet and greasy bread, processed beverage, ramyon, eating out or delivery food and night snack, and also associated with lower frequency of water, breakfast intake and nutrition label checking in men or women. Men and women who had a higher intake SSB had significantly greater odds for being in the low grade of NQ (P for trend = 0.0006 for men, P for trend = 0.0007 for women), especially in the moderation factor (P for trend < 0.0001 for men and women). Conclusions: This study showed that high SSB intake was significantly associated with low dietary quality among adults. These study results suggest that nutrition education programs and guidelines should be provided to adults for improving their consumption of SSB and related diets.
The purpose of this study was to develop a functional beverage by using Caragana sinica extract and Tremella fuciformis Berk, which have high physiological effects such as anti-diabetic, antioxidant, anticancer, anti-lipidemic and anti-inflammatory. To this end, we used various mixing ratios of Caragana sinica extract, Tremella fuciformis Berk, and isomalto oligosaccharide, and measured the physicochemical properties of those beverages. The analyses showed the following: moisture content of those beverages using Caragana sinica extract and Tremella fuciformis Berk was 50.51~67.64%, pH was 5.19~5.38, and crude fat content was 0.28~0.52%, crude protein content was 1.26~1.80%, ash content was 0.47~0.80 and sugar content was 8.55~26.98°Brix. The lightness (L) of the beverages was 37.70~58.11, the redness (a) was 6.88~16.94, the yellowness (b) was 13.72~23.68, the total polyphenol content was 2.07~3.46 mg/g, and the total flavonoid content was 0.37~0.42 mg/g. Based on the results, it was confirmed that the nutritional components and total polyphenols of functional beverage using Caragana Sinica Extract, Tremella Fuciformis Berk and isomalto oligosaccharide were high at a mixing ratio of 1:1.3:25%. These results will increase the use of Caragana Sinica Extract and Tremella Fuciformis Berk, as functional materials in the future, and provide a framework for the manufacturing of diluted beverages comprising mineral water and carbonated water.
