The purpose of this study was to investigate the dietary habits and nutrient intakes of the elderly living in Songnam area. Responses from 318(153 men, 165 women) elderly individuals aged from 58 to 92 were analyzed. The results of this study are as follows. Regular dietary habit scores of the elderly women were worse than those of the men. Balanced dietary habit scores turned out to be the lowest among the various measured indices. The dietary assessment data showed that the energy intakes of males and females were 86.8% and 83.1% of the RDAs, respectively. The nutrients taken less than RDA on the daily basis were protein, calcium, iron, vitamin A and vitamin B$_2$. Nutrient intakes were gradually decreased as the age increased. Energy intakes of males and females from carbohydrate were 70% and 73% respectively. Vitamin A, vitamin B$_2$, and calcium were the most deficient nutrients on the basis of the intake percentage of RDA. Therefore, to improve nutritional status of the elderly, it is recommended that intakes of vitamin A, B$_2$ and calcium-rich food should be increased. Also suitable dietary guidelines and educational programs seem to be necessary for promoting health conditions of elderly people in Songnam area.

The purpose of this study was to assess the need for nutritional education in male workers living in Busan, Korea. This study surveyed 310 industrial workers at five companies in Busan using a questionnaire. According to the results, need for nutritional education scored 3.60/5.00 points. The usage rate of mass media as a means of acquiring nutritional information was significantly higher (P<0.001) in subjects in their 50s compared to other age groups. Regarding scores on need for nutritional education according to theme, 'balanced eating habits' showed the highest score, followed by 'food safety', 'diet therapy related to a disease', and 'food hygiene and food poisoning prevention'. In terms of frequency of nutritional education, 29.0% of subjects considered 'biannually' to be desirable, whereas 25.8% and 21.0% considered 'annually' and 'quarterly' to be desirable, respectively. The results of this study suggest that nutritional education for industrial workers should be implemented in various ways in accordance with their characteristics. Furthermore, considering workers' low awareness levels of the need for nutritional education, employees are required to take the education in order to encouraged to improve their nutritional status and commit to a desirable diet.
The purpose of this study was to evaluate the multilateral weight control program provided by the university health care center for female college students. The program was 8weeks long and composed of nutrition consultation, exercise, and behavior modification. Nutrition education focused on a low calorie and balanced diet, increasing the intake of protein and micronutrients and reducing carbohydrate and fat consumption. Evaluations were made upon completion of an 8-week program and upon follow-up at 6 months after the end of program. A total of 92 women completed the 8-week program, while 20 completed the follow-up survey. Upon completion of the 8-week program, significant decreases in body weight, BMI, body fat (kg), and %body fat were observed, and muscle mass was also reduced. The total energy and carbohydrates intake were also significantly decreased in subjects with weight loss, while the percentage of subjects whose consumption of protein, calcium, iron, vitamin $B_1$, $B_6$, and niacin did not meet the EAR, were decreased. The blood values of glucose, total cholesterol and HDL-cholesterol were decreased. The follow-up survey revealed that the subjects continued to lose weight after completion of the program. In addition, a Mini nutrition assessment revealed that diet quality improved, especially with respect to reductions in the consumption frequency of fried, greasy and salty food. In conclusion, the multilateral weight control program with diet education for female college students was effective for long lasting weight control and improved dietary behavior. Nutrition education for weight reduction should focus on balanced nutrition as well as lowering the total caloric intake.
This study was performed to investigate the stress level, dietary attitudes and nutrient intakes of Food and Nutrition major female students at a university located in Changwon. A total of 122 female students taking the course 'Meal Management' during 2001-2004 participated in this study. The general characteristics, stress level and dietary attitudes of the subjects were surveyed using a self-administered questionnaire. The nutrient intake data collected from 3-day food-record method were analyzed by the Computer Aided Nutritional Analysis Program. The symptoms by stress showed that 'eye strain', 'physically exhausted or get tired' and 'pains on neck or shoulders' were high in 59.4-81.8%. The mean scores of stress in 2001-2004 were 8.5-12.0 out of 30 points and the subjects in 2002 and 2004 scored significantly higher on stress level than the subjects in 2001 did (p < 0.00. The mean scores of dietary attitudes were 58.7-66.6 out of 100 points, most of the subjects are belonged to the 'fair' group in terms of dietary habits level. The stress level had a negative correlation with dietary habits (p < 0.001). About 1/3 of the subjects, the intake of calcium, vitamin $B_2$, vitamin A and iron were less than 75% of Korean RDA, whereas more than half of the subject, protein, vitamin C and phosphorus intake were more than 125% of RDA, and intake ratio of Ca and P showed an unbalance of 1 : 2. The animal protein intake was higher than the plant protein, whereas the animal vitamin A and iron intake were lower than vegetable food source. In 2001-2004, the index of nutritional quality (INQ) of vitamin $B_2$ and niacin was 0.56-0.98, and in 2003, the INQs of vitamin $B_2$ was 0.56, and that of niacin was 0.67, which was extremely low when compared to that of the other nutrients. Therefore, nutritional education is necessary if female university students are to practice optimal nutrition, including well-balanced diets of high nutritional quality.
Objectives: This study developed two weeks menu using temple foods, assessed preference for the menu among ordinary people, and determined the possibility of using temple foods to make out institutional food service menu. Methods: To make out the menu, 153 typical types of temple food were selected, under several conditions, thus including balanced food groups, natural foods in season, preparation time, preparation methods, and foods appropriated for institutional foodservice. Results: Developed menu contained 1905.8 kcal, had low fat content, high dietary fiber, vitamin, and mineral content, and good protein content in the nutritional respect, and fit protein requirements with low calorie content and high nutritional value. In the assessment of the food preference for 73 temple food items, most of the foods scored high (4 out of 5 points) for preference in general; therefore, the menu tended to be satisfied to the adults' preference. In particular, boiled rice (rice with chwi, rice with cirsium, rice with mushroom, rice with mushroom & vegetable and gimbap with tofu) and fried foods (fried shiitake with sweet & sour sauce and fried kelp) were highly preferred. Conclusions: The menu using temple foods can be a healthy choice for adults if it is well planned and managed. This study may be expected to provide basic data that would help developing menu to popularize temple foods. The above results could be applied at home as well as at foodservice institutes and furthermore could offer information for developing temple food products.
This study was designed to determine changes of nutritional status, diabetic indices and serum lipid composition in non-insulin dependent diabetes mellitus patients during intake of diabetic-oriented convenience food prepared from 7 medicinal plants and chicken. We conducted dietary, anthropometric and biochemical assessments before and after the intake of diabetic oriented food. Once a day, in the study, their normal lunch was replaced by the diabetic-oriented convenience food diet for 30 consecutive days. It was found that the nutrients of the diet were well-balanced, and the intake levels nearly approached those of the RDA. Obesity rate, body fat, and body weight were significantly lower than those of a normal diet. The average fasting blood glucose significantly decreased while the insulin level significantly increased after the intake of diabetic meal. Also the total serum cholesterol and triglyceride levels significantly decreased. The above results indicate that diabetic-oriented convenience food prepared from 7 medicinal plants and chicken may be used as a diet regime fer controlling the diabetes mellitus on a regular basis.
Questionnaire survey was performed in order to set an adequate meal table for athletes taking their food preferences into consideration. The survey was conducted against 32 athletes of a professional soccer team. Statistical data analysis was performed utilizing SAS package program. The results of this study can be summarized as follows; 18.8% of the answerers were found out to consider their autotrophic nutritional status as above average, 75.0% considered theirs as up to the average and 6.2%, below average. Among answers to the question what they consider as the most critical factor in their staying healthy; sound sleep won the most votes followed by enough rest, tranquillity and balanced eating habit. Yet, 68.8% replied their meal sizes were not settled. And 46.9% thought nutritive supplement helpful and 96.9% of the answerers said a dietitian is required as their health manager. 62.5% of them preferred Korean cuisine. Chigye and Chongol were the most preferred menus(55.6%) and Namul (28.1%), Muchim(26.3%) and Cheok.cheon(23.9%) enjoyed relatively low preference.
The purpose of this study was to evaluate the dietary habit, nutritional condition and quality of everyday meal for college students. The number of the subjects was 102 and they were divided into three groups by their residing types; students living with their parents (n=34), students living in dormitory (n=34) and students living independently off the campus (n=34) Questionnaire, 24hour dietary recall for food intakes, and body composition analysis were used. SPSS program was used for the statistics. In general health matter, the average age for each group of students was $21.2kg/m^2$, $20.9kg/m^2$, and $21.9kg/m^2$ respectively. And heights, weights, muscle mass, body fats and BMI were not significantly different between groups. Results on dietary habit showed that students living with their parents had better meal pattern and regularity for breakfast than other groups. Also, for dietary evaluation, students living with their parents showed better extent of intake of milk than other groups. Evaluation on nutrients intake showed that amount of calcium, vitamin $B_2$, folic acid intake in student living independently off the campus were lower than those of the other groups(P<0.05). And MAR(Mean Adequacy Ratio) was not significantly different between groups, however INQ(Index of Nutritional Quality) and NAR(Nutrient Adequacy Ratio) of calcium were lower in off the campus group than other two groups. In conclusion, students living independently had worse eating habits and showed lower intake of calcium than those living with their parents or living in a dormitory. Therefore nutritional education for improving well-balanced dietary habits and optimal intake of nutrients are required especially for students living independently off the campus.
This study evaluates nutrition knowledge, dietary behaviors and food group acceptability based on a sample of 514 of new employees in Gyeonggi area. Among the respondents, 70.6% of male, and their age was 30.7 Most were college graduates (94.9%) and unmarried (86.3%). Based on the BMI males tended to be overweight, whereas females, normal. In terms of health consciousness based on five-point Likert-type scale, the average score for the health status was 4.18 indicating good health, and health attention was 4.88 indicating high health attention. Dietary behaviors were evaluated using five-point Likert-type scale. According to the results, the total score for regular diet based on 5 items was 9.6; that for a balanced diet based on 7 items was 22.2; and that for practical diet action based on 8 items was 22.3. That is, the respondents were on an irregular diet but tried to balanced diet through appropriate diet action. Food acceptability was evaluated using a five-point Likert scale ranging from "strongly dislike(1)" to "strongly like(5)". The score of meat group was 3.67; that for the fish 3.43; and that for the vegetable group was 2.86. Females were slightly more like to accept fruits 3.60 than males 3.48;(p<0.05). The total score for nutrition knowledge based on 35 items was 20.5. A balanced diet was correlated with egg acceptability (p<0.01); energy-related knowledge with confectionery preferences (p<0.05); and vitamin knowledge, with snack affinity (p<0.05). Health attention was negatively correlated with seafood preferences for male(p<0.05) and with snacks for females(p<0.05). The respondents were strongly interested in and aware of their health, but this did not lead to their food preferences. These results suggests that dietary habits can lead to nutritional balance for maintaining the health of employees.
This study was conducted to investigate the quality characteristics of functional 'sunsik' as the nutritionally balanced diet for the moderns. The major nutrient of nutritionally balanced 'sunsik' was carbohydrate, while contained lower contents of protein and lipid than general 'sunsik'. Sucrose was the major free sugar of nutritionally balanced 'sunsik', and major organic acids were malic, tartaric, oxalic and citric acid. Free amino acids were predominantly serine, arginine, alanine and glutamic acid. Linolenic acid $(12.52\%)$ was contained in the nutritionally balanced 'sunsik'. Ca, Mg, K, Na and Fe were found as major minerals. Antioxidant activity was about $29\%$ compared to BHA and BHT(200 ppm), and about $40\%$ of $\alpha-tocopherol$(400 ppm). Sensory evaluation of nutritional balanced 'sunsik' gained higher sensory score in color, cooked aroma, flavor, chewiness and overall acceptance, compared to the general 'sunsik'.
