향신채의 조리중 기능성 변화 (Changes in the Functional Properties of Spices and Herbs during Cooking)

  • The basic effects of herbs and spices when applied during cooking include flavoring, pungency, coloring, and deodorizing/masking effects. Besides these basic effects, herbs and spices have antioxidant, antimicrobial, pharmaceutical, and nutritional properties. This review briefly describes the flavor component characteristics as well as biological functions of herbs and spices during cooking and processing, with specific focus on garlic and Brassica vegetables.

  • We introduce the notions of intuitionistic fuzzy prime ideals, intuitionistic fuzzy completely prime ideals and intuitionistic fuzzy weakly completely prime ideals. And we give a characterization of intuitionistic fuzzy ideals and establish relationships between intuitionistic fuzzy completely prime ideals and intuitionistic fuzzy weakly completely prime ideals.

Photokinesis of Cyanobacterium Synechocystis sp. PCC 6803

  • Motile cyanobacterium Synechocystis sp. PCC 6803 cells show photomovement with respect to the light stimulus. Under lateral irradiation, Synechocystis displays a phototactic gliding movement toward the light source by a twodimensional random biased walk. Under vertical irradiation, Synechocystis decreased the frequency of mean vectorial gliding speed dependent on the applied fluence rate, whereas the deviation distribution width of the speed increased. This strongly suggests the involvement of photokinesis. Evidence for the cyanobacterial photokinesis was discussed in the previous report (Choi et al., 1999. Photochem. Photobiol. 70, 95-102) demonstrating that the gross scalar speed of vertically irradiating cells increased by about 50% compared with that of dark-adapted cells. In the visible wavelength range, Synechocystis cells showed a maximal photokinetic activity at 420 nm and a second maximal activity at 680 nm. The threshold action spectrum for the photokinesis resembles the absorption spectrum of chlorophyll with major differences in the phototaxis action spectrum at 560 nm and 660 nm. We postulate that the cyanobacterial photokinesis is powered by the energy-generating chlorophyll pigments.

  • Government-sponsored Research Institutes(GRIs) have made a great contribution to the development of Korea's Science and Technology(S&T). However, recently GRIs are facing the challenge of many problems. For instance, absence of reasonable strategies, insufficient resources and so on. Therefore, many GRIs are being asked for solving their problems with successful strategic management. This paper suggests a strategic management model to solve their problems and to cope with the changing S&T environment. In this paper, The strategic management model for GRIs which was thoroughly considered strategic management process suggested to response the need of their change and to perform their strategic management successfully. As a case of GRIs to apply this model, in this paper, Korea Basic Science Institute(KBSI) that is part of the Korea Research Council of Fundamental Science and Technology(KRCF) was analyzed. As a result of analysis with this model which applied to KBSI, various strategies and alternatives were suggested.

포도 송이가지를 이용한 레스베라트롤의 추출 및 항산화 활성 (Resveratrol Extraction from Grape Fruit Stem and its Antioxidant Activity)

  • 폐기물로 버려지는 식품가공 부산물의 부가가치를 높여 포도 유래 기능성 소재를 생산하기 위한 목적으로 포도 송이가지로부터 레스베라트롤의 추출 조건을 최적화하였고 포도 송이가지 추출물(grape fruit stem extract, GFSE)의 생리활성을 평가하였다. 총 폴리페놀 및 레스베라트롤의 추출 조건으로서 추출 용매(메탄올과 에탄올), 시료와 용매의 처리 비율(w/v), 추출 온도 및 추출 시간이 레스베라트롤 추출 수율에 미치는 영향을 실험적으로 검토하고 통계프로그램을 이용하여 유의성을 평가하였다. 포도 송이가지로부터의 레스베라트롤 추출 조건을 최적화 한 결과, 80%의 에탄올에서 1:lO(w/v)의 용매의 비로 $60^{\circ}C$에서 90분을 추출하는 것이 가장 높은 추출수율을 나타냈다. 또한 포도 송이가지 추출물(GFSE)과 다른 항산화 물질의 생리활성 비교분석을 실시하였다. DPPH법에 의한 전지공여능과 SOD 유사활성으로 측정한 항산화 활성분석결과, 포도 송이가지 추출물은 비교물질로 사용된 항산화 물질들에 비해 높은 항산화능을 보였다. 결과적으로 본 연구에서 제조된 포도 송이가지 추출물은 항산화능이 높은 건강기능식품 및 화장품 소재로 주목받고 있는 레스베라트롤 소재로서 사용할 수 있음을 확인하였다.

  • 생물시료 중 존재하는 알킬페놀류, 클로로페놀류 및 비스페놀 A의 동시분석을 기체크로마토그래피-질량분석기-선택이온검색법에 의해 수행하였다. 시료 중 페놀류는 유기용매로 추출하고 정제과정은 Florisil과 silica 컬럼을 비교분석하였다. 회수율 실험은 각 생물시료에 1-ppm 정도를 첨가하여 수행하였다. 이들의 회수율은 83-116% 정도로 나타났고, 표준편차는 약 2.4-11.9%로 나타났다. 페놀류의 검출한계를 증진시키기 위하여, trimeaylsilyl(TMS) 유도체 방법을 도입하였다. 유도체화 시키지 않은 페놀과 TMS 유도체화된 페놀류의 기체크로마토그래피 성질을 연구하였다.

투과전자현미경에 타소질 불순물의 오염 최소화를 위한 실험 조건 (Experimentally Minimized Contaminative Condition of Carbonaceous Artifacts in Transmission Electron Microscope)

  • Contaminative artifacts such as carbonaceous materials on carbon-coated microgrids are unavoidable, which is induced by electron beam exposure inside electron microscopes. This phenomenon raise a source to produce confusing information to the samples investigated by analytical TEM, which should be alleviated as much as possible. As experimental precautions for reducing this unwanted effect, the use of $LN_2$ cooled anti-contaminator and pre-illumination of electron beam at low magnification can be helpful. Nevertheless, we should be cautious to set an illumination condition for microanalysis because the contaminative effect is dependent with the types of irradiation situations, which is well known to be a decisive factor for causing the carbonaceous artifacts. Accordingly, it is necessary that optimal illumination to minimize the contaminative effect should be selected for improving the accuracy of microanalysis. In this paper, we introduce the practical method to determine the optimal illumination condition by evaluating the contaminative effect as a function of instrumental spot size, which is directly linked with electron current density.
