To determine the interrelationship between thyroid status and the reparitioning action of clenbuterol (CLE) in broilers, two-week-old female chickens were fed diets containing an antithyroid substance, propylthiouracil (PTU, 0 or 0.3%), CLE (0 to 1 mg/kg), or both for 18 days in a $2{\times}2$ factorial design experiment. Muscle weights (breast muscle, gastrocnemius and peroneus longus) increased only in the normal chickens fed CLE. As absolute mass, protein of leg muscle quantitatively increased in the CLE-fed normal birds. In contrast, inhibition of the CLE-induced protein accretion, especially of peroneus longus, occurred in the PTU group. A quantitative increase in DNA was observed in leg muscles of the normal chickens, but no DNA response to CLE was shown in the PTU-treated chickens. The decreased RNA in leg muscles of the PTU group was more reduced by CLE feeding. Although not statistically significant, the reduced degradation rate of whole muscle protein in normal chickens fed CLE was not confirmed in the PTU-fed group. The present study, therefore, concluded that metabolic action of thyroid hormones was a prerequisite for the hypertrophic effect of ${\beta}$-agonist in broilers.
To compare the costs incurred by infant feeding between mothers who breastfed their infants and those who fed them infant formula, a questionnaire survey was carried out to 136 mothers living in Seoul, Cheongju and Chungju who breastfed and 199 mothers who formula-fed their infants. The cost of formula-feeding was estimated based on the expenditures for formula and feeding apparatus, and the time needed to wash bottles and prepare formula. The cost of breastfeeding was estimated based on the expenditures for food for the additional nutritional intake of these mothers. The mean cost of formula-feeding was ₩ 1,870,125 during the first year of the baby's life. The food cost for the additional nutritional intake of the breastfeeding mothers was ₩ 203.004 per year. The extra medical cost for respiratory illnesses in the formula-fed group compared to the breastfed group was W 62,920 because the formula-fed infants required medical attention for respiratory illnesses more often than the breast-fed infants. Therefore, breastfeeding could save ₩ 1,730,041 during the first year of an infant's life. We may have underestimated the cost savings from breastfeeding because we did not take into account the potentially decreased costs of fertility control and the health benefits for mothers. as well as the decreased usage of water and gas. Analyses showed that breastfeeding is not only nutritionally advantageous, but also economically advantageous for families and society.
The changes in human milk composition from 2-5 days to 12 weeks postpartum were investigated. Milk from 62 mothers was anlyzed for total nitrogen(semimicro kjeldahl) lipid(utilizing a modified Folch) and lactose(enzymatic hydrolysis) Energy was calculated by frac-tional analysis. And the daily milk intakes and major nutrients and energy intakes of 18 exclusi-vely breast-fed infant were determined by the test-weighing procedure and the direct analysis of milk samples at 6 or 7 weeks postpartum. All samples were from well-defined subjects and uniform collection procedures were used. Total nitrogen content decreased significantly from 392 to 211 mg/dl lipid and lactose content increased from 1.94 to 3.06g/dl and 6.90 to 7.50g/dl respectively. And energy content increased 55.6 to 64.5 kcal/dl but was not statistically significant. The amount of milk ingested ranged from 432 to 1266 ml/day and the mean intake was 764 ml/day. Daily mean intakes for protein and energy were 10.0g and 450kcal in 6 or 7 weeks postpartum respectively.

A 35-day trial was carried out to determine the influence of dietary cinnamon powder (CNP) on the sensory evaluation and quality of chicken meat, carcass characteristics, plasma lipid level and growth performance of broiler chickens. There were 5 treatment groups: control; CNP 2.0%; CNP 3.0%; CNP 4.0%; and CNP 5.0%. The body weight of the broilers fed the diets containing 3.0% CNP was higher than the broilers fed the control feeds (p<0.05). The concentration of triacylglyceride, HDL-C was higher in the plasma from broiler chickens fed diets with CNP (p<0.05) but the concentrations of total cholesterol and LDL-C were significantly lower (p<0.05) compared to the control group. The carcass percentage, chicken breast and thigh weight were not different between the CNP and control groups. The WHC was significantly higher in the chickens fed 4% CNP diet, while the TBARS was significantly lower (p<0.05) in the chickens fed 3% CNP diet compared to the control group. The color of the breast muscle from the chickens fed 3% CNP diet was lighter than those from the control groups (p<0.05). The sensory evaluation of the taste and savor related to CNP in fried or boiled chicken meat were significantly better from the broiler chicken fed diets containing CNP than the control group (p<0.05). These results suggest that dietary cinnamon powder may improve savor and quality of chicken meat in broiler chickens.

A broiler experiment was conducted to compare the effects of duration and level of iron-methionine chelate (Fe-Met) supplementation on the iron, copper (Cu) and zinc (Zn) content of broiler meat. Two hundred and fifty hatched Ross broiler chickens were randomly assigned to 5 dietary treatments. Each treatment had 5 replicates of 10 birds (5 males and 5 females) each. Birds were housed in raised floor batteries and fed traditional broiler diets ad libitum for 5 weeks. Dietary treatments were as follows: Control and two levels of Fe-Met (100 or 200 ppm in Fe) supplemented for either the whole period (0-5 wk) or grower period (4-5 wk). Production performance was not significantly affected by treatments. Iron content in the muscles (breast, leg and wing) and organs (liver and spleen) were significantly (p<0.05) increased as the level and duration of Fe-Met supplementation increased. The highest concentration of iron was shown in Fe-Met 200 fed for the whole period. Liver contained the highest amount of iron followed by spleen, leg muscle, wing muscle and breast muscle. Supplementation of Fe-Met 200 for the grower period resulted in higher iron concentration in liver and spleen than supplementation of Fe-Met 100 for the whole period. However, the same treatment resulted in lower iron concentration in muscles (breast, leg and wing) than the treatment of Fe-Met 100 for the whole period. In order to achieve the highest iron enrichment in the muscles, Fe-Met should be supplemented at 200 ppm in Fe for the whole period (5 wks). Fe-Met supplementation increased copper concentration in all muscles and organs except wing muscle. Zinc concentration decreased in breast and wing muscle but tended to increase in leg muscle, liver and spleen by Fe-Met 200 supplementation. Color of muscle was not significantly affected by Fe-Met treatments. However, redness of leg and breast muscle, and yellowness of leg and breast muscle tended to increase by supplementation of Fe-Met for the whole period. It was concluded that iron content of broiler meat can be effectively enriched by supplementation of 200 ppm of Fe as Fe-Met for 5 wks.
We determined the effect of caponization on the carcass and giblet characteristics, and skin and muscle color in Taiwan country chicken cockerels. Caponized birds were surgically altered at 10 weeks old and were fed growing and finishing diets ad libitum during an eighteen-week experimental period. The results showed that the percentage of dressing, heart, feet, thigh, head and neck were significantly (p<0.05) higher in the intact birds, while the capons had a higher (p<0.05) percentage of abdominal fat, intestine, back, wing and breast. Eviscerated weight, breast width, gizzard, liver and spleen ratios were not affected by the treatments. The breast skin color values for lightness (L*) and yellowness (b*) values in the capons were significantly (p<0.05) higher than in the intact birds, but the thigh and back skin were not significantly(p>0.05)different. Compared with the intact birds, the capons had a significantly (p<0.05) less redness (a*) values in the back skin, but were not significantly (p>0.05) different in the breast and thigh skin. The L* value of the thigh muscle was significantly (p<0.05) greater in the capons than in the intact birds, but were not significantly (p>0.05) different in breast and back muscles. The b* values in the breast, back and thigh muscles of the capons were significantly (p<0.05) greater whereas the intact birds had a higher (p<0.05) a* values in the breast, back, and thigh muscles. Moreover, our findings also indicate that the castration resulted in a significant alteration in dressing percentage, carcass region and organ percentage.
An experiment was conducted to determine the effects of caponization on the muscle composition, ATP-related compounds, the shear values, the taste panel scores and the muscle fiber areas of Taiwan country chicken cockerels. At 10 wks of age, cockerels were divided into two groups: caponized and untreated. Birds were fed grower and finisher diets ad libitum in an eighteen-week experimental period. Results showed that capons contained significantly greater muscle fat content, less breast and thigh muscle moisture content, shear value and muscle fiber area (p<0.05) than those of intact birds. However, neither treatment groups differed significantly (p>0.05) in breast and thigh muscle protein content. Compared with the intact birds, the capons contained significantly (p<0.05) less muscle ash content in the breasts, but did not differ significantly (p>0.05) in thigh muscle ash content. The breast muscle IMP and ATP+ADP+AMP+IMP contents in the intact birds were significantly (p<0.05) higher than those in the capons. The intact birds had significantly (p<0.05) higher ATP and AMP contents than did the capons as well as significantly (p<0.05) less ADP and inosine (HxR) contents in the thigh and breast muscles. The Hypoxanthine (Hx) content of the thighs in the intact birds was significantly (p<0.05) higher than that in the capons; however, there was an adverse effect on the breast muscle Hx content. The breast muscle K value in the intact birds was significantly (p<0.05) lower than that in the capons. The capons produced significantly (p<0.05) higher taste panel scores than did the intact birds for both flavor and juiciness of thigh muscle as well as for flavor and tenderness of breast muscle.

The purpose of this study was to evaluate effects of replacing soybean meal with perilla seed meal (PSM) on growth performance, proximate composition of meat, meat quality, and fatty acids composition of meat in broilers. A total of 60 one-day-old chicks of ROSS 308 (initial body weight of 44.8 ± 0.4 g) were randomly allotted to four treatment groups (15 replicate cages with 1 broilers per cage) in a period of 5 weeks. Dietary treatments included control (CON) basal diet (corn-soybean meal-based diets) and test diets in which PSM was included at 0.5% (T1), 1% (T2), or 2% (T3) to gradually replace soybean meal. At the end of experiment, all broilers were slaughtered for collecting breast and thigh meat. At 5 weeks, T2 and T3 treatment groups had higher (p < 0.05) body weights than CON and T1 treatment groups. Weight gain was increased (p < 0.05) in T2 and T3 treatment groups. Feed intake was decreased (p < 0.05) in T3 treatment group. Broilers in T2 treatment group had lower (p < 0.05) feed conversion ratio than those in other treatment groups. In proximate composition of breast meat, there was no significant (p > 0.05) difference in moisture and ash. Fat composition of breast meat was significantly (p < 0.05) increased in T2 and T3 treatment groups. Regarding meat quality, broilers fed T3 diet had higher (p < 0.05) water holding capacity than those fed other diets. Regarding fatty acids composition of thigh meat, broilers fed T3 diet had higher (p < 0.05) linolenic acid than those fed other diets. In conclusion, soybean meal replaced by 2% perilla seed meal in broiler diet can improve growth performance, meat quality, and fatty acids composition of thigh meat in broilers. Perilla seed meal can be a lot of potential alternatives feedstuff for soybean meal in this study.
A study was designed to assess the current status of infant feeding and weaning practice through an retrospective survey on feeding method, a period of weaning and various kinds of weaning food. Analysing a few influential environmental factors while assessing the level of knowledge today's mothers have on infant nutrition. The results are as follows: 1. As random samples for this study, a total of 516 mothers having infants under the age of 3 were surveyed. Among them, 235 were from Seoul and 281 were from Kyongi province (Yongin, Suwon, Bupyong, Poil, Kihung, Ansan(Chungbuk)). 2. Among the infants who fell under the category of normality (Kaup index $15{\sim}18$), the infants from Seoul area amounted to 60.7%, surpassing the percentage of the infants from Kyongi province, 41.9%. The percentage of the infants belong to a group of under nutrition (Kaup index <13) was relatively higher than that of the infants in a group of overnutrition (Kaup index >20). 3. 16.1% of mother surveyed were breast-fed, 54.6% were formula-fed and 29.3% were mixed-fed. The result indicated that the percentage of breast-fed infants of high-educated, working mothers were relatively lower than those of low-educated housewives. 4. Most of the respondents knew the significance or the necessity of supplementary food in terms of weaning. 5. 98.8% of those surveyed responded that the mother's adequate knowledge on weaning was necessary. 70.1% of them replied that they wanted to get various and in-depth information in printed materials such as books or other kinds of publications. They, also showed deep interest in recipe of weaning food. 6. The average period when those surveyed began weaning of their infants was $4.3{\pm}1.8$ months. The tendency of earlier weaning in 3 months was founded among 41.1% of them. About half of the respondents, 52.3%, started weaning of their infants in $4{\sim}6$ months. In overall, 93.4% of them set on weaning in less than 6 months after babies were born. The survey, in addition, revealed an interesting fact that earlier weaning of infants was shown in the group of high-educated mothers. 7. According to the study, finishing period of weaning was $13.3{\pm}5.4$ months on average. Only 38.9% of the respondents ended weaning of their infants in 12 months, the proper period recommended by renowned experts. In general, the infants on formula-feeding finished their weaning later than those on breast-feeding (p<0.05).

The purpose of this study was to examine dietary habits and nutrient intakes according to feeding method during infant period in elementary school students. Subjects were 1,251 elementary school students. Subjects were divided into three groups, breast-fed group (N=508), formula-fed group (N=397), and mixed group (N=346), according to feeding method during infant period. The questionnaire was composed of general characteristics, dietary conditions during infant period, dietary behaviors, and dietary intakes and was completed by children and children's parents. Average age, height, weight, and body mass index were 11.6 years, 139.0 cm, 34.6 kg, and $17.8kg/m^2$, respectively. The formula-fed group showed a smaller proportion of subjects with colostrum feeding (P<0.001) compared to the breast-fed and mixed groups. Frequency of eating snacks was significantly higher in the mixed group than in other groups (P<0.05). There was no significant difference in dietary habit total score and nutrient intakes according to feeding method during infant period. Feeding method in during infant period was associated with dietary habits (milk and vegetable intake habits) up to growth period of elementary school. A longitudinal and systematic study is needed to clarify this relationship.
