A Study on Nutritional Status and Clinical Practice of Neurosurgical Tube-fed Patients (신경외과에 입원한 경관급식 환자의 영양지원 실태와 영양상태에 관한 연구)

  • This study was performed to investigate the nutritional status of neurosurgical tube-fed patients. The objective of this study was to improve the nutrition management of tube-fed patients. The current practices of tube feeding and enteral nutrition formula as for 95 patients in the hospital were examined by reviewing patients charts, and interviewing patients, nurses and their family members. The results are summarized as follows ; 57.9% of patients that received the formula showed a decrease in mental status. Among the subjects, 55.7% had nervous system diseases due to old age. Most of the tube-fed patients were hospitalized in the emergency room and while hospitalized, the status of their respiratory organ was abnormal. The method of tube-feeding was by Bolus injection and the type of the tube was a 16Fr size silicone tube. The amount of the injection per day while tube-feeding was on average 1424kcal for men and 1322kcal for women and the calories per day ranged from 1000-1500kcal(50.5%). The injection volume averaged 332.7ml and 45% of patients received more than 300ml per injection. The tube feeding intake rate was 127.9ml/min with 50% of subjects in the range of 50-100ml/min and 10% at 20ml/min. The longer the hospitalization, the older age, coma status, and the higher tube feeding rate, the more decreased were the biochemical parameters.

A Study on the School Lunch Program Served by the Elementary Schools in Muan -I. An Analysis of Nutrients and Diversity of Menu- (무안군 초등학교 급식실태 평가 -I. 급식식단의 영양가 및 다양성 평가-)

  • This study evaluated the quality of meals served by the elementary schools in Muan based on nutrient contents and food diversity. The contents, nutrient densities and nutrient adequacy ratios(NAR) of most nutrients were higher than those calculated from the Korean RDA. However, the content, nutrient density, and NAR of iron were lower than those calculated from the RDA for 10 to 12 year old girls. The content of sodium was somewhat high. The average number of different kinds of food and dishes per meal were 19.2 and 6.0, respectively. The more the number of dishes, the higher the NARs of calcium, calories, niacin, phosphorus and protein. However, the NAR of iron showed no correlation with the number of dishes. The meals belonging to the food group intake pattern containing fruits had more vitamin C and fiber, and less protein, lipid, and phosphorus than those belonging to the food group intake pattern not containing fruits. In conclusion, the quality of nutrition of meals served by school lunch program(SLP) was considered fairly good. However, the nutritionists should consider the iron for 10 to 12 year old girls and cut down the amount of sodium. In addition, unless the children prefer the foods served by SLP or adjust to the general aspects of SLP, SLP can't accomplish its purposes. Therefore, we suggest that nutritionists should survey children's food preference and satisfaction with the general aspects of SLP.

A Study of the Dietary Attitude, Dietary Self-Efficacy and Nutrient Intake among Middle School Students with Different Obesity Indices in Gyeong-Nam (경남지역 중학생의 체형에 따른 식생활태도, 식이자기효능감 및 영양소 섭취상태에 관한 연구)

  • This study was carried out to investigate the perception of body image, the dietary attitude, the nutrient intake and the dietary self-efficacy of middle school students in Kyoung-Nam. The survey was conducted from April 8 to April 22 in 2002. The results are summarized as follows. Twenty three point nine percents of the underweight group,24.5% of the normal weight group, 57.1% of the overweight group and 62.5% of the obese group had correct perception about their body image. Most of the students were concerned about their body image and weight control. The obesity of the parents correlated significantly with the obesity of the subjects. The higher the obesity rate, the lower the dietary attitude and dietary self-efficacy. There was a significant positive correlation between the education level of their mothers and the dietary attitude of the subjects and a significant negative correlation between the obesity rate of the subjects and their. dietary attitudes. Dietary attitude scores showed no significant difference among the groups. Intakes of calories, protein, calcium and iron were lower than those of the Korean recommended dietary allowances (RDAs). The Effect of Grape Diet on Weight Control Serum Components in Korean Overweight Female College Students (포도 식사가 일부 과체중 여대생들의 체중조절과 혈액성상에 미치는 영향)

  • This study was to investigate the effect on weight control and changes in serum glucose, total protein , GPT, GOT , cholesterol, triglyceride, calcium, and phosphorus contents of seventeen overweight female college students during experimental periods [before grape diet(0 day-, after grape diet (3 day), after control diet(3 day), after normal diet(30 day)]. The mean weight, height , BMI, and Rohrer index of the subjects at the onset of the study was 58.91$\pm$5.22kg, 159.94$\pm$6.01cm, 22.96$\pm$1.17, and 20.06$\pm$1.48 respectively. During the study subjects, conducted grape diets, control diets, and normal diets to control their weight. They analyzed their changes in anthrophometric variables. The mean weight was significantly decreased from 58.29$\pm$7.85kg to 57.2$\pm$8.23kg after normal diet(p<0.05). Therefore BMI (body mass index) and Rohrer index was also significantly decreased after experimental periods. The analysis of dietary intake showed that the grape diet induced unbalanced low nutrient intake, but the intake of total calories and other nutrients were almost recovered their onset of the study during control and normal diets. The concentration of serum glucose, cholesterol, triglyceride GOT, and GTP were significantly(p<0.05) decreased and significantly(p<0.05) increased again during experimental periods. Calcium concentrations were not affected by grape diet, but phosphorus concentration was significantly reduced after grape and control diet.

Effect of Dietary Fat Sources and Levels on Plasma and Tissue Cholesterol (식이내 지방의 종류와 수준이 혈장 콜레스테롤 및 조직내 콜레스테롤 함량에 미치는 영향)

  • The present studies were designed to compare the effects of dietary fat sources and levels on plasma and tissue cholesterol. Changes in plasma total cholesterol and HDL-cholesterol, cholesterol concentration in aortas, liver and intestines were determined in young rats fed diets providing dietary fat as corn-oil or butter and levels as 10%, 20% or 30% of calories respectively 1) Plasma total cholesterol and HDL-cholesterol levels were little sensitive to the modification of dietary fat sources and levels. 2) Dietary cholesterol increased the levels of plasma total cholesterol and this effect was accentuated by feeding butter. But dietary cholesterol did not increase the levels of HDL-cholesterol in the butter-fed groups, but decreased in the corn-oil-fed groups. 3) Liver cholesterol concentrations were significantly higher in rats fed diets of corn-oil than those fed diets of butter. On the contrary, cholesterol concentrations of intestines were significantly higher in the butter-fed groups than the corn-oil-fed groups. However, in aortas, no significant differences were found.

  • The purpose of this study is to show probability of alternate food by using edible insects through the reports (Edible insects: Future prospects for food and feed security) edited by WFO (World Food Organization). We were carried out to develop the functional meat new product using Mealworm (Tenebrio molitor lavare) and Chicken breast. People's interest to the healthy, low-calories food is growing up, the Foodservice industry is developing and making Functional food, which helps to a sale strategy. Insects have played an important role as human food throughout history, especially in Africa, Asia and Latin America. A rapid increase in the human population is expected in the second half of the 21 century, which will lead to lower availability of food, especially animal protein As the problem of food supply and demand has come to the fore with climate change, Food and Agriculture Organization of the United Nations (FAO) has noticed edible insects as future food resources in order to prepare against the shortage of protein source. Recently consumers, especially patients have doubts about safety of raw materials for food. To overcome these limitations, I propose an enteral nutrition formula using edible insects as a raw material.

The Effect of Artificial Sweetener Use on Obesity (인공감미료 섭취가 비만에 미치는 영향)

  • Despite the emergence of obesity as a significant public health concern, artificial sweeteners have made their way into various food products due to the perception, that they serve as substitutes for sugar. Artificial sweeteners are used to supposedly achieve weight management and health improvement. However, their efficacy and safety remain debatable. Commonly used artificial sweeteners include aspartame, acesulfame potassium, saccharin, and sucralose. This article discusses the effects of artificial sweetener consumption on weight loss, appetite regulation, blood glucose control, and gut microbiota. Research findings, concerning the consumption of artificial sweeteners and their association with body weight, have shown inconsistencies between randomized controlled trials and cohort studies. Studies, comparing artificial sweeteners to sugar, have reported no significant differences in satiety. Although artificial sweeteners have no calories, they can affect blood sugar levels through the cephalic phase insulin response. A recent study suggested that artificial sweeteners influenced the occurrence of diabetes. Due to limitations in the study design, excluding diabetes-influencing factors was not feasible. The evidence showed that artificial sweeteners harbored potential health risks, necessitating further investigation. According to recent studies, the consumption of artificial sweeteners was associated with gut microbiota changes and individual blood sugar responses. It is important to note that artificial sweeteners cannot be considered safe alternatives to sugar, and further research is required.

Odor generation pattern of swine manure according to the processing form of feed

  • Feed has a great influence on the composition of swine manure, which is the principal cause of odor. Therefore, the purpose of this study is to simply change the shape of pig feed and control calories to find a suitable feed form for reducing the smell of swine manure. The experiment was conducted on 15 pigs from July to August 2021, and a total of three measurements were done. Three types of feed were evaluated in this study. The analysis items related to odor of swine manure are complex odor, ammonia, sulfur-based odors, and volatile organic compounds (VOCs). In the case of complex odor, dilution multiples tended to decrease over time, except for type A feed. The concentration of ammonia in all types of feed decreased over time. Most sulfur-based odorous substances except hydrogen sulfide at the first measurement were not detected. Representatively, Decane, 2,6-Dimethylnonane, and 1-Methyl-3-propylcycolhexane were detected in VOCs generated from swine manure. The major odorous substansces in swine manure have changed from ammonia and sulfur compounds to VOCs. In order to reduce the odor caused by swine manure, it is ad-vantageous to use low-calorie feed consisting of pellet-type.

Quality Analysis According to Nutritional Content and Storage Period of Pickled Cabbage by Cultivation Region (재배지역별 절임배추의 영양성분 및 저장기간에 따른 품질 분석)

  • This study analyzed the changes in the nutritional components, properties, physicochemical properties, general bacteria, and lactic acid bacteria of pickled cabbage depending on the cultivation area. An analysis of the nutritional composition on the first day of storage showed no significant difference in the calories, carbohydrates, protein, fat, and dietary fiber contents regardless of the cultivation region, but regional differences were observed in the vitamin C content in the order of Andong > Pyeongchang > Haenam. The total free amino acid content appeared in the order Andong > Pyeongchang > Haenam, and the GABA (γ-amino-n-butyric acid) content appeared in the order Haenam > Andong > Pyeongchang. In addition, pickled cabbage was observed on the 1st, 5th, and 10th days of storage at 4℃. No significant change in appearance was observed on the 1st and 5th days, but changes were observed on the 10th day. Regardless of the cultivation area, the salinity (p<0.05) and pH (p<0.05) decreased significantly as the storage period increased, while the sugar content (p<0.05) and acidity (p<0.05) increased significantly. The general bacteria (p<0.05) and lactic acid bacteria (p<0.05) counts increased significantly as the storage period increased, irrespective of the cultivation region.

Relationship between consumer behavior, perception of nutritional information, and menu factors on fast food using eye-tracking: A study on university students in Jeonju

  • This study analyzed the factors that influence menu choices through eye-tracking and questionnaires in menu design. Demographic data of subjects coincided with choosing a menu and eye-tracking data. Hot Crispy Chicken Burger is the most popular menu. The study found that regardless of the selected menu, the menu name (35.5 seconds), price (21.6 seconds), and image (16.0 seconds) were viewed the longest, followed by country of origin (8.81 seconds), calories (4.6 seconds), and special indications (p<0.05). The menu name and image were checked more frequently, while calorie information was checked less often. As a result of analyzing various factors that influence menu selection through, Consumer experience and image greatly influenced menu choices. Therefore, if you want to receive a menu selection, it is considered effective to make good use of the menu name and image. In results of principal component analysis (PCA) by gender showed. Men had the longest price in the fixation duration. But, for females, there was a significant difference in gaze fixation when they took the exam, with menu names and special indications being important selection criteria. Since the results show that selection criteria and information acquisition methods differ depending on gender, this research is thought to be able to suggest directions for menu design.
