Effect of Smoking Process on the Contents of Polycyclic Aromatic Hydrocarbons in Smoke Flavouring (훈연공정이 훈연액 중의 다환방향족 탄화수소의 함량에 미치는 영향)

  • The contents of holocellulose, one of the main components of the wood, were 83.9% in oak wood and 76.9% in apple wood, respectively. Those of hemicellulose were 16.41 and 20.33%, and in lignin 23.0 and 19.7%, respectively. Six species of domestic oak wood and apple wood were considered to be suitable for smoking materials due to the low content of lignin. Benzo(a)pyrene contents in smoke flavoring prepared with oak wood at 150, 400 and 500$^{\circ}C$ were 0. 4, 3. 7 and 5.6$\mu\textrm{g}$,/kg, respectively. The amounts of phenanthrene were 112.7, 131.4 and 255.9$\mu\textrm{g}$/kg, respectively, in each temperature. The amounts of polycyclic aromatic hydrocarbons(PAH) in smoke flavory were in the order of phenanthrene>anthracene>pyrene>benzo(a)anthracene>chrysene>benzo(b)fluoranthens>benzo(a)pyrene Benzo(a)pyrene contents in smoking extracts prepared with apple wood at 150, 400 and 500$^{\circ}C$ were 0.4, 3.3 and 5.5$\mu\textrm{g}$/kg, respectively. Phenanthrene contents in those samples were 72.7, 100.2 and 220.5$\mu\textrm{g}$/kg, respectively. Contents of each PAH showed the same order as in oak wood.

  • This study was carried out to establish optimum smoking conditions i.e., smoking temperature, time, and smoking material for meat products. Smoking materials employed for smoking were oak and apple trees. Roast ham and wiener produced by various smoking conditions wree subjected to polycyclic aromatic hydrocarbons (PAHs) analysis. Benzo(a)pyrene was not detected in roast ham and wiener prepared with oak wood smoked and apple wood smoked at 250$^{\circ}C$. The content of benzo(a)pyrene in roast ham and wiener with apple wood smoked at 400$^{\circ}C$ were 0.6 and 0.7 $\mu\textrm{g}$/kg, and those sample smoked at 500$^{\circ}C$ is not suitable for meat products due to the high production rate of benzo(a)pyrene. The higher smoking temperature of the products, the higher the content of PAHs. The similar tendency was observed in smoking time. PAHs contents of the products smoked with oak wood was ranged from non-dection to 0.5 $\mu\textrm{g}$/kg. Meat products smoked for 75 min. were found to be highly valuable from the viewpoints of flavour and color.

  • In this study, biochar was produced from biomass waste, and its methylene blue adsorption capacity was evaluated. The major components of the biomass were cellulose, hemicellulose, and lignin. Ash content was high in waste wood. Carbonization yield decreased as carbonization temperature increased, as did hydrogen and oxygen content, but carbon content increased. Increased carbonization temperature also increased the specific surface area and micropores of biochar. At 600 ℃, biochar had the highest specific surface area (216.15~301.80 m2 /g). As a result of methylene blue adsorption on biochar carbonized at 600 ℃, oak, waste wood, and pruned apple tree branches fit the Freundlich model, while pruned peach tree branches fit the Langmuir model. In the adsorption kinetics of methylene blue on biochar, oak and pruned peach tree branches fit a pseudo-first-order model, while waste wood and pruned apple tree branches fit a pseudo-second-order model.

  • In order to effectively use the waste wood, two types of woodceramics chip tile were made from woodceramics chip, gravel, zeolite and additions. The woodceramics chip was made from branch of apple tree (Malus pumila Mill.) Snow melting property, bending strength and compressive strength of woodceramics chip tile were tested according to the mixing rate of woodceramics chip. Snow melting properties of woodceramics chip tile increased after additions treatment but mechanical properties were reduced significantly after additions treatment. The results indicate that the additions are effective for snow melting property but negative effect on mechanical properties.

  • An organic apple (Malus ${\times}$ domestics Borkh.) orchard was established to study the interaction effects of ground cover management systems (GMS) and nutrient sources (NS) on soil and tree nutrient status and tree growth. Trees received one of four GMS: 1) green compost (GC), 2) wood chips (WC), 3) shredded paper (SP), and 4) mow-and-blow (MB). Across all GMS, one of three NS was applied: A) a commercial organic fertilizer (CF), B) poultry litter (PL), and C) control (NF). Overall, GMS had greater effects on the variables than did NS. GC mulch supplied greater nutrients, followed by WC, SP, and MB mulches. SP trees had lower foliar [N] in the first two years than the GC and WC trees. GC-and WC-treated trees had larger trunk cross sectional area than the SP and MB trees.

  • The study was carried out to screen mutagenicity of smoking materials for the determination of optimum smoking temperature for meat products. Wood materials employed for smoking were oak and apple trees. Temperatures of the generator for manufacturing of smoke flavoring were set to 250$^{\circ}C$, 400$^{\circ}C$ and 500$^{\circ}C$, respectively. Mutagenic activities of smoke flavoring were assayed according to Ames test using Salmonella typhimurium TA98 and TA 100. In oak wood smoke flavoring, Salmonella typhimurium TA98 without S-9 mix showed strong mutagenic activities at the concentration of 6$\mu\textrm{g}$/plate(250$^{\circ}C$), 4$\mu\textrm{g}$/plate(400$^{circ}C$) and 6$\mu\textrm{g}$/plate(500$^{\circ}C$). Salmonella typhimurium TA100 with S-9 mix showed strong mutagenic activities at the concentration of 10$\mu\textrm{g}$/plate(250$^{\circ}C$), 20$\mu\textrm{g}$/plate(400$^{\circ}C$) and 10$\mu\textrm{g}$/plate(500$^{\circ}C$). Salmonella typhimurium TA98 with S-9 mix showed strong mutagenic activities at the concentration of 30$\mu\textrm{g}$/plate(250$^{\circ}C$), 40$\mu\textrm{g}$/plate(400$^{\circ}C$) and 20$\mu\textrm{g}$/plate(500$^{\circ}C$). Salmonella typhimurium TA100 with S-9 mix showed strong mutagenic activities at the concentration of 30$\mu\textrm{g}$/plate(250$^{\circ}C$), 50$\mu\textrm{g}$/plate(400$^{\circ}C$) and 20$\mu\textrm{g}$/plate(500$^{\circ}C$). Salmonella typhimurium TA100 without S-9 mix showed strong mutagenic activities at the concentration of 10$\mu\textrm{g}$/plate(250$^{\circ}C$), 20$\mu\textrm{g}$/plate(400$^{\circ}C$) and 20$\mu\textrm{g}$/plate(500$^{\circ}C$). From these results, it could be concluded that optimum smoking temperature for meat products should be set below 400$^{\circ}C$, that the compounds like benzo[a]pyrene etc. contain a variety of mutagenic potentials, which could be generated at the higher smoking temperature.

  • Fruit bagging paper is used for protecting of fruits from insect and/or microorganisms. Generally, fruit bagging paper controled light, temperature and humidity and then it is used for good fruit color, size and taste. The physical properties of conventional(domestic and abroad) fruiting bag and wrapping paper were analyzed and compared to each other. And also, the optical properties of conventional(domestic and abroad) fruiting bag and wrapping paper were analyzed and compared to each other. The chemical additives and residual herbicide in conventional fruiting bag and wrapping paper were analyzed and compared to each other. The analyzed data was bench marked for developing water repelling paper and embossing paper.

  • Embossing treated fruit bagging paper was prepared with newly designed embossing roll and mechanical properties of fruit bagging paper were evaluated. The embossing technology was developed. First of all, embossing roll was designed in Ginyong Embo(Co) for the embossing process of fruiting bag. The embossing treated fruit bagging paper was manufactured in Agro(Co) at plant scale. The mechanical properties of embossing paper was investigated and operation efficiency of bagging was tested at field. The properties of embossed paper was quit satisfied for fruiting bag for cultivation of apple and pears.

Investigating Survival of Erwinia amylovora from Fire Blight-Diseased Apple and Pear Trees Buried in Soil as Control Measure (토양에 매몰 방제된 화상병 감염 사과와 배 나무로부터 화상병균 생존 조사)

  • BACKGROUND: Since 2015, fire blight disease caused by Erwinia amylovora has been devastating apple and pear orchards every year. To quickly block the disease spreading, infected apple and pear trees have been buried in soil. However, concern on the possibility of the pathogen survival urgently requires informative data on the buried host plants. Therefore, this study was conducted to investigate the survival of the pathogen from the buried host plants. METHODS AND RESULTS: Apple trees buried in 42 months ago in a Jecheon site and pear trees buried in 30 months ago in an Anseong site were excavated using an excavator. Plant samples were taken from stems and twigs of the excavated trees. The collected 120 samples were checked for rotting and used for bacterial isolation, using TSA, R2A, and E. amylovora selection media. The purely isolated bacteria were identified based on colony morphology and 16S rDNA sequences. Wood rotting and decay with off smells and discoloring were observed from the samples. A total of 17 genera and 48 species of bacteria were identified but E. amylovora was not detected. CONCLUSION: Our investigation suggests that the survival of E. amylovora doesn't seem possible in the infected hosts which have been buried in soil for at least 30 months. Therefore, the burial control can be considered as a safe method for fire blight disease.

  • $^{32}$ P was supplied to the roots of stem-ringed 1-year-old apple trees and 2-year-old citrus trees on which bark segments were isolated above and below the ring. $^{32}$ P was translocated to shoots and leaves although considerable translocation occurred especially in wood and bark tissues. The accumulation of $^{32}$ P in isolated bark segments indicated that the occurrence of these materials in this tissue was via radial translocation from xylem tissue, and that the main upward translocation pathway of $^{32}$ P supplied to roots is through the xylem.
