Flavor Changes of Herbs according to Cooking Methods (조리방법에 따른 허브의 향 성분 변화)

  • The purpose of this study was to analyze the flavors of four fresh herbs(rosemary, basil, applemint, and majoram) and when they are fried, boiled, baked, and microwaved. Among the 18 flavors in rosemary, 37.40% was composed of ${\alpha}$-pinene(flavor of refreshing pine). The next highest composition of rosemary was 1,8-ci-neole(fresh, cool, sweet flavor) with 23.34%. In basil, 1,8-cineol had the most composition with 32.9%, and next was 3-hexen-1-ol(delicate floral fragrance) with 20.6%. When it was boiled, it barely had loss and when it was fired, only 10% of its flavor was left. Trans-${\beta}$-ocimene(camphoraceous and pine-like flavor) composed applemint with 16.66% and ${\beta}$-pinene(dry-woody and resinous-piney flavor) with 12.99%. Majoram was composed with 21 differrent flavors, 18.80% was composed of sabinene(spicy, woody-herbaceous flavor) and ${\gamma}$-terpine(citrusy flavor) composed 15.61% of majoram. Majoram had more flavor left when cooked compared to other herbs. In conclusion, rosemary and majoram had the most stability than other herbs, and boiling and baking left more flavor than frying them.

Status of Selenium Contents and Effect of Selenium Treatment on Essential Oil Contents in Several Korean Herbs (한국의 몇 가지 허브의 셀레늄 함유량 및 셀레늄 처리가 정유 함량에 미치는 영향)

  • The selenium (Se) contents of 20 herbs, harvested in three areas in Korea, were analyzed. Many herbs had no Se. Angelica ($138.4{\mu}g \;Se{\cdot}kg^{-1}$ FW), caraway ($167.8{\mu}g \;Se{\cdot}kg^{-1}$ FW), chamomile ($116.6{\mu}g \;Se{\cdot}kg^{-1}$ FW), marjoram (158.7 and $132.6{\mu}g\;Se{\cdot}kg^{-1}$ FW), and oregano ($62.5{\mu}g\;Se{\cdot}kg^{-1}$ FW) accumulated Se as higher concentration compared with other plants. The Se content of herbs was dependent on the species, cultivars and areas. The status of Se uptake by herbs was investigated according to Se concentrations in hydroponics. During four weeks, before harvest of several herbs in greenhouse, sodium selenate ($Na_2SeO_4$) was added to the nutrient solution at concentrations of 2, 4, 6, and $8mg{\cdot}L^{-1}$. Field-mint accumulated Se too high, but external symptom of Se toxicity was not found. Essential oil content was generally proportionated to treated-Se concentration. The essential oil contents in basil and balm increased two to three times higher by sodium selenate treatment compared to non-treatment, but they did not show any linear relationship between essential oil contents and treated-Se concentration.

A Study on Utility and Appreciation of the Plants in "Poetry of the South" - Focusing on Qu-Yuan's Poetry - (초사(楚辭)에 나타난 식물 소재의 활용 및 향유 방식 - 굴원(屈原)의 시문을 중심으로 -)

  • This study aims to sort out the plants in "Poetry of the South" what is in the written by Qu Yuan in the Kingdom of Chu and to analyze the utility and appreciation of plants. The conclusions are as follows. First, there were 80 plant names and 56 plant species were sorted out, and these results can confirm that the plants were existed in the 340-277 BC. Second, through analyzing the utility of the plants, herba lycopi, basil etc. as the garden plants; lotus, chrysanthemum etc. as the ornamental plants; galangal and cannabis sativa as the present; basil, musa basjoo, etc. as the sacrifice plants. Third, through analyzing the appreciation of the plants, golden birch, chrysanthemum etc. for gustatory appreciation; herba lycopi and pine tree etc. for tactile appreciation; bamboo for sensory appreciation. Forth, through analyzing the token of the plants, calamus and basil etc. are the symbol of personal character noble; wormwood and caltrop etc. are the symbol of villain. Based on the research of "Poetry of the South", it can help to understand the plants culture in 340-277 BC, and it will be a useful information for the plant design.

Superoxide and Hydrogen Peroxide Scavenging Action of Ocimum Sanctum Extracts and their Fractions

  • Ocimum sanctum, the Indian holy basil has significant abilities to scavenge highly reactive free radicals. Shade dried leaf powder of plant has extracted with water and alcohol, fractionated with different solvents. Both extracts and their fractions were found to be good scavengers of Superoxide and hydrogen peroxide. Free radical scavenging action of these compared with ascorbic acid, a known antioxidant.

Evaluation of antimicrobial activity and efficacy of herbal oils and extracts in disinfection of gutta percha cones before obturation

  • Objectives: Literature has shown that micro-organisms contaminate gutta percha (GP) during storage and manipulation. Till date herbal extracts are not explored as an alternative medicament for pre-operative chairside disinfection of GP cones. The purpose of our study was to evaluate the antimicrobial activity and efficacy of lemon grass oil (LG), basil oil (BO), and obicure tea extract (OT) in disinfecting GP cones before obturation. Materials and Methods: Agar diffusion method was used to evaluate the antimicrobial efficacy of LG, BO, OT, and sodium hypochlorite (control) against common contaminants, namely, Enterococcus faecalis, Staphylococcus aureus, and Candida albicans. One hundred and twenty GP cones were contaminated and cut into 2. First half was placed in the broth and incubated; whereas the second was treated with herbal extracts for 1 minute and then incubated for 24 hours in the broth. Any inhibition in bacterial growth was noted with presence/absence of turbidity. Two-way analysis of variance and ${\chi}^2$ test were used to assess the effectiveness of herbal extracts to decontaminate GP. Results: LG showed the highest inhibition zones ($29.9{\pm}6.9mm$) for all tested organisms, followed by OT extract ($16.3{\pm}1.8mm$), sodium hypochlorite ($16.0{\pm}1.6mm$), and BO ($14.5{\pm}5.3mm$). Statistically significant difference was observed between LG and other herbal extracts (p < 0.05). Conclusions: All extracts proved to be potential rapid chairside disinfectants of GP cones with LG showing the highest antimicrobial activity.

A Study on the Sensory Quality Features of Lamb Fillet Steaks with Crust Topping (Crust topping 양등심 스테이크 관능적 품질 특성 연구)

  • This study aims to increase the flavor of a lamb filet dish. The method used was as follows. Four kinds of crusts(mustard, herb & garlic, nuts, mushrooms) were made, and they were topped over lamb filet steaks. After cooking them, the good samples (mustard(MU3), herb & garlic(HG2), nuts(NC2), mushrooms(MC3)) by different materials through a sensory test were classified The selected samples were named as 1. Blank, 2. ECl(MU3), 3. EC2(HG2), 4. EC3(NC2), and 5. EC4(MC3). And then another sensory test was conducted targeting the samples to find out which crust had the best preference value. The results of the sensory test were statistically calculated Summarizing the results, all 4 kinds of samples topped with 4 different crusts showed much higher values than Blank, the control group. That indicates that the cooking method topping a crust on a lamb filet steak dish is very effective. Among them, the HG2 sample produced by mixing 70% of bread crumbs(115.5g) and 30% of garlic chop(49.5) with the base spice consisting of parsley 8g, rosemary 3g, basil 4g and olive oil 50g was evaluated as the best crust.

  • This article intends to shed a light on the British architect Arthur S. Dixon (1856-1929). He is largely regarded as a pioneer of the English Art and Craft Movement, yet his works are not widely known nor carefully studied. In search of Dixon's architectural characteristics, this paper examined three notable buildings that he designed at the turn of the nineteenth century; Birmingham Guildhall, St. Andrews church and St. Basil's Church. These buildings were erected relatively early in his career as an architect, although he never fully immersed into the profession due to his commitment in family business management. His architectural design shows unique qualities of Art and Craft movement in terms of use of material, spatial arrangement, techniques, and craftsmanship while employing Romanesque as most relevant historic style for ecclesiastical purposes.

In Vitro Flowering Response of Ocimum basilicum L.

  • Nodal explants of Ocimum basilicum L. (Sweet basil, Lamiaceae), showed shoot proliferation after 7-10 days on MS media containing 1.5 mg/L kinetin. In vitro flowering was achieved from 90% of the shootlets which were sub cultured on a half strength MS media fortified with 5 mg/L BAP and 1 mg/L IAA. Cytokinin alone or in combination with $CA_3$and NAA resulted in shoot proliferation only. For rooting the plantlets were subcultured on MS basal medium supplemented with 3 mg/L NAA and rootlets emerged after 10 days of incubation. The survival percentage of transplanted plantlets was 70%.

  • 본 연구에서는 향에 대한 생리적 반응과 선호도가 노년층과 청년층에서 어떠한 차이가 있는지 살펴보고자 하였다. 20대 및 60대 피험자에게 100%의 Basil oil, Jasmin oil, Lavender oil, Lemon il, Ylangylang oil을 제시하여 자율신경계의 반응인 심전도의 RR간격과 GSR을 측정ㆍ분석하였으며, 선호도 평가를 하여 자율신경계의 반응과의 상관성을 검토하였다. 20대는 Lemon 향에서 RR 간격 및 GSR의 반응이 안정되게 나타났으며, 선호도 평가에서도 Lemon 을 가장 선호도가 높게 평가하는 것을 볼 수 있었다. 60대는 Lavender에서 RR 간격이 증가하고 GSR이 감소하여 안정된 반응을 보였고, Lavender에 대한 선호도 또한 높게 평가하여 60대는 다른 향보다 Lavender를 좋은 향으로 평가함을 알 수 있었다.
