요소, 질산암모늄 및 규회석분말이 칼리의 흡수 및 배추의 수량에 미친 영향 (Effects of Urea, Ammonium Nitrate and Calcium Silicate on the Absorption, Translocation of Potassium and Yield of Chinese Cabbage (Brassica Perkinnensis, Var. Samjin))

  • 규회석 분말을 시용하는 경우와 시용하지 않는 경우에 가을배추(삼진)에 대한 칼리비료와 요소, 질산 암모니아의 병, 단용효과를 밝히고자 삼각사양토에서 실시한 시험결과는 다음과 같다. 1. 규회석 분말의 사용은 배추재배를 비교적 용이하게 하였다. 이 조건하에서 배추에 대한 요소와 질산 암모니아의 효과는 차이가 없었다. 2. 규회석 분말을 사용하지 않는 토양에서는 요소보다 질산 암모니아가 배추를 증수하게 하였으며 그 효과는 더 많은 토양칼리을 이용하게 한데 기인하였다. 3. 칼리의 병용은 배추의 수량을 높일 뿐만 아니라 가식부의 생산비를 높였으며 그 효과는 특히 규회석분말을 쓰지 않는 토양에서 컸다. 4. 칼륨은 배추의 외엽에서 내엽으로 쉽게 이동했으며, K원으로서 외엽의 그 함량이 배추의 수량을 지배해서 건조 외엽의 함량 20me/100g 이하에서는 배추의 생체중이 직선적으로 감소하였다.

Investigating the Effects of Chinese Cabbage Powder as an Alternative Nitrate Source on Cured Color Development of Ground Pork Sausages

  • This study investigated the effects of Chinese cabbage powder as a natural replacement for sodium nitrite on the qualities of alternatively cured pork products. Chinese cabbages grown in Korea were collected and used for preparing hot air dried powder. Different levels of Chinese cabbage powder were added to pork products and evaluated by comparing these products to those with sodium nitrite or a commercially available celery juice powder. The experimental groups included control (100 ppm sodium nitrite added), treatment 1 (0.15% Chinese cabbage powder added), treatment 2 (0.25% Chinese cabbage powder added), treatment 3 (0.35% Chinese cabbage powder added), and treatment 4 (0.4% celery juice powder added). The cooking yields and pH values of treatments 1 to 3 were significantly lower (p<0.05) than the control. However, all of the alternatively cured products were redder (higher CIE a* values; p<0.05) than the control and this result was supported from higher nitrosyl hemochrome, total pigment, and curing efficiency. Furthermore, the inclusion of vegetable powders to these products resulted in considerably less residual nitrite content. However, Chinese cabbage powder (0.25% and 0.35%) was effective in producing alternatively cured meat products with a higher curing efficiency comparable to those of the traditionally cured control or the products with celery juice powder. Therefore, Chinese cabbage powder exhibited the efficacy for use as a natural replacer for alternatively cured meat products.

Comparison of optical reflectance spectrum at blade and vein parts of cabbage and kale leaves

  • Objective of the study was to compare reflectance spectrum in the blade and the vein parts of cabbage and kale leaves. A total 6 cabbage and kale leaves were taken from a plant factory in Chungnam National University, Korea. Spectra data were collected with a UV/VIS/NIR spectrometer (model: USB2000, Ocean Optics, FL, USA) in the wavelength region of 190 - 1130 nm. Median filter smoothing method was selected to preprocess the obtained spectra data. We computed reflectance difference by subtraction of averaged spectrum from individual spectrum. To estimate correlation at different parts of cabbage and kale leaves, cross - correlation method was used. Differences between cabbage and kale leaves are clearly manifested in the green, red and near - infrared ranges. The percent reflectance of cabbage leaves in the NIR wavelength band was higher than that of kale leaves. Reflectance in the blade part was higher than in the vein part by 18%. Reflectance difference in the different parts of cabbage and kale leaves were clear in all of the wavelength bands. Standard deviation of reflectance difference in the vein part was greater for kale, while the value in the blade part was greater for cabbage leaves. Standard deviation of cross - correlation increased from 0.092 in the first sensor (UV/VIS) and 0.007 in the second sensor (NIR) to 0.099 and 0.015, respectively.

Application of Highland Kimchi Cabbage Status Map for Growth Monitoring based on Unmanned Aerial Vehicle

  • Kimchi cabbage is one of the most important vegetables in Korea and a target crop for market stabilization as well. In particular Kimchi cabbages in a highland area are very sensitive to the fluctuations in supply and demand. Yield variability due to growth conditions dictates the market fluctuations of Kimchi cabbage price. This study was carried out to understand the distribution of the highland Kimchi cabbage growth status in Anbandeok. Anbandeok area in Gangneung, Gangwon-do, Korea is one of the main producing districts of highland Kimchi cabbage. The highland Kimchi cabbage status map of each growth factor was obtained from unmanned aerial vehicle (UAV) imagery and field survey data. Six status maps include UAVRGB image map, normalized difference vegetation index (NDVI) distribution/anomaly map, Crop distribution map, Planting/Harvest distribution map, Growth parameter map and Growth disorder map. As a result, the highland Kimchi cabbage status maps from May 31 to Sep. 6 in 2016 were presented to show spatial variability in the field. The benefits of the highland Kimchi cabbage status map can be summarized as follows: crop growth monitoring, reference for field observations and survey, the relative comparison of the growth condition in field scale, evaluation of growth in comparison of average year, change detection of annual crops or planting areas, abandoned fields monitoring, prediction of harvest season etc.

기상 및 토양정보가 고랭지배추 단수예측에 미치는 영향 (The Effect of Highland Weather and Soil Information on the Prediction of Chinese Cabbage Weight)

  • Highland farming is agriculture that takes place 400 m above sea level and typically involves both low temperatures and long sunshine hours. Most highland Chinese cabbages are harvested in the Gangwon province. The Ubiquitous Sensor Network (USN) has been deployed to observe Chinese cabbages growth because of the lack of installed weather stations in the highlands. Five representative Chinese cabbage cultivation spots were selected for USN and meteorological data collection between 2015 and 2017. The purpose of this study is to develop a weight prediction model for Chinese cabbages using the meteorological and growth data that were collected one week prior. Both a regression and random forest model were considered for this study, with the regression assumptions being satisfied. The Root Mean Square Error (RMSE) was used to evaluate the predictive performance of the models. The variables influencing the weight of cabbage were the number of cabbage leaves, wind speed, precipitation and soil electrical conductivity in the regression model. In the random forest model, cabbage width, the number of cabbage leaves, soil temperature, precipitation, temperature, soil moisture at a depth of 30 cm, cabbage leaf width, soil electrical conductivity, humidity, and cabbage leaf length were screened. The RMSE of the random forest model was 265.478, a value that was relatively lower than that of the regression model (404.493); this is because the random forest model could explain nonlinearity.

Comparative analysis of active components and antioxidant activities of Brussels sprouts (Brassica oleracea var. gemmifera) and cabbage (Brassica oleracea var. capitata)

  • The applicability of Brussels sprouts, which are widely cultivated in Jeju, as a functional biomaterial in the cosmetics and food industries is investigated. The active ingredients (total phenols and flavonoids, β-carotene, vitamin C, free sugar, minerals, glucosinolates, and isothiocyanates) and antioxidant activities of 70% ethanol extracts of Brussels sprouts and cabbage were analyzed. The total phenol, flavonoid, vitamin C, and β-carotene contents of Brussels sprouts were approximately 36%, 2.5 times, 2.3 times, and 65% higher than those of cabbage, respectively. The total free sugar content of Brussels sprouts was 58%-72% lower than that of cabbage. The K content was the highest among the other minerals, and there was little difference between the two samples. The Na content was approximately three times higher in cabbage than in Brussels sprouts. The total glucosinolate content of Brussels sprouts was 34.5 mol SE/g DW, twice that of cabbage. The sinigrin content of Brussels sprouts was thrice (10.06 μmol/g DW) that of cabbage. The isothiocyanate (sulforaphane, I3C) content in Brussels sprouts was double that of cabbage. The antioxidant activity of Brussels sprout extract was 2.5 to 2.8 times higher in 1,1-Diphenyl-2-picrylhydrazyl radical scavenging capacity and 3.3 to 3.6 times higher in 2,2'-Azino-bis(3-ethybenzothiazoline-6-sulfonic acid) radical scavenging capacity than those of cabbage extract. These are important basic data for the study of glucosinolates and isothiocyanates, which have anticancer activity, as well as antioxidant-related substances of Brussels sprout, which has high potential for use as a biomaterial in functional foods and cosmetics.

무·배추 수확 작업을 위한 다목적 주행플랫폼 개발 (Development of a multi-purpose driving platform for Radish and Chinese cabbage harvester)

  • Radish and Chinese cabbage are the most produced and consumed vegetables in Korea. The mechanization of harvesting operations is necessary to minimize the need for manual labor. This study to develop and evaluate the performance of a multi-purpose driving platform that can apply modular Radish and Chinese cabbage harvesting devices. The multi-purpose driving platform consisted of driving, device control, engine, hydraulic, harvesting, conveying, and loading part. Radish and Chinese cabbage harvesting conducted using the multi-purpose driving platform each harvesting module. The performance of the multi-purpose driving platform was evaluated the field efficiency and loss rate. The total Radish harvesting operation time 34.3 min., including 28.8 min., of harvesting time, 1.9 min., of turning time, and 3.6 min., of replacement time of bulk bag. During Radish harvesting, the field efficiency and average loss rate of the multi-purpose driving platform were 2.0 hr/10a and 3.1 %. Chinese cabbage harvesting operation 49.3 min., including 26.6 min., of harvesting time, 4.6 min., of turning time, and 18.1 min., of replacement time of bulk bag. During Chinese cabbage harvesting, the field efficiency and average loss rate of the multi-purpose driving platform 2.1 hr/10a and 0.1 %. Performance evaluation of the multi-purpose driving platform that harvesting work was possible by installing Radish and Chinese cabbage harvest modules. Performance analysis through harvest performance evaluation in various Radish and Chinese cabbage cultivation environments is necessary.

고랭지배추 생산·유통체계의 발전전략 (Development strategies for production and distribution system of highland Chinese cabbage)

  • 본 연구는 고랭지배추의 생산·유통체계에 대한 문제점을 분석하고 개선과제를 제시하는 데에 목적이 있다. 이를위해 고랭지배추를 생산하는 생산자, 산지유통인, 도매시장 종사자, 대형마트 구매담당자에 대한 심층적인 인터뷰를 통해 유용한 정보들을 수집하여 분석하였고 또한 고랭지배추 주산지의 생산과 도매시장의 유통체계 현황에 대한 자료들을 분석하여 고랭지배추의 생산·유통체계에 대한 매우 유용한 시사점을 얻을 수 있었다. 결론적으로 고랭지배추의 생산·유통체계에 대한 현황분석을 통해 개선방안들이 제시되었는 데 첫째는 고랭지배추 비가림재배 방법의 도입을 통해 생산의 안정성을 도모하고, 둘째는 고랭지배추 유통정보에 대한 투명성을 제고시키며, 셋째는 고랭지배추의 주산지로부터 소비자에 이르기까지의 물류체계 개선을 위해 단계적으로 콜드체인시스템을 구축하는 방안을 제시하였다.

Determination of 3-Butenyl Isothiocyanate in Different Parts and Cultivars of Chinese Cabbages

  • Chinese cabbage (Brassica campestris L. Pekinensis) is Brassica vegetable that contains high amounts of glucosinolates. Glucosinolates and their breakdown products are thought to contribute to health promotion by preventing some cancers. Chinese cabbage is the most commonly consumed vegetable in Asian countries including Korea. In this study, qualitative and quantitative analyses of 3-butenyl glucosinolate (Gluconapin) from different cultivars and different parts of the cabbage were performed. Gluconapin of Chinese cabbage was extracted by hot ethanol ($80^{\circ}C$), isolated by an anion exchange column and identified by GC/MS and LC/MS. The levels of glucosinolates in Chinese cabbage varied according to the different parts, cultivars, and blanching time. In general, the concentrations of 3-butenyl isothiocyanate (ITC) were higher in the leaf than in the midribs parts. The cultivar 'Bulam no. 3' had a much greater content of 3-butenyl ITC than the cultivar 'Garak no. 1,' and the levels of butenyl ITC were highest after two weeks of storage. Blanching treatment decreased the concentration of 3-butenyl ITC. The ITC concentration varied extensively among different crops of the same species, and according to the different parts on the cabbage, the storage duration and the boiling time.

Changes in Isothiocyanate Levels in Korean Chinese Cabbage Leaves during Kimchi Storage

  • Glucosinolates are hydrolyzed by the enzyme myrosinase and are mainly found in cruciferous vegetables such as Chinese cabbage (Brassica campestris L. ssp. pekinensis). lsothiocyanates (ITCs) are glucosinolate degradation products with reported anticarcinogenic properties. Korean Chinese cabbage in the form of 'kimchi' is a staple part of the Korean diet. In this study, we examined the effects of storage temperature and duration on glucosinolate, ITC, soluble sugar, and organic acid levels in kimchi. Changes in pH and the impact of various parts of the Korean Chinese cabbage being used during the preparation of the dish were also assessed. Extracted ITC levels, analyzed via gas chromatography (GC) and GC/mass spectrometry (GC/MS), were higher in the midrib parts than in the cabbage leaves after storage at both 4 and $20^{\circ}C$. During storage, organic acid levels increased while soluble sugars were depleted. The pH initially increased (after 1 day at $20^{\circ}C$, and 1 week at $4^{\circ}C$), but subsequently decreased over time at both temperatures. Glucosinolate and ITC levels increased in the beginning of storage but then generally fell during further storage. Our data suggest that acidity-related reduction in myrosinase activity during storage may decrease glucosinolate and ITC levels. The changes in these levels depended on the storage conditions and the Korean Chinese cabbage parts used for the kimchi preparation.
