In this study, we investigated the anticancer effect of rice bran extract in HL-60 human promyelocytic leukemia cells. The extract of rice bran inhibited the proliferation of HL-60 cells. When treated with the rice bran extract, we could observe the apoptotic characteristics such as apoptotic bodies and the increase of sub-G1 hypodiploid cell population, increase of Bax level, decrease of Bcl-2 expression, cleavage of procaspase-3, cleavage of procaspase-9 and cleavage of poly(ADP-ribose) polymerase(PARP) in HL-60 cells. Furthermore, the apoptosis induction of HL-60 cells treated with the rice bran extract was also accompanied by the inactivation of mitogen-activated protein kinases (MAPK) such as ERK1/2 MAPK and p38 MAPK. In addition, the rice bran extract induced the down-regulation of c-myc. These data suggested that the rice bran extract could induce the apoptosis via the inactivation of ERK1/2 MAPK and p38 MAPK, and the down-regulation of c-myc in HL-60 acute pomyelocytic leukemia cells. The results support that the rice bran extract might have potential for the treatment of acute promyelocytic leukemia.
The aim of present study is to investigate antioxidative effect of the Rice Bran Extracts and Defatted Rice Bran Extracts. Rice Bran Extracts used Rice Bran Water Extract, Rice Bran Ethanol Extract, Defatted Rice Bran Water Extract, Defatted Rice Bran Ethanol Extract. This study was carried out to examine quenching effects of Rice bran extracts on DPPH-, Riboflavin-, and Xanthin oxidase- originated superoxide activities. In addition, in order to determine whether Rice Bran Extract can be safely applied to human skin, the cytotoxic effects of Rice Bran Extract in Human Dermal Fibroblast cells were determined using MTS Assay. These results demonstrated that RBE and DRBE had anti-oxidative properties and did not induce the cytotoxic effects in Human Dermal Fibroblast cells. Therefore, these findings suggest that anti-oxidative properties of RBE and DRBE may be considered convergence with skin care.
This study was performed to examine the processibility aptitude for the addition of Dobyeong to pigmented rice bran extract. Dobyeong from pigmented rice was less bulky and coarser than Dobyeong-added pigmented bran extract. The viscosity and degree of retrogradation in Dobyeong-added Pigmented bran extract were lower than Dobyeong from pigmented rice, indicating that the inhibitory action of retrogradation was higher in Dobyeong-added pigmented bran extract. The scores for springiness, adhesiveness, cohesiveness, gumminess, and chewiness were increased in Dobyeong-added pigmented bran extract. Dobyeong-added pigmented bran extract showed a decreased natural flavor of pigmented rice and degree of retrogradation, but had higher scores in color values. Dobyeong-added pigmented bran extract was more acceptable in sensory evaluation. Based on these results, the use of rice-added pigmented bran extract instead of pigmented rice in rice-processed food has advantageous effects in terms of the palatability of polished rice and phytochemicals of pigmented non-polished rice. This study will help develop new health-promoting rice products.

Rapid visco-analyzer (RVA) and differential scanning calorimetry (DSC) were used to study the effect of rice bran dietary fiber extract on gelatinization and retrogradation of wheat flour. The addition of rice bran dietary fiber extracts from various heat treated bran into wheat flour caused to increase the pasting temperature, peak viscosity and final viscosity of RVA measurements. For gelatinization measured with DSC, mixtures of wheat flour and rice bran dietary fiber extract had slightly higher To (onset temperature) and Tp (peak temperature) values than those of control (wheat flour), and wheat flour/defatted rice bran dietary fiber extract mixture had the lowest enthalpy value. In comparison with gelatinization, the retrogradation endotherm of mixtures stored at $4^{\circ}C$ up to 4 weeks occurred at about $20^{\circ}C$ lower temperatures than gelatinization endotherm with broader shape and well-defined thermograms with storage time. The retrogradation of wheat flour was retarded greatly by addition of rice bran dietary fiber extract, and there was no big difference between 5% and 10% additions.

This study was perform to examine the feasibility of cooking processing using the rice added the 70% ethanol extract of pigmented rice bran layer. Four rice samples, including normal rice, glutinous rice, pigmented-normal rice, and pigmented-glutinous rice were compared the properties of physico-chemical, texture, and sensory evaluation. Pigmented rice varieties had a higher amylose content, but shorter length in glucose chains than non-pigmented rice varieties. The enthalpy for gelatinization was found to increase in pigmented rice, which need more energy for gelatinization of starch in cooking. The hydrolysis rate by glucoamylase in rice added pigmented bran extract was higher than pigmented rice. Rice with pigmented bran extract had higher glutamine content, but lower asparagine content and no difference in fatty acid composition, which affect palatability. Cooked rice added pigmented bran extract was less retrograded than pigmented rice during the storage period. Moreover, cooked rice added pigmented bran extract was more acceptable in sensory evaluation. Based on the results, the use of rice added pigmented bran extract instead of pigmented rice in grain processed food have advantageous effects in palatability of polished rice and phytochemicals of pigmented non-polished rice. This study will help develop new health-promoting rice products.
Pigmented rice bran has been suggested to be a valuable source of beneficial phytochemicals. We investigated genotoxic and anti-genotoxic effects of purple rice bran extract (PRBE) in rats using a liver micronucleus assay. Purple rice bran was extracted with methanol, obtaining large amounts of phenolic compounds, including anthocyanins and small amounts of gamma-oryzanol. The experimental protocols were divided into two sets. Male rats were divided into three groups. Group 1 was a negative control, while Groups 2 and 3 were fed with 100 and 500 mg/kg bw of PRBE, respectively, for 28 days. PRBE had no effect on micronucleus formation or xenobiotic metabolizing enzymes in rat liver. Experiments concerning the effect of PRBE on $AFB_1$ showed that PRBE significantly lessened the amount of micronucleated hepatocytes in $AFB_1$ treated rats. Furthermore, it modulated metabolic activation of $AFB_1$ metabolism in the liver by suppressing activity and protein expression of CYP1A2, CYP3A and CYP 450 reductase, and enhancing phase II enzymes including GST and UGT. Overall, purple rice bran extract was not genotoxic in rats. It exhibited anti-genotoxicity by modulation some xenobiotic enzymes active in $AFB_1$ metabolism.
Inhibitory mechanism of colored rice bran against cellular genotoxicity induced by chemical mutagen was studied using organic solvent extracts from a colored rice cultivar termed as Suwon415, and the mutagen, mitomycin C. Inhibitory effects of 70% ethanol extact and chloroform fraction from rice bran of Suwon415 were higher than those from Chuchung used as control. However, antioxidative activities of each fraction from Suwon415 were slightly lower than those from Chuchung, suggesting the involvement of a different inhibitory mechanism not related to antioxidation pathway. Using E. coli as the indicator cell, inhibitory mechanism of rice bran extract from colored rice against mutagenicity induced by mitomycin C was investigated to reveal the possibility that it acts in a desmutagenic manner. Further investigation to quantify the free mitomycin C in reaction mixture following incubation with rice bran extract demonstrated that rice bran extract might inhibit the cellular genotoxicity of mitomycin C by direct adsorption of the mutagen.

Black rice bran, a by-product from rice milling process, is a good natural source of anthocyanin pigment. The purpose of this study was to determine the optimum conditions for anthocyanin extraction from black rice bran as well as the stability of anthocyanin extract according to different storage temperatures. The main anthocyanin in 'Heugkwang' rice bran was identified as cyanidine-3-glucoside (C3G) by HPLC and LC-MS/MS. The yield and C3G content of black rice bran extract were investigated with various extraction solvents, temperatures, and times. The results indicate that the optimum extraction solvent, temperature, and time were 50% ethanol, $70^{\circ}C$, and 2 h, respectively. The stability of anthocyanin extract was studied during a storage period of 168 days at various temperatures ($-20^{\circ}C$, $4^{\circ}C$, and room temperature). Hunter's values (L, a, and b) of anthocyanin extract increased, whereas C3G content continuously decreased up to 168 days. Variations in Hunter's values and C3G content become larger as storage temperature increased. Anthocyanin extract from black rice bran was very stable, as C3G content after storage at all temperatures was maintained at more than 90% of initial content. These results suggest that anthocyanin extract from black rice bran may be useful as a natural food colorant.

Rice bran contains high amounts of fiber and various phytochemicals, including vitamin E, ${\gamma}$-oryzanol, and phenolic acids. The oxidative stabilities of corn oil added with three rice bran extracts from two rice cultivars (Dasan 1 and Ilpum) were evaluated. The three rice bran extracts were unsaponifiable matter of rice bran (USM), methanolic extract of rice bran oil (MEO), and methanolic extract of defatted rice bran (MEDR). Each sample was stored at $50^{\circ}C$ for 24 days. Oxidation of these samples was determined every 3 days by measuring the peroxide value (POV) and conjugated diene value (CDV). Vitamin E content was analyzed on day 0 and day 24. The results show that the POV and CDV values of samples increased gradually during the storage period. The order of oxidative stability was shown as BHT> MEDR> MEO> USM> control, regardless of cultivars. In the case of vitamin E, ${\alpha}$-T, ${\gamma}$-T, ${\alpha}$-T3, and ${\gamma}$-T3 contents decreased by 89%, 31%, 83%, and 32% after storage for 24 days, respectively. In conclusion, MEDR showed higher oxidative stability and may have potential as a source of natural antioxidants in the oil industry.
This study examined effects of aqueous extracts of rice bran on the inhibition of germination and early growth of annual weeds, barnyardgrass and eclipta. Germination of barnyardgrass treated with 5%(w/v)-sterilized and nonsterilized extracts of rice bran were inhibited by 27% and 63% at 7 days after treatment(DAT), respectively, compared to control. However, plant height and fresh shoot weight of barnyardgrass treated with aqueous extract of rice bran was reduced significantly at higher than 1% for both sterilized and nonsterilized extracts. Plant height and fresh shoot weight of barnyardgrass treated with 5% extract of rice bran were inhibited by 66 to 68% and 75 to 78% at 7 DAT, irrespective of sterilization. The germination of eclipta treated with sterilized and nonsterilized extracts of rice bran were significantly inhibited at concentrations of more than 0.5% and completely at 4% and 5%. Plant height and fresh shoot weight of eclipta affected by the rice bran extracts showed trends similar to the germination rate. The sterilization of rice bran extract resulted in higher inhibition of germination and early growth of eclipta. Rice bran extract was more inhibitory to the germination and growth of eclipta than barnyardgrass. These results suggest that aqueous extracts of rice bran may have inhibitory potential to germination and early growth of weeds.
