Onion is a perennial herb of the lily family that has a long history and has long been widely used throughout the world as it is one of the most important condiments in our diet, along with chili peppers and garlic. It has been used for cooking and processing food with its unique flavor and aroma. Because of the nature of onions, long-term storage can lead to spoilage. Research was done to increase profits through processing and expand various onion products. A low temperature extraction method was used to study the physiological activation effect and onion processing method of flavonoid component weak to heat.
Background and objective: Recent urban agriculture meets the needs of urban residents that safety and avoids using chemical pesticides. This study was conducted to identify various factors of companion planting affecting the growth of cherry tomatoes, which will promoting urban agriculture by improving socioeconomic satisfaction with gardening activities through quality. Methods: Four types of companion plants such as marigold, zinnia, spearmint and basil, that have a companion effect with growth, sugar content, and vitamin C content. We obtained the mean and standard deviation and tested the significance at a 95% confidence level (p < .05) with Duncan's multiple range test after one way ANOVA and MANOVA. Results: Compared to monoculture of cherry tomatoes, the plant growth in the treatment plots with companion planting showed a significant increase overall(p < .05), but there wasn't interaction effect among companion plants, planting ratio and type. As for the absorption of inorganic components, the companion planting showed better absorption than monoculture of cherry tomatoes, as favorable growth, and there was an interaction effect among the individual factors. The sugar content was higher than the standard sugar content of 5.8 brix in both the treatment plots at the control, and vitamin C content was higher than the control at 26.27mg/100g in all treatment plots, but there wasn't statistically significant difference. The soil pH in the cultivation plot ranges from 5.5 to 9.0 and was weakly alkaline in all treatment plots except zinnia, showing low contents of phosphoric acid, exchageable potassium, calcium and magnesium. Conclusion: This study was conducted to analyze various factors such as the growth of cherry tomatoes, contents of inorganic components, sugar content and vitamin C content of fruits, and soil analysis according to companion plants, planting type, and planting ratio. We will study sugar content by measuring the change in growth every phase of fruits.

BACKGROUND: Liquid fertilizers can provide nutrients to crops effectively and quickly. Amino acid liquid fertilizers produced by decomposing the residues of rendered livestock carcasses are expected to be effective in improving the productivity and quality of crops. METHODS AND RESULTS: The treatment conditions for maize cultivation were control (Cn), inorganic fertilizer (IF), inorganic fertilizer and rendering residue liquid fertilizer (IF+RALF), compost (CP), compost and rendering residue liquid fertilizer (CP+RALF). Crop productivity, sugar content, and nutrient uptake were investigated after maize harvest in the field applied with liquid fertilizers. Maize yields ranged from 87.6-158 g/plant, and the yield increased by 7.9% and 12.9% in IF+RALF IF+RALF and CP+RALF than in IF and CP, respectively. The maize sugar content increased in the range of 0.1-0.5 brix % by rendering residue liquid fertilizer (RALF) fertilization, and the sugar content was the highest in CP+RALF. There was no significant change in soil chemical properties of the soil due to liquid fertilizer treatment. CONCLUSION(S): RALF increased yield and sugar content in maize cultivation, and fertilization with organic fertilizers was more effective for maize cultivation than inorganic fertilizers. Residues of rendered livestock carcass can be recycled as amino acid fertilizers, which can be effectively used for crop production and quality improvement.
Campbell Early grapes, the major grape variety in Korea, contain 13 - 15% (w/v) sugar, which is lower than that appropriate for fermentation of red wine. Therefore, chaptalization with sucrose is usually used to increase the sugar level to an extent adequate to produce a wine containing about 12% (v/v) alcohol. In the present study, fermentation of freeze-concentrated Campbell Early grape juice at $25^{\circ}Brix$ was investigated using several industrial wine yeasts including Saccharomyces cerevisiae OC2, S. cerevisiae Fermivin, and S. cerevisiae W-3. During fermentation, changes in the levels of soluble solids, alcohol, total acid, and yeast viable counts were investigated. Alcohol content reached maximal levels after 9 days of fermentation, and was 12.6% (v/v) when the Fermivin strain was used and 13% (v/v) when each of the OC2 and W-3 strains was used. No significant between-strain difference was found, except for slightly slower alcohol production and sugar consumption, and a higher total acid content when strain OC2 was used. Changes in the yeast viable counts were similar during fermentation. The physicochemical characteristics of Campbell Early wine prepared using freeze-concentrated juice were investigated by measuring the levels of total phenolic compounds, organic acids, acetaldehyde, and minor alcohols and assessment of color values. Similar levels of soluble solids and total phenolic contents were observed in wines fermented by the three different strains, but a higher level of total acid was noted in OC2-fermented wine and a lower level of alcohol in Fermivin-fermented wine. The highest level of malic acid and the lowest level of lactic acid were detected in Fermivin-fermented wine. Although the wines showed variable levels of acetaldehyde and minor alcohols, the concentrations of these materials were much lower than those mandated by legal regulations promulgated by the Korean National Tax Service. Red and violet colors in OC2-fermented wine were darker than those of W-3-fermented wine. In sensory evaluation, W-3-fermented wine obtained the highest scores for color and flavor. However, the best taste score was reported for the OC2-fermented wine, whereas Fermivin-fermented wine was awarded the highest score in overall acceptance.
Barley is a main food source, along with rice, in our dietary life that is easy to buy and process. It is required to develop a beverage base and barley syrup for desserts in order to raise utilization of barley beyond its present use in Sikhye (sweet fermented rice drink) and Jocheong (grain syrup) production. In pursuit of the goal to increase the usability of barley as an ingredient of processed food, this study examined the optimal preparation conditions of barley mash for barley syrup. In addition, the study prepared a barley syrup using saccharified barley liquid, analyzed quality characteristics, and conducted a sensory evaluation. Saccharified barley liquid(barley mash) was prepared with ratios of adding malt of unhulled barley germinated as 0 g(CON), 10 g(BM10), 20 g(BM20), and 30 g(BM30). The results of measuring pH under the varied conditions of saccharification temperatures from $50^{\circ}C$, $60^{\circ}C$, and $70^{\circ}C$, as well as time from 1 to 8 hours, treveal that the optimum condition for malt saccharification is $60^{\circ}C$ for 5 hours. By adding oligosaccharides and lemon juice to the saccharified barley liquid at the different ratios of added malt, this study measured quality characteristics(color value, viscosity, pH, sweetness) of barley syrup warmed up for 1 hour. As the result of measuring color in the barley syrup prepared by saccharified barley liquid, higher levels of added malt saw L-value decreased while a-value and b-value both increased. BMs30 showed the highest viscosity of $1,202.67{\pm}3.06$. As for pH, BMs30 was the highest at pH $3.57{\pm}0.02$. The result of the sensory evaluation of barley syrup showed the superior sensory characteristics of BMs20 in terms of color, flavor, sweetness, viscosity and overall quality.
We investigated quality characteristics of Seoktanju (one of the Korean traditional rice wine) which was fermented using five kinds of Korean commercial Nuruks. The purpose of this study was to research what effects on the quality of Seoktanju by using different Nuruks. We analyzed general component such as each mash's temperature change patterns, pH, titrable acidities, reducing sugar contents, volatile acids, and sugar contents during fermentation periods and studied sensory evaluation of produced Seoktanju (10 days). On the whole, temperature change patterns in the each mashes were depend on room temperature. All Seoktanju's pH was reduced rapidly up to three days after first mashing (pH 3.13-3.57) and after that was increased gradually. The end of fermentation pH was pH 3.6-4.05. Mostly, acidities were indicated high(0.59%) and Nuruk-B was showed highest acid value. These results seems to be different as occasion organic acids producing activity depend on the number of yeast, material contents, optimal temperature in the each mashes by fungi and lactic acid bacteria in Nuruks. In reducing sugar contents and sugar contents, Nuruk-C treatment were showed the highest value with 5.36%, $23^{\circ}brix$, respectively and alcohol content was lowest with 8.6%. In the five kinds of reproduced Seoktanju, alcohol content was the highest in the treated Nuruk-A group. Volatile acid value was the highest with 132.6~263.7 ppm at the 3 day after first mashing day but as the fermentation time goes on, it was reduced sharply by 5.25~5.94 ppm. Sensory evaluation was performed with 5 point scale, the Seoktanju using Nuruk-D was presented by 4 point, while Nuruk-A was presented lowest by 2.77 point on overall acceptability.
This study investigated the physiochemical properties of Kanjang (soy sauce) contaning Astragalus memyranaceus to improve the acceptability and functionalities of Kanjang during its six-month ripening period. Kanjang was fermented in the traditional manner, and then 5 and 10% Astragalus memyranaceus (AM) were added to two samples of it, respectively. The pH, salinity, sugar content, crude protein, amino nitrogen, optical density, total polyphenol content, total flavonoid content, and sensory test results of Kanjang contaning Astragalus memyranaceus (AK) were then investigated. The pH remained the same in the two samples. The salinity was slowly increased, and the sugar content ($^{\circ}Brix$) was highest after 3 months. The crude protein and amino nitrogen contents increased with time. The optical density showed significant differences according to the rate of addition of AM. The total polyphenol contents were highest in the AK 5% sample aged for six months (up to 25.01 mg/mL). The flavonoid contents of the AK 5% sample was higher at five months (up to 200.15 mg/mL). Finally, the sensory test results of the AK 5% sample was higher than that of the other sample. These results suggest that Kanjang containing 5% Astragalus memyranaceus can be used as a functional Kanjang.

Peach wine was fermented at $25^{\circ}C$ for 2 weeks using Saccharomyces cerevisiae KCCM 12224, aged at 15$^{\circ}C$ for 14 weeks, and its physicochemical and microbiological changes were investigated. The viable bacterial cell numbers, 1.4$\times$10$^3$ CFU/mL at the beginning of fermentation, increased to 2.8$\times$10$^{6}$ CFU/mL after 2 weeks, but decreased to 7.0$\times$10$^3$ CFU/mL after 14 weeks. The viable yeast cell numbers were changed from 3.4$\times$10$^2$ CFU/mL to 2.4$\times$10$^{7}$ CFU/mL during fermentation, and decreased to 4.0$\times$10$^4$ CFU/mL after aging. Turbidity total sugar content, reducing sugar content, solid content and b value of peach wine decreased during fermentation but acidity, alcohol content, L and a value increased. Most physicochemical properties except alcohol content and reducing sugar content were not changed significantly during aging. When peach wine was filtered through 0.45 ${\mu}{\textrm}{m}$ nitrocellulose membrane followed by various ultrafiltration membranes with different molecular weight cut-off values, Biomax 100K membrane, with 79 liter/$m^2$/h (LMH) of initial flux, was suitable for ultrafiltration process of peach wine. These membrane filtration treatments resulted in complete removal of microorganisms and decrease in turbidity and alcohol content without changes in other chemical properties. The physicochemical properties of peach wine were not changed and any microorganisms were not found during the storage at 3$0^{\circ}C$ for 12 Weeks.

The objective of this study is to evaluate antioxidant activities of black ginseng prepared by nine repeated steaming-drying cycles. Ethanol extracts from each cycle of ginseng showed 33.5~41.0% of yields, 36.2~44.5% of moisture content and $64\sim66^{\circ}Brix$ of soluble solids. As the number of steaming-drying cycles increased, pH decreased, while the absorbance at 420 nm increased remarkably after the 4th cycle. Although the amounts of Rg1 and Rb1 contents quite decreased, the total phenol content of black ginseng (the final cycle of ginseng) was increased to 126%, compared with that of white ginseng. Antioxidant activities, determined by ferric-reducing antioxidant potential (FRAP), 2,2'-azinobis(3 ethybenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activity, 1,1-diphenyl-2-picrydrazyl (DPPH) and hydroxyl radical scavenging activities, increased remarkably as the number of steaming-drying cycles increased. Especially, FRAP value increased 155.6%. Also, $IC_{50}$ values for DPPH and hydroxyl radical scavenging activities of the final 9th-cycling product, decreased 4.5 folds and 9.7 folds, respectively, compared with those of white ginseng. Based on these results, it was suggested that antioxidant activities of black ginseng improve according to the increasing number of steaming-drying cycles, which was derived from increase of total phenol content.

The antioxidant activities and quality characteristics of jam prepared with black garlic were evaluated. Fructo-oligosaccharide or maltitol syrup was replaced with sucrose: control (sucrose), fructo-oligosaccharide (FTO), FTOM (sucrose 50%+FTO 50%), maltitol syrup (MT) and MTM (sucrose 50%+MT 50%). The endpoint of jam preparation was determined to reach $64^{\circ}Brix$ of sweetness. There were significant differences in moisture content among the treatments, whereas acidity among treatments was not different. Reducing sugar content and viscosity were the highest in FTO (0.144%, 126,800 cP), whereas the lowest in control (0.074%, 101,600 cP). Lightness (L value), redness (a value) and yellowness (b value) of Hunter color system were the highest in FTO compared to the others. Hardness and springiness of textural properties were the highest in FTO. Antioxidant activities were the highest in FTO with the lowest $IC_{50}$ values (42.3 mg/g for DPPH and 22.4 mg/g for hydroxyl radical scavenging activities). Total phenol content was highest in FTO among treatments. The overall acceptance score of black garlic jam containing FTO showed the highest score among treatments. Based on these results, it was suggested that fructo-oligosaccharide was appropriate for good qualities both in physicochemical and antioxidative activities of black garlic jam.
